JERK BEEF FILLET & COR N S AL AD

Ingredients

Method

3 sweet corn cobs, husk intact 1 large red capsicum, diced 1 large avocado, coarsely chopped ⅓ cup coarsely chopped fresh coriander ¼ red onion, finely chopped 2 tsp fresh lime juice 1 tbsp dried thyme 1 tsp allspice ¼ tsp ground cinnamon ¼ tsp dried chilli flakes 4 Coles beef scotch fillet steaks 2 tbsp olive oil Crusty bread, to serve Salt and pepper, to season

1 Cook the corn, in the husk, in the microwave on high (100%) for 10 minutes. Carefully remove and set aside to cool slightly.

Remove the husks and rinse. Place the cobs flat-side down and use a large sharp knife to remove the kernels in shards.

2 Meanwhile, place the capsicum, avocado, coriander, onion and lime juice in a large bowl.

3 Combine the thyme, allspice, cinnamon, chilli, salt and pepper in a small bowl.

Rub over both sides of the beef steaks.

4 Heat 1 tsp of the oil in a large non-stick frying pan over medium-high heat.

Cook the steaks for 3 minutes each side for medium or until cooked to your liking.

Transfer to a chopping board for 2 minutes to rest before slicing. Add the corn and remaining oil to the salad. Season with salt and pepper. Toss gently to combine.

Add the beef and toss gently. Divide among serving bowls and serve with crusty bread.

VALENTINE'S

Raspberry coconut pancakes with hot chocolate sauce

DAY

Ingredients

220g Cadbury dark cooking chocolate, coarsely chopped ¾ cup (185mL) thin cream 1 /3 cup (75g) brown sugar 1 ¼ cups (185g) self-raising flour ½ cup (45g) McKenzie’s desiccated coconut

1 cup (250mL) milk 2 eggs, lightly whisked 2 tsp Queen vanilla essence 2 x 120g punnets fresh raspberries ¼ cup (80g) raspberry jam Cadbury Dark Flake Sprinkles, to serve

Method 1. Combine the chocolate, cream and sugar in a small saucepan over low heat.

Cook, stirring, for 5 mins or until chocolate melts and sugar dissolves. Set aside to cool slightly.

2. Meanwhile, combine the flour and coconut in a large jug. Make a well in the centre. Whisk the milk, egg and vanilla together in a jug. Pour into the well in the flour mixture and stir to form a smooth batter. Set aside for 15 mins to rest.

3. Add half the raspberries to the batter and gently stir to combine. Add the jam and carefully marble through the batter.

4. Brush a large frying pan with melted butter over medium heat. Pour two ¼ cup quantities of batter into the pan, allowing room for spreading. Cook for 2 mins or until bubbles appear on the surface and pancakes are golden underneath.

Turn and cook for a further 1 min or until golden. Transfer to a plate and cover to keep warm. Repeat with remaining batter to make 12 pancakes.

5. Stack pancakes on serving plates. Drizzle with hot chocolate sauce. Sprinkle with remaining raspberries and Cadbury Dark Flake Sprinkles to serve.

CHOCOLATE TRUFFLES

Ingredients

Method

1 cup Coles thickened cream 2 tbsp Chambord (raspberry liqueur) or Grand Marnier (orange liqueur) 200g Coles Brand dark block chocolate, finely chopped Dark cocoa powder, for coating

1 In a small heavy saucepan, heat the cream over medium heat until hot but not boiling.

Remove the pan from the heat and add the Chambord and chocolate. Set aside for 2 minutes then whisk until smooth. Pour the mixture (ganache) into a shallow dish, cover, and refrigerate for about 1 hour, or until set.

Make-Ahead The truffles can be made up to 1 week ahead, covered and refrigerated. Let the truffles stand at room temperature for about 10 minutes to soften slightly before serving.

2 Dip a 2.5cm melon baller into a cup of hot water, shake off the excess water, and scoop out the ganache to form a small ball. (Dipping the baller into hot water makes it easier to

Transfer the truffle to a baking tray lined with baking paper. Repeat to form the remaining truffles, dipping the baller into the hot water as needed. Refrigerate for about 20 minutes, or until the truffles are firm.

3 Roll the truffles between your palms to shape, then coat the truffles in the cocoa powder, shaking off any excess cocoa. Serve the truffles or transfer them to a container, cover, and refrigerate. Let stand at room temperature for about 10 minutes before serving.
