Things are busy here. As you’ve seen in the updates from Joe McGuire, the clean-up work from the hurricane is still going well. The landscape is a little different as the loss of trees have opened some nice newviews.
Thepropertyservicefolkshavebeenbusywithsaltingandplowingtheroadstokeeptheeveryonesafe.
Thanks to Mendy Childress, we will have new bird houses at the dog park in February. Our hope is that thebirdswilldecidetonestinthoseandnotthedoggiebagreceptaclesastheyhavebeendoing.
Thenewbenchhasbeenorderedforthecommunitygardenandwillbeinplacethisspring.

Winter greetings from the Golf Shop. Despite some challenging weather, progress continues to be made on the golf course. Thus far, the restorations are spectacular. Many thanks to Allen Storie and his dedicated team for their wonderful efforts.
The Golf Shop winter clearance sale and wine tasting, held on January 18, was a wonderful success. With this, we will host another event on February 22. The golf shop will be open from 9am to 5pm and a wine tasting will begin at 1pm. Look for more information and great bargains as the date arrives.
Hurricane Helene brought many challenges and learning opportunities. One to note is golf cart insurance. For cart owners affected by the flood, some found they were not properly insured. We suggest you contact your insurance company to review your vehicle policy to ensure that you are properly covered.

The Golf Committee is excited to announce updatestotheWeeklyEventTeeTimesPolicyfor 2025.Thesechangesaredesignedtofosterasense of community, encourage camaraderie among members, and create more opportunities for newer members to connect with established members. Additionally, the policy provides a framework for all members to enjoy weekly organized events while broadening their circle of playingpartners.
TheGolfShop,incollaborationwiththeWeekly Events Subcommittee, will reserve blocks of tee times each week for various men’s and women’s games. These blocks will range from 4 to 8 consecutiveteetimes,adjustedbasedondemand andthetimeofyear.
The Weekly Events Subcommittee, made up of Mike Miller, Tom Gosdeck, Grant Cully, and Keith Crouch, is dedicated to ensuring these games run smoothly and meet the needs of all members. Feedback and suggestions from membersarewelcomedandencouraged.

Handicap Usage:
o Tuesday & Wednesday games: 90% handicap.
o Saturday game: Strokes based on the lowest handicap player, using 90%.
o Friday game: Points system based on prior Friday play.
Scorecards: Must be turned into the Golf Shop for GHIN Handicap system entry.
Team Formation: Players will be grouped into A, B, C, and D flights based on handicap. Teams will be created via a blind draw, ensuring diversity.
Group Requests: Members may not form their own teams except when playing with outside guests or family members.
Important Update for Saturday Games
Saturday games will no longer use a shotgun start. All players will tee off from Hole #1 at assigned times, with team pairings and starting times sent to participants by noon on Friday.

As the new year begins, many of us set ambitious resolutions to improve our fitness and overall wellbeing. Whether it’s hitting the gym more often, attending yoga classes, or simply taking more walks on our beautiful hiking paths, the intention toleadahealthier,moreactivelifestyleiscommon.
However, research shows that turning those good intentions into lasting habits is easier said than done.
According to a recent meta-analysis, there is a significant “intention-behavior gap” when it comes tophysicalactivity.Whilenearlyhalfofindividuals whosetouttoexerciseregularlysuccessfullyfollow through, the other half fall short despite their best intentions. Understanding why this gap exists and how to overcome it can make the difference between giving up by February and turning your NewYear’sresolutionsintolastingsuccess.
The intention-behavior gap is influenced by several factors, including readiness for change, motivation, and access to resources. Surprisingly, people who are genuinely motivated to be active still face a 50/50 chance of meeting their goals. This gap is evenwiderwhenphysicalactivityismeasured
objectively, such as by tracking devices, rather thanrelyingonself-reportedactivity.
However, there is good news: People who perceive a greater urgency to improve their health, such as those with underlying health risks, tend to have better follow-through. This suggests that tying your fitness goals to meaningful personal values or concerns can help turnyourintentionsintoactions.
If you’re ready to make your fitness goals stick this year, here’s how you can apply researchbacked strategies to bridge the intentionbehaviorgap:
Reflect on your current stage of change. Are you thinking about starting an exercise program, preparing to take action, or already building momentum? If you’re just starting out, focus on small, achievable goals like attending one fitness classperweekorwalkingfor15minutesaday.

Start with activities that match your current skill level and build gradually. For example, if you’re new to resistance training, consider signing up for a session with one of our personal trainers. They can help you feel confident and competent while learning the ropes.
6. Create Opportunities for Success
Eliminate barriers to exercise by planning ahead. Set a schedule for your workouts, pack your gym bag the night before, and make use of the club’s resources—whether it’s the fitness center or scenic walking trails. Having a plan and easy access to facilities increases your chances of sticking with your goals.

Christopher's massage therapy career spans more than two decades. He started his career working in the spa resort industry in Colorado, Arizona, Pennsylvania, and North Carolina. Sports massage became his next career step with experience at cycling training camps in Boone, two US National Cycling Championships with a professional cycling team and being a member of the Wellness Team at the US OPEN in Pinehurst. Additionally, he has gained knowledge by working at two chiropractic offices and a physical therapy clinic. Christopher received his foundational massage therapy training at: the Utah College of Massage Therapy in Salt Lake City, Utah; Board Certification with the National Certification Board for Therapeutic Massage & Bodywork; and, Licensing with the North Carolina Massage Board of Massage & Bodywork Therapy. Additional education includes an Associates of Arts degree from Western Piedmont Community College and a Bachelor of SciencedegreefromWesternCarolinaUniversity.

Winter is upon us once again, and it’s the perfect season to stay indoors by the fire with a good book. As for me, I’m currently deep into ‘Cost Control Management for Chefs’—a real pageturner! This is my final course before taking the CertifiedExecutiveChef(CEC)examthisspring.
For those unfamiliar, the CEC is an internationally recognized title accredited by the American Culinary Federation (ACF). As explainedbytheKaplanGroup:
"A Certified Executive Chef (CEC) is a distinguished title awarded by the American Culinary Federation (ACF) to chefs who have demonstrated a high level of expertise, professionalism,anddedicationintheculinaryarts. Thiscertificationisoneofthehighestaccoladesa chef can achieve and serves as a benchmark for culinaryexcellence.
To attain the CEC designation, candidates must meet rigorous educational and experiential requirements,includingholdingasupervisoryrolein a professional kitchen, possessing a significant number of years in the culinary field, and completingadvancedcourseworkinculinaryskills, management,andbusinessacumen.
TheprocessofbecomingaCertifiedExecutiveChef involvesrigoroustestingandevaluation,includinga practicalexamwherecandidatesmustdisplaytheir culinaryskillsunderstrictguidelinesandtime

Completing the requirements and earning this certification has gained much of my attention since we closed after the storm. I’m excited to completetheprocess.
In Food & Beverage, we’ve been hard at work planning for the upcoming year, including summer events and weddings. This involves writing menus, streamlining recipes and procedures, and testing new products. I’ve also been connecting with specialty purveyors to bringthebestingredientstoHoundEarsClub.
One new partnership is with the Honolulu Fish Company, which overnight-ships freshly caught fish from Hawaii. Another is Think Culinary, a Los Angeles-based distributor of specialty items such as Iberico pork, Wagyu beef from New Zealand,andTasmanianseasalts.

While it’s quieter during the off-season, we’ve stayed busy with various projects to prepare for the year ahead. Some highlights include painting in the kitchen storage areas, deep cleaning of the kitchen and rearranging equipment for efficiency. We’ve also been preparing frozen soups and casserolesformemberstoenjoyduringthewinter months,astheycontinuetosellquickly.
To close, I’d like to share two recipes that I grew up eating and that are easy to make at home. I hopeyouenjoythemasmuchasIdo!

Ingredients:
1 lb ground beef
1 medium onion, chopped (about ½ cup)
1 envelope (1.25 oz) taco seasoning mix
1 can (4 oz) chopped green chilies, drained
½ cup Bisquick Baking Mix
1 cup milk
2 eggs
¾ cup shredded Monterey Jack or Cheddar
cheese (about 3 oz)
Salsa and sour cream (optional)
Dry Ingredients:
2 cups all-purpose flour
1 cup sugar
1 tbsp baking powder
½ tsp salt
Dash of nutmeg, allspice, and cinnamon
Wet Ingredients:
2 ripe bananas, mashed
⅓ cup milk
¼ cup vegetable oil
1 egg
1 tsp vanilla
Preparation:
Preheat oven to 350°F. Spray a loaf pan with nonstick spray and coat with flour.
In a large bowl, combine dry ingredients. In a separate bowl, whisk the egg and mix in the remaining wet ingredients.
Fold wet ingredients into the dry mixture until just combined. Do not overmix. Pour batter into the prepared pan and bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
Preparation:
Preheat oven to 400°F. Grease a 9-inch pie plate. Cook beef and onion in a skillet over medium heat until beef is browned; drain. Stir in taco seasoning. Spread mixture in pie plate and top with chilies. In a separate bowl, mix Bisquick, milk, and eggs until blended. Pour over beef and chilies.
Bake for about 25 minutes or until a knife inserted in the center comes out clean. Sprinkle with cheese and bake for another 2–3 minutes until cheese melts. Let stand 5 minutes before serving. Serve with salsa and sour cream, if desired.

Thelastfewmonthshavebeeninterestingforusall. During this period of reflection, there are three areas where I have been focusing my efforts to ensurethe2025seasonwillbeourfinestyet.
These areas include enhancing wine knowledge, improving organization, and increasing member experience.
Wine: I recently purchased The Wine Bible 3rd Edition by Karen MacNeil, to deepen my knowledge of wine selection and service. This book will allow me to dive deeper into more formal wine training to increase my decision-making for the upcoming wine list. I have been meeting with winemakers and distributors to curate our wine list with exceptional wines for this next season. My goal is to refine your selections and to share this knowledge with our staff, ensuring that your tablesidewineservicereachesnewheights.
Organization: Since Helene halted our operations for the 2024 season, I had a chance to reassess and streamline our processes in the Front of House. This includes developing a new training curriculum with support materials for our summer staff, creating Standard Operating Procedures (SOPs) for events, and reorganizing storage areas to facilitate seamless event and dinner service setups. These improvements will make our transition smoother going into the season and provide consistency in ourserviceastheseasoncontinues.
Improving Member Experience: By analyzing membership habits and preferences, our Food & Beverage team is identifying items that resonate most with you, as well as those that may benefit from adjustment. This data-driven approach will allow us to refine our offerings in real-time, ensuring that the wine list and menu items evolve toreflectyourpreferencesthroughouttheseason.
We are excited about the progress we have made andremaincommittedtomakingthe2025season our best yet. I look forward to welcoming you all backandsharingtheresultsofourhardwork.
