Welcome back! From the COO/GM

Dear Hound Ears Club Members,

Welcome to another beautiful spring in the High Country! Our team is eager to begin another great season with you all. We have some exciting updates in store for our Membership and can't wait to implement them.

We're happy to introduce two new platforms aimed at enhancing communication between our Members and the staff. The first is Club Chat, a text messaging platform tailored specifically for private club Memberships like ours. Club Chat allows Members to select which amenities they wish to receive notifications about via text.

It's important to note that this texting service is an addition to our existing communication channels and is entirely optional. If you prefer not to receive texts, you can simply choose not to enroll. We'll use Club Chat to keep you informed about current events and important updates, such as course conditions or schedule changes. Expect to receive around 3 to 5 text messages per week, depending on your areas of interest.

For more details on enrollment, please refer to Page 10 of this newsletter. Members who already have a cell number on file with us will receive a text from Hound Ears around May 7th, inviting them to join Club Chat. Simply click on the buttons representing your preferred notification areas, such as Fitness & Hiking or Fly Fishing events. If we don't have your cell number on file, or if you miss our text, you can easily enroll by scanning the QR Code on Page 10.

Another exciting addition this season is our comment cards, strategically placed throughout the Club for your convenience. Whether you want to share a compliment, provide feedback, or ask a question, these cards offer a simple way to connect with us directly from your phone. Grab a card from the counters of the Golf, Racquets, and Fitness Facilities, or from the Mail Room desk, Tee House, and Clubhouse bars. Just scan the code with your camera and share your thoughts!

We eagerly anticipate welcoming many of you back to Hound Ears soon and hope you'll enjoy some of the recent enhancements we've made, including updates to our golf course, new dining menus featuring housemade breads and desserts, and a great selection of specialty cocktails and mocktails.

Employee Spotlight

Sheldon Anderson

From gardens of tiny topiaries to brilliant displays of spring tulips, we have Sheldon Anderson to thank for the color you see popping up in every corner of the Club throughout the year.

At the request of John Tester, Sheldon started at Hound Ears in 1994. Since then, he and his wife Selena have raised three sons and put all through higher education.

Blending both his own education and certifications with passion and experience, Sheldon uses his knowledge of flowers and bushes to select plants which will thrive from season to season as he “paints” each display area of the community with organic beauty. Sheldon’s selected plant material is critical to the overall beauty of our property, as his criteria carefully considers the watering/maintenance schedules and deer resistance of each item. With over 150 individual bedding areas to maintain, Sheldon’s planning needs to address aesthetic beauty as well as upkeep. If you need advice on a greenhouse or grower in the area, Sheldon is the person to ask.

Sheldon is also a member of the prestigious Southern Highlands Crafts Guild where he is a well-respected clay sculptor. His sculptures take about a month or two using little more than a pocketknife and toothpick. While his period of choice is the 19th century, subjects may also include banjo players and fly-fisherman. His pieces are on display in public libraries and municipal buildings and prized by collectors. A number of Hound Ears residents are fortunate to own his sculptures, both clay and the more recent rise in garden gnomes popping up around the area.

Hello, Hound Ears Family,

We would like to provide an update on the Hemlock Woolly Adelgid program (H.W.A). As was the case in April of 2023, the results of our chemical and biological efforts have exceeded our expectations. We have continued treatment with minimally invasive chemicals through the early spring of 2024 and, due to our considerable progress, we were able to spread treatment around the property in a much broader area - reaching 38 needed areas to suppress H.W.A.

In February, Hound Ears had the pleasure of welcoming back Dr. Richard McDonald - the Entomologist of Symbiont - Biological Pest Management Company (drmcbug.com) who discovered the biologic control Laricobious Nigrinus in Washington state and introduced them into the High Country in 2004. Dr. McDonald was responsible for the delivery of Hound Ear’s first and subsequent transplants of this biologic control. I’ve had the pleasure of working with him since 2019.

Dr. McDonald and I, along with Derek Cox from Property Services, had planned to release beetles on the Sycamore/Birch, Cottonwood/Mulberry, and around Azalea/tennis areas - the last areas on our most recent treatment plan. Beetles have not previously been recorded being released in these areas. Upon inspection before our new releases, we discovered laricobious nigrinus populations had already established! WOW!

This means that the beetles have reproduced and traveled from the Evergreen side of property all the way, top to bottom, to the Sycamore (end of Dogwood) side of property. We consider these to be incredible results! We have released another 760 Laricobious Nigrinus in the areas previously mentioned to expedite control of H.W.A. I’m looking forward to more positive results throughout 2024. If there are any questions or concerns regarding possible H.W.A infestations or for guidance with identification information, please call Property Services to schedule a consultation.

Where are the AED Machines Located?

Hound Ears has several AED machines (defibrillators) to be used during a cardiac event. These are located in:

The Fitness Center - (2) one on each floor

The Pickleball Court

The Swimming Pool (on lower Dogwood)

The Administration Building

Every department has employees that are trained to use them, and trained to perform CPR, along with basic First Aid. If you have a major medical problem, or if you see one taking place, CALL 911 FIRST. Then call Security. We will also respond.

We have not yet been notified when the Fuels Reduction Program will take place, but we will contact you when they notify us.

Please remember to adhere to the 20 MPH speed limit in Hound Ears. Residents and guests are already walking on the roads with the warm weather we have been having. Please also remember to clean up after your pets.

If you’ve noticed blue light bulbs on the outside of homes in Watauga County, they are in honor of the fallen Police Officers who were killed in the line of duty. Each year during the month of April, Watauga County residents are encouraged to put a blue light bulb on an outside light fixture to honor law enforcement.

POA Updates

Check for Ticks and Don’t Feed the Deer!

Among the joys of the North Carolina High Country are hiking to scenic views and spotting wildlife ranging from herds of white-tail deer to birds migrating up and down the coast. One common caution to all hikers or even to those casually strolling outdoors is to check for ticks when you return inside, especially if you are in an area heavily populated by deer.

The white-tail deer acts as a taxi-driver for a dangerous passenger, the tiniest little creature, the black-legged tick also known as the deer tick. These flat black blood-sucking insects are about the size of a sesame seed and have eight black legs. They prefer feeding on larger animals but will jump to humans and dogs, using warmth as a beacon, carrying several pathogens through their bites, including the bacteria responsible for Rocky Mountain Spotted Fever (RMSF) and for Lyme disease.

Lyme disease is the most common vector-borne disease in the United States and Rocky Mountain Spotted Fever is among the deadliest; and both are transmitted by deer ticks. The North Carolina High Country has exceptionally high rates of both ailments. Overpopulation of deer due to a reduction of deer predators (wolves, mountain lions, etc.) has resulted in more deer around suburban populations carrying the very ticks we need to take care to find and remove as quickly as possible.

Early signs of both RMSF and Lyme disease include fever, chills, headache, fatigue, muscle and joint aches, swollen lymph nodes, and rash. Bulls-eye rashes don’t occur in all cases and can take up to 30 days to appear.

Individual prevention measures include:

• Wearing permethrin-treated clothes when spending time outdoors, including when on walks, gardening, and hiking.

• Use insect repellents containing DEET or picaridin (see EPA for registered sprays).

• Check skin for ticks daily.

• Check pets for ticks before they return indoors, even if they are on tick preventative.

• Don’t feed deer or otherwise encourage their presence on or near your property.

Grover’s Dog Park Engraved Pavers

HEC Community Clean-Up

JUNE 12- 13

The annual Hound Ears Community Clean-Up provides an opportunity for residents to clean up their yards and clear out their storage rooms. Yard debris and household items will be collected on June 12-13. (Note: We are no longer allowed to pick up paint or chemicals.) Please keep yard debris and household items separate but both can be picked up either day.

Residents should leave debris piles and other unwanted items in their driveway or on their property near the road. Please do not place items on the road. Debris piles should not be larger than 8 feet long, 4 feet wide, or 4 feet tall. Items should be bagged, if possible. Do not set debris piles out more than 24 hours in advance of your scheduled pickup. Residents will be charged for any items left out after Thursday, June 13.

Please remember, this service is provided to homeowners and is not intended to be a service for paid lawn care providers or contractors. All lawn maintenance companies and repairmen are responsible for removal of their own trash and debris.

Tim and Patricia Propst reside in Concord, North Carolina. Their family includes young adult children Harrison (24), Jackson (26) and his spouse Anna (25).

Tim is President of Propst Construction Company, Incorporated based in Concord, North Carolina.

Patricia is Finance and Operations Executive Director with Wray Ward. Harrison works with Edifice General Contractors in Charlotte, Jackson works with Vulcan Materials Company in Charlotte, North Carolina and Anna works with Carolina Stairs in Mount Ulla.

Tom and Krista Birchmore

Tom and Krista Birchmore reside on Edisto Beach in South Carolina and spend as much time as they can at their second home in Foscoe. Tom grew up in Greenwood, South Carolina and graduated from The University of South Carolina before beginning his career with United States Gypsum Corp.

Krista was born in Columbia, South Carolina and graduated from UNC-Chapel Hill. They began working in a small business together in 1997 when their daughter, Louise, was born. Tom enjoys golfing, fishing, and hunting while Krista loves to read, volunteer, and cook. Together, they enjoy fine dining and traveling around the world.

Season Opening Golf

Greetings from the Golf Shop. I hope this email finds you healthy and ready for a fantastic season at Hound Ears. The golf course officially opened on Friday, April 26. Keep an eye on the weekly Golf Course update emails to know which holes are available and which are still finishing up renovations. Golf shop hours are 8 a.m. to 6 p.m. and driving range hours are 8 a.m. to 7 p.m. daily.

Our golf course is now ranked 50th in North Carolina, moving up three spots from last year. Additionally, we are ranked in the top 10 among golf courses in western North Carolina.

The tournament season begins with informal play days on Tuesdays and Wednesdays throughout the month of May. The women’s opening day is scheduled for June 4. The men’s season officially kicks off with their opening day on June 7. With a complete offering of tournaments to include Member-Member events, Couples’ mixers, Member-Guest tournaments and our Club Championship, you should be able to find the perfect fit to showcase your competitive skills.

GOLF STARTING TIMES

1. All golfers must register in the Golf Shop or with the starter before beginning play. Golfers who own their cart and have paid a trail fee and annual golf fees will be considered registered by having their name on the starting sheet.

2. All players must have a starting time reserved through the Golf Shop. The staff will assign the starting time depending on availability.

3. Starting times may be made online, in person or by phone during Golf Shop hours as may be posted from time to time.

4. Golf Members may make golf starting times for themselves and their accompanied guests 7 days in advance. On Saturdays, Golf Members will be able to make starting times for the following Saturday and Sunday or 8 days in advance.

a. Non-Golf Members, Member-sponsored unaccompanied guests and unaccompanied family guests may make starting times 5 days in advance.

b. All other play will be permitted to make starting times within 2 days of the requested time.

5. Persons reserving a starting time must give their name and the names of the players in their group at the time of reservation.

6. Members should notify the Golf Shop of any changes or cancellations as soon as possible.

The golf shop is fully stocked with all the latest fashions and equipment. Additionally, we are happy to place a special order for any of your needs. We eagerly anticipate your return as we look forward to our best season ever!

GOLF HANDICAP CHANGES

In November of 2023, the USGA and The R&A announced key changes to the World Handicap System that continue to build on the modern, fair and responsive system that meets the game of golf where it is today. These changes went into effect in the United States and its territories on January 16, 2024.

We look forward to playing under the 2024 World Handicap System revision this season at Hound Ears. All organized games - including Thursday afternoon, Friday afternoon, Saturday morning and Sunday morning scorecards - will be turned into the Hound Ears Golf Pro Shop for posting. Please don’t hesitate to contact the Hound Ears Golf Staff with any questions.

CRAZY COBB CHALLENGE 2024

Hound Ears Golf Course was designed by George Cobb in 1964. Cobb was a prolific golf course designer whose many works include Quail Valley, East Lake in Atlanta, and Carmel’s North Course to name but a few. However, he is probably best known for his design of the famed Par Three Course at Augusta National.

Cobb’s layouts are renowned for their cunning route structure, a natural seamless flow of holes and for incorporating the natural beauty of the surrounding areas into his designs. The layout at Hound Ears radiates with all of these wonderful attributes on full display.

However, Cobb had a diabolical and sadistic side that he fought to keep in check. Unfortunately, this sinister side overwhelmed him when designing Hound Ears. His original design was a fiendish par 3 layout that was destined to become world famous for its unique, challenging, and somewhat cruel approach. However, the Robbins’ brothers were more interested in a traditional layout that could be used to attract future homeowners to the Hound Ears Community. Consequently, Cobb’s eccentric design was vetoed, the architectural plans were stored away, forgotten, and eventually lost.

But lo and behold, during a cleanout of the Pro Shop attic, an intrepid soul stumbled upon Cobb’s original plans. To celebrate this glorious discovery, Hound Ears kicks off the Annual Couples’ Golf Season with the Crazy Cobb Challenge recreating Cobb’s original design.

For this year’s event, Cobb’s sister, Esther Cobb contacted us. Esther told us the original design included a 19th hole called the Twisted Sister, which was George’s pet name for Esther. The hole’s name was so bizarre that a 70s rock band actually adopted the name. In abidance with Esther’s request this year, we will be playing all 19 holes, including the infamous Twisted Sister. There will be a special prize for the winner of the mini tournament on the Twisted Sister Hole.

The event will be open to twosomes only and the field will be limited to the first 72 golfers who sign up. If you are a single and wish to play, let the Pro Shop know and they will attempt to pair you up. Format will be a 4-person team scramble with a shotgun start. The Pro Shop will conduct a random drawing to pair each couple up with another couple. An Awards dinner featuring carving stations and seasonal desserts will follow the tournament.

This event is designed to be a social engagement that presents an opportunity for new Members to meet existing Members as well as reacquainting old friends. Luck & fun, as opposed to intense competition, will rule the day. There will be welcome gifts, prizes and surprises galore.

Special prizes will be awarded to the most outlandish golf attire. Special consideration will be given to the “Corniest Outfits” and/or any “Twisted Sister” attire.

An awards dinner will follow the tournament. Let’s get crazy!

On the Court Racquet Sports

We’re excited and grateful that funding has been approved by the Membership to renovate the Racquet Center. We are currently in the process of initial architectural review, and plan to begin renovations immediately following the 2024 season. Below is the information on Racquet Sports for this season. Let’s have another fantastic and fun season! Please remember Tennis attire and Tennis Court Shoes are required for both Tennis & Pickleball.

TENNIS QUICK TIPS:

If you don’t wear the proper tennis court shoes, you could easily damage the clay court surface.

If you see any loose balls, call “LET!” even it is not on your court to prevent the players from stepping on the ball and injuries. You do not want to sprain or break your ankle, let’s look out for each other to stay safe.

Please ALWAYS register for a Tennis/Pickleball court online or by calling the Racquet Sport Pro Shop at 828-963-6441 for regular play and any events. We may need to adjust which court you registered to play on depending on the court conditions, etc. Our Tennis clay courts need to be maintained daily and depending on the weather, we may need to water the courts in the middle of the day. It’s important that we know at all times who is on the court so that we wouldn’t remotely turn on the sprinklers if anyone is on the court.

Clubhouse Updates

Through the winter, we have had the opportunity to taste some extraordinary wines which we will be adding to the wine list and offering for tasting this season. We have found some new, boutique offerings and unique varietals for the coming year!

We are calling our weekly wine tastings “Before They Become Famous” and will start each Wednesday, running two or three select wines for a week at a time, at exceptional by-the-glass pricing. These wines will be available to purchase in case lots. Interesting Alberino’s, Bourdeauxstyle Reds, gorgeous Grenache, delicious Zinfandels, Sancerres and Vouvray, all wines offered and selected will be at 88 to 98 points. Each week, we will announce via our weekly email the wine selections for the week ahead, so members can plan to join us and try out some great wines and small yield estates at incredible prices.

Trends in the club industry are moving to craft cocktails and non-alcoholic mocktail options, and we are currently collaborating with our vendors and the Team, to create interesting and fun cocktails and mocktails.

We are very happy to welcome back 25 returning Team members from F&B as well as new and talented Team members starting at Hound Ears for their first season.

We are looking forward to a great season in 2024 and cannot wait to welcome you all back!

NEW MENU ADDITIONS Chef’s Corner

It’s been a busy shoulder-season in which I’ve been focused on my continuing education and development of new menu ideas for the coming year.

I have taken several opportunities to visit other, similarly sized private clubs in our area, where I’ve been able to cook beside and talk shop with their Chefs.

I visited Catawba Country Club where I worked with Chef Joey Mansueto. We prepared an elaborate seafood buffet, during which I was able to test out his “combi oven.”

Combi ovens are fairly recent technologies (introduced within the last ten years) that incorporate every style of cooking imaginable. This oven can grill, bake, steam, sous vide, be used as a smoker, and is selfcleaning.

I also visited Balsam Mountain Preserve and worked with Chef Edwin Bloodworth. While there, he and I talked at length about wild game, specialty purveyors, and menu development. We both came away from the conversation with some great ideas.

At Mountain Air Club, I was fortunate to spend time with Chef Bill Klein. Chef Klein and I discussed staffing challenges and strategy, and sous vide cooking while I was given a tour of his culinary facilities.

I have certainly taken a great deal from these visits with area Chefs. None of us had ever spent time at other Clubs in an exchange of ideas, and we’ve all agreed to make it a winter tradition moving forward.

While at home, I’ve been continuing to take the classes required for the Certified Executive Chef (CEC) certification through the American Culinary Federation. I am nearing completion and look forward to the next steps in my education.

During the first week of March, I was very fortunate to attend the “Chef to Chef Conference” in Austin, Texas. Hosted by “Club & Resort Chef,” this event gathers over 500 private club chefs at all levels of education and experience to network and learn new techniques, technologies, and ideas through speaker presentations, educational classes, and smaller round-table discussions. The additional benefits of this conference are the many professional contacts made and a renewed sense of energy to create and serve. I’m excited to bring these new ideas to Hound Ears Club during the 2024 season.

At the Tee House in 2024, you will notice some changes as we are adding many more ‘grab & go’ items, streamlining the menu, and adding a slushy machine in addition to the

soft serve ice cream and milkshakes. We have also purchased a ‘TurboChef’ oven, which will handle many of the hot items with much greater speed and efficiency.

In the Clubhouse, we’ll be offering a light-fare Pub Menu to our Members during the “in between” times of 4 p.m. (when the Tee House closes) to 5:30 p.m., which is when our full dinner menu becomes available. These pub menu items will remain available through dinner, and will provide our Members more versatility in dining options.

At the bar, Rhys and I have partnered to enhance our cocktail and “mocktail” menus. Our culinary team will be making our own bitters, drying our own fruit garnishes, and making our own bar snacks.

The biggest change on the horizon might be the dinner menu itself. Rhys and I have worked to give the menu a brand-new look and all new content. We’ll be offering many Tapas-style plates and smaller portions of the entrees while keeping them rotating on a 3–4 week basis. We will also be doing nightly specials, as they have been a great way to engage the culinary team as well as our Membership.

Lastly, I am finalizing my professional Instagram page – @Ndbrokechefcooks - for anyone who wishes to follow me. I will be making short videos from the kitchen, some specials, and perhaps a few instructional videos throughout the season. Feel free to see what we are doing behind the scenes!

Upcoming Events for Kids:

Kids Camp: June 24-27 & July 22-25

Learn, explore, and play at our Hound Ears Kids' Camp. Open to children, ages 6 through 12, our camp provides four days of activities, including hiking, golf, cooking, rock climbing, tennis, pickleball, fishing, fitness, swimming, games, and a trip to Grandfather Mountain to enjoy their Creepy Critter program. Pickup and Drop-off will be at the Youth Center each day.

Price: Each camp is $475 per child. Pricing includes all camp activities, a shirt from Rock Dimensions, and lunch each day. Youth Fishing Derby: June 28

Come one, come all for the 7th Annual Hound Ears Club Youth Fishing Derby! Start the morning with fishing in our private segment of the Watauga River followed by a fish fry and prizes for our youth anglers. This event is open to children and grandchildren, ages 5-16, of both members and residents. Registration required online or by contacting the Front Desk at 828.963.4321.
