CHRISTMAS CRACK
HERE’S MY FAB CHRISTMAS CRACK RECIPE MADE WITH LAYERS OF CHOCOLATE, TOFFEE & M&M’S. YOU CAN USE SALTINES, TUC OR RITZ CRACKERS TO MAKE THIS FESTIVE CANDY FOR THE HOLIDAYS. 1. Pre-heat the oven to 180c/350f. 2. Lay the crackers on a 15-inch baking tray lined with greaseproof or parchment paper.
3. Melt the butter in a saucepan then add the sugar. Stir and bring up to a simmer.
4. Simmer whilst stirring continuously for 5 minutes. 5. Spread the toffee evenly over the crackers then bake in the oven for 5 minutes. Then leave to cool.
6. Melt the dark chocolate in a saucepan or microwave and spread it over the toffee crackers.
7. Sprinkle over the M&M’s and drizzle over melted white chocolate. 8. Leave in the fridge for at least 1 hour to set. Then crack into 30 pieces and enjoy.
SERVES: 30 | PREP TIME: 20 MINUTES COOKING TIME: 15 MINUTES. 180 CALORIES & 11.3G FAT PER SERVING.
INGREDIENTS • 1 PACK OF SALTINES, RITZ OR TUC CRACKERS (APPROX. 150G) • 225G BUTTER • 220G LIGHT BROWN SUGAR
• 240G DARK COOKING CHOCOLATE • 20G WHITE COOKING CHOCOLATE • 60G SMASHED M&MS
EASY FUDGE MY EASY FUDGE RECIPE IS MADE WITH SWEETENED CONDENSED MILK, BROWN SUGAR & BUTTER. IT’S QUICK AND EASY TO PREPARE AND PERFECT TO GIFT AT CHRISTMAS. 1. Add all the ingredients to a saucepan. 2. Stir over a low heat until the butter has melted and sugar has dissolved. 3. Bring to a gentle simmer and simmer for 15 minutes whilst stirring continuously.
4. Drop a small amount of the fudge in cold water. Remove from the water and If you’re able to form a ball with it, then it’s ready.
5. Remove the saucepan from the heat and pour the fudge into a dish lined with greaseproof or parchment paper.
6. Spread evenly so it’s of equal thickness then leave in the fridge for at least 1 hour.
7. Cut the fudge into 25 squares and enjoy! INGREDIENTS • 1 TIN (397G) SWEETENED CONDENSED MILK • 100G BUTTER

CHRISTMAS PUDDING SOUFFLÉ WE’RE GOING TO TAKE A LOOK AT THOSE PRE/POST-CHRISTMAS DINNER PARTY FOR YOUR FRIENDS AND DROP A COUPLE OF SHOW STOPPING DESSERTS. FIRST UP IS A CHRISTMAS PUDDING SOUFFLÉ. DON’T BE SCARED OF THIS – IT'S THE EASIEST DESSERT YOU’LL MAKE THIS YEAR, AND ONE GUARANTEED TO IMPRESS! SERVE WITH SOME SHOP BOUGHT ICE CREAM. Soufflé Base:
1. Reduce puree by half. 2. Mix cornflour and brandy, add to purée and cook till thick. 3. Boil sugar and water to 121 degrees celsius, add to purée. 4. Cool and then place in blender till smooth and glossy. Egg Whites:
5. Whisk egg whites gradually adding sugar till peaky. 6. Fold ¼ into purée mix. 7. Fold rest in gently – taking care not to knock out air. 8. Butter soufflé moulds, and line with brown sugar. 9. Put mix in soufflé moulds and bake at 175 degrees for 10 mins approx. 10. Serve with balls of Daltons Brandy Butter ice cream.

BAKED ALASKA SECOND UP, BAKED ALASKA. A TRUE MIRACLE OF SCIENCE – COLD ICE CREAM, FRESH OUT OF THE OVEN, SET AGAINST A BACKDROP OF WARM MERINGUE, REMINISCENT OF SNOW DRIFTS AND WHITE CHRISTMASES PAST AND PRESENT. Pistachio ice cream:
1. 10 balls ice cream, place in freezer to firm up. Meringue:

I’M SHARING MY FAVOURITE AUTUMNAL RECIPES TO MAKE THE MOST OF SEASONAL FRUIT AND VEG 1. Add the stone ground oats and water in a pan and heat gently,

HEARTY VEG BUTTERNUT CURRY NOTTINGHAM HAS SO MANY INDEPENDENT GREENGROCERS ANDMARKETS TO PICK UP SEASONAL FRUIT AND VEG. 1. Heat the dried spices and seeds in a pan for around 60 seconds then add 1 tbsp coconut oil with the finely chopped onion and fry until softened.
2. Add the finely chopped chilli to the pan then after a few minutes add the minced garlic & cook for a further 60 seconds.

In 2011, John Molnar decided to embark on a new adventure. With 30 years of experience, John sought out a highly skilled crew, sourced the finest produce and set sail on a fish and chip concept like no other: The Cod’s Scallops. Enjoy traditional fish and chips differently at one of The Cod’s Scallops three locations found in Long Eaton, Sherwood and Wollaton. Home of the freshest fish you can choose from over 20 species including Haddock, Plaice, Monkfish, Sea Bass and many more (depending on the catch of the day). Whether you are having a takeaway or eating in, you can have your fish baked, battered or naked, they’re all cooked fresh to order! Unsure how best to cook them yourself? Proud to be MSC Certified, they work closely with their fish suppliers to source the best sustainable fish. ‘It’s that fresh that tomorrow’s tea is still in the sea!’ To add to their great deeds, they also work with The National Lobster Hatchery; an initiative where every lobster they buy, they release another baby lobster back into the sea. It’s amazing the work that The Cod’s Scallops do for the community and environment!
As you enter Cod’s Scallops you are greeted with the warmest welcome. On our visit we decided to dine inside and were promptly shown to our seats to look over the menu. To see their ‘catch of the day’ range visit their counter or choose from the menu. With sides from mushy peas and curry sauce to healthy alternatives such as the butterbean salad and the green mixed salad, you’ll find something for everyone. One of their brilliant offers is the lunchtime special: Golden Oldies. Available from 11:30am – 2:00pm you can indulge in a mini cod, chips and mushy peas plus a cup of tea or coffee for only £6.00! During our visit we started with their baked scallops and battered oysters. Firm in texture against their delicate sweet flavour, the baked scallops were so fresh and delicious. Both newbies to oysters we were pleasantly surprised! The crisp batter against the soft oysters created a taste like no other, full of so many flavours. If you’ve never tried battered oysters before then we highly recommend!
After this we wanted to challenge their awardwinning haddock, battered in beef dripping, the fish was wonderful! Accompanying the dish was chunky chips and mushy peas, the ultimate fish and chip experience. We didn’t stop there, we also decided to order half a lobster from their catch of the day counter. With a rich yet slightly sweet taste against the soft and tender flesh, creating the most incredible dish that you must try! Now neither of us have never been to a fish and chip shop and had a dessert… until Cod’s Scallops. They offer a range of puddings and after a difficult decision we decided to go for their chocolate brownie sundae and their warm sticky toffee pudding with ice cream. To sum it up in one word – delicious! So, if you aren’t already heading to your nearest The Cod’s Scallops, we highly recommend that you do - you will not be disappointed!

Here are a few ideas which may make your Christmas preparations a little easier… Bring your Christmas decorations up to date by adding a few key pieces - to create a bang on trend industrial look, use stripped back wood and smooth concrete and add a splash of depth and colour using copper and brass. Try a rustic wire moose head for the wall, wrapped in string lights which add a bit of Christmas sparkle, or a bronzed metal pheasant beside your fireplace. For your garden, how about a rustic wicker reindeer, or if you don’t have much space, then try a deer head on an outside door or wall.
If the industrial style isn’t your thing and you just want to feel that nostalgic Christmas glow, then delightful decorations will help to evoke that sense of excitement. Felt tree decorations in the shape of mice, dogs or foxes, and traditional decorations such as tin Santas and retro Christmas camper vans help make your Christmas tree look very cosy indeed. To complete the look, use berry or pine garlands and wreaths over the mantlepiece to feel that winter warmth.

CHRISTMAS IS COMING! IT’S THE MOST WONDERFUL TIME OF THE YEAR…. WE ALL SEEM TO BE SAYING THE SAME THING AT THIS TIME OF YEAR, “I DON’T KNOW WHERE THE TIME’S GONE?” AND IT’S TRUE, THE FESTIVE SEASON DOES SEEM TO CREEP UP ON US EVERY YEAR.

Truly my favourite time, Christmas is when we like to adorn our homes with beautiful decorations and no matter what your style is, Christmas should bring a real cosy warmth into your home at the time when the weather is providing just the opposite! A good idea when planning your decorations for the festivities is to try and keep to a concept or scheme. A little like planning any room decoration, a plan should help to ensure that the end result is a resounding success!
A much-loved theme and one which will never date is the ‘traditional’ Christmas of reds, greens and golds. This will always have a place in any home and simply due to the colours, will immediately bring the comfy, fireside feeling that we all enjoy. As most of us are spending more time indoors at the moment, it’s also an opportunity to really personalise your style and get crafty.
Home-made decorations are still a big hit and the one thing this will guarantee, is that your home or gifts have a really bespoke feel – you can’t beat a little creativity! This year I have chosen a brand new ‘sparkly’ look for Christmas and it will sit beautifully in any home within any style. ‘Fairytale Frost’ is a look full of feathers, glitter, glass and glamour. Metallics, teamed with plenty of shimmering fairylights and the magic of Christmas is easily brought into your home. Once the decorations are hung and the gifts have been wrapped, the attention will turn to the Christmas table.
My choice this year is simple and stylish whilst adding a few little metallic elements to carry through my concept. A collection of candles set in votives and jars offer an ambience and creates an atmosphere fit for a feast! Simple glassware which will catch the light and a few of the tree decorations scattered around the place settings complete the look seamlessly.
