Now that our Steakhouse Nioka is open, we’re planning a series of special member nights in Newcastle. There will be individual nights for our beer, our wine and our spirits. Each one will be hosted by our brewery, winery and distillery teams. We’ll be showcasing new special releases, back vintages of wine, new release spirits and offering cask strength tastings. In the lead-up to Christmas and harvest, we’ve actually been hoping for some spring rain, even after all the rain we had through winter. Right now, rain is a good thing. In 2019 Jonno Hope, leading the Hope family business into its second generation, decided to realise a long-held desire to expand into cattle farming This decision continues the family’s ethos of estate owned and grown and provided an opportunity to sustainably utilise the fermentation-finished grain from their brewery and distillery.
What started as a useful hobby at Hope Estate, the family’s winery in the heart of Hunter Valley Wine Country, soon became a serious beef business with the acquisition of the 530-hectare Nioka Farm, located at the foothills of the Barrington Tops in the Upper Hunter Valley.
With a focus on constantly striving to improve the genetics of the 100% Black Angus breeding program, the ideal high-country conditions provide an amazing starting point for the Nioka beef journey Nioka cattle are raised enjoying the grassy pastures at the farm until they are ready for finishing. They are then transported to the grazing land adjacent to Hope Estate where the are finished on a 120-day grain fed program incorporating the nutrient-rich reclaimed grain from the brewing and distilling production.
After processing select prime cuts are then dry-aged in the custom built dry-ageing facility, taking Nioka’s signature Beef to the next level.


OUR SINGLE MALT STORY
Tower Whiskey Distillery commenced distilling in 2021. Pokolbin, in the heart of Hunter Valley Wine Country.
Our distilling process starts with us brewing a Single Malt mash which is then double distilled in our traditional copper whiskey still.


We then age our young whiskey in a combination of used wine and spirit casks that impart some amazing characters over time.
These unique aged characters are then enhanced with finishing in hand selected new or speciality oak.
OUR TOWER WHISKEY RENDITION OF THE CLASSIC MANHATTAN COCKTAIL
The Classic New York Cocktail rumoured to have been first invented at the Manhattan Club for Lady Randolph Churchill dates back to the 1800s.
Our version is made with No. 9 Fortified French Oak Whiskey, dry vermouth, a dash of Angostura bitters, and finished with a slice of lemon.
All our whiskeys are Single Malt and ready to be enjoyed neat or in a specially curated cocktail.

Crafted from 100% malted barley, our Single Malt Moonshine is double distilled. Our Single Malt Moonshine has come a long way from our Original Moonshine. Starting off as a Gin White Colour, after another 6 months the moonshine started to show barrel aging, with a white wine colour, after 12 months of aging in the barrel it has taken on more oak aging characters, after 18 months of aging, this Moonshine edges on being a whiskey classification This Moonshine has evolved into a rich, smooth flavour.

WHAT... I ALWAYS THOUGHT MOONSHINE WAS AMERICAN?

Nearly every country has its own variation on moonshine. We base our Hope Distillery Moonshine on the original Irish/Scotish moonshine which is un-aged whiskey distilled illegally at night using moonlight. As opposed to the American moonshine which is an un-aged corn whiskey often with local fruits added for flavour. Michael Hope says “Moonshine for me is summed up as a two headed beast Tastes like fire water when first distilled but then ages amazingly with oak nuances.”

Hope Distillery Ultra Cut Gin is about as rare, wild and dangerous as gin can get. Only one batch of our Pokolbin Dry Gin was selected in 2020 to remain at the uncut distillery strength of 68% and spend 18 months in barrel. Featuring all of the fragrant layers of our Pokolbin Dry with juniper, coriander, angelica root, fennel, cardamom, pepper, lime and grapefruit, plus time spent ageing in French oak barrels develops the gin into something magical and exotic. A gin of unique colour, depth and elegance.


After 12 Months distilling on our small batch copper pot still, we commissioned our Australian made custom built copper Whiskey Still where the Brewery and Distillery team beegan maing the first whiskey washes We use fresh ingredients, as we do for our beer, to produce the best whiskey wash we can. Our Single Malt Whiskey wash is made from 100% malted barley The fresh, clean Whiskey wash is then distilled straight away with the first disillation getting to 28-30% alcohol. A stripping run is then done for the second distillation to make it 68% distiller strength A mixture of new and old, French and American Oak Hogshead and Barrique barrels have been used to put the new make spirit into.

What is Naked Gin?

This single vineyard Verdelho is grown on the Basalt Block which consists of rich volcanic soil as the underlying basalt rock has broken down. 2022 Chardonnay

This single vineyard Chardonnay is grown on the Mountain Wash vineyard which lies directly under the Wollemi Range. Over millions of years, nutrients from the mountain’s vegetation have been washed into the soil where our vineyards now stand. This makes perfect conditions for our Chardonnay to thrive in the warm, dry climate of the Hunter Valley. White gold in colour, this Chardonnay is perfectly balanced between delicate peach, pear and ripe citrus fruit characters with subtle integrated oak.

Our West Australian fruit is trucked across the country for over three days before we start fermentation. This extended cold maceration produces dense colour and flavour with a fine tannin structure. The cool hills of Donnybrook gives us amazing elegance while retaining the classic spicy shiraz characters.
Vibrant colour and tannin structure exhibiting the classic Aussie Shiraz plum and spice characters, and perfect balance of oak and acidity. There is a deep elegance to the wine from the Western Australian climate. Truly a Ripper!

VIRGIN HILLS RANGE
Virgin Hills was the creation of the eccentric Hungarian-born sculptor and restaurateur Tom Lazar. Arriving from Hungary via Paris in 1952, he found a country and a wine industry, very different to the one we know today.
Lazar was determined to change all that. He established the acclaimed Little Reata restaurant in Melbourne. Then in 1968, came his grand vision of Virgin Hills. Inspired, he bought 300 acres of rugged bushland high in the Macedon Ranges. Lazar saw an opportunity to expose Australian palates to something very different; black cherries.
After laborious clearing, the soil revealed itself to be quite poor for cherries. Swiftly, Lazar had another grand vision. Decades before the term ‘cool-climate wine’ became popular, he abandoned the idea of a cherry orchard, planting Cabernet Sauvignon, Shiraz, Malbec, Merlot and Pinot Noir instead. He planned an Australian rival to the great Bordeaux wines he had grown to love in Paris. Lazar was prone to grand visions.
From its first vintage in 1973 Virgin Hills seemed like nothing more than a crazy idea. Even with all the setbacks, Virgin Hills began to acquire cult status, making Virgin Hills one of the most sought after Australian wines.

MACEDON RANGES
The Macedon Hills range is sourced from the Glenhope Vineyard, established in the mid 90’s, Glenhope is a 100-acre vineyard set on granite hills along the Burke & Wills Track just below 500 metres in the cool-climate of Macedon Ranges, Victoria.
Virgin Hills established the Glenhope Vineyard and planted it with varieties mirroring those of Kyneton. This was done in the spirit and ethos of Lazar it’s original founder.

PORTER 7 STOUT
Porter, a type of dark beer, introduced in the 1700's, that is well balanced and aromatic, with predominant notes of rich chocolate as well as hints of coffee, caramel, nuts and sometimes a faint smokiness, combined with an often dry finish.
Stouts, as we know them, evolved from Stout Porter, which was a very popular style in London in the 1800s. Stouts are a category of warm-fermented ale styles that are distinguished by their dark colour, generally an opaque deep brown or black, as well as a distinct roasted character that is often perceived as dark chocolate or coffee.
