MASHED POTATO 1kg red washed potatoes, peeled, cut into 3cm chunks ½ cup full cream milk, warmed 75g unsalted butter, at room temperature 230g green beans

1 For the mashed potatoes: Cover potatoes with cold salted water in a large heavy based saucepan. Bring to the boil. Cook for 20-25 minutes, or until tender. Drain in a colander and stand for 5 minutes to steam dry.

SCHNITZELS 5 slices white sliced bread 1 /3 cup plain flour 2 Coles free range eggs 1 tbsp Dijon mustard 4 Coles Beef Schnitzels 5 tbsp olive oil

2 Press the potatoes through a large sieve or potato ricer back into the same pan.

Stir in the milk and butter until very smooth. Season with salt and pepper.

3 For the schnitzels: Place bread into a food processor and blend to fine crumbs. Using 3 separate plates, scatter flour over first plate and season with salt and pepper.

Beat eggs with mustard in a small bowl and pour onto second plate, and scatter breadcrumbs over third plate.

4 Dust schnitzel in flour, then dip into egg mixture, and finally into the breadcrumbs, pressing on to coat. Place schnitzel on a separate plate. Repeat method with the remaining schnitzels.

5 Heat 2 tablespoons oil in a large heavy based frying pan over high heat. When pan is hot, add 2 schnitzels to the pan.

Cook for 2 minutes on each side until golden. Remove to serving plates.

6 Repeat with the remaining schnitzels.

Remove oil from pan and wipe clean.

Return pan to the heat. Once hot, add remaining oil and allow to heat for 1 minute. Add green beans and cook for 2 minutes, or until just tender. Season with salt and pepper. Serve with the schnitzels and mashed potato.

MERINGUE 6 large egg whites 1 2/3 cups caster sugar 1 tsp white vinegar ½ tsp pure vanilla extract ¼ tsp fine sea salt 8 teaspoons cornflour

To make the meringue:

TOPPINGS 500g fresh small strawberries, hulled and halved 1 ½ tbsp amaretto liqueur 1 tbsp honey 1 1/3 cups pure cream 1 tsp pure almond extract 2 tbsp finely chopped toasted shelled pistachios Icing sugar, for sifting MAKE-AHEAD The meringue can be made up to 8 hours ahead.

Cool completely then cover and keep at room temperature. Assemble just before serving.

1 Position the rack in the bottom of the oven and preheat the oven to 150°C or 130°C fan. Line 1 large baking tray with baking paper and draw a 20cm circle in the centre of the paper.

2 In the bowl of an electric stand mixer fitted with a whisk attachment, beat the egg whites, sugar, vinegar, vanilla, and salt on medium-high speed for about 18 minutes, or until firm peaks form.

Sift the cornflour into the meringue and gently fold it in.

3 Using a large spoon, dollop the meringue on the centre of the circle on the prepared baking tray.

Spread the mixture, forming a thick, billowy, even layer and keeping it within the circle (the pavlova will expand slightly when it bakes).

4 Reduce the oven temperature to 105°F or 85°C fan and immediately place the pavlova in the oven.

Bake the pavlova for about 1 hour, or until it is crisp and very pale on the outside but still has a marshmallow-like centre. Turn off the oven, prop the oven door open with a wooden spoon, and keep the meringue in the oven for about 30 minutes, or until it has cooled slightly. Remove from the oven to cool completely.

Meanwhile, to prepare the toppings, assemble, and serve: 5 In a medium bowl, toss the strawberries, amaretto, and honey to coat. Set aside, tossing occasionally, for at least 30 minutes, or until the juices from the strawberries form.

6 In a large bowl, whisk the cream and almond extract until thick. Set the meringue on a platter.

Spoon the cream on top of the meringue. Using a slotted spoon, arrange the strawberries over the cream; reserve the strawberry juices in the bowl.

Sprinkle the pistachios over the strawberries, and then sift the icing sugar over.

7 Cut the pavlova into wedges and transfer to plates.

Drizzle the reserved strawberry juices around each wedge and serve immediately.
