Scotch (rib eye) A very tender and well marbled cut, Scotch has an unmistakable flavour. When the rib bones are left in, it makes an impressive standing rib roast or can be cut into a bone-in rib steak, great for sharing!

Porterhouse

Eye fillet (fillet/tenderloin) Eye fillet is the smallest and most tender cut of beef, with very little fat content.

T-bone

(sirloin/new york steak) Popular, tender and easy to cook, Porterhouse is also a leaner option.

This is a bone-in steak, which includes both the eye fillet and the porterhouse, making it very tender and full of flavour. Two steaks in one!

How to cook the perfect steak

1. Take steaks out of the fridge about 20 minutes before grilling to bring them to room temperature. This will help them cook more evenly.

Cooking times

2. Oil the steaks, not the fry pan or grill.

These times are based on cooking a steak that’s about 2.5cm thick.

Cooking times vary depending on the type and thickness of the steak, and how hot your pan is.

3. S eason with salt and cracked pepper just before cooking.

4. P reheat the pan or grill on high.

4 Coles Finest Angus Beef Sausages 1 Prick sausages and cook in a non-stick frying pan 2 medium brown onions, sliced over low heat, turning a few times, until golden 2 cloves garlic, finely chopped brown and cooked through. Remove from the pan 2 medium capsicums (1 red, 1 green), and set aside. cut into medium slices 2 Return pan to the heat. Add the onions and 1 tbsp olive oil cook over low-medium heat for 2-3 minutes.

2 tbsp balsamic vinegar Add the garlic and cook a further minute.

4 Coles Bakery hot dog rolls Add the capsicum and oil and cook for 1 tbsp Dijon mustard 2-3 minutes. Season with salt and pepper.

200g Coles Brand tasty cheddar cheese, Pour in the vinegar and cook for 1-2 minutes grated until evaporated.

3 Slice each roll down the centre but not the whole way through and spread with a teaspoon of mustard. Place on an oven tray. Slice sausages lengthwise. Fill rolls with sausages and onion mixture. Sprinkle each roll with cheese.

Place under preheated grill for a few minutes to melt the cheese and serve.

Method

8 fillets of fresh Barramundi (approx 170g each) FOR THE SALAD ½ red onion, thinly sliced 1 tbsp red wine vinegar ¼ tsp salt 2 avocados, cut in quarters, stone removed 1 mango, peeled and cut into thin wedges 2 baby cos, ends trimmed, cut into 6cm pieces 2 spring onions, thinly sliced on an angle FOR THE GLAZE ½ pineapple, cut into large pieces ½ cup brown sugar 1 tbsp soy sauce Juice of 1 lime FOR THE VINAIGRETTE Juice of 3 limes 1 tbsp brown sugar 1 tbsp soy sauce ⅓ cup extra virgin olive oil

1 P lace the red onions in a bowl with the red wine vinegar and a ¼ teaspoon of salt. Let sit and marinate while preparing the glaze.

2 To make the glaze, place the pineapple in a food processor and blend until smooth.

Pour the pineapple purée into a large saucepan over medium heat and then add the brown sugar and soy. Cook until the sugar has dissolved, stirring constantly, add the lime juice and stir just to combine. Remove from the heat.

3 For the vinaigrette, combine the lime juice, sugar and soy in a medium mixing bowl.

While whisking, slowly pour in the olive oil.

Reserve while grilling avocados.

4 To grill the avocados, preheat a grill pan to medium high heat. Sprinkle the inside of the avocado with salt, drizzle with a little olive oil and place on the grill, cut side down. Let it cook for about 1-2 minutes until charred, then turn clockwise a quarter turn. Let cook for a further 1-2 minutes or until charred, then remove and let cool, cut side up.

5 Preheat oven to 200°C. Place barramundi fillets on a baking tray lined with aluminium and brushed with oil. Using a spoon,drizzle the glaze over the fillet to coat.

6 Place in oven and let cook for about 10 minutes or until fish is just cooked and glaze has set.

7 To assemble, remove avocado from skin and arrange with baby cos and mango on a platter, top with barramundi, drizzle with vinaigrette and garnish with red onions. Serve immediately.

½ cup caster sugar /3 cup firmly packed brown sugar 4 eggs 2 cups plain flour ½ cup self raising flour ½ tsp bicarbonate of soda 2 tsp mixed spice 1 cup (120g) Blanched Almonds (to decorate)

Method

1. Combine fruit and ½ cup of brandy in a large bowl. Cover and store in a cool, dark place for 5-7 days, stirring each day.

2. Preheat oven to 150°C 3. Grease a 22cm round deep cake tin. Line with three layers of brown paper, extending papers 5cm above rim.

4. Stir slivered almonds, pineapple and grated apple into fruit mixture.

5. Beat butter and sugars together until creamy. Add eggs, one at a time, beating until combined. Add creamed mixture to fruit mixture, mix well. Stir in sifted dry ingredients. Spread evenly into pan. Tap pan several times on bench to settle mixture.
