The Knowledge of Taste

The Knowledge of Taste is the knowledge of care, it is the knowledge of how to look after a community, it is the knowledge of how to nourish and sustain life.

With a special interest in mapping the female presence among Latin American food traders in Elephant & Castle, I spoke to some of the female entrepreneurs and invited them to share a recipe.

In an area affected by gentrification, how can the knowledge of taste strengthen our communities?

How can it help us find belonging?

El saber de los sabores es el saber del cuidado, es el saber de cómo cuidar una comunidad es el saber de cómo nutrir y sostener la vida.

Con un interés especial en trazar un mapa de la presencia femenina entre comerciantes de comida en Elephant & Castle, hablé con algunas de las emprendedoras y las invité a compartir una receta.

En un área afectada por la gentrificación, ¿cómo puede ayudarnos el saber de los sabores a fortalecer nuestras comunidades? ¿Cómo nos puede ayudar a sentir pertenencia?

El Guambra is a business run by Marlene and her family. It opened seven years ago in the E&C Market, being relocated two years ago. With great passion towards cooking and customer service, the family has been able to keep thriving despite adversities. Besides the restaurant, they also run a catering company.

Marlene comes from a family of culinary tradition Marlene’s mother in Ecuador is 88 years old and still runs a food business!

El Guambra es un negocio dirigido por Marlene y su familia.

Abrió hace siete años en el Mercado de E&C, siendo reubicado hace dos años. Con gran pasión por la cocina y la atención al cliente, la familia ha logrado seguir prosperando a pesar de las adversidades. Además del restaurante, también gestionan un catering.

Marlene procede de una familia de tradición culinaria ¡su madre, en Ecuador, tiene 88 años y sigue dirigiendo su negocio de cocina!

Ingredientes 1 kg de camarón 1/2 kg de cebolla roja pequeña 1/2 kg de tomate 1 porción pequeña de cilantro 3 limones Preparación 1. Pelar el camarón, lavarlo y cocinarlo durante unos 10 minutos.

2. Cocinar el tomate aparte durante 10 minutos.

3. Picar la cebolla en rodajas, lavar, incurtir el limón y un poquito de sal.

4. Licuar el tomate y servirlo.

5. Mezclar el camarón, la cebolla y el tomate. Incluir el cilantro bien picadito.

6. Mecer por 5 minutos, todo mezclado, y añadir aceite para servir.

Ingredients 1 kg shrimp 1/2 kg small red onion 1/2 kg tomato 1 small portion of coriander 3 lemons Preparation 1. Peel the shrimp, wash it and cook it for 10 minutes.

2. Cook the tomato separately for 10 minutes.

3. Cut the onions in slices, wash them, add lemon and a bit of salt.

4. Blend the tomato and serve it.

5. Mix the shrimp, the onions and the tomato. Incorporate the coriander, well chopped.

6. Let everything rest mixed for 5 minutes and add oil to serve.

Sabor Peruano was born on May 2015, run by Ernesto and Lissy, with the goal of spreading the art of Peruvian cuisine.

The restaurant approaches Peruvian food as it is in Peru, using a majority of Peruvian raw material. Come by to enjoy a homemade and traditional meal!

Sabor Peruano nace en mayo de 2015, gestionado por Ernesto y Lissy, con el objetivo dar a conocer el arte de la cocina peruana en el mundo.

El restaurante se aproxima a la comida peruana como es en Perú, utilizando mayoritariamente materia prima peruana. ¡Venga para disfrutar de platos tradicionales y caseros!

Papa a la Huancaína * vegetariano

(Para cuatro personas) Ingredientes 1 kg de papas 1 lechuga 2 cebollas medianas ½ kg de queso blanco duro ½ kg de nueces ½ taza de leche (120 ml) 2 ajíes amarillos picantes 2 galletas de soda Aceite Sal Para la salsa: 1. Licuar la leche y la cebolla previamente pelada y cortada. Agregar las nueces, el queso y los ajíes, y seguir triturando. Por último, incorporar las galletas de soda para dar consistencia a la salsa.

2. Añadir un chorro de aceite poco a poco y sin dejar de batir y agrega sal. La salsa debe tener una consistencia ni muy líquida, ni muy espesa.

Para las papas: 3. Hervirlas hasta que estén blandas. Las cortamos y las servimos encima de la lechuga, cubiertas con salsa.

- Huancaína Potatoes * vegetarian (Serves four) Ingredients 1 kg potatoes 1 lettuce 2 medium onions ½ kg white cheese ½ kg nuts ½ mug of milk (120 ml) 2 yellow chilli peppers 2 crackers Oil Salt For the sauce: 1. Blend the milk and the onion, previously chopped. Add the nuts, cheese and chilli peppers and keep on blending. Finally, incorporate the crackers to thicken the sauce.

2. Slowly add the oil while blending, and the salt.

The sauce should neither be too liquid or too thick.

For the potatoes: 3. Boil until they feel soft. Cut them and serve them on top of the lettuce, covered in sauce.

Lomo Saltado - Peruv (Para dos personas) Ingredientes 2 bistecks de lomo de res picados en trozos de 4 centímetros aproximadamente 1 cebolla mediana picada Medio pimentón mediano picado 2 dientes de ajo 1 ají amarillo picado 1 tomate grande picado 1 papa grande Un manojo de perejil 2 cucharadas de salsa de soja 2 cucharadas de vinagre blanco Sal y pimienta Preparación 1. Pelar y picar las papas para hacer papas fritas, cuando estén listas, reservarlas.

2. En la misma sartén, añadir un poco de aceite y saltear cebolla, pimentón, ají y tomate con una pizca de sal a alta temperatura.

3. Tras un par de minutos, agregar ajo picado, salsa de soja, vinagre y volver a poner la carne.

4. Agregar perejil y las papas. Se puede añadir un chorrito de limón.

vian Stir-fried Beef (Serves two) Ingredients 2 bistecks of beef tenderloin cut in pieces of 4 cms approx.

1 onion, medium size, chopped in slices 1/2 pepper, chopped 2 garlic cloves 1 yellow chilli pepper, chopped 1 big tomato, chopped 1 big potato A handful of parsley 2 spoons of soy sauce 2 spoons of white vinegar Salt and pepper Preparation 1. Peel and chop the potatoes to make traditional chips.

When ready, keep aside.

2. In the same pan, add a bit of oil and fry the onion, the pepper, the chilli pepper and the tomato at high temperature, with a bit of salt.

3. After a couple of minutes, add the chopped garlic cloves, the soy sauce and vinegar. Finally add the meat.

5. Serve with parsley and chips. If you would like, add a bit of lemon.

Los Chamos is a 100% family-owned and 100% Venezuelan restaurant located in Eagle Yard Arch, that was born during the pandemic. Doris, responsible for the cooking, learnt her skills helping at her mother’s catering business for parties and events in Venezuela. She likes to cook with care and affection, so customers can feel that they are being served with pleasure.

Los Chamos es un restaurante 100% familiar y 100% venezolano situado en Eagle Yard Arch, que nació durante la pandemia. Doris, responsable de la cocina, aprendió ayudando a su madre en su catering de fiestas y eventos en Venezuela. Le gusta cocinar con atención y cariño, para que los clientes sientan que se les sirve con gusto.

Ingredientes 2 tazas de pollo desmechado, cocinado solo con sal 1 aguacate grande Zumo de un limón 1 manojo de cilantro 1 taza de mayonesa Cebolla opcional Sal y pimienta al gusto Preparación 1. Tomar las 2 tazas de pollo y ponerlas en un bowl con el aguacate troceado previamente.

2. Agregamos la mayonesa y el resto de los ingredientes, y mezclamos todo.

Ingredients 2 mugs of shredded chicken, cooked only with salt 1 big avocado The juice of a lemon 1 handful of coriander 1 mug of mayonnaise Onion (optional) Salt and pepper to taste

Preparation 1. Put the 2 mugs of chicken in a bowl with the avocado, previously chopped.

2. Add the mayonnaise and the rest of the ingredients, and mix everything together.

Ingredientes 1 cebolla 1 o 1/2 aguacate (al gusto) 1/2 pimiento rojo o verde 1 manojo de cilantro 1/2 manojo de perejil 2 dientes de ajo 1 taza y media de aceite Limón al gusto Sal y pimienta al gusto Preparación 1. Poner todos los ingredientes en la licuadora e ir agregando el aceite en hilo hasta crear una crema homogénea.

Ingredients 1 onion 1 or 1/2 avocado (to your liking) 1/2 pepper (green or red) 1 handful of coriander 1/2 handful of parsley 2 garlic cloves 1 mug and a half of oil Lemon to taste Salt and pepper to taste

Preparation 1. Blend all the ingredients together and add the oil slowly until the cream is homogeneous.
