PRAWN ON ESC ABECHE WITH SAFFRON A�OLI

SERVES

Ingredients ESCABECHE 2½ cups dry white wine 2½ cups white wine vinegar 1 /3 cup caster sugar 1kg raw tiger prawns, peeled, deveined 2 tbsp olive oil 1 medium brown onion, julienned 2 medium carrots, peeled, thinly sliced diagonally into rounds 2 celery sticks, thinly sliced diagonally crossways 1 medium red capsicum, thinly sliced 1 bunch fresh coriander, tender stems and leaves only 1 Lebanese cucumber, halved lengthwise, sliced diagonally

Method CROUTONS 1 ciabatta loaf, cut on sharp diagonal into ½cm thin slices 3 tbsp olive oil Saffron Aoli (see recipe) SAFFRON A�OLI One 4cm-thick slice ciabatta bread (about 28g), crust removed 1 /3 cup full cream milk 3 cloves garlic, peeled 2 large egg yolks 1 tbsp fresh lemon juice 1 tsp saffron threads 1 cup olive oil ½ tsp salt

To make the Escabeche:

To serve:

1 In a large heavy saucepan, combine the wine, vinegar, sugar, and 3 cups of water.

Bring to a boil over high heat and boil for about 15 minutes, or until reduced by one-third. Place the prawns in a large bowl and pour the hot pickling liquid over. Set aside for about 15 minutes, or until the mixture has cooled to room temperature and the prawns are cooked.

1 Pour off most of the liquid from the escabeche, reserving some liquid on the side. In a large bowl, toss the escabeche, coriander, and cucumber. Season to taste with salt, and dress with the reserved pickling liquid, if desired. Serve immediately with the croutons and aoli.

2 Meanwhile, heat a large heavy pot over medium heat. Add the oil and the onions and cook for about 3 minutes, or until just tender. Add the carrots and celery and cook for about 2 minutes, or until just tender.

Add the capsicums and cook for about 2 minutes, or until just tender. Remove from the heat and add the vegetables to the prawn and pickling liquid. Set aside until the mixture is cool. Cover and refrigerate for at least 4 hours.

To make the croutons: 1 Prepare the barbecue for medium-high heat. Brush the ciabatta slices with the oil and sprinkle with salt and pepper.

Barbecue, turning as necessary, for about 10 minutes, or until golden brown.

MAKE-AHEAD: The escabeche can marinate up to 1 day, covered and refrigerated.

To make the Saffron Aioli: 1 Tear the bread into small pieces and toss them in a small bowl with the milk. Stand for about 5 minutes, or until the bread becomes soggy. Squeeze the bread pieces to exude the excess milk.

2 Meanwhile, mince the garlic in the food processor. Add the soaked bread, egg yolks, lemon juice, and saffron and process to blend well. With the machine running, slowly add the oil in a thin steady stream, blending until the aoli becomes thick and creamy. Mix in the salt.

MAKE-AHEAD: The aoli can be made up to 2 days ahead, covered and refrigerated.

Whisk the aoli until smooth and creamy before serving or using.

SALAD ¼ cup fresh lemon juice ½ cup plus 1 tbsp olive oil 3 bunches asparagus, woody ends trimmed 140g rocket leaves 1 cup (not packed) fresh mint leaves 1 small white onion, thinly sliced into rings ½ cup Dukkah (see recipe) LABNEH 3 cups Greek yoghurt 3 tsp fresh lemon juice 1 tsp fine sea salt DUKKAH ¼ cup hazelnuts 2 tbsp coriander seeds 2 tbsp sesame seeds 1 tbsp cumin seeds ¼ tsp fine sea salt 1/8 tsp freshly ground black pepper 1/8 tsp cayenne pepper MAKE-AHEAD The labneh and lemon dressing can be made up to 3 days ahead, covered and refrigerated.

The dukkah can be made up to 2 weeks ahead. Store airtight at room temperature.

To make the Labneh 1 Line a fine-meshed sieve with a double layer of muslin.

In a small bowl, combine the yoghurt, lemon juice, and salt. Place the yoghurt mixture into the sieve and cover with more muslin. Set the sieve over a bowl to catch any drippings. Using a small plate and a large can, weigh down the yoghurt to press out the excess liquid.

Refrigerate overnight.

To make and serve the salad 2 In a medium bowl, whisk the lemon juice and ½ cup of the oil to blend. Season to taste with salt and black pepper. Set the dressing aside.

3P reheat the barbecue to high heat. In a large bowl, toss the asparagus with the remaining 1 tablespoon oil. Season with salt and pepper. Barbecue the asparagus, turning as needed, for about 3 minutes, or until charred but still crisp-tender. Return the asparagus to the same bowl and toss with 2 tablespoons of the dressing.

To make the Dukkah 1 Preheat the oven to 200°C (180°C). Arrange the hazelnuts on a baking tray and roast, stirring occasionally, for about 8 minutes, or until fragrant and golden. Cool completely. Rub the hazelnuts in a tea towel to remove the dark brown skins.

2 Heat a small heavy frying pan over medium heat.

Add the coriander seeds and stir for about 3 minutes, or until aromatic and toasted. Remove the coriander seeds and set aside. In the same pan, stir the sesame seeds and cumin seeds for about 3 minutes, or until they are toasted and aromatic. Cool completely.

3 I n a food processor, pulse the coriander seeds 4 times to break them up. Add the hazelnuts, sesame seeds, and cumin seeds. Pulse to make a very coarse blend.

It should be the texture of coarse breadcrumbs.

Over-blending will make a paste that is undesirable.

4T ransfer the dukkah to a bowl and stir in the salt, black pepper, and cayenne.

4 S mear a dollop of labneh onto 8 starter plates.

DUKKAH In a separate bowl, toss the rocket, mint, onion, and MAKES ¼ cup of the dressing to coat. Season to taste with salt. Arrange the rocket salad on top of the labneh and place the asparagus on top. Drizzle with more dressing, if desired. Garnish the salad with the dukkah cup and serve.
