Dive into this marinated, grilled chuck steak paired with flavors of the Mediterranean. Served with seasonal grilled vegetables.
Combine marinade in a small bowl. Place beef Chuck steaks & marinade in food-safe plastic bag; turn steaks to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.
In a medium size bowl toss zucchini & mini bell peppers with 1 teaspoon olive oil. Place vegetables on grid over medium heat. Grill 3 to 5 minutes on each side. Remove from grill and set aside. Once slightly cooled slice zucchini into 1/4 inch slices and set aside.
Remove steaks from marinade; discard marinade. Season each side of the steak with 1/2 Tablespoon of spice mix. Place steaks on grid over medium, ash-covered coals. Grill, covered, 3 to 4 minutes (over medium heat on preheated gas grill, 3 to 4 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Remove from the grill and season with salt, as desired. Serve alongside grilled vegetables.

We’re kicking off the summer grilling season celebrating May Beef Month across Illinois! From local beef producer activities to promoting beef on menus statewide, Illinois is “beefing it up” all month long.
For most of us, we enjoy beef all 12 months of the year, but May Beef Month brings the perfect opportunity to celebrate our business and our products and share our stories as beef producers. With May also being the unofficial start of the summer grilling season, cook outs and family gatherings around the barbecue pit are inevitably at the forefront of everyone’s mind (unless you are planting, that is on the forefront of your mind). I do not know about you, but for me the image that comes to mind is a juicy hamburger poolside or a sizzling grilled steak at sunset.
There is no need to remind you of the satisfaction beef brings to the dinner table, let alone a homegrown beef product, but Beef Month is a time for our industry to shore up the demand for beef and remind consumers of what we bring to the table – literally. As producers, we are working hard to provide the best product we can, all the while providing for our families, tending to our livestock, and being stewards of the land. There is such a valuable story to share here with consumers.
To celebrate May Beef Month this year, we are encouraging you to share your story and how you are celebrating beef this month, and every month. Take to your Facebook page with a picture of your farm or family feeding your cattle or enjoying a moment around the grill. Share with your community the value and versatility of beef, and your dedication to cattle and the land we raise them on. Don’t forget to tag us in your post, too.
