Whisk the soy sauce and lime juice together and stir in the ginger and spring onions. Cover and leave at room temperature for the flavours to develop. Preheat the grill

to medium-high. Put the salmon chunks on the grill pan and grill for 5-7 minutes or until cooked through and just firm to the touch. Scatter over the shredded spring onions and serve warm with lime wedges, the dipping sauce and cocktail sticks.

Minted courgettes with houmous

SERVES

Ready in 25 minutes

METHOD Place a griddle pan over a high heat. Chicken breasts with two oriental dips SERVES

Ready in 30 minutes, plus resting INGREDIENTS 2 garlic cloves, halved 4 skinless and boneless chicken breasts 250g dried basmati and wild rice 200g sugar snap peas, roughly shredded Low-calorie cooking spray Sea salt, to serve Szechuan peppercorns, crushed Lime wedges, to serve Vegetables, to serve For the ginger soy dip 4cm piece of root ginger, peeled and grated 4 tbsp dark soy sauce A pinch of caster sugar For the sweet chilli dip 3 tbsp rice wine vinegar ½ level tsp caster sugar 1 bird’s-eye chilli, deseeded and chopped

METHOD About 30 minutes before you want to cook, light the barbecue. Rub the cut side of the garlic all over the chicken breasts, discarding any garlic left over. Cover the chicken and chill until needed. Make the dips. For the ginger soy dip, put the ginger, soy sauce, sugar and 1 tablespoon of boiling water into a small bowl. Whisk well and set aside. For the sweet chilli dip, put the vinegar into a small bowl with the sugar and chilli. Stir well and set aside. Cook the rice according to the packet instructions, adding the sugar snap peas for the final minute of cooking. Drain, tip into a serving bowl and keep warm. Meanwhile, spray the chicken with lowcalorie cooking spray and cook over a direct medium heat for 10-12 minutes or until cooked through, turning once. Set aside to rest for 10 minutes. Slice the chicken thickly and arrange on a platter with the dips, salt, Szechuan peppercorns, lime wedges, sugar snap peas and rice plus your favourite vegetables.

This beautiful wedding in Austria has us in awe! Real bride Laura tells us her lovely story... How did Alex propose? “Alex proposed when we were on holiday in Spain! I actually went with my parents on a holiday home hunting trip, and Alex came over for a long weekend. Alex and I went on a kayaking trip on the most beautiful aquamarine lake (Embalse de La Pedrera) and we stopped off for some lunch, where Alex 76 ♥ L OV E O U R W E D D I N G ♥ M A Y / J U N E 2 0 1 9

got down on one knee as I turned around for a photo! I was a bit grumpy before that as Alex refused to join me in covering ourselves with mud from the lake, which is apparently great for your skin. Turns out this was because he had a ring in his pocket and couldn’t risk losing it!”

What dress did you wear? “It was a Mark Lesley dress, which I bought from Creatiques in Southsea, Portsmouth. Shopping there was a lovely experience that I shared with my chief bridesmaid and mum, and I definitely knew it was the one as soon as I put it on!”

And the accessories? “I wore a feathery shrug, which I bought from Creatiques, a headband from Ivory & Co, white sparkly Doc Martens boots from Schuh (which I added some ivory silk laces to), and some thermal leggings under my dress for the skiing part of the day from M&S!”
