Applied Degree in Culinary Operations Applied degree programs provide students with important skills and knowledge that can be applied to a specific industry, in this case, the food industry. Whether you are hoping to manage the culinary operations of an organization, own a restaurant, work as a consultant, or to become a product development chef, many of the skills you need to succeed are similar. For chefs, cooks, and industry professionals who already know how to cook and want to advance in their careers, acquiring additional skills and knowledge is essential.

Students entering the program in the on-site program through the Diploma Stream must provide:

Proof of successful completion of The Culinary Institute of Canada’s two-year Culinary Arts Diploma program or a recognized diploma from another institution; and Documentation of 1,280 hours of culinary service, which may include any internship, practicum, co-op or work experience hours.

Students entering the on-site program through the Industry Stream must provide: • •

Proof of five years of culinary work experience, including service hours and dates and a summary of skills and duties performed, confirmed by a supervisor or employer on company letterhead; and Proof that at least one of those years of experience was at the supervisory level, confirmed by a supervisor or employer on company letterhead.

Students entering the program in the Distance Stream must provide: •

Proof of successful completion of The Culinary Institute of Canada’s two-year Culinary Arts diploma program or a recognized diploma from another institution Proof of employment as a culinary instructor at an educational institution in the form of a letter of recommendation from a program manager or director on institution letterhead Documentation of 1,280 hours of culinary service, which may include any internship, practicum, co-op or work experience hours.

Proof of Certified Chef de Cuisine (CCC) professional designation

Work in research and food product development; foodservice sales and purchasing; food and beverage management; institutional operations management; food service consulting – facilities design, foodservice technology, product marketing; quality management in food processing; and as managing sous chefs, executive chefs or restaurant operators; or be self-employed. Applied Degree in Culinary Operations distance option: The CIC offers a blended online delivery option for individuals who work in the field of culinary education in post-secondary institutions. The distance program is for culinary instructors who are motivated to advance their education and their careers, but do not want to leave their jobs and their personal commitments in order to do so. Culinary Arts

Learn the practical skills and knowledge you require to enter the culinary profession as a well-trained cook. Designed to assist aspiring cooks to master the essentials, the program also allows experienced cooks to enhance their skills and expand their repertoire. Part of your training takes place in the college’s Montgomery Cafeteria and the Lucy Maud Dining Room, both of which are open to the public. International Hospitality Management The International Hospitality Management program’s performance-based training will give you a broad base of management and technical skills which will enable you to immediately be productive in the workplace. You will prepare for the trends in globalization which will be prevalent in tomorrow’s tourism and hospitality industry. You will acquire the cross-cultural competencies you need to be industry leaders in the competitive hospitality business environment. There are two areas of concentration in the International Hospitality Management program, Hotel and Resort Operations, and Restaurant Operations. Start: September Length: 2 yrs. Pastry Arts Whether rolling dough, piping decorations, pulling sugar or preparing and finishing desserts, you will be taught the basics, ranging from classical to contemporary preparations. Emphasis is placed on teaching advanced pastry skills and providing managerial training while covering all aspects of pastry preparations, presentation and service at international standards. Aspiring cooks and pastry cooks master the essentials in this program, while individuals who have experience in the industry enhance their skills. Not quite ready for the program you want? Get up to speed in the College Foundation program! This program offers you the opportunity to explore careers, to enhance and build on essential skills, and to prepare yourself for further post-secondary pursuits. If you are unsure about your career interests, need specific experiences to make sure that your career choice is right for you, don’t have the necessary qualifications or require higher mark in core subjects for acceptance into a program, or would benefit from a preparatory year for building skills and experiences and participating in a college environment, this is the program for you. Start Date: September and October Length: 9 months Location: Prince of Wales Campus Credential Issued: Certificate, College Foundation Admission Requirements • Grade 12 or equivalent with credits at academic or general level • Resumé

Degree Pathways: A great blend of college and university Degree pathways such as articulation agreements and transfer credits give you the opportunity to begin your studies at one institution and finish at another. Holland College has more than 150 agreements with universities and other post-secondary institutions across Canada, in the U.S. and overseas. There are a variety of joint applied degree programs and 2+2 programs that enable you to earn a university degree in as little as two years after you have your Holland College diploma, along with other agreements that can lead to certifications.

Distance Education Programs that offer a distance education option give students who cannot attend classes on campus the opportunity to continue their education via the Internet, off-site at your home or office, or by a combination of delivery methods such as a blend of classroom time and online learning. If you are unable to relocate to attend classes or are working full time but would still like to upgrade your skills, these programs may be just what you need.

On The Job Training On the job training and internships give you the opportunity to experience real day to day operations in your area of study. You get to use the skills and knowledge that you’ve acquired, and to interact with staff members on the work site. Students must complete their OJT or internship requirements in order to graduate.

Apprenticeship Training Apprenticeship training begins after you finish your program at Holland College and are working full-time with a suitable employer. When you are working with a suitable employer, you will register as an apprentice, and Apprenticeship PEI will give you credit for the hours earned and block exams passed while you were at Holland College. Each trade has a certain number of hours that an apprentice must complete before he or she can take block training and move to up to the next level. Once you have completed the required number of blocks and worked the required number of hours for your trade, you can earn your Interprovincial Red Seal by completing an exam. An Interprovincial Red Seal, which is the mark of excellence for your chosen trade and the designation most employers will ask for, gives you the ability to work anywhere in Canada. The most successful path to an Interprovincial Red Seal begins with a full-time Holland College program. For more information about apprenticeship training in P.E.I., visit apprenticeship.pe.ca. Tourism and Culinary Centre The Tourism and Culinary Centre is located on the Charlottetown waterfront with a magnificent view of the entrance to the Charlottetown Harbour. The TCC houses a library, The Culinary Institute of Canada and Canada’s Smartest Kitchen, the research arm of the culinary institute. The Montgomery Cafeteria is located at the TCC. Here, first year Culinary Arts students learn their trade, while upstairs in the Lucy Maud Dining Room, second-year Culinary Arts, Pastry Arts, and International Hospitality Management students hone their skills.
