INGREDIENTS: • 3 1/2 cup All-Purpose Flour

• 1 tsp Baking Soda • 1 tsp Salt

• 2 tsp Sugar • 2/3 cup Zante Currants (optional) • a fistful of Caraway seed (optional) • 1 1/3 cup Buttermilk DIRECTIONS: 1. Preheat oven to 425.

2. Sift dry items into mixing bowl. Add raisins. Mix by lifting flour through fingers, this lofts the mix. Form a well in center.

3. Mix buttermilk and egg. Pour most into the well. Stir in with stiffened open hand. Add remaining milk and more if needed while continuing to mix. The dough should be softish but not too wet and sticky.

4. DO NOT OVER MIX. Mix quickly but gently and be done. It should be light and airy and hold itself together.

5. Move dough to floured work surface.

With floured hands, shape the dough to 2" thick round.

6. Move to baking sheet and score with knife in a cross.

7. Place in oven, reduce to 400, bake for 35-40 minutes.

If you skip the egg you can bake at a higher temp to get the proper browning. If you skip timing your bake, tap the bottom, it should sound hollow. Eat with large chunks of cheddar.
