Sweet and sour chicken skewers Ready in 25 minutes INGREDIENTS ½ tbsp tomato purée ½ tbsp dark soy sauce ½ tbsp white wine vinegar ½ level tsp sweetener granules A pinch of garlic salt ¼ tsp Chinese five-spice powder 1 large skinless and boneless chicken breast, cut into bite-size chunks Low-calorie cooking spray 100g prepared fresh pineapple,
cut into bite-size chunks 1 large red pepper, deseeded and cut into bitesize chunks 4 spring onions, cut into short lengths Shredded celery, to serve METHOD Mix the tomato purée, soy sauce, vinegar, sweetener, garlic salt and five-spice powder in a bowl. Stir in the chicken.

Spray a large non-stick frying pan with low-calorie cooking spray and place over a medium heat. Lift the chicken chunks out of the marinade, shake off the excess and fry for 10 minutes, turning them now and then until cooked through. Add the remaining marinade to the pan, increase the heat slightly and allow the mixture to

bubble and glaze the chicken for another 3-4 minutes (the extra marinade needs to be completely cooked). Transfer to a plate and leave to cool. Thread the chunks of chicken, pineapple, red pepper and spring onions on to 4 skewers. Put the skewers into a lunchbox, add the celery in a sealed pot and chill overnight. Eat the next day.
Jumbo scotch eggs Ready in 45 minutes
SERVES

INGREDIENTS 2 medium eggs* 2 shallots, finely chopped 4 back bacon rashers, all visible fat removed, roughly chopped 4 Slimming World Pork Sausages, thawed 2 tbsp chopped fresh parsley 1 tsp chopped fresh sage ½ cucumber, peeled into ribbons with a peeler, to serve Salad, to serve METHOD Preheat your oven to 180°C/fan 160°C/ gas 4. Lower the eggs into a saucepan of boiling water over a high heat and cook for 9 minutes. Drain, cover with cold water and leave to cool, then peel and set aside. Meanwhile, put the shallots and 1 tbsp water in a small saucepan over
a medium heat. Cover and cook for 5 minutes or until soft. Uncover and continue to cook until all the water has gone, then leave to cool. While the shallots are cooking, put the bacon in a small food processor and process until finely chopped using the pulse button. Tip the mixture into a bowl. Remove and discard the skins from the sausages and add the sausage meat to the bacon along with the parsley, sage, cooked shallots and some seasoning. Mix well with your hands. Divide the sausage meat mixture in half and roll into 2 balls. Lay a ball of the sausage meat on a sheet of cling film, lay another sheet of cling film on top and roll out into a disc about 16cm across. Discard the cling film and wrap the sausage meat discs around the eggs, pressing and smoothing the edges together until the egg is completely wrapped. Line a small baking tray with non-stick baking paper. Put the Scotch eggs on the tray and bake for 20 minutes or until
lightly golden and cooked through. Leave the eggs to cool, then cover and chill (they’ll keep for 2 days in the fridge). On the day you want to eat, pack into lunchboxes with the cucumber ribbons and serve with salad. *Pregnant women, the elderly, babies and toddlers are advised to choose eggs showing the British Lion stamp if eating raw or partially cooked eggs.
Thai prawn bites Ready in 20 minutes

INGREDIENTS 2 garlic cloves, finely chopped 1 small medium-hot red chilli, deseeded and finely chopped 2cm piece fresh root ginger, peeled and finely chopped 1 tsp dark soy sauce ½ tsp Thai fish sauce (nam pla) 200g large raw peeled prawns, thawed if frozen 2 large spring onions, roughly chopped 2 tbsp chopped fresh coriander 1 medium egg white Low-calorie cooking spray 1 tbsp lime juice ½ level tsp sweetener granules Long-stem broccoli florets, to serve Sliced radishes, to serve
sealable pot, mix well and seal tightly. Blanch the broccoli in a saucepan of boiling water over a high heat for 1-2 minutes. Drain and refresh under cold running water. It was on 4th November 2018 on a very dull and wet Torcross beach in Devon. I had been patiently waiting for him to pop the question for quite a while and previously told myself that if he didn’t then I would do it on Torcross beach while we were away for my birthday. A beautiful, traditional wedding in somerset, bride Rachel shares her story with us... What dress did you wear? “I bought my dress from Cardiff Bridal Centre, who were fantastic. I thought I had an idea about what kind of dress I’d like, but I had
a completely open mind, too. As it happened, I fell in love with the second dress I tried on! It also happened that it was a sample dress in the sale, so it was bought
for an amazing price too, and knowing that was the actual dress I would be wearing also felt amazing. Cardiff Bridal had it cleaned and stored it until the big day, too. I bought the dress eleven months before the wedding, and it didn’t require much alteration either, so it was obviously meant to be!”

What did Jim wear? “He wore his British Army Number 1 uniform for the wedding. My two bridesmaids were Jess and Sarah, who both got married last year, and were a
huge help leading up to the big day. Both ladies were originally friends of Sharon, but over the years they’ve become lifelong friends, too, having enjoyed many a night on the town when we were all single! They wore pistachio dresses from Cathedral Belles of Worcester. Our beautiful flowergirl was Chloe, who was Jim’s best man Owen and wife Julie’s daughter, and she was an absolute star.”
What was the highlight of your day? “There were so many highlights I’m not sure I could pick one! Amongst them would be the amazing speeches from my husband, and also Dave, my father-inlaw. My Matron of Honour gave a speech and obviously Jim’s best man Owen, did a brilliant job. The first dance was also incredibly emotional, in fact the whole day was. One night, months before the wedding,
we’d drunkenly decided it would be a good idea to use a friend from the village, Graham, and his tractor to take me and the bridal party to the church, and it was the best decision ever! It was huge fun and meant we all got to the church together. Another highlight was seeing old friends, and Jim meeting up with many old army friends from near and far. It was a real village affair – it felt like a royal wedding!”

We went there for my 30th birthday, which Dan gave me as a surprise Christmas present. We arrived earlier that day and went for a lovely meal at an amazing restaurant, then after the meal he insisted we went for a walk into Central Park. When it comes to weddings, flowers are nothing new, but this year they will start to spring up in unexpected places. Did you know that if you decide to wed ‘out of season’ (Spring/Summer) you could save an absolute fortune? Opting for less popular Autumn/Winter celebrations could as much as half your venue costs, as well as a bunch of suppliers. Other ways to keep these costs down? Wed during the week as opposed to Friday-Sunday, and you will instantly make savings. If you’re not particularly suspicious, Friday 13th is always a date that is regularly available and a lot cheaper too, as is Halloween, and in general, January is not popular despite being a beautiful month!

Prices can be toe-curlingly high in some instances, but when you consider that your photographer is going to create the lasting memories of your wedding in the form of a beautiful album for you to treasure the rest of your lives, every penny seems worth it. Make the most of your photographer on the day, too, buy getting them to help orchestrate guests, pointing them in the right direction and advising them when to head over to the wedding breakfast etc.
