PRAWN ON ESC ABECHE WITH SAFFRON A�OLI

SERVES

Ingredients ESCABECHE 2½ cups dry white wine 2½ cups white wine vinegar 1 /3 cup caster sugar 1kg raw tiger prawns, peeled, deveined 2 tbsp olive oil 1 medium brown onion, julienned 2 medium carrots, peeled, thinly sliced diagonally into rounds 2 celery sticks, thinly sliced diagonally crossways 1 medium red capsicum, thinly sliced 1 bunch fresh coriander, tender stems and leaves only 1 Lebanese cucumber, halved lengthwise, sliced diagonally CROUTONS

Method 1 ciabatta loaf, cut on sharp diagonal into ½cm thin slices 3 tbsp olive oil Saffron Aoli (see recipe)

To make the Escabeche:

1 In a large heavy saucepan, combine the wine, vinegar, sugar, and 3 cups of water.

Bring to a boil over high heat and boil for about 15 minutes, or until reduced by one-third. Place the prawns in a large bowl SAFFRON A�OLI and pour the hot pickling liquid over. Set One 4cm-thick slice aside for about 15 minutes, or until the ciabatta bread (about 28g), mixture has cooled to room temperature crust removed and the prawns are cooked.

1 /3 cup full cream milk 2 Meanwhile, heat a large heavy pot over 3 cloves garlic, peeled medium heat. Add the oil and the onions 2 large egg yolks and cook for about 3 minutes, or until just 1 tbsp fresh lemon juice tender. Add the carrots and celery and cook 1 tsp saffron threads for about 2 minutes, or until just tender.

1 cup olive oil Add the capsicums and cook for about 2 ½ tsp salt minutes, or until just tender. Remove from the heat and add the vegetables to the prawn and pickling liquid. Set aside until the mixture is cool. Cover and refrigerate for at least 4 hours.

To make the croutons: 1 Prepare the barbecue for medium-high heat. Brush the ciabatta slices with the oil and sprinkle with salt and pepper.

Barbecue, turning as necessary, for about 10 minutes, or until golden brown.

To serve: 1 Pour off most of the liquid from the escabeche, reserving some liquid on the side. In a large bowl, toss the escabeche, coriander, and cucumber. Season to taste with salt, and dress with the reserved pickling liquid, if desired. Serve immediately with the croutons and aoli.

MAKE-AHEAD: The escabeche can marinate up to 1 day, covered and refrigerated.

To make the Saffron Aioli: 1 Tear the bread into small pieces and toss them in a small bowl with the milk. Stand for about 5 minutes, or until the bread becomes soggy. Squeeze the bread pieces to exude the excess milk.

2 Meanwhile, mince the garlic in the food processor. Add the soaked bread, egg yolks, lemon juice, and saffron and process to blend well. With the machine running, slowly add the oil in a thin steady stream, blending until the aoli becomes thick and creamy. Mix in the salt.

MAKE-AHEAD: The aoli can be made up to 2 days ahead, covered and refrigerated.

Whisk the aoli until smooth and creamy before serving or using.

SALAD ¼ cup fresh lemon juice ½ cup plus 1 tbsp olive oil 3 bunches asparagus, woody ends trimmed 140g rocket leaves 1 cup (not packed) fresh mint leaves 1 small white onion, thinly sliced into rings ½ cup Dukkah (see recipe) LABNEH 3 cups Greek yoghurt 3 tsp fresh lemon juice 1 tsp fine sea salt DUKKAH ¼ cup hazelnuts 2 tbsp coriander seeds 2 tbsp sesame seeds 1 tbsp cumin seeds ¼ tsp fine sea salt 1/8 tsp freshly ground black pepper 1/8 tsp cayenne pepper MAKE-AHEAD The labneh and lemon dressing can be made up to 3 days ahead, covered and refrigerated.The dukkah can be made up to 2 weeks ahead. Store airtight at room temperature.
