Fromrestoringourgolfcoursetorepairingfacilitiesand bringing the property back to its full beauty, the work done over the winter months has been nothing short of remarkable.Icouldnotbemoreproudofourteam,and I am deeply grateful for their commitment to preserving andenhancingtheHoundEarsexperience.Manyofyou who were here on property on September 28th, 2024, may remember the uncertainty in those early hours and days.Toseehowfarwe'vecomeinsuchashorttimeisa testament to the resilience and spirit of our entire community.
I would also like to acknowledge the steady leadership and support of our Board of Directors throughout this recovery process. Their guidance and partnership helped keepusfocusedandforward-lookingaswenavigatedthe manychallengesanddecisionsalongtheway.
While we are proud to be fully operational, we also acknowledgethatsomecleanupremains-andwe’venow shifted our focus to the finer details and continued improvementsthroughouttheproperty.

With that same spirit of renewal, I want to share an important update regarding Membership. For the first time in several seasons, we currently have Memberships available-andthereisnowaitinglistto jointheClub.
Following a series of Membership forums last summer, a proposal to raise our Membership Cap from355to375waspresentedtotheMembershipon September 26, 2024. Helene came through the very next day and briefly delayed the process, but our Members voted and the measure was approved on November 23rd during a remotely held Special MeetingoftheMembership.
Throughout our Club’s history, our Members have been our greatest ambassadors. Many of you have shared the Hound Ears experience with friends, family, and colleagues who then expressed interest in joining, only to be discouraged by a lengthy waitlist. That barrier no longer exists. Those who apply now may be granted active Membership in as little as a fewweeks.

Residents should leave debris piles and other unwanted items in their driveway or on their property near the road. Please do not place items on the road. Debris piles should not be larger than 8 feet long, 4 feet wide, or 4 feet tall. Items should be bagged, if possible. Do not set debris piles out more than 24 hours in advance of your scheduled pickup. Residents will be charged for any items left out after Thursday, June 12. Please remember, this service is provided to homeowners and is not intended to be a service for paid lawn care providers or contractors. All lawn maintenance companies and repairmen are responsible for removal of their own trash and debris.

Ladies Acceptable Attire: Collared golf shirts, turtlenecks, sleeveless collared shirts, golf fashion non-collared shirts, sleeveless high neck sweaters, capris, slacks and shorts and skirts. Shorts and skirts must be at least 16inchesintotallength.

Under USGA Rules of Golf, the golf course is comprisedof5definedareas.
The general area is the entire area of the golf course except for those outlined below. Knowing which area your ball is in is important to know when applying applicable rules. The general area covers most of the course and is where a player’s ball will most often be played until the ball reachestheputtinggreen.Itincludeseverytypeof ground including growing and attached objects found in that area, such as fairway, rough, and trees.
The teeing area is the specific rectangular area, twoclublengthsdeepfromtheteemarkers,where each golfer starts a hole. Teeing locations that are not being played by the individual player fall underthedescriptionofgeneralarea.
Penalty areas are areas on the course from which relief with a one stroke penalty is allowed if the player’s ball comes to rest there. It can be water or land and is defined by yellow or red lines or stakes. The area can be a play or no play zone. Recently, our golf committee deemed the Hound Ears practice area to be a “no play” penalty area, andthefollowingrulenowapplies:
The driving range is a penalty area in which entrance and play is prohibited. Any ball hit within the marked area is a mandatory drop with a one stroke penalty. You may take a lateral drop from thelastpointofentryorusedropareasprovidedin theleftroughonholes10and11.

A bunker is a prepared area of sand, which is often a hollow from which turf or soil was removed.
Finally, the putting green is the area on the hole currently being played and specially prepared for putting. Putting greens on the course that are not on the hole being played are considered to be a “noplay”zoneandinthegeneralarea.
It’s important to be prepared should you find yourself wandering off of the short grass. As a general rule, loft is your friend. Attempting to play out of high grass with a low lofted fairway club or iron can be difficult. PGA and LPGA tour players know this, and often go to a higher loftedironorwedgewhenneeded.

When your ball nestles in the rough around the green, making a play like a bunker shot can be successful. With this technique, take your highest lofted wedge and swing the club under the ball when possible. This shot will often come out softerandmorepredictable.

We’re excited to kick off another great season of Tennis and Pickleball at Hound Ears Club.
Our Har-Tru courts have undergone a Partial Lift, improving playability and restoring the surface to nearnew condition. You may notice a slightly softer feel after rain or watering, but this will normalize with regular play.
Only proper tennis shoes are allowed on Tennis and Pickleball courts. Running shoes can damage the surface and increase injury risk.
Please ensure guests also wear appropriate shoes. Recommended retailers: tenniswarehouse.com. Proper tennis attire is required—no tank tops for gentlemen.
If a ball rolls onto your court, call "Let!" and stop play—safety first.
Close and latch gates after use to keep wildlife (including bears and deer) off the courts.
Please remember to register online for tennis and pickleball court reservations and sign up for all weekly events. The online calendar has all the weekly events and special event dates for both tennis and pickleball.

It has been a true pleasure to welcome everyone back to the Club and see so many familiar faces these past few weeks. As the season ramps up, I wanted to share a few exciting updates from the kitchen.
We’ve recently partnered with several new purveyorstoelevatethequalityandvarietyofour offerings.HonoluluFishCompany,inparticular, has impressed us with their outstanding selection of premium seafood. Their unique inventory has even inspired me to dive into some research on lesser-known species that I look forward to featuringinupcomingmenus.
Another exciting addition is Gourmet Foods International (GFI), a supplier known for their exceptional desserts and specialty products. Recent highlights include the truffles we used in therabbitdish,abeautifullyrichpistachiocake,
Ingredients:
1 quart heavy cream
1 vanilla bean (split and scraped)
1 cup vanilla sugar
6 large egg yolks
Instructions:
1. Preheat a conventional (non-convection) oven to 325°F.
2. Scrape the vanilla bean into a saucepan with the cream; add the husks as well.
3. Bring the cream to a simmer and steep for 10–15 minutes.
4. In a mixing bowl, whisk the egg yolks and sugar until fully incorporated and pale yellow.
and a 12-year-aged balsamic vinegar that will appearonanewmenuverysoon.

As we move into the heart of the season, my team and I are excited to experiment with these new products and craft memorable, innovative dishes for our members. In the meantime, I’m happy to share a couple of simple, club-favorite recipesyoucanenjoyathome!
5. Slowly whisk 1 cup of the hot cream into the yolk mixture to temper.
6. Combine the remaining cream with the yolk mixture, then remove and discard the vanilla husks.
7. Pour the mixture evenly into ramekins and place them in a roasting pan.
8. Fill the pan with hot water until it reaches halfway up the sides of the ramekins.
9. Bake uncovered for 45 minutes. The custard should jiggle uniformly but hold its shape when tilted.
10. Remove from the oven and water bath, then refrigerate until chilled.
11. Just before serving, sprinkle the tops with granulated or raw sugar and use a torch to caramelize for that signature brûléed crust.

Ingredients:
2 cups sharp cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
¼ lb cream cheese, softened
½ cup Duke’s mayonnaise
1 cup diced pimentos (well-drained)
½ tsp onion powder
¼ tsp granulated garlic
Dash of cayenne pepper
¼ tsp kosher salt
¼ tsp freshly ground black pepper
Instructions:
1. Ensure the cream cheese is at room temperature.
2. Drain the pimentos well and chop further if needed. Roasted red peppers can be used as a substitute.
3. In a mixing bowl, combine all ingredients except the pimentos until fully incorporated.
4. Gently fold in the pimentos last to avoid breaking them down too much.
5. Serve chilled with crackers, crostini, or fresh vegetables.

June 9: The Hound Ears Summer Book Club will begin its 2025 season on June 9 at 1pm in the Clubhouse. The book is Theo of Golden, by Allen Levi, for the club’s first meeting in the fireplace room of the Hound Ears Clubhouse.
The HESBC meets throughout the summer from June to October on the second Monday of each month at 1pm in the Clubhouse. Meetings last one hour and all residents, members, guests, and staff of Hound Ears are invited to attend. At age 20, I shifted to dog training and launched Heavens Windrose Services – Windrose K9 Division (WK9D). Using the genetic knowledge I gained from horse breeding, I created the Executive Silk Coat BorderColliebloodline.IpartneredwithbreedersacrosstheU.S.andEuropetorefinethebloodline,andin 2017 our first litter was born. Those pups went on to succeed in service, sport, and working K9 roles. We arenowraisingourfourthgeneration!
Inthatsameyear,IbeganworkinginawiderangeofsecurityaftergraduatingtopofmyclassattheNorth Florida Security Academy. I quickly rose to Lieutenant and eventually joined Dark Knight Security Solutions, an executive protection agency staffed primarily by veteran and active military personnel. It was anhonortoworkalongsidesuchoutstandingprofessionals.
In 2020, I moved to Newland, NC, and immediately felt at home in the mountains. I continued working in high-level security roles while expanding WK9D and completed my Belgian Malinois bloodline, producing excellent results this past summer. I also reestablished my Arabian horse program with the purchase of OryanofRohan,acoltlinkedtoCassOlefromTheBlackStallionfilm.
In February 2022, I joined the Hound Ears Security team, and in April 2025, I stepped into the role of Security and Rental Oversight Officer.It’sanhonortoservesuchavibrantandwelcomingcommunity

1. Shirts and shoes must be worn at all times at Club facilities except the pool area and wet areas such as locker rooms and saunas. Bathing suits may only be worn in the pool and locker areas. All other facilities require appropriate cover-ups and shoes to be worn. Golf attire requirements are contained in Section II of these Rules.
2. Proper attire is required in the Clubhouse, Terrace, and Tee House at all times. Tee shirts, gym attire, sweatpants, tank tops, short-shorts and swimming attire are not allowed. Gentlemen should wear a collared shirt (or appropriate non-collared shirt) and hats are to be removed in all areas of the Clubhouse. More casual attire is acceptable only when coming to the Clubhouse solely to utilize the Mail Room.
Hound Ears Room: Country Club casual attire worn with a collared shirt and slacks. Jackets with or without ties are always appropriate. Jackets are encouraged on Saturday night.
The Grille Room: Country Club casual attire worn with a collared shirt and slacks or appropriate denim. Jackets are encouraged. No ragged jeans are allowed.
