Your guide to lamb There’s never a better time than Spring for tender, juicy sweet lamb.

Shank From the end of either the fore or hind leg, these need slow cooking until the meat falls off the bone.

Look for: Shanks.

Tip: Once cooked and extremely tender, the meat can be pulled off the bone, shredded and served in rolls.

Shoulder From the front of the lamb, this great-value cut is suitable for roasting, braising and casseroles. Chops can be pan-fried or barbecued too.

Look for: Shoulder Roast Forequarter Chops.

Tip: Don’t cook past medium doneness or it will be dry. Lamb should be served a little pink and juicy in the centre.

Rack This premium cut is the very tender loin backstrap with the rib bones attached and is best served medium-rare. Racks are ideal for roasting, while cutlets can be pan-fried, grilled or barbecued.

Look for: Rack Roast, Cutlets.

Tip: To French trim, use a knife to carefully scrape the fat from the bones.

This makes them look polished, plus they’re easier to pick up and eat.

Leg From the hindquarter, this versatile cut suits many different cooking methods, including roasting, braising and barbecuing. The texture is tender yet firm.

Look for: Leg Roast, Boneless Leg Roast, Leg Steaks.

Tip: Don’t cook past medium doneness or it will be dry. Lamb should be served a little pink and juicy in the centre.

Loin Look for: Loin Roast, Loin Chops.

From the middle section, this cut is flavoursome and tender. It’s great for Tip: For best results, rest for a quarter of the cooking time. barbecuing, pan-frying or grilling.

Method

Lamb and Salsa Verde Fine zest of 2 lemons plus ¼ cup juice 1 cup extra-virgin olive oil 2 tbsp finely chopped fresh oregano 2 tsp finely chopped fresh rosemary 3 garlic cloves, finely chopped 2.2-2.5kg Coles Australian Lamb Whole Leg Roast, excess fat trimmed ⅓ cup finely chopped spring onions (white and green parts) ⅓ cup pitted kalamata olives, coarsely chopped ¼ cup finely chopped drained capers ¼ cup finely chopped fresh flat leaf parsley 2 tbsp finely chopped shallots (about 1 small)

To marinate the lamb and make the salsa verde 1 I n a medium bowl, mix the lemon zest, oil, oregano, and rosemary. Transfer ¼ cup of the oil mixture to a small bowl and stir in the garlic. Rub the garlic oil all over the lamb, then cover and refrigerate the lamb for at least 4 hours and up to 1 day.

Yoghurt Sauce 2 cups reduced fat plain Greek style yoghurt 1 ⅓ cups finely chopped shallots (about 3 large) ½ cup (loosely packed) fresh mint leaves, finely chopped Grilled Flat Breads with Infused Garlic-Rosemary Oil

2M eanwhile, to the remaining oil mixture, stir in the spring onions, olives, capers, parsley, and shallots. Squeeze ¼ cup of juice from the zested lemons and stir the juice into the kalamata mixture. Season the salsa to taste with salt and freshly ground black pepper.

Cover and refrigerate for at least 4 hours and up to 1 day.

To make the yoghurt sauce 1 In a medium bowl, mix the yoghurt, shallots, and mint. Season to taste with salt and pepper. Cover and refrigerate for at least 4 hours and up to 1 day.

To roast the lamb 1 Preheat the oven to 180°C conventional (160°C fan).

2P lace the lamb on a rack over roasting dish and cook for 1 hour 20 minutes, or until a meat thermometer registers 48°C for medium-rare doneness to 55°C for medium-well doneness when inserted into the thickest part of the lamb. Transfer the lamb to a carving board and rest for 15 minutes.

To serve 1 Thinly slice the lamb across the grain and transfer it to plates. Serve with the salsa verde, yoghurt sauce, and flat breads.

CAKE 5 large eggs, at room temperature, separated 250g caster sugar ½ cup plain flour, sifted 250g almond meal 1 tsp vanilla extract 150ml fresh orange juice Sifted icing sugar, for dusting RHUBARB & STRAWBERRY COMPOTE 3 large stalks rhubarb, roughly chopped into 3cm lengths 2 punnets (500g) strawberries, hulled, cut in half if large ¾ cup caster sugar Juice of 1 lemon ½ vanilla bean, split lengthwise, seeds scraped

FOR THE CAKE 1 Preheat oven to 180°C (160°C fan forced).

Grease a 22cm spring form pan and line the base with baking paper.

2 With a stand mixer or in a large bowl with electric beaters, beat the egg yolks and sugar until pale and creamy.

3 Add the flour, almond meal, vanilla and orange juice and mix on low for 1-2 minutes until combined.

4 In a clean bowl with clean beaters, beat the egg whites just to stiff peaks. With a metal spoon or spatula, fold a third of the egg whites into the almond mixture to loosen. Fold in remaining egg whites lightly until combined.

5 Spoon the mixture into the pan, gently smooth top and bake for 45-50 minutes, or until golden and firm to touch in the centre. Cool cake in pan before gently removing from the pan and cooling on a wire rack.

FOR THE RHUBARB AND STRAWBERRY COMPOTE 6 While the cake is baking, combine all of the ingredients in a medium sized heavy based saucepan. Mix well. Cover and bring to the boil.

Reduce the heat and simmer over low heat, covered for 10-15 minutes until fruit is soft and broken down.

7 Remove the lid and simmer a further 10 minutes, or until mixture thickens.

8 Remove pan from heat and serve warm with the cake.

TO SERVE 9 Dust top of cooled cake with icing sugar and serve with the compote.

1. Place mixed fruit, sultanas, raisins, currants, pears and apple juice into a large saucepan, cover and cook over medium heat for 7 minute, stirring occasionally. Place in refrigerator to cool completely then add pear liqueur (or brandy).

2. Melt chocolate and butter together, stirring occasionally.

Cool and gradually beat in eggs. Pour into fruit and combine.

3. Sift flour, spices and salt into a large bowl. Add brown sugar, breadcrumbs and almonds. Pour in chocolate fruit mixture and mix until well combined.

4. Spray pudding bowl (approx. 1.5 litre in size) with oil and line bottom with baking paper.

5. Spoon mixture into the pudding bowl and smooth the top.

Top with a baking paper round and lid.

6. Cook in microwave on defrost setting (300W) for 30 minutes, check if a skewer inserted into pudding comes out clean.

If not cooked, microwave at 5 minute intervals, until skewer comes out clean.
