FROM SCRATCH TUNA NOODLE CASSEROLE Serves six. Prep time 1 hour and 15 minutes 1/2 cup butter, divided 1 (8 ounce) package uncooked medium egg noodles 1/2 medium onion, finely chopped 1 stalk celery, finely chopped 1 clove garlic, minced 8 ounces button mushrooms, sliced 1/4 cup all-purpose flour 2 cups milk salt and pepper to taste 2 (5 ounce) cans tuna, drained and flaked 1 cup frozen peas, thawed 3 tablespoons bread crumbs 2 tablespoons butter, melted 1 cup shredded Cheddar cheese

1. Preheat oven to 375 degrees F (190 degrees C). Butter a medium baking dish with 1 tablespoon butter.

2. Bring a large pot of lightly salted water to a boil. Add egg noodles, cook for 8 to 10 minutes, until al dente, and drain.

3. Melt 1 tablespoon butter in a skillet over medium-low heat.

Stir in the onion, celery, and garlic, and cook 5 minutes, until tender. Increase heat to medium-high, and mix in mushrooms.

Continue to cook and stir 5 minutes, or until most of the liquid has evaporated.

4. Melt 4 tablespoons butter in a medium saucepan, and whisk in flour until smooth. Gradually whisk in milk, and continue cooking 5 minutes, until sauce is smooth and slightly thickened. Season with salt and pepper. Stir in tuna, peas, mushroom mixture, and cooked noodles. Transfer to the baking dish. Melt remaining 2 tablespoons butter in a small bowl, mix with bread crumbs, and sprinkle over the casserole.

Top with cheese.

5. Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

Farmhouse Bean Soup Serves six. Prep time 30 minutes INGREDIENTS: 2 tablespoons Field Day olive oil 1 yellow onion, diced 1 large carrot, peeled and diced 3 parsnips, peeled and diced 3 cloves garlic, peeled and minced 1 15-ounce can Woodstock diced tomatoes 4 cups Field Day vegetable broth 2 teaspoons dried rosemary 2 teaspoons dried thyme 1 15-ounce can Field Day Great Northern beans, rinsed and drained 1 15-ounce can Field Day pinto beans, rinsed and drained 1 15-ounce can Field Day kidney beans, rinsed and drained 5 cups fresh spinach, chopped Salt and black pepper to taste PREPARATION: In a large pot, heat the oil over medium-high heat. Add the onion, carrots, parsnips and garlic and sauté 5 to 7 minutes. Add the tomatoes, broth and herbs and bring to a boil. Add the beans, reduce heat to simmer and cook 20 to 30 minutes until vegetables are tender. Stir in the spinach and season with salt and pepper to taste.

Serve warm.

How to sprout

So your garden is closed for the season? Now what?

Our do-it-yourself quick guide to sprouting!

1. Place seeds, nuts, grains, or beans in wide-mouth jar.

2. Cover seeds with water and soak for 24 hours 3. Rinse, then drain seeds in jar by placing it upside down with the sprouting lid on.

4. Place jar upside-down in a sunny spot. Note: Bright sunlight is not required for sprouting, but you do need a window with good natural light.

5. Rinse sprouts twice daily with water to keep from molding or rotting 6. Sprouts are ready to harvest and eat within four to five days.

The animals are nourished in the growing season by pasture grass, herb forage, and essential minerals. In the winter months, they are fed farm-grown hay and organic, locallygrown hay. The sheep’s natural diet of grass, legumes, and herbs results in meat that is high in vitamins E, C, and beta-carotene and low in fat and cholesterol. Additionally, grass-fed lamb contains two health-promoting omega-3 fatty acids and conjugated linoleic acid, or CLA, an omega-6 fatty acid.
