Thai chicken and coconut soup Ready in 25 minutes

SERVES

INGREDIENTS 4 level tbsp Thai red curry paste 200ml reduced-fat coconut milk 1 litre boiling chicken stock 600g skinless chicken breast mini fillets, all visible fat removed, halved lengthways 300g mangetout, halved lengthways 4 x 60g wholemeal rolls

METHOD Put the curry paste, coconut milk and stock in a mediumsize saucepan over a high heat and bring to the boil. Reduce the heat to low, cover and simmer for 10 minutes.

Stir the chicken into the soup, cover and simmer for 4 minutes. Stir in the mangetout, cover again and simmer for 4 minutes more or until the chicken is cooked through.

Divide between bowls and serve hot with 4 x 60g wholemeal rolls, if you like.

Meanwhile, to make the batter put the eggs, milk, flour, 75ml cold water and ½ tsp salt into a liquidiser or food processor and blend on high speed for 1 minute. Set aside.

Ready in 35 minutes INGREDIENTS 8 Slimming World Pork Sausages (available from Iceland) 3 large eggs 75ml semi-skimmed milk 100g plain flour 400g green beans, trimmed

Turn the sausages, evenly spacing them apart with the palest sides facing up. Quickly pour the batter into the tin and bake for 18-20 minutes or until the batter is golden and the sausages are cooked.

From the store-cupboard: Low-calorie cooking spray Preheat your oven to 220˚C/fan 200˚C/gas 7. Spray a non-stick 30cm x 20cm roasting tin with low-calorie cooking spray, add the sausages and bake for 10 minutes.

Meanwhile, cook the beans in a saucepan of boiling water over a high heat for 8-10 minutes. Drain well. Divide the toad between plates and serve with the green beans.

Quorn and peanut butter chunky chilli Ready in 30 minutes

INGREDIENTS 6 sweet peppers (red, yellow or orange), deseeded and cut into chunks 250g passata with onions and garlic 2 x 280g packs Quorn Totally Vegan Pieces 800g red kidney beans in chilli sauce 4 level tbsp chunky peanut butter Boiled dried rice, to serve From the store-cupboard: Low-calorie cooking spray METHOD Spray a large non-stick saucepan with low-calorie cooking spray and place over a high heat. Add the peppers and stir-fry for 5-6 minutes or until just tender. Stir in the passata, Quorn and kidney beans, then cover and simmer for 8 minutes or until everything has heated through. Stir in the peanut butter and simmer for 4 minutes or until it has melted. Stir well, season to taste and serve hot. This is also delicious with boiled dried rice. Nicola & Kyle Bride Nicola tied the knot in Dubrovnik, Croatia, and offers tips for getting married abroad How did Kyle propose? “Kyle had booked five nights away in the Maldives on a beautiful island. He arranged for a private dinner on the beach lit with candles and

lanterns. For dessert, we took a buggy to another beach that was lit with more candles, he walked me down towards the sea and got down on one knee.”

What dress did you wear and where did you buy it? “My dress was by Maggie Sottero. I love the chiffon material they use and the simple feminine details. I was getting married in the middle of summer, so I wanted a dress that was light and free-flowing. I tried on my dress in a bridal shop in Sutton Coldfield when I was

visiting the UK from Dubai. But I decided to wait for the time being and look in Dubai so I could attend the fittings easily. I ended up finding the same dress at a small bridal shop down the road from where I lived! I bought it from The Bridal Room in Dubai.“ And the accessories? “I kept it simple (I had a lot

How did you feel when you saw him up the aisle? “Overwhelmed with happiness and excitement! You want time to slow down, so you can take in the moment. Everyone is looking at you, but you’re just fixated and focused on the man you’re going to spend the rest of your life with. You plan months for this one special moment and finally it was here, I wanted to take it in as much as possible. I also had a close friend of mine singing

mixing up the colours to create a vibrant environment against a white backdrop. I mixed the colours of the bridesmaid dresses, the ribbons on white chairs, and on bunting and flowers. I also had white dream catchers (from Bali), doily mats and lace table runners. The venue

was so beautiful with the sea in the background, I didn’t want (or need) to go over the top with the details.” What was the highlight of your day? “After the ceremony, we headed to a bar that looked over Dubrovnik Old Town,

we served canapés and complimentary cocktails, wine and beer. It was relaxed, drinks flowing and the sun setting. Another highlight for me was probably the speeches – it was very emotional, but a special moment to toast those that couldn’t be with us.”

What was your best buy? “I had a lot of the details made for a small fee from suppliers I had worked with in the past. (I did end up paying the difference with extra suitcase costs and shipping!) But one thing I am glad we did spend on was a saxophone player – Kyle and


I love jazz and it added great ambience. We also created small questionnaires for our guests to fill out before dinner was served – they’re a great memory to keep with some real comical answers.” What’s your saving tip? “If you’re getting married

abroad, I’d advise saving money on the details, and spend on a venue with great views and, most importantly, food and drink. Heather & Anthony A RU S T I C W E D D I N G I N S P R I N G We love the soft hues and delicate details in this gorgeous wedding. Heather shares her story... How did Anthony propose? “He proposed in Australia! We were travelling down the East Coast in a campervan, starting in Sydney. We stopped off at a campsite on the beach, and at sunset he gave me a book filled with all our memories, and at the end it read: ‘I bet you think this is a perfect setting for the perfect question?’ I turned the page and read: ‘Only 76 ♥ L OV E O U R W E D D I N G ♥ N O V E M B E R / D E C E M B E R 2 0 2 1


joking!’. Then the last page read: ‘Maybe you should turn around...’ and he was down on one knee!” What dress did you wear? “In my mind I wanted a lace, sleeved, fitted dress, but when I tried on this style it just didn’t suit me. The final dress was just perfect –

strapless with loads of layers and lace by Pronovias. I said yes to the dress at Dotty Bridal in Holmfirth. They’re an amazing shop, they made my experience so special.” And the accessories? “I bought a veil from Dotty Bridal and wore a Tiffany bracelet and necklace.”

What did Anthony wear? “Anthony wore an ASOS suit with a Next shirt and dickie bow ties from Slater’s.” How did you feel when you saw him up the aisle? “When I walked down the aisle and saw my husband-tobe, it was a mix of emotions! I was thinking

We did both have a split second where our eyes met and it felt amazing. Us girls had had quite a calm morning in our cottage as we got ready and it hadn’t felt real that I was the one getting married but when our eyes met it suddenly

became very real and very exciting.” Who were your bridesmaids and where were their dresses from? “I had two bridesmaids, Suzannah and Lucy, a flowergirl and a page boy. The bridesmaids’ dresses were by Jenny Packham and they were beaded to follow the 1920s vibe. Suzannah and I have been friends since we trained as teachers together at

loves Lord of the Rings and I love Harry Potter so we kept a simple off white and greenery colour theme with plenty of fresh foliage. Our tables had either a Harry Potter or Lord of the Rings book as a centrepiece surrounded

by a foliage ring. Around the venue we had several subtle references to the books such as signs for Fangorn Forest and the “no admittance except on party business” Bilbo Baggins reference. For our favours each guest had a

This couple chose a wonderfully personalised day filled with pretty details. Ella shares her story... How did Luke propose? “Luke proposed on a weekend away in Amsterdam. On our first night we went for a walk around the city, got dinner

What dress did you wear? “My dress was actually a strapless Amanda Wyatt design that I bought from the Sass & Grace Boutique in Winchester. I loved the dress but had my heart set on a long-sleeve gown, so worked with the wonderful (and patient) Dala, to design my own bodice and lace-illusionsleeve piece. It’s lovely to
