Pandoro INFORMATION: For 8 peolpe Time: 9:45 Preparation: 45 MIN Cooking: 1 Hourr Leavening: 8 Hours
INGREDIENTS: Flour: 00 430 g. Milk: 90 g. Dry brewer's yeast: 5 g. Sugar: 150 g. Egg: 4 Butter: 190 g. Vanilla extract: 2 teaspoons Fine Salt: a pinch Powdered sugar
RECIPE: 1. In a bowl, mix the flour (50 g.) with the dry brewer's yeast (3 g.), in another bowl, place the egg yolk (1), sugar (30 g.), milk (60 g.) and mix. Add the flour to the two bowls, let it rise for an hour until it doubles covered with a cloth. 2. In a bowl put the flour (200 g.), the yeast (2 g.) and mix; in the previous dough add egg (1), sugar (120 g.), butter (30 g.), milk (30 g.) and mix, let it rise for an hour until it doubles covered with a cloth. 3. In the dought add eggs (2) and mix; add vanilla extract (2 teaspoons), fine salt (a pinch), mix and add the flour (230 g.) and mix, let it rise for an hour untitil it doubles covered with a cloth, after put it in the fridge and let it rest for 12-15 Hours. 4. After let it rest for 1 hour at ambient temperature, after transfer it to a work surface with a rolling pin try to give a square; in the center place softened butter (140 g.). Fold the four corners towards the center and close well, fold the square in half, forming a rectangle roll out the dough, placeing it with a short side toward you, fold it into 3 parts, put it in the fridge and let it rest for 20 Min and covered with a cloth. After roll it out again, cut it into a square and put it in the fridge and let it rest 15 Min. 5.Then, put some butter in some walls of the mold, put it the dought and let it rest for 3-4 hours, covered with a cloth. Place in the oven and cook 160 C. in a ventilated oven for 1 hour, or in a static oven at 170° C. Take it out the ovn and decorate it with a powdered sugar.
CURIOSITY:
The name pandoro derives from Venetian linguage (PAN DE ORO), probably rich Venetians used gold leaves for embellish the bread. The Pandoro is an Italian recipe and a Christams sweet.
