FOOD AND WINE AS CULTURE 17 years of history, more than 300 starred evenings with more than 450 Michelin stars and 4700 GaultMillau points.

This is S.Pellegrino Sapori Ticino today. An event born almost as a joke, but from the beginning with the awareness of the great potential of food and wine in promoting the destination Ticino. A fundamental factor in the touristic development of any nation and region in the world, one of the main reasons why tourists choose a destination combined with the territory. It couldn’t be different because at the table we spend some of the most beautiful moments of our lives, especially during the holidays.

I’m Ticino in every moment of my day and this feeling has led me to think and create ideas that can tell the best of my region, supported by a group of Grand Hotels and restaurants that believed immediately in the Festival, joined by a common goal: to support and highlight a region through hospitality of excellence with the conviction that haute cuisine could be a crucial factor, bringing to canton Ticino all the best of international food and wine for a mutually beneficial exchange. Just because food and wine are culture and a source of integration.

Even today, almost all of them are still supporting us.

An exchange that this year sees French gastronomy as the star. Birthplace of the most important gastronomic guide in the world, the transalpine country has always considered cuisine a true art, a strong point for tourism and culture.

Together with Luca, our brand evangelist, I visited all the chefs who will come to Ticino and we had some truly extraordinary experiences.

Multi-starred and famous chefs will close their restaurants for two or three days and, with a good number of their assistants they will honour our territory, presenting the varied and rich aspects of their territories, from the traditional to the most innovative,from north to south, up to the Principality of Monaco, with an exceptional Godfather: Mauro Colagreco.

This time, S.Pellegrino Sapori Ticino will also cross the Swiss borders arriving to Paris, together with the Swiss Deluxe Hotels and the Grandes Tables Suisses, to reveal the many excellences of the hospitality and restaurant sector, with a press conference to present

the Festival and a gala dinner at the Swiss Embassy, hosted by Ambassador Roberto Balzaretti, whom I had the honour to meet thanks to my friend Roberto Grassi, Honorary Consul of France and CEO of the Fidinam Group. An invitation that made us very proud and that encourages us to do more and better.

Paris only wants to be the starting point for a new story: thanks to the support of Switzerland Tourism and the other partners, there is a desire to continue to bring the best of Ticino and Switzerland (hotels, restaurants, chefs, wines, local products) to Europe and around the world, in tourist reference markets such as Germany, Italy, the United States and the Gulf countries.

Thanks to food and wine culture, the French will become our best ambassadors this year. They will also discover that modern gastronomy was born in the Blenio valley in the mid-15th century with Maestro Martino, and that at the end of the 1960s, a great master such as Angelo Conti Rossini brought the region to the Olympus of great chefs with his 2 Michelin stars, when the Swiss Michelin Guide did not yet exist. A sign of how our region was going to develop.

Questo è oggi S.Pellegrino Sapori Ticino. Una manifestazione nata quasi per gioco, ma da subito con la consapevolezza del grande potenziale dell’enogastronomia nel promuovere la destinazione Ticino, un fattore fondamentale nello sviluppo turistico di qualsiasi nazione e regione al mondo, una delle ragioni principali per cui un turista sceglie una meta insieme al territorio. E d’altronde non poteva che essere così dal momento che a tavola si trascorrono alcuni dei momenti più belli della nostra vita e per ognuno di noi è, durante le vacanze, una delle principali attività.

Io sono ticinese in ogni momento e attimo della mia giornata e questo sentimento mi ha portato a pensare e a creare idee che possano presentare il meglio del mio cantone, sostenuto sin dall’inizio da un gruppo di Grandi Alberghi e ristoranti che deci-

sero di mettere a disposizione la loro professionalità per dar vita al Festival, accomunati da un obiettivo comune: supportare e mettere in luce un territorio attraverso l’ospitalità d’eccellenza con la convinzione che l’alta cucina potesse essere determinante, portando in canton Ticino tutto il meglio dell’enogastronomia internazionale per uno scambio proficuo, coinvolgendo tanti ristoranti e produttori. Perché il cibo è cultura e fonte di integrazione.

Ancora oggi, sono quasi tutti gli stessi a sostenerci.

Uno scambio che quest’anno vede protagonista la gastronomia francese. Patria della più importante guida gastronomica al mondo, il paese transalpino ha da sempre considerato la cucina una vera e propria forma d’arte, un punto di forza del turismo e della cultura.

Accompagnato da Luca, il nostro brand evangelist, ho visitato le cucine di tutti i cuochi che verranno in Ticino, vivendo delle esperienze veramente straordinarie. Chef pluristellati e famosi chiuderanno il loro ristorante per due o tre giorni e con un buon numero di loro collaboratori onoreranno il nostro territorio, presentando i variegati e ricchi aspetti, da quelli tradizionali ai più innovativi, dei loro territori, da nord a sud, sino al Principato di Monaco, con un Padrino d’eccezione: Mauro Colagreco.

Questa volta anche S.Pellegrino Sapori Ticino valicherà i confini svizzeri e arriverà a Parigi, insieme ai Swiss Deluxe Hotels e le Grandes Tables Suisses, per rivelare le tante eccellenze del settore dell’ospitalità e della ristorazione, con una conferenza stampa di presentazione del Festival e una cena di gala all’Ambasciata di Svizzera, ospiti dell’Ambasciatore Roberto Balzaretti, che ho avuto l’onore di conoscere grazie all’amico Roberto Grassi, Console onorario di Francia e CEO del Gruppo Fidinam. Un invito che ci ha inorgoglito molto e che ci sprona a fare sempre meglio e di più. Parigi vuole essere solo il punto di partenza per una nuova storia: grazie al sostegno di Svizzera Turismo e degli altri partners, c’è il desiderio di continuare a portare il meglio del Ticino e della Svizzera (hotels, ristoranti, chef, vini, prodotti locali) in Europa e nel mondo, nei mercati turistici di riferimento come la Germania, l’Italia, gli Stati Uniti e i Paesi del Golfo.

Grazie alla cultura enogastronomica, quest’anno i Francesi diventeranno i nostri migliori ambasciatori, scoprendo anche che la gastronomia moderna è nata in valle di Blenio a metà del XV secolo con Maestro Martino e che a fine anni ’60 del secolo scorso un grande maestro come Angelo Conti Rossini portava il territorio nell’olimpo dei grandi chef con 2 stelle Michelin, quando ancora non esisteva la Guida Michelin Svizzera.

Un segnale di come la nostra regione si sarebbe sviluppata.

VIVE LA GASTRONOMIE FRANÇAISE, VIVE LE TESSIN Dear friends, I am proud and happy that the Festival S.Pellegrino Sapori Ticino 2023 for its 17th edition has decided to honour France.

France's richness and biodiversity will be fully illustrated through the 12 structures that will participate in the Festival in Ticino, between Lugano, Locarno and Ascona, and that will host me and many of my colleagues from 24 September to 12 November 2023.

A festival that also benefits from an extraordinary setting, in one of the most touristic regions in Europe.

I had already the pleasure of discovering the Ticino region in 2015 by participating in the edition dedicated to the “World's Top Chefs”; this time I also have the honour of returning as the event's Godfather.

In recent years, S.Pellegrino Sapori Ticino has welcomed some of the world's greatest chefs.

And now it is a fantastic opportunity to show our cultural and culinary diversity.

The selection of chefs and restaurants for this year's edition under the sign of France is a chance to prove our plurality, our ability to renew ourselves while maintaining a deep respect for tradition and nature, each in our own way.

So, let’s tell our stories that make us unique, revealing our splendid terroir and natural beauty.

Care amiche e cari amici, sono fiero e felice che il Festival S.Pellegrino Sapori Ticino 2023 per la sua diciassettesima edizione abbia deciso di onorare la Francia.

La ricchezza e la biodiversità francesi saranno raccontate al meglio attraverso le 12 strutture che parteciperanno al Festival in Ticino, tra Lugano, Locarno e Ascona e che ospiteranno me e tanti miei colleghi dal 24 settembre al 12 novembre 2023.

Un festival che beneficia anche di una cornice straordinaria, in una delle regioni più turistiche d'Europa.

Avevo avuto già il piacere di scoprire il territorio ticinese nel 2015 partecipando all’edizione dedicata ai “World’s Top Chefs”; questa volta ho l’onore di tornare anche in qualità di Padrino della manifestazione.

Negli ultimi anni, S.Pellegrino Sapori Ticino ha accolto alcuni dei più grandi chef del mondo.

E ora è una fantastica opportunità per mostrare la nostra diversità culturale e culinaria.

La selezione di chef e ristoranti per l'edizione di quest'anno sotto il segno della Francia è un'occasione per sottolineare la nostra pluralità, la nostra capacità di rinnovarci sempre mantenendo un profondo rispetto per la tradizione e la natura, ciascuno a proprio modo Raccontiamo allora le nostre storie che ci rendono unici, mostrando il nostro splendido terroir e le nostre bellezze naturali.

On a personal level, I am proud to make my home region and its assets - gastronomic and others – known abroad. Let us not forget that gastronomy and viticulture are two important aspects of our culture.

Typical Ticinese dishes are not the same as those in the Romandy or German-speaking Switzerland, thus, it is important to introduce the French public to the full diversity of Switzerland.

A gastronomic exchange helps to encourage a broader interest in the culture and history of a country or a region. Sharing a meal is the best way to build lasting bonds.

As the Swiss Ambassador to France, I am delighted that the S.Pellegrino Sapori Ticino Festival has chosen one of our neighbours for its gastronomical and oenological cultural exchange this year. Switzerland and France enjoy strong relations in all fields.

The interaction between Swiss and French chefs serves as a concrete - and tasteful - example of the significance of bilateral cooperation.

Lo scambio sul piano gastronomico contribuisce a stimolare un interesse più ampio per la cultura e la storia di un paese o di una regione. Condividere un pasto è il modo migliore di tessere legami duraturi.

Der neue Kaffee Exclusive Selection Galápagos entführt Ihre Gäste mit jedem Schluck in eine ganz besondere Gegend, 200 Meter über Meer, im kühlen Klima der Galapagosinseln. Der Anbau im Naturschutzpark mit unvergleichbarer Biodiversität und besonders nährstoffreichen Böden sind für den Kaffeeanbau äusserst zuträglich. So entsteht einer der seltensten Arabicas der Welt. One of the Parisian temples of great cuisine, located in the ancient private residence of the Duke of Morny, Le Taillevent is one of the most beautiful addresses in Paris.

In the Lamenais room, historically the main dining room, emblematic for its oak boiserie, a fresco with golden copper leaf reinterprets the Viandier, the first Frenchlanguage cookery manuscript written by Guillaume Tirel, known as Taillevent in the late 14th century.

Faithful to the historical 'Taillevent style', since 2021 Giuliano Sperandio has been the 2 starred chef who guides the restaurant's change with his deep knowledge of French haute cuisine combined with his great modernity and freshness.

Ligurian by origin, he has some fixed points: lots of vegetables, little salt, great products, to which he adds the cultures he absorbed while travelling and working in Greece, Kazakhstan, Switzerland, New York until his arrival in Paris. His cooking is an expression of his feelings towards the moment, people and products.

It is clear, free, with the human element at the centre. A spontaneous way of working that allows him to continue the great gastronomic tradition, working with the finest products, enhancing them with his creativity. His dishes are an invitation to a taste journey: the itinerary starts in the kitchen and continues in the dining room through “le geste”, a table service, the key element of the final emotion.

La mia cucina è pensata per essere facile da capire e libera, con le persone al centro Uno dei templi parigini della grande cucina, situato nell'antica dimora privata del Duca di Morny, Le Taillevent è uno degli indirizzi più belli di Parigi. Nella sala Lamenais, storicamente la sala da pranzo principale, emblematica per la sua boiserie in rovere, un affresco con foglia di rame dorata reinterpreta il Viandier, il primo libro di cucina in lingua francese scritto da Guillaume Tirel, detto Taillevent a fine 1300. Fedele allo storico “stile Taillevent”, dal 2021 è lo chef bistellato Giuliano Sperandio che con la sua profonda conoscenza dell'alta cucina francese unita alla sua grande modernità e freschezza, guida il cambiamento del ristorante.

Ligure di origine, ha dei punti fermi: molte verdure, poco sale, grandi prodotti, a cui aggiunge le culture che ha assorbito viaggiando e lavorando in Grecia, Kazakistan, Svizzera, New York, fino all’approdo a Parigi.

La sua cucina è l'espressione dei suoi sentimenti verso il momento, le persone e i prodotti. È chiara, libera, con l'elemento umano al centro. Un modo di lavorare spontaneo che gli permette di proseguire la grande tradizione gastronomica, lavorando con i prodotti più raffinati, esaltandoli con la sua creatività. La Table de Lionel Giraud, at the Maison Saint-Crescent, is an obligatory gastronomic stop in the Occitane region.

Born in Narbonne, the chef is familiar with the walls of the Maison, a former oratory from the Middle Ages, because he grew up there.

With courage and maturity, he breathed new life into what was once his family's restaurant by developing a creative cuisine.

Simple, meticulous and of the highest quality, his cuisine is characterised by local products, but also by forgotten ones that he loves to revive.

The dishes are proposed according to the calendar of nature's rhythms and all the producers are mentioned in the title. Because for Lionel Giraud, terroir shapes a chef 's cuisine and beyond the pleasure of sharing, he wishes to transmit knowledge.

Let's protect what we love! It is with this philosophy that he has begun to forge relationships with those who are at the heart of the process, with small producers and fishermen, avoiding the need to travel hundreds of kilometres.

The common denominator of all his recipes is the ability to extract the quintessence of a product to which he adds memories, those of his grandmother's dishes, of the people he met, of his travels. Cooking thus becomes just an excuse to share all this.

Armato di coraggio e maturità, ha dato nuova vita a quello che un tempo era il locale della sua famiglia sviluppando una cucina creativa. All'insegna della semplicità, meticolosa e di alta qualità, la sua cucina è impregnata dei prodotti locali, ma anche quelli dimenticati che ama far rivivere. I piatti sono proposti secondo il calendario dettato dalla natura e tutti i produttori sono citati nel titolo. Perché per Lionel Giraud, il terroir forgia la cucina di uno chef e al di là del piacere della condivisione, desidera trasmettere il sapere.

In the heart of Avignon, at the foot of the Palais des Papes, in the luxury hotel La Mirande, originally the palace of a 14th century cardinal, Florent Pietravalle offers an intense culinary journey through the beauty and diversity of Provence.

He is one of the most creative chefs working today.

His style is unique, based on the use of local products and a multitude of techniques and preparations inspired by his travels and the history of gastronomy.

Originally from Montpellier, after spending four years in Pierre Gagnaire's kitchen at Le Balzac in Paris and before with experiences at Joël Robuchon and Jean-Luc Rabanel, he arrived at this oasis of peace in 2016, at the age of 28, and in three years he won his first Michelin star and from 2021 the green star.

He is committed to ethical and sustainable gastronomy and eco-responsible cooking: he works closely with local producers, also developing a mushroom farm in the basement of La Mirande and translates everything into a fantastic game of balances.

His cuisine is both technical and refined, fresh and highly creative.

His love for the products somehow extends their life on the plate, to tell their own story. With his rather reserved personality, he likes to say that his plates speak for him.

With two Michelin stars and an innovative style, Marcel Ravin passionately conducts the orchestra of the Blue Bay kitchens, the gastronomic restaurant of the Monte Carlo Bay Hotel & Resort, located on the edge of the Larvotto peninsula, with a superb terrace overlooking the sea.

A son of the Caribbean, after leaving his native island to learn the art of cooking in Alsace, Lyon and Brussels, he arrived in Monaco at the age of 21 determined to combine the culinary style of his West Indian origins with the treasures of the land and sea of the south, to create a cuisine with a universal flavour, lively and deep.

In 2013, Michel Reybier, owner of La Réserve in Ramatuelle and Geneva, chose Jérôme Banctel to be the Executive Chef of his Parisian Réserve and its gastronomic restaurant, Le Gabriel. In the heart of Nice, Flaveur has been taking on a culinary world tour since 2008.

With a childhood in Guadeloupe and many travels, brothers Gaël & Mickaël have created a melody of flavours from their tasting memories.

Over the years their paths have separated and crossed, without losing their strong brotherly bond.

Mickaël worked for a time with Michel Del Burgo at Negresco, then with Alain Llorca at Moulin de Mougins, before becoming Keisuke Matsushima's chef. Gaël flew to London to work at Pierre Gagnaire's Sketch, which opened up unlimited culinary horizons for him.

The result of these experiences and the fraternal alliance was Flaveur, to which they devoted all their energy, achieving a Michelin star in 2011 and a second in 2018.

Over the years, they have fully embraced and promoted the richness of local products from the Maralpin region and of the Riviera, working closely with small local producers, breeders, pickers and fishermen.

Between local flavours and distant spices, theirs is a cuisine of character, refined and mastered from start to finish, a warm and creative cuisine that reinvents itself season after season. A rare level of technical precision, where everything is in its place.

Dany is a great Porsche enthusiast - just a few months ago I handed him a beautiful Taycan 4S but our acquaintance goes back much further: he was already a customer of my father Giacomo at the Porsche dealership in Bellinzona. A long time ago, I also took him to the track as a passenger, it was a fantastic experience! The strong territorial component, the passion for beauty and the emotional element unite S.Pellegrino Sapori Ticino and Porsche, and that's why we are really proud of this partnership!

What experiences do you plan to offer through this partnership?

During the exhibitions, it will be possible to taste the high gastronomy of multi-starred international chefs, while simultaneously experiencing the world of Porsche: we will in fact be present at the evenings with our models and will be available not only to provide information but also for the reservation of possible customized test-drives. Come è nata la collaborazione con Dany Stauffacher e S.Pellegrino Sapori Ticino?

Dany è un grande appassionato di Porsche – giusto qualche mese fa gli ho consegnato una bellissima Taycan 4S – ma la nostra conoscenza risale a molto prima: era già cliente di mio padre Giacomo nella concessionaria Porsche di Bellinzona. WILL WE GROW ENOUGH FOOD? Can the crop farming economy produce enough food to feed the world by 2050? We explore four scenarios, structural investment opportunities and ESG implications.

Putting enough food on the table

The US$1.9trn crop farming economy is at a crossroads – the increasingly urgent need to tackle climate change and protect biodiversity comes at a time when agriculture demand continues to grow in the face of a rising population, growing wealth and consumption.

Our analysis suggests that rising global consumption could lead to an 8% crop production shortfall by 2050 if yield growth does not improve from levels seen since 2010, with potential supply deficits occurring as early as 2030. Multiple levers are available to bridge the potential supply gap, which offers structural investment opportunities for both the supply side and demand side of the crop supply-demand equation. We forecast the global crop farming economy to grow by 2.5x to US$6.5trn in 2050 (4% CAGR versus 3% in 2010-2020), while supply-side industries supporting the farming sector should grow by 3x to over US$1trn (5% CAGR). This report leverages the expertise of our global sector, macro, ESG and empirical scientific approaches teams to explore four scenarios, the resulting supply-demand implications and potential levers to bring supply-demand back into balance.

Crop yield growth over the past decade likely not enough to meet demand We adopted an empirical approach to forecast future crop demand and predict global consumption to be 61% higher by 2050 relative to 2020 levels. This requires a 57% increase in crop yields in our base case compared to only a 45% rise if yield trends over the past decade persists, failing which cultivated area would need to increase nearly 1m km2 (9% of existing area) to satisfy demand. The alternative outcome would be a rise in agriculture prices to reduce consumption, which would particularly affect lower income households and countries where food expenditure represents a high portion of total spending. We also present an interactive model to isolate sensitivities to the assumptions in our scenarios.

IL FUTURO DELL'AGRICOLTURA: RIUSCIREMO A COLTIVARE ABBASTANZA CIBO? L'economia agricola riuscirà a produrre cibo a sufficienza per sfamare il mondo entro il 2050? Analizziamo quattro scenari, le opportunità di investimenti strutturali e le implicazioni ESG. Mettere in tavola abbastanza cibo L'economia agricola, un settore da 1,9 trilioni di dollari, si trova di fronte a un bivio: da una parte, la necessità sempre più urgente di affrontare il cambiamento climatico e proteggere la biodiversità, dall'altra il continuo aumento della domanda di prodotti agricoli a fronte di una crescita della popolazione, della ricchezza e dei consumi. L'esito alternativo sarebbe un aumento dei prezzi dei prodotti agricoli che ridurrebbe i consumi, colpendo in particolare le famiglie a basso reddito e i Paesi in cui la spesa alimentare rappresenta una quota elevata della spesa totale. Presentiamo anche un modello interattivo per isolare le sensibilità alle ipotesi dei nostri scenari.

Opportunità di investimento nella domanda e nell'offerta Investment opportunities in both supply and demand Technological and adoption breakthroughs have led to a step change in crop yields in the US and Brazil in 2000-2010, and breakthrough events elsewhere could provide the needed yield uplift moving forward. This presents the biggest opportunities for seeds & plant genetics companies, where we expect the market size to grow by 3.5x by 2050 (5.3% CAGR), and vertical farming-exposed companies, where we think the market will grow over 30x over the same period (12% CAGR). As over 40% of current crop demand is not for direct human consumption, we also see opportunities to reduce crop demand. Waste and residue based biofuel producers are well placed to replace food-based first generation biofuels while alternative protein growth could reduce feed-related crop demand, offering an aggregate US$300bn market opportunity by 2050 (13% CAGR collectively for alternative protein and sustainable aviation fuel).

Hence, within the agricultural sector there is a need to invest in the innovation of agrifood systems, implementing new cultivation practices with high productivity. All this has to be within a sustainable system that respects the land and its resources.

Feeding the planet is therefore an ever more crucial topic. But food not only represents the primary source of our existence; it also has strong cultural connotations and delights our senses: all these aspects emerge in the tasty and surprising evenings of S.Pellegrino Sapori Ticino

Nell’ambito dell’economia agricola è quindi necessario investire sull’innovazione dei sistemi agroalimentari, mettendo in atto nuove pratiche colturali, ad alta produttività. Tutto questo, all’interno di un sistema sostenibile, che rispetti il territorio e le sue risorse.

Un tema sempre più centrale quindi, quello di nutrire il pianeta. Given the great geographic and cultural diversity of Switzerland, the breadth of the country's many culinary traditions is no secret. It is no coincidence that the linguistic and cultural border between Germanspeaking and Latin-speaking Switzerland is called the Röstigraben, i.e. the Rösti moat, Rösti being a typical Swiss German potato dish. All those many differences and contrasts have resulted in a very rich variety.

And how better to discover all that Switzerland has to offer than to travel around the country on its famous trains? So then... all aboard!

Our journey begins with a glass of delicious wine among the terraced vineyards of Lavaux, on the shores of Lake Geneva. A UNESCO World Heritage Site since 2007, Lavaux is the largest wine-growing area in Switzerland and, in addition to its fine wine, offers stunning views of the lake to be admired on foot, by bicycle, or by train.

In un contesto geografico e culturale variegato, l’importanza delle numerose tradizioni culinarie svizzere non è un segreto. Non a caso la frontiera linguistica e culturale tra la Svizzera germanofona e quella latina viene chiamata Röstigraben, il fossato dei Rösti, che sono un piatto tipico della Svizzera tedesca a base di patate. Tante differenze e numerosi contrasti che si traducono in una grande ricchezza. E qual è il modo migliore per scoprire tutto ciò che la Svizzera ha da offrire? Percorrerla a bordo dei suoi rinomati treni. Quindi: tutti in carrozza!

Il nostro viaggio inizia con un buon bicchiere di vino tra i vigneti terrazzati del Lavaux, sulle rive del lago Lemano. Iscritta al patrimonio dell’UNESCO dal 2007, Lavaux è la seconda zona vitivinicola più grande della Svizzera e, oltre a un vino di grande qualità, offre un panorama mozzafiato sul lago da ammirare a piedi, in bicicletta o in treno.

Lasciamo la riva del lago e la dolce vita della regione di Montreux per addentrarci nel cuore delle Alpi vallesane, dove gli amanti degli sport outdoor potranno sbizzarrirsi grazie alle possibilità infinite di attività: escursioni in mountain bike, vie ferrate, scalate alpine. Quarantuno delle quarantotto cime oltre i 4'000 metri delle Alpi svizzere si trova infatti in territorio vallesano. Niente paura, le opzioni adatte a tutti i livelli non mancano! Perché non iniziare quindi camminando lungo i bisses, canali d’irrigazione secolari che oggi costituiscono dei sentieri per passeggiate tranquille e rinvigorenti. Il punto che accomuna tutte queste attività? Concluderle con una buona raclette, accompagnata naturalmente da un bicchiere di Petite Arvine o di Fendant, i vini locali.

Il viaggio continua con uno dei treni più emblematici della Svizzera: tutti a bordo del Glacier Express che da Zermatt raggiunge St. Moritz attraversando 91 gallerie e ben 291 ponti. Non resta che accomodarsi, rilassarsi e assaporare il panorama al di là delle grandi vetrate della carrozza. Gli Svizzeri adorano i treni, che rimangono il mezzo di trasporto più efficace e sostenibile per spostarsi all’interno del paese.

Valais Alps, where outdoor sports enthusiasts will find plenty to do: mountain biking, via ferrata climbing routes, traditional Alpine climbing. Forty-one of the forty-eight peaks over 4,000 metres in the Swiss Alps are located in the canton of Valais. But don't worry, there are plenty of options at every level! Why not start by walking along the bisses, centuries-old irrigation canals that now form paths for serene and invigorating walks. And at what point do all these activities come together? Why not finish off with a delicious raclette, accompanied of course by a glass of local wine, Petite Arvine or Fendant.

The journey continues aboard one of Switzerland's most iconic trains: the Glacier Express, which travels from Zermatt to St. Moritz through 91 tunnels and across no fewer than 291 bridges. Now just sit back, relax, and enjoy the magnificent views from the large picture windows in the carriage. The Swiss love their trains, which remain the most efficient and sustainable means of transport for travelling within the country. And so, the goal of the experience becomes the journey itself: in addition to the Glacier Express, there are six other scenic routes, which can be combined into a single railway circuit, the Grand Train Tour of Switzerland. Each train has its own specific characteristics and lets you discover new corners of the country. The most recent novelty is the GoldenPass Express, a new state-of-the-art train that since December 2022 has made it possible to travel from Interlaken and the majestic mountains of the Bernese Oberland to Montreux, on the shores of Lake Geneva, all on a single train.

Because Switzerland is all this, tradition and innovation at the same time. That vision has enabled numerous records to be achieved in the field of transport. In just a few steps, we go from a train offering panoramic views to the highest railway station in Europe, located at an altitude of 3,454 metres on the Jungfraujoch. For those who want to make another vertiginous journey, a few kilometres from Lucerne you can climb Mount Pilatus on the world's steepest cogwheel train.

While faithful to tradition, Swiss cuisine is also constantly being renewed: a simple moitié-moitié fondue (classic Fribourg fondue consisting of half Gruyère cheese and half Vacherin) can now be easily carried in a rucksack and enjoyed during a picnic with a view of the limestone peaks of the Gastlosen, the mountain range of the Fribourg Pre-Alps, or seated in a giant caquelon in Gstaad. After exploring the mountains, our journey might take us to the Bains de Paquis in Geneva, for example, where we could enjoy some fondue with our feet dangling in the lake. Or, in Zurich, we could find our way to a restaurant called Hiltl. Certainly visionary, it was the world's first vegetarian restaurant. This year Hiltl is marking its 125th anniversary.

Swiss cities are not only living centres and forerunners. They are also close to nature. Whether it is a lake, a river, or a mountain, nature is omnipresent and offers endless possibilities for activities. In Basel, for example, a particular sport is widespread. The local residents let themselves be carried by the current of the Rhine through the entire city centre. Under their arms they hold a Wickelfisch, a waterproof bag in the shape of a fish in which to store clothes and accessories and to use as a buoy.

As you may have guessed by now, Switzerland is packed with things to do and try. Between mountains, lakes, and cities, between different languages, cultures and tastes, the journey goes on.

Anche la cucina svizzera, pur rimanendo fedele alle tradizioni, si rinnova continuamente: una semplice fondue moitié-moitié (classica fondue friburghese composta da metà formaggio Gruyère e metà Vacherin) può essere ormai facilmente trasportata in uno zaino e gustata durante un pic nic con vista sui picchi calcarei dei Gastlosen, la catena montuosa delle Prealpi friburghesi, o seduti in un caquelon gigante a Gstaad. Dopo aver esplorato le montagne, il nostro viaggio ci porta in città, ai Bains de Paquis di Ginevra, per esempio, dove la fondue si gusta con i piedi a mollo nel lago. A Zurigo invece, troviamo il ristorante Hiltl, che è sicuramente stato visionario, poiché si tratta del primo ristorante vegetariano al mondo. Quest’anno festeggia ben 125 anni.

Le città svizzere non sono solo centri viventi e precursori. Esse sono anche strettamente legate alla natura. Che sia un lago, un fiume o una montagna, la natura è onnipresente ed offre infinite possibilità di attività. A Basilea, per esempio, è diffusa una pratica sportiva particolare. Gli abitanti si lasciano trasportare dalla corrente del Reno, attraverso tutto il centro città. Sottobraccio tengono un Wickelfisch, sacco impermeabile a forma di pesce in cui riporre vestiti e accessori e da usare come boa.

L’avrete capito, in Svizzera le cose da vedere e assaporare sono tante. Tra montagne, laghi e città, tra lingue, culture e sapori diversi, il viaggio continua.

Nach dem großen Erfolg des letzten Jahres setzt EOC seinen Weg des Geschmacks und der Gesundheit begeistert fort und organisiert eine neue Ausgabe der Veranstaltung in Zusammenarbeit mit Sapori Ticino.

Salute con Sapore, das im Jahr 2019 ins Leben gerufen wurde, kehrt dieses Jahr mit einem überarbeiteten Gourmet-Abendessen zurück, das die Verbindung zwischen zwei scheinbar entfernten, aber tief verbundenen Welten, feiert.

Die Küchenchefs der verschiedenen EOC-Krankenhäuser verwandeln sich für einen Abend in echte Küchenkünstler. "Es ist eine einzigartige Gelegenheit, dem Publikum die kulinarischen Fähigkeiten unserer Chefköche zu würdigen", sagt Glauco Martinetti, Vorsitzender der Geschäftsleitung.

Während des Abends können die Gäste feine Gerichte genießen, die im Geschmack und in der Präsentation sorgfältig zubereitet sind und aus hochwertigen Zutaten bestehen. Dies garantiert ein unvergessliches Gourmet-Erlebnis, das gleichzeitig die Gesundheit und das Wohlbefinden fördert.

Salsa camellina, bianco mangiare, agresto, brodetti, pasticcio. These are just some of the dishes and condiments of mediaeval cuisine, characterised by great contrasts between strong flavours such as sweet and sour and spices on one hand and delicate ones such as almond milk, on the other.

In the Middle Ages, a lot of meat and spices were used as a symbol of wealth, without giving too much importance to the result, promoting a diet commensurate with rank. It was not yet possible to speak of true culinary art and recipe books were different from those we are used to today.

The term recipe normally means a list of food ingredients used to cook all kinds of food, with doses, detailed steps and preparation times, but in past centuries recipe books were just reminders, collections of notes, for the use of those who already knew how to cook.

These were books written by cooks for cooks about noble cooking, where it was suggested to pray an Our Father or the Miserere to finish cooking the dish. Everything changed with Maestro Martino from Blenio (Ticino) in the mid-1400s: new flavours, new uses of ingredients and more instructions for making dishes. Everything in his Libro de Arte Coquinaria: a first true recipe book that represents the transition from medieval to Renaissance cuisine. Taking inspiration from recipes of the past but reinterpreting them according to the innovative spirit of the period, his presentations are much clearer and easier. For the first time, he introduces a strict order to be followed in the preparation of dishes, specifying cooking times and quantities of ingredients; he uses a more professional language, moderates the use of expensive spices, replacing them with the aromatic herbs of our region. He ennobles many vegetables, which were not worthy of being presented on important tables until that time, such as cabbage, turnips, fennel and all sorts of herbs. And also eggs, almonds, pasta and simple condiments such as oil.

Changing the tastes of time, he was recognised worldwide as the first modern cook in history and his cookbook marked the beginning of a new way of cooking.

Tutto nel suo Libro de Arte Coquinaria: un primo vero ricettario che rappresenta il passaggio dalla cucina medievale a quella rinascimentale. Prendendo ispirazione dalle ricette del passato, ma reinterpretandole secondo lo spirito innovatore del periodo, le sue presentazioni sono molto più chiare e semplici.

Per la prima volta introduce un preciso ordine da seguire per la realizzazione dei piatti, specificando tempi di cottura e quantità degli ingredienti; usa un linguaggio più professionale, modera l'impiego delle costosissime spezie, sostituendole con le profumate erbe del nostro territorio.

Nobilita tante verdure, non degne sino a quel periodo di essere presentate su tavole importanti, come cavoli, rape, finocchi e ogni sorta di erbette. E anche uova, mandorle, pasta e condimenti semplici come l’olio.

Rivoluzionando così i gusti dell’epoca, è stato riconosciuto a livello mondiale il primo cuoco moderno della storia e il suo ricettario ha segnato l’inizio di un nuovo cucinare.

UN VIAGGIO NEL TEMPO TRA SAPORI E SAPERI Salsa camellina, bianco mangiare, agresto, brodetti, pasticcio. Sono solo alcuni piatti e condimenti della cucina medievale, caratterizzata da grandi contrasti tra sapori decisi come l’agrodolce e le spezie da una parte e delicati dall’altra, come il latte di mandorle.

Nel Medioevo si utilizzavano tanta carne e tante spezie come simbolo di ricchezza, senza dare troppa importanza al risultato, promuovendo una alimentazione commisurata al rango.

Non si poteva parlare ancora di vera arte culinaria e i ricettari erano diversi da quelli a cui siamo abituati oggi.

Il termine ricetta normalmente indica una lista di ingredienti alimentari usati per cucinare cibi di ogni tipo, tenendo in considerazione dosi, procedimenti dettagliati e tempi per la preparazione, ma nei secoli passati i ricettari erano più dei promemoria, delle raccolte di appunti, a uso e consumo di chi già cucinava. Si trattava di libri scritti da cuochi per cuochi che raccontavano la cucina nobile, dove era suggerito di recitare un Padre Nostro o il Miserere per ultimare la cottura del piatto.

THE GREAT MASTER WHO PAVED THE WAY This year marks the 100th anniversary of the birth of the famous chef from Brissago (1923-1993) Angelo Conti Rossini, the first chef from Ticino who, with his restaurant Giardino, was awarded two Michelin stars at the end of the 1960s, when the Swiss Michelin Guide did not yet exist, but the Italian Michelin honoured few personalities of gastronomic Switzerland at that time. Great performer, co-founder of Les Grandes Tables Suisses, he had a great love and respect for food, always in search of genuine flavours linked to his origins, combined with the classics of gastronomy interpreted with great freedom and

IL GRANDE MAESTRO CHE HA TRACCIATO LA VIA Ricorrono quest’anno i 100 dalla nascita del famoso chef di Brissago (1923-1993) Angelo Conti Rossini, il primo cuoco del cantone Ticino che con il ristorante Giardino fu insignito delle due stelle Michelin alla fine degli anni '60 del secolo scorso, quando ancora non esisteva la guida Michelin svizzera, ma la Michelin italiana onorava i pochi personaggi di allora della Svizzera gastronomica. Grande professionista, cofondatore de Les Grandes Tables Suisses, aveva un grande amore e rispetto del cibo, sempre alla ricerca di sapori genuini legati alle proprie origini, uniti ai classici della gastronomia interpretati con molta libertà e fantasia.

Grazie al padre panettiere e ristoratore e la madre cuoca, e con esperienze in importanti hotel svizzeri e d'Europa, ha saputo esaltare i valori della sua terra che trasmise nei suoi piatti, utilizzando formaggio delle valli, pesci di lago, funghi, sviluppando anche un particolare rapporto con i fornitori locali.

Il Giardino di Brissago divenne un vero e proprio tempio delle arti culinarie e un luogo d'incontro basato sull'alta professionalità e la semplicità: una buona cena non dipende solo dai fornelli, ma fondamentale è anche l'accoglienza e lo stare insieme, amava ripetere sempre. La grande amicizia con Libero Olgiati, avvocato e uomo politico ticinese di rilievo, un illuminato cultore della civiltà della tavola, lo avvicinò poi definitivamente a una cucina più curata e al mondo del vino. Nel 2003, a 10 anni dalla morte, il giornalista e amico Alberto Dell’Acqua, editore dela rivista Gastronomie&Tourisme, istituì un premio alla sua memoria destinato ad un giovane ed originale cuoco ticinese. Tra i candidati vincitori fugurava Lorenzo Albrici che così lo ricorda: “lo conoscevo bene perché mia nonna materna era di Brissago, andavano a scuola insieme. Grazie a lui ho potuto entrare al Savoy di Zurigo, conoscere la grande cucina di allora e ho imparato la disciplina, il rigore e l’importanza della materia prima.

Mi ricordo ancora quando proponeva l’alternanza caldo-freddo che ai tempi non c’era ancora; aveva una visione davvero avanguardistica”.

The Giardino of Brissago became a veritable temple of the culinary arts and a meeting place based on high professionalism and simplicity: a good dinner does not depend only on the chef, but also on the welcome and being together, he always liked to repeat.

His great friendship with Libero Olgiati, a wellknown Ticino lawyer and politician, an enlightened connoisseur of the civilisation of the table, brought him closer to a more sophisticated cuisine and the world of wine.

In 2003, ten years after his death, the journalist and friend Alberto Dell'Acqua, editor of Magazine Gastronomie&Tourisme, organised a memorial prize for a young and innovative Ticino chef. Among the winning candidates was Lorenzo Albrici, who remembers him as follows: “I knew him well because my maternal grandmother was from Brissago, they went to school together. Thanks to him I was able to enter the Savoy in Zürich, get to know the great cuisine of the time and learn about discipline, rigour and the importance of raw materials. I still remember when he proposed the hot-cold alternation that didn't exist in those days; he had a truly avant-garde vision”.

In this context, Dany Stauffacher's project dedicated to starred restaurants, Ticino Land of Stars, takes on an increasingly important role in supporting the starred food and wine world, to encourage the arrivals of tourists driven by the desire to get to know and try a territory through the products it offers.

The food and wine tourism thus becomes an enormous opportunity not spoiled by seasonality.

And the gastronomic guides also play an important role.

One of the most important guides was published by the French brothers André and Edouard Michelin to promote their tyre company in Clermont-Ferrand, at the end of the 19th century.

The first edition of the Michelin Guide contained useful information on petrol stations and hotels, doctors and pharmacists and instructions on how to change a tyre and since 1931 the famous classification was created: one star for high quality cuisine worthy of a stop, two stars for an excellent restaurant worthy of a detour, three stars when the restaurant is worth a special trip. Then a team of inspectors was hired to review them, always anonymously, as is still today. As the Michelin brothers wanted to increase travels with the Guide, Ticino Land of Stars wants to support starred restaurants to consequently discover a series of places that are worth visiting, combining the discovery of fantastic places with the pleasure of savoring the excellent food and wine of our territory.

Il Ticino continua ad essere così l’angolo gourmand della Svizzera, facendo dell’enogastronomia uno dei principali motivi che spingono il turista a scegliere il territorio come meta per le proprie vacanze. In questo contesto, il progetto di Dany Stauffacher, Ticino Land of Stars, assume un ruolo sempre più importante a supporto del mondo enogastronomico stellato, per incentivare così l’arrivo di turisti, animati dalla volontà di conoscere e provare un territorio attraverso i prodotti che quest’ultimo offre. L’esperienza enogastronomica diventa così un’enorme opportunità turistica, non viziata dalla stagionalità.

E anche le guide gastronomiche hanno un ruolo importante. Una delle più importanti venne pubblicata dai fratelli francesi André e Edouard Michelin per pubblicizzare la loro compagnia di pneumatici alla fine del 1800.

La prima edizione conteneva informazioni utili su stazioni di servizio e hotel, medici e farmacisti e istruzioni su come cambiare uno pneumatico e dal 1931 viene creata la celebre classificazione: una stella per una cucina di grande qualità degna di una tappa, due stelle per un ristorante eccellente e meritevole di una deviazione, tre stelle quando il ristorante vale un viaggio speciale.

Venne poi assunta una squadra di ispettori per recensirli, sempre in forma anonima, come accade ancora oggi.

Come con la Guida Michelin si vollero incrementare i viaggi, con Ticino Land of Stars si vuole supportare i ristoranti stellati per far scoprire di conseguenza una serie di località che vale la pena di visitare, abbinando alla scoperta di fantastici luoghi anche il piacere di assaporare l’ottima offerta enogastronomica del nostro territorio.

WESTHER MOLTENI

A TICINO STAR 3X3 UNA STELLA TICINESE 3X3

Westher Molteni is today an emblematic and well-known figure in 3x3 Swiss Basketball. Born in Santo Domingo and in Ticino since the age of 7, he discovered basketball thanks to his primary school teacher. After several years of experience in the Swiss national team and in the top league, he fell in love with the new 3x3 discipline in 2013. First played during the summer months, and just for fun, it is a sport that has grown impressively worldwide: a very fast basketball with ten-minute games and 3 players.

In 2017, selected to be part of the 3x3 national team together with three other players, he then formed what is still the number 1 team in Switzerland and among the 15 best in the world, the Team Lausanne 3x3. Now an Olympic sport, every effort is made to develop this discipline and increase its fame in Switzerland: Westher, with the group, has thus also become an entrepreneur, personally taking care of the search for sponsors, travel and events for boys and girls, even creating a gym in Lausanne 100% dedicated to 3x3. Today he is focused on the results to try to get the necessary points for qualification for the 2024 Olympics in Paris.

Westher Molteni è oggi una figura emblematica e conosciuta del 3x3 Swiss Basketball. Nato a Santo Domingo e in Ticino dall’età di 7 anni, ha scoperto il basket grazie al maestro delle elementari.

Dopo esperienze in serie A e nella nazionale svizzera per alcuni anni, nel 2013 si innamora della nuova disciplina del 3x3. Inizialmente praticata durante i mesi estivi, e per puro divertimento, è uno sport cresciuto in modo impressionante in tutto il mondo: un basket molto veloce, con partite da dieci minuti e 3 giocatori. Nel 2017, selezionato per far parte della nazionale 3x3 insieme ad altri 3 giocatori, ha poi formato quella che ancora oggi è la squadra numero 1 in Svizzera e tra le 15 migliori al mondo, il Team Lausanne 3x3.

Diventato sport olimpico, si sta facendo tutto il possibile per sviluppare questa disciplina ed aumentarne la notorietà in Svizzera: Westher, con il gruppo, è diventato così anche imprenditore, occupandosi personalmente della ricerca di sponsors, dei viaggi e degli eventi per i ragazzi/e, creando a Losanna anche una palestra 100% dedicata al 3x3.

Oggi è concentrato sui risultati sul campo per cercare di ottenere i punti necessari per una qualificazione alle Olimpiadi 2024 di Parigi.

NEVERCREW

STREET ARTISTS FROM TICINO TO THE WORLD STREET ARTISTS DAL TICINO AL MONDO Nevercrew è un duo di artisti ticinesi, Pablo Togni e Christian Rebecchi, che lavorano insieme dal 1996.

Il loro percorso artistico ha ruotato da subito attorno alla tematica del confronto, portandoli a toccare nei loro lavori tematiche politiche e sociali, ed in generale ad approfondire gli equilibri dei sistemi con un'attenzione particolare per il rapporto tra esseri umani e natura.

Questa analisi ha preso forma principalmente nei loro interventi urbani: dipinti murali di grandi dimensioni pensati per cercare un'interazione diretta con i luoghi e con chi li vive.

Negli anni hanno realizzato più di 70 opere in tutto il Mondo. Attualmente stanno portando a termine un dipinto murale a Paradiso e lavorano alla loro prossima esposizione personale che inaugureranno ad Ottobre 2023.

Nevercrew is a duo of artists from Ticino, Pablo Togni and Christian Rebecchi, who have been working together since 1996.

From the beginning their artistic path revolved around the topic of confrontation, leading them to address political and social issues in their works, and in general to deepen the balance of systems with particular attention to the relationship between human beings and nature.

This analysis has mainly taken shape in their urban interventions: large-scale wall paintings designed to seek direct interaction with places and with those who live them.

Over the years they have created more than 70 artworks all over the world. They are currently completing a mural painting in Paradiso and are working on their next personal exhibition which will open in October 2023.

The castle, considered one of the most beautiful in Switzerland, surrounded by a historic vineyard situated on a promontory by the lake, will allow to relive the atmosphere of the period, when Martino himself passed through these lands on his way to the kitchens of the Sforza family in Milan. The wines from Gaby Gianini's 150-hectare farm and wine estate will enhance the flavours of Maestro Martino's recipes, reworked for the occasion by Tito Modugno, resident chef, who together with Marco Badalucci, Alessandro Boleso and Trevor Appignani will offer guests an exceptional late-medieval lunch in a fabulous setting.

UN INCONTRO PERFETTO IN UNA CORNICE PERFETTA Un appuntamento ancora più particolare quest’anno al Castello di Morcote. Il Déjeuner au château è infatti dedicato a Maestro Martino, il cuoco bleniese del XVmo secolo che ha posto le basi della cucina moderna. Un incontro perfetto in una cornice perfetta dello stesso periodo. Il castello, considerato uno dei più belli della Svizzera, circondato da uno storico vigneto situato su un promontorio interamente circondato dal lago, permetterà di rivivere le atmosfere del periodo, quando lo stesso Martino attraversava queste terre per raggiungere le cucine degli Sforza a Milano. I vini dell’azienda agricola e vitivinicola di 150 ettari di Gaby Gianini esalteranno i sapori delle ricette di Maestro Martino rivisitate per l’occasione da Tito Modugno, resident chef, che insieme a Marco Badalucci, Alessandro Boleso e Trevor Appignani offriranno agli ospiti un pranzo tardomedievale d’eccezione in una cornice da favola.

The seventeenth edition of S.Pellegrino Sapori Ticino will open as usual on the shores of Lake Lugano with Domenico Ruberto, who will do the honours by hosting three great Chefs from the Swiss Deluxe Hotels for an evening of haute enogastronomy: Yannick Crepaux from LeCrans Hotel & Spa in Crans Montana, Frédéric Gardette from the Fairmont Le Montreux Palace in Montreux and Fabrizio Zanetti from Suvretta House in St. Moritz.

In this relaxed and youthful ambience, Chef Emanuele Bertelli is hosting this year the Festival's only woman and the only new starred female chef in France for 2023, Georgiana Viou.

In the heart of Nîmes, in the Margaret - Hôtel Chouleur, at the Rouge restaurant, Georgiana has been presenting a mix of French Mediterranean cuisine with African influences from Benin, her native country, since 2021. Arriving in France at the age of 22 and after graduating from the Sorbonne in Foreign Literature and Civilisation, she was seduced by the flavours of the Mediterranean, which she combines with her memories, after learning to cook from her mother who had a simple little restaurant in Cotonou.

Her cuisine delights with creative and tasty dishes and invites to embark on a gastronomic journey focused on local products, enriched with seasonings and a pinch of flavours from other places, with sensitivity, sunny and bold, to offer a friendly and lively cuisine of the heart.

Grand finale for the 17th edition of S.Pellegrino Sapori Ticino at the Hotel Splendide Royal in Lugano. Domenico Ruberto hosts some colleagues from the Grandes Tables Suisses for an evening dedicated to Angelo Conti Rossini, Ticino's first two Michelin-starred chef at the end of the 1960s, to celebrate the 100th anniversary of the birth.

All together they will present some of his iconic dishes to emphasise the modernity of his cuisine.

The Grandes Tables Suisses, of which Angelo Conti Rossini was a co-founder, is an association of chefs from all over the country who share a passion for quality cuisine and service with the common goal of promoting the hospitality industry and gourmet cuisine in Switzerland nationally and internationally.

Gran finale per la diciassettesima edizione di S.Pellegrino Sapori Ticino all’hotel Splendide Royal di Lugano. Domenico Ruberto ospita alcuni colleghi ticinesi delle Grandes Tables Suisses per una serata dedicata al grande maestro Angelo Conti Rossini, primo chef bistellato ticinese alla fine degli anni ’60, di cui ricorrono i 100 anni dalla nascita.

Tutti insieme ripresenteranno alcuni suoi piatti iconici per sottolineare la modernità della sua cucina.
