How to Stay in the Honeymoon Phase? By Amina Moustapha Falling in love is a tremendous experience, but no stage of it can compare to the “honeymoon phase”. It’s the state of being infatuated and in the throes of what researchers call fervent love. It’s a condition of zealous longing, desire, and attraction. But alas, in time the butterflies wear off, the passion starts to dwindle, and the cute sweet nothings sound, well, less cute and sweet. You find your relationship morphing into a less impassioned blend of affection and connection. Scientifically, this is a normal and expected shift, so you shouldn’t worry. Here’s how to beat the post honeymoon blues. TAKE THE ADVANTAGE OF SURPRISE Familiarity doesn’t breed disdain but it definitely breeds indifference, so keeping the mystery alive is key. Couples who participate in compelling activities together report greater satisfaction in their relationships than those who engage in pleasant but typical activities. When something novel occurs, we tend to pay attention to appreciate the experience and remember it. So always throw your partner for a loop. IS IT TRUE THAT MEN ARE MORE ATTRACTED TO

I

s it true that men are more attracted to strong independent women, as opposed to vulnerable dependent ones? Is it that simple? Sadly, when it comes to matters of the heart, it is neither that simple nor straightforward. Do women come in only two opposite types? The strong and the vulnerable? The independent and the dependent? The shrewd and the naïve? Can men be summed up into those who are attracted to the strong independent shrewd women, and those who are attracted to the vulnerable dependent naïve women?

Let’s discuss women first; can a woman start off as vulnerable and dependent, then, depending on how her life unfolds, gain more strength and grow more independent? Can a woman be forced into independence, and then grow to enjoy it? Can a woman abandon many of her independence rights willingly, if she feels secure enough? Can a woman be vulnerable with one man and totally callous with another? Now let’s have a look at men; does a man always get attracted to the same type of woman, or does he want to try being in as many relationships with as many women? Does a man truly want to be in many relationships? Is there a difference between the woman a certain man might get attracted to, and the woman that same man would choose to get married to? Can a man’s preference in women change over time and out of experience? The nature of human beings, in general, is quite complex. We are an ever-evolving creature, if we allow ourselves to interact with the events in our lives – the way tea leaves interact with boiling water. If we allow ourselves the space to learn from our mistakes, the comfort of living in one’s own skin, and the confidence of weeding out toxic relationships from our lives, we will evolve. Evolving, in this sense, means that our self-awareness increases as well as our awareness of other people’s needs. It means that we are more open to give and receive love, as well as constructive criticism. By time and experience that is truly harvested, we become better people, better partners, and better parents. This experience, that allows us to evolve, often comes with a high price! Highly evolved people have experienced at least more than one of the following: loss, grief, rejection, abandonment, illness, anger, excruciating physical pain, emotional wounds, deceit, etc. Having said all of the above in defense of human nature, let’s now think of men and women, each

on his/her own continuum. Women on a wide spectrum of dependence/independence; where extreme dependence is at one end and extreme independence is at the other. Let’s create another spectrum for men. Being attracted to extremely vulnerable women at one end and being attracted to extremely independent women at the other. A man might start off in his relationships thinking that he would like to be with a woman who resembles his mother, for example, or is the exact opposite of her. As the relationship progresses, his needs might change or his real needs might surface. He might also encounter another woman who is very different from that image he fancied. The attraction to that other woman might leave him changed, intimidated, or confused. The point here is that it is not fair to simply state that men are attracted to certain women more than others. It is not fair to assume that all men are the same, or that the same man will always have the same requirements in a partner. It is also unfair to say that one type of women is better than others, or to ignore the fact that a woman’s character is molded by her experiences in life. Having said all of that, many men in conservative societies are attracted to strong independent women the way bees and butterflies are attracted to colorful flowers. However, these men feel intimidated by such independence, and they feel safer and more secure in a relationship with a woman who needs less maintenance. Among these conservative men, those who are on the liberal end might choose to be friends with, or do business with, the strong independent woman they are attracted to. Those who are inclined towards the extreme conservative end might simply show aggression, lack of respect, and aversion towards those women who represent everything they resent about a woman.

The Difference Between Dating a Boy and Dating a Man by Amina Moustapha

In one of the cheesiest romantic comedy movies of all times, “Valentine’s Day”, Jennifer Garner’s character said one of the most significant lines of all times. “He is not just a guy, he is a man.” Let’s ignore the fact that she was talking about Patrick Dempsey who is drop-dead gorgeous, and pause to reflect on what distinguishes a boy from a man. Maturity is mistakenly associated with age, but that’s nowhere near the truth. It’s not measured by age; it’s much deeper than that. Maturity is the way you see and understand things. The way you consider things. The way you communicate. The way you react. The things you value. In a nutshell, age has nothing to do with being a mature man, it’s merely a number—actions define who he really is. Everyone grows old, but not everyone grows up. To all the ladies out there, if you seek a man, you have to stop chasing the boy. So to draw the line in the sand and outline differences between how boys act when dating, and how men act when dating, here are a few distinct contrasts. 1. A boy makes promises he knows he cannot keep. A man has integrity. A real man knows that there are three things you should never break; promises, trust and someone’s heart. People with good intention make promises, but people with good characters keep them. And that’s what tells the differences between a man and a boy. If you’re dating a boy, it’s only a question of time until he breaks a promise. Eventually, this will shake the trust between you. And broken promises are worse than lies because he gave you hope for something he wasn’t sure he could give you, so you will end up with a broken heart. On the other side, a real man is the person who has integrity. His words aren’t cheap, because they are always backed up with action, with fulfilled promises.

2. A boy bottles up his emotions. A man admits when he needs you. One of the biggest misconceptions about the

characteristics of a real man is that he should have no weaknesses, and could handle everything that comes his way without needing help. If so, you better start looking for this guy in the Marvel world, between the superheroes and the Avengers! We all need each other; that’s what makes us human. A real man knows this as a fact; a boy considers it weakness and hides his emotions from you. A man admits when he needs you and when he needs to talk, even if it makes him uncomfortable, because he believes you two are team players who can’t do without each other. That’s the person you will turn to when you need help; you won’t shy away from leaning on him when needed because you know he will be there.

3. A boy cares too much about looks. A man cares about character. Physical attraction plays a major role in a relationship, but if it’s all there is to a relationship, then let me break it for you, your relationship is a house of cards that will collapse sooner or later. A real man understands that he is not involved with a Barbie doll. He knows that everyone has good and bad days as far as looks go, and won’t hurt your feelings or love you less if your weight fluctuates or you have a bad hair day or didn’t put on some make-up. He could see through your imperfection and find the woman he loves. A boy will tease you for looking sloppy until you fix yourself back up to his standards.

4. A boy brings out the worst version in you. A man makes you a better version of yourself. Some people inspire us and some people drain us; that’s what life is all about. It’s a must that your love life be edifying. It should help you be better, and


achieve more than what you would on your own. Because love is not selfish. When you truly love somebody, you want to help them be greater; even if that means that they might overshadow you one day. When your partner feels insecure about your success, he is a boy. When he doesn’t inspire you to do better, he is a boy. A real man isn’t afraid to let

you outshine him. Because to him, you’re already his biggest trophy in life, you are meant to shine. You will meet lots of boys in your life, but when you do find a man, a man who completes you, who doesn’t just tell you that he loves you but backs it up with his actions, he is to keep, ladies.

We all know how men perceive women when they first meet them. They scan their bodies, face and how they dress and upon their scanning, they judge whether this woman is their type or not. But what about how men judge other men? They don’t judge each other in the same way they judge women. People always talk about how women perceive other women and that there’s always a hint of jealousy in the way they deal with each other, but not enough people talk about how men perceive other men and what aspects do they judge each other by. We decided to activate our detective mode and brought you answers; turns out that men judge other men based on these 7 aspects. 1- BY HOW HE TREATS OTHER GUYS The bro code is sacred, and if one guy breaks even one of its laws, then this guy is doomed. That’s because guys take their bro code very seriously and will do their best to uphold all of the bro codes. “The bro life is like being in Jedi training camp. You must always show your bro love and be joyous when bro love is shown to you”. 4- BY THEIR ALCOHOL OR DRUGS TOLERANCE For men, a high alcohol or drugs tolerance is a bastion of masculinity and if a guy can’t hold his drink, other men will look down on him for being a lightweight. No man likes to be the guy who doesn’t know his limits and ends up annoying everyone around him because he’s drunk. Also, if a guy prefers the drinks that aren’t as purist because they’re delicious, they will ask him to stop being a “girl”. 5- BY HOW THEY DRESS Some would think that this is a 100% girl’s thing, but the truth is it’s not. Men have a rule when it comes to clothes and it’s that a guy should never be wearing tighter jeans than his girlfriend’s. No man wants to see the outline of another man’s torso and would appreciate it if they were spared that image. 6- BY GETTING MARRIED LATE/YOUNG OR NEVER GETTING MARRIED

Men will always subconsciously judge another man based on whom he’s dating. For instance, if a friend is dating a girl that is hotter than him, other men will immediately think he should count his stars and be proud of him for picking a girl who isn’t shallow. Another example is if a guy is dating a girl with no obvious good qualities other than good looks, they will judge him as a shallow misogynist whose self esteem doesn’t extend beyond the superficial.

It’s no secret that marriage is a scary concept, but for some reason, it’s scarier for the majority of guys more than it is for girls. When a guy gets married young, his friends will think that his actions are completely unfounded and that their friend must be genuinely idiotic for deciding to commit to someone for the rest of his life at such a young age, without yet having experienced enough. A guy who never gets married may feel lonely sometimes, but his friends will always tell him that he did the right thing for enjoying life without the burden of responsibilities weighing him down.

To Muhammed Emam, travelling is clearly a state of being deeply appreciated because, as he wrote in one of his travelling articles, we all need to ‘be more and do more’. Even though this mantra is easier said than done, Emam is doing his best to live up to its full potential.

Having visited countless countries (both recognized and unrecognized), Muhammed Emam sure doesn’t forget any of them. See, this aspiring full-time traveler meticulously chronicles his travels and adventures on more than just Instagram. Emam also has a website where he writes articles giving people tips, tricks, and advice on what to do when travelling, delving into topics like what applications the average traveler needs and how to deal with any situation or emergency that may arise. And he doesn’t stop at that, either. Emam makes his chronicling even more intricate by dedicating his entire YouTube channel to his travels, vlogging as he goes about different countries and cities he’s en route to or is currently visiting. If anything, Muhammed Emam is one of four travelers we have on this list, someone whose model of traveling looks incredibly fun to try.


Hamed Dowedar

Hamed Dowedar is not your average traveler, according to his words. Keeping with his freelancing job, Dowedar tries his best to travel and explore the world on a budget and, from what we’re seeing so far on his social media accounts, everything is going according to plan! If you want to follow in Hamed’s exploring footsteps but are unsure of just how intricate his plans are, you’ll be in for a treat. “I just search the Instagram hashtags for the countries I’m interested in,” Dowedar tells us. “And I write down my schedule and plan my activities in whichever country according to that. I like to keep things simple.” “Keeping things simple,” Dowedar continues “is how you make the most of each and every trip you take, even if you’re travelling locally. The only thing that you really need to do is get to know the locals of the countries you visit because they’ll always help you out in finding hidden gems, avoiding tourist traps, and getting to really see the country on a deeper level.”

Abdullah El-Shamy

Abdullah is a 23 old Egyptian who’s on his way to traveling the entire world. He already visited 204 cities in more than 65 countries. Abdullah spent all 5 years of university working in the tourism field and ended up having his own startup; he worked several jobs on the way to support his trips and save money for the trip he called an “open date trip”. At the time of writing this article, he had been on his way to Colombia, excited because the country came highly recommended. Abdullah is only traveling with an Egyptian passport and explained that if you have the Schengen and US visas, other countries will open their arms for you. Abdullah wishes to give space a visit and believes that if you really want something, you must work hard for it and never let it go out of your sight. Luckily enough, when we caught up with Abdullah he was on a trip to Central America. He says, “I loved Costa Rica with all my heart and had a great time there, but the culture is not that helpful to foreigners. No one waits for you to cross the street; hitchhiking there is also nearly impossible. However, it’s a great place full of lots of amazing tropical beaches. Pura Vida my friends, but I mean it from the bottom of my heart and I’m willing to help anyone. Traveling isn’t easy and not all of it is what you see in the pictures, but you still learn a lot and build who you are.”

“My story with traveling started in 2012 inside Egypt when I first bought my car. I was curious to take it and explore Egypt, not to mention that my exploration cruises resulted in me crossing 60,000kms with my car in only 8 months. It was very serious. One day I’d be going to a café and find myself changing my route and going to Dahab or Saint Catherine. I remember that I was especially amazed by Fjord Bay in Nuweiba!

During my short travels in Egypt, I came to realize my fascination with nature and solitude. I liked beautiful places that didn’t have a lot of tourists and I started searching for similar places. After I explored almost every place in Egypt, I felt the need to explore beyond my country borders, so I started googling different places abroad and getting hooked on countries with beautiful waterfalls, mountains, valleys, beaches and diverse people. I wanted to know more about the different cultures in the world, and it frustrated me that I was stuck in my own bubble unable to explore and see those places for myself. By 2016, I had already taken the decision to travel abroad. I sold my car to save on gas and maintenance fees. I literally started saving on every penny. I stopped going to restaurants and cafes, because they were no longer as important as traveling.


The first time I traveled abroad was on my birthday, 22nd of May 2016. I was very lucky that Georgia was my first country to visit because its people are very nice and respectable and the nature is very beautiful. Georgia will always be my favorite country; it still is. I’ve visited 4 times already. The second country I visited was Tanzania, and that was one of the craziest decisions I’ve ever made. I was surfing the internet and I found a very cheap ticket on Skyscanner so I booked it 11:00 am, packed my bags and traveled at 7:00 pm that same day. You’ll spend most of the money on hotels and luxury transportation, but if you travel on a tight budget you get to arrange everything by yourself with the least costs possible. You rely on public transportation, host families or cheap student dorms. You can also use couch surfing and find locals who are willing to host you for no money at all, which is a great idea because it allows you to really get to know the people and experience their cultures and habits for yourself. I also do a lot of hitchhiking and whenever I am unable to hitchhike, I walk up to 20 kilometers. However, hitchhiking works 90% of the time!

As for food and beverage, I eat street food like any local person. It all depends on investing your money in the right place. For example, instead of spending 50$ on something uselesslike a souvenir or riding an elephant where I’m only going to feel satisfied for an hour or two, I choose to use that money to extend my stay in this country for 5 extra days and do free things like snorkeling. There are some crucial things where you can never budget like for example taking all the necessary vaccinations, medications and precautions, and these differ from one country to the other. The most important thing while traveling for me is to remain healthy to be able to move around, explore and enjoy any destination as I please. The bottom line is, I try as much as I can to invest my money where it matters. What people would spend in a week, I try to survive with for a month. I would like to add that I’m very curious about all the countries of the world, and I dream of the day where I will have visited the whole world. I’m passionate about everything that this world offers; the cultures, the people, the nature and monuments.”

Young & Talented: THE MEN OF 2020 by Aya Aboshady, Nada Abdelkader and Nanise Mohamed April, as we all know, heralds the coming of Spring, a season of a much-needed rebirth. With every Spring, we experience something new, something that gives us a look into the possible future with dashes of hope generously sprinkled in. This April, we decided to give you the stories of four young and talented Egyptian men, who show us just what rebirth looks like.

Khaled Mounib

Khaled Mounib is the nephew of the late singer and actor Amer Mounib. Other than the very obvious resemblance in features; like his late uncle, Khaled has a very nice and distinctive voice. Despite being in his early 20s as well as a current student at the American University in Cairo (AUC), Mounib has caught the eye of so many people already. The young talent was introduced to the public through Egyptian lyricist and creative director Tamer Hussein, after he posted a short video of him singing “Gait Ala Bali” by Amer Mounib on his social media platforms. And needless to say, it went viral for all the right reasons. Mounib’s first single titled “El-To2l Mazag” was released in September 2018. And in November of the same year, he released an emotional song titled “Mafeesh Kalam Yet2al” in memory of his late uncle. The song, along with the video, grabbed so much attention and touched so many hearts. However, the young talent kept getting bigger as he released another single at the beginning of 2019 with the name “Arfa Nafsaha”. That being said, so far, nothing has come close to the 30 April 2020

success of his latest single “Naweely 3ala eh”. The upbeat love song was released in late 2019, and people are still hooked on it till now. Not to mention how they kept raving about it all over social media when it was first released, especially after Egyptian megastar Tamer Hosny invited Mounib to perform on stage in one of his North Coast concerts, just days after the release of the song. Since then, Mounib has been interviewed by countless prestigious media outlets and TV programs, with a fanbase already starting to rise in his name. We’re pretty sure the star in the making definitely has a bright future ahead, and that all this attention and early success is just the beginning of a promising career!

Khaled Anwar Being Egypt’s next big star and teen heartthrob is not what most of us would ever expect from life, but Khaled Anwar, it seems, has always had big plans for himself. Even as a young preteen, Khaled’s love for acting was slowly burning underneath, waiting for the right time to make itself known. In secondary school, the timing was nothing short of perfect. Previously having a short-lived interest in engineering, Khaled decided to venture out of his comfort zone and look for creative outlets, like music and drama, and eventually signed up for an audition at his school’s theater. And just like all important moments when time seems to stop, that moment signaled a shift in the then-teenager. Just like that, he’d had an inkling of what he wanted to become. An actor—no, an international actor, who didn’t dare dream to do anything else for the rest of his life. He’d finally found his true calling. For many aspiring young actors, school programs, in both high schools and universities, are the first major step to achieving their dreams. Khaled was no different. After the very first play, Khaled joined every single school play he could get his hands on. Later on, he also joined in many acting workshops, both in Egypt and abroad in the Czech Republic. Like many Egyptian parents, Khaled’s parents worried about his new career-path for a while before eventually fully trusting him into taking his own life in his hands and gave him their unwavering support, proudly attending all his school plays and performances. 32 April 2020

But school plays weren’t the end-all be-all for the young actor. Graduating high school, Khaled soon applied to the Higher Institute of Dramatic Arts to fully dedicate himself to perfecting his craft. As fate, with dashes upon dashes of luck, would have it, Khaled Anwar’s life changed the day director Sherif Ismail saw him in a Czech-based play by chance. After this encounter, the director pointed the actor to his new collaborative film, 2015’s The Fourth Generation, and it’s sufficient to say the rest was history. Two years afterwards, Khaled caught everyone’s attention again with his role as Trika in the hit Ramadan series Hatha Al-Masaa, stunning audiences with the meticulous attention to detail often found in method actors like himself. Successes followed in forms of TV roles like the posh Marawan from Ka’eno Emabreh and striking Eslam in Abo Omar El-Masry. Of course, while mentioning all of this, we cannot forego Khaled’s role of a lifetime as Zizo, Adel Emam’s troubled grandson in Awalem Khafeya, where he learned a great deal from the renowned actor and further sculpted his growing acting skills. Rising to greater lengths and prominence each year, Khaled is quickly making a name for himself in ensemble dramas, appearing on the youthful Zodiac series as well as Menna Shalaby’s Fi Kol Osboo’ Youm Gom’aa and Mamlaket Iblees while also signing up for a couple of film projects, ready to hit the screens in 2020’s many cinema seasons.


Ramadan Sobhi Truman Capote once said that failure is the condiment that gives success its flavor and anyone who had achieved success after a longtime failure will certainly agree. Failure is a harsh necessity that helps us learn from our mistakes to grow. Of the many people who can vouch for these words, Ramadan Sobhi is at the top of the list. Born in 1997, Ramadan Sobhi was raised in Cairo to a typical Egyptian family, wherein a love of football was instilled in him since a very young age. That love of football was so ingrained into Ramadan that he’d tried out for the renowned Ahly SC academy and got accepted by a board impressed with his raw talent. Skill burgeoning, Ramadan soared through the youth ranks until he’d proved himself so thoroughly the club had no choice but to simply put him on the first team’s starting lineup. All at 16 years of age.

After impressing as a teenager with potential to become Egypt’s next Football Hero, Ramadan was on the path to become a cautionary tale. Instead of becoming another Mohamed Salah, Sobhi almost turned into a Amr Zaki. Keyword: almost. Ramadan returned to Ahly in January 2019 and quickly started turning things around for himself. He proved himself again and regained the quality that destined him for stardom. He then extended his loan, dead-set on being the best version of himself he could be. In November of 2019, Ramadan made that a reality. After a humiliating AFCON 2019 exit for Egypt’s first team, not many held hope for the U-23s in their tournament. But Ramadan held his head up high and captained the team to a ticket to Tokyo 2020 Summer Olympics and championship title—Egypt U-23’s first title— even scoring the winning goal and receiving the best player of the tournament award.

After an impressive debut in the 2013-14 Egyptian League match against Ghazl ElMahalla, Ramadan began proving himself through a swirl of skill and speed. Soon enough his prowess even attracted attention from international sides, like Atlético Madrid. Not that Ramadan let that attention sway him just yet. On the contrary, he focused his attention on his game and established himself with Ahly’s first team, helping the club win the league title in its 2013-14 and 2015-16 campaigns. European attention didn’t just end with Atlético’s, though. Soon enough others, like Arsenal, RB Leipzig, Roma, and Sampdoria, kept their sights on Ramadan as well and he had to take them into consideration. However when Ramadan did end up choosing a foreign club, his choice was doubted. In the summer of 2016, after becoming engaged to Habiba Ekramy, Ramadan signed to England’s Stoke City for a fee of 5 million pounds. And here is where the string of failures begins. To say that Ramadan Sobhi failed to establish himself at Stoke City would be an understatement; he’d simply gotten zero chances before a foreseeable relegation came to sink the club under. After which, Ramadan joined another struggling side in Huddersfield and still couldn’t make the cut.

This is why, whether your man is into fitness and sports or not, we compiled a very easy 15-minute daily workout routine for you to share with your man so he can easily hop on the fitness train, if he still hasn’t. 1- PUSH-UPS Working on the upper body is surely tiring yet so worth it. However, push-ups are not that hard to do! Not to mention how they help with toning the body, especially the chest area as well as the shoulders.

2- ONE MINUTE PLANK Yes, this workout is surely known as the 60 seconds of torture. But it’s so useful. Especially for strengthening the muscles in both yours and your man’s back!

3- SIDE LEAP A side leap is such a fun move to perform. Side leaps are just like jumping jacks but to the side. They leave you out of breath but they definitely get the job done, as they burn a lot of calories and actually boost your aerobic fitness.

5- SEATED DUMBBELL PRESS A little weightlifting won’t hurt anybody, right? The seated dumbbell shoulder press is a good workout to tone up the upper chest as well as the triceps. And doing this exercise in the seated position is much easier than standing up because there would be no need to stabilize the core!

It’s Ramadan 2020 Issue and Men’s Issue at the same time, of course I know better than to ask men to take over the Iftar service – God forbid! But I thought of something else that will strongly relate to them and hopefully make them appreciate our domestic efforts a bit more. It entails saving a bit of money - well not really a bit - as by nowadays standards if you attempt to host an Iftar gathering at one of the trendy fine dining venues, I’ve actually managed to save them a fortune! So, my Iftar theme for this special Ramadan is a fine dining menu curated at your home kitchen. You will see that it’s quite simple to execute, all you need is to just invest in the ingredients which maybe a bit pricier than your regular grocery shopping list, nevertheless you would still be saving a massive amount of money. Also, I see it as a special way to treat your guests by skewing away from the customary dishes served to them day in and day out throughout the holy month; a win-win situation for everyone! 36 April 2020

Roasted Beetroot Soup Serves 6 Soup plays an important role on our Iftar table; I always like it to be light and nutritious. This soup ticks all the boxes, a light superfood soup with a vibrant beautiful colour that promises a cheerful and memorable dining experience ahead! SHOPPING BASKET: 4 medium beets – 1 large onion, chopped – 1 large carrot, chopped – 1 celery stalk, chopped – 2 garlic cloves – 3 tbsp vegetable oil – 1 beef/vegetable stock cube – 150ml single cream - 2 tomatoes – 2 tbsp sour cream (crème fraiche) – handful of chives, finely chopped - salt & black pepper. STEPS: 1. Wrap the beets in foil paper and roast in oven until soft; it can take up to 1 hour. Also, cut tomatoes in quarters, drizzle with oil and sprinkle with chopped garlic and roast in oven too. When beets are cooked, peel and cut into chunks. 2. In a large pot, sauté the onions then add all roasted vegetables plus the carrots and celery. Cover with stock (stock cube dissolved in about 3 cups of kettle water), then simmer until carrots are soft. 3. Blend all ingredients until smooth texture, season and add the cream; bring to the boil. Let it cool down until warm then garnish with a dollop of sour cream and chives when served.

Beef Carpaccio Serves 6 I know that it can be a bit unsettling when you attempt making such a delicate raw dish by yourself. But you’ll just see that it’s an easy and straightforward process -at least you can relax about its hygiene when prepared! SHOPPING BASKET: 500g beef fillet – 3 tbsp olive oil or truffle oil – 50g Dijon mustard – 2 garlic clove - ½ cup parmesan shavings – ½ tsp thyme - 50g rocket/arugula leaves – 1 tbsp capers - sea salt & coarse black pepper. STEPS: 1. Whisk the oil, Dijon mustard, thyme and garlic until well blended. Season with salt and pepper, then smother the beef fillet with this mixture. 2. Wrap the beef fillet tightly in cling film, then put in fridge for about 20 mins. Unwrap the beef and sear quickly in a hot pan with a bit of olive oil. 3. Wrap again in cling film and freeze for about an hour, this will help you in slicing the beef. 4. Remove cling film and thinly slice the beef with a very sharp fillet knife. Lay the beef slices between 2 plastic sheets and flatten them out with a rolling pin. Keep in fridge until ready to use. 5. When serving, garnish with rocket leaves, parmesan and capers (on the top). Drizzle with olive oil or truffle oil. April 2020 37

For many generations back in the Arab world, candied chestnuts or ‘Marron Glace’ has always been regarded as an opulent treat, not sure if it had the same allure in the west though. You may also know how my mind usually works when assembling a good salad; contrast of flavours and textures is the way forward here top that with a luxurious element - a salad fit for a fine dining menu is in the making! SHOPPING BASKET: 200g marron glace, roughly chopped – 200g Brie cheese, torn by hand – 100g walnuts – 150g rucola leaves, washed & dried – 2 tbsp Balsamic vinegar 3 tbsp extra virgin olive oil – ¼ tsp sea salt. STEPS: 1. To make the vinaigrette, whisk the olive oil, balsamic vinegar and salt together -set aside. 2. In a large salad bowl or platter, put the dried leaves then scatter the rest of the ingredients on top. 3. Finally when serving, drizzle your salad with the balsamic vinaigrette.

This is a sophisticated chicken dish and it is not as complicated to make as it looks! I played along with the ingredients and came up with a fusion between Chicken Saltimbocca and the classic Ballotine. It really surpassed my expectations glamorous and delicious! SHOPPING BASKET: 4 large chicken breasts, boneless – 3 tbsp olive oil – 2 garlic cloves, minced – 1 cup chicken stock – 1 tbsp butter – 1 tbsp flour - 400g fresh baby spinach leaves – 2 fresh buffalo mozzarella balls, hand torn – 100g sundried tomatoes, finely chopped – salt & black pepper. STEPS: 1. Lay the chicken breasts and slit them open like an open book, flatten them lightly with a rolling pin then season with salt & pepper. 2. Sauté the spinach with garlic in 1 tbsp of olive oil until it becomes wilted then add the sundried tomatoes. Season lightly, stir-fry for another 1 min and remove from heat. Let it cool down. 3. When the spinach cools down, add in the torn mozzarella. Lay 1-2 tbsp of the spinach & mozzarella mix on each flattened chicken breast. Roll it up, enclosing the filling by using edible thread. Keep in fridge for at least one hour. 4. In a large hot pan drizzled with the remaining olive oil, sear the rolled chicken breasts until light brown. Arrange them in an oven dish. 5. Meanwhile, in the same pan chicken was seared, sauté 1 tbsp of flour with 1 tbsp of butter, then gradually add 1 cup of chicken stock and stir vigorously with a wooden spoon to avoid lumping. Let it simmer and add in 1 small tsp of lemon juice then remove from heat. 6. Drizzle the sauce over the seared chicken rolls in the oven dish, cover with foil and bake for 20 to 30 mins at 180. Remove thread and serve warm – Enjoy!


Baklava Mille-Feuille Serves 6

with pistachio cream

An elegant way to present a Middle Eastern staple dessert with an original twist, and the best thing that it’s not too sweet - the pistachio cream really tones it down.

Saffron Risotto Serves 6 I love colourful food and this risotto does it for me, it simply shines up your table with its glorious yellow colour. Never underestimate the power of saffron; it’s one of those magical ingredients that transform any dish, let alone a heartthrob like risotto – what a heavenly combination! SHOPPING BASKET: 1 medium onion, finely chopped – 5 tbsp butter – 2 cups Arborio or Carnaroli rice – 6 cups of homemade chicken broth or chicken stock - 1 tsp saffron threads – 1 cup parmesan, grated – salt & black pepper. STEPS: 1. In a large pot, sauté the onion in 3 tbsp of butter until translucent. 2. Stir in the risotto until well coated with the butter. Gradually, add the saffron infused broth, wait until it’s absorbed then repeat until risotto is al dente. 3. Finish off by stirring in the parmesan and remaining butter, season then remove from heat serve immediately.

PASTRY SHOPPING BASKET: 12 sheets of filo pastry, thawed – ¾ cup of butter, melted – 1 cup granulated sugar. PISTACHIO CREAM SHOPPING BASKET: 1 cup icing sugar – 2 cups roasted pistachio – 150g mascarpone cheese – 1 ½ cup double cream – ½ cup sugar syrup & 1 tsp vanilla extract. STEPS: 1. On 3 rectangular baking trays lined with parchment paper, lay 3 sheets of filo pastry, brush generously with butter on both sides and sprinkle with granulated sugar in between. Repeat this step in the other 2 trays. 2. Using a pizza cutter or sharp knife, start cutting the layered sheets into about (15 cm X 8 cm) rectangles, while the other trays are covered with a damp towel (to stop the pastry from drying). 3. Bake in a preheated oven at 180 for about 15 to 20 mins until golden crispy. Leave to cool down completely in room temperature. 4. Meanwhile, in a good food processor grind the roasted pistachios until greasy texture, then add the sugar syrup; blitz them all. 5. In a large bowl, whip the cream and mascarpone cheese while gradually adding the icing sugar and vanilla; until stiff peaks. Add in the pistachio paste, whip altogether and keep in fridge for at least 3 hours. 6. Assemble the mille-feuille, by piping the chilled pistachio cream onto one crispy rectangle, lay another pastry rectangle and repeat. So that, you end up with 3 pastry layers and 2 cream layers. Many have written at lengths about men as the focus of many campaigns and essays about emotions, their barriers, and how to perfectly be in touch with those emotions. All of what has been written was written in hopes that men, in general, would be able to soar past societal stigmas and outdated traditions to find the best versions of themselves, versions that are in tune with their true natures. One of the many books that speak about men, their emotions, and the masculinity masks that keep them from accessing these emotions, The Mask of Masculinity by Lewis Howes is undoubtedly a mustread. In this book, Lewis Howes, an athlete turned entrepreneur and podcaster, dissects his own journey from the stoic, typical macho man into a man who’s finally at peace. Some of the lessons he imparts are simply unmissable and that’s what we’ve decided to deliver to you. Locked emotions cause misery One of the most important lessons delivered in this book is that being out of touch with your emotions, and consequently your true self, will ultimately lead you to unhappiness, self-loathing, and inexplicable aggression. All of these states are covers for an all too consuming state of emptiness, which many men encounter but shelve away until it’s impossible to hide anymore. This in turn may lead them into decisions and confrontations they will end up regretting, as well as also leading them along a self-destructive path. 40 April 2020

Case in point being the book’s very own author Lewis Howes, who writes at length about being at his prime, thriving in both career and personal life on the outside while being extremely troubled, restless, and unfulfilled on the inside. There are many, many masks out there, not just one Though the book itself is titled The Mask of Masculinity, Howes goes into detail about how there are actually more than just one mask out there. According to him, there are about nine masks of masculinity and men out there aren’t limited to just a couple. These masks are named according to all the stereotypical masculine traits that men learn very early on are required of them by society and societal roles—the Stoic, Athletic, Aggressive, Sexual, Joker, Know-It-All, Invincible, Material, and Alpha masks. Howes goes into detail about how men learn to wear these masks from peer interactions from a young age, from TV shows and movies and books, and even from family and role models. They come through as a means of pinpointing what “real” men are and how they’re supposed to act, putting pressure on many men to act accordingly. Naturally, these masks become more like shackles rather than masks because the more a man wears a mask, the more it becomes him and the more he cannot escape it and loses sight of who he really is. And this is exactly how toxic masculinity works. Taking the mask off is scary but necessary Another major lesson learned in this book is about what happens after men unlearn the toxic standards they’d been raised on. What happens after they take the mask off, according to Howes. In the book, we read that it’s understandable that men may be scared or that they may feel a tad


iffy about taking off their masks and having to show their true faces to the world because they had used the masks to cope for a large portion of time. We also learn that even when it’s understandable, eventually men have to push through their fears and show their genuine natures because that’s the one way they’ll achieve peace. Howes here importantly mentions that even while encouraging the taking down of these masks, he’s not a hundred percent averse to the traits they personify. It’s perfectly normal for men to be open and vulnerable while also being humorous and athletic as long as these traits come from a place of self-honesty and genuineness. That’s when these traits are most valuable. Healing your emotions heals your relationships One very important tidbit that doesn’t go unnoticed by Howes is how this unlearning of toxic masculinity not only helps and heals men, it also heals others in their lives, women included. At the end of every chapter, Howes goes into detail about what the reader will find at the end

of every mask he had unlocked as well as mention how that will help him later on. This newfound ease doesn’t need to be the result of a journey taken alone. Men are allowed, encouraged even, to let others—mothers, fathers, sisters, brothers, girlfriends, friends, wives—in on their troubles because communication is the key to eventual healing and understanding.
