H
ere we go again! Another lockdown in England, and no respite for couples all over the UK who have yet again had to postpone their weddings. I don’t think there’s much I can say to make up for your disappointment, save this: Your wedding is the most eagerly anticipated event between you and all your closest family and friends, and when it does eventually happen, it will most definitely be the biggest, best occasion for everyone! This issue we have gone a little bit crazy on the fashion (is there such a thing as too much?!). We’ve got 60+ dresses for the bride (page 10), an array of rainbow colours for your best girls (page 38), and wow-factor plus size dresses too (page 30). In addition, we have loads of great seasonal tips and ideas to steal. I loved the real life reflection feature this issue (page 58). It was so nice to look back at this year’s gorgeous weddings, and I can’t wait to see what 2021 will bring!

Tastes of home Use lockdown as a time to perfect your culinary skills, creating delicious meals for all the family
Black bean and Quorn chilli Ready in 1 hour 5 minutes INGREDIENTS Low-calorie cooking spray 1 large onion, roughly chopped 2 carrots, peeled and chopped 4 celery sticks, thinly sliced 3 garlic cloves, crushed 1 tsp ground cumin 2 tsp ground coriander 1 heaped tsp chilli powder 2 x 400g cans chopped tomatoes 300ml boiling vegetable stock 500g Quorn mince

1 red pepper, deseeded and chopped 1 orange pepper, deseeded and chopped 400g can black beans, drained and rinsed 198g can sweetcorn, drained Boiled dried rice, to serve Finely chopped fresh coriander, to serve Lime wedges, to serve
METHOD Spray a large non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the onion, carrots and celery and cook for about 5 minutes, stirring occasionally. Stir in the garlic and cook for 1 minute then sprinkle over the spices and cook for another minute. Add the chopped tomatoes, stock, Quorn,

peppers, black beans, sweetcorn. Stir well and bring to the boil over a high heat. Simmer over a low heat for about 35 minutes Serve with the rice, scatter coriander and lime wedges to squeeze over.
Beef stew and parsley dumplings Ready in 25 minutes plus 9 hours in the slow cooker

INGREDIENTS Low-calorie cooking spray 750g lean stewing beef, all visible fat removed 1 large onion, roughly chopped 4 garlic cloves, crushed 600ml boiling beef stock 1 tbsp tomato purée 1 tbsp Worcestershire sauce 2 bay leaves 300g Chantenay carrots, scrubbed and roughly chopped ½ large swede, peeled and cut into bitesize chunks 2 tbsp fresh thyme leaves 50g plain flour 25g vegetable suet 2 tbsp chopped fresh parsley, plus extra to serve Fresh green vegetables, to serve
METHOD Spray a large non-stick frying pan with low-calorie cooking spray and place over a high heat. Brown the beef in batches to seal in the flavour and transfer each batch to the slow cooker pot with a slotted spoon. Add the onion and garlic to the frying pan and pour in the stock, tomato purée, Worcestershire sauce and bay leaves. Bring to the boil then reduce the heat to low and simmer for about 5 minutes, scraping up any tasty crispy bits. Season with freshly ground black pepper and pour the mixture all over the beef. Cover and cook on low for 7½ hours. Increase the heat to high and stir in the carrots, swede and thyme. Mix together the flour, suet, parsley and some seasoning. Stir in 2-3 tbsp cold water and mix well to form a soft dough. Divide the dough into 8 pieces and shape into equal-sized patties. Lay them on top of the stew, cover and cook for 1½ hours.
Scatter over the extra parsley and serve hot with fresh green vegetables. Don’t have a slow cooker? Put the browned beef and the onion mixture into a casserole dish, stir in the carrots, swede and thyme, cover and cook for 2½ hours in an oven preheated to 160°C/fan 140°C/gas 3. Make up the dumplings, arrange on top and cook uncovered for another 20-25 minutes. Scatter the spring onions and serve with the salad.

INGREDIENTS 2 large parsnips, peeled and diced 2 large potatoes, peeled and diced 1 large carrot, peeled and coarsely grated 2 tbsp finely chopped fresh tarragon 100g fat-free natural fromage frais
1 large leek, thinly sliced 300ml boiling chicken stock 4 cooked skinless and boneless chicken breasts, cut into bite-size chunks 180g shredded cooked lean ham hock (5% fat or less) 1 level tbsp wholegrain mustard
METHOD Cook the parsnips and potatoes in a saucepan of lightly salted boiling water over a high heat for 10 minutes or until tender. Drain well and mash until smooth. Stir in the carrot, tarragon and 2 tbsp fromage frais and season to taste. Meanwhile, put the leek, stock and chicken into another saucepan and bring to the boil over a high heat. Cover, reduce the heat to low and simmer for 10 minutes or until the leeks are nice and tender. Preheat the grill. Remove the chicken mixture from the heat and stir in the ham hock, mustard, Parmesan and remaining fromage frais. Season to taste and divide between 4 individual pie dishes (or 1 large ovenproof dish). Spoon the mash on top, smooth over with a fork and grill for 5 minutes or until golden and crispy. Serve hot with your favourite winter vegetables.
