BARBECUED PRAWNS WITH CORN, BACON, BLISTERED JAL APENO, AND AVOC ADO PUREE

Ingredients

Method

Avocado Puree: 2 firm but ripe avocados, halved, peeled, and pitted 2/ cup (loosely packed) 3 fresh coriander leaves 1 clove garlic 2 tbsp fresh lime juice 1 tbsp fresh lemon juice

To make the avocado puree: 1 Blend the avocados, coriander, garlic, lime juice, and lemon juice together in a blender or food processor to the desired consistency. Season to taste with salt and pepper. Spread the puree over a large platter. Press a sheet of plastic wrap directly on the surface of the puree and set aside.

Prawns and Corn: 400g streaky bacon, finely diced 5 fresh corn cobs, peeled, silks removed, kernels removed 1 large jalapeño chilli ½ tsp plus 1 tbsp olive oil 1kg raw Banana or King prawns, peeled and deveined 1 tsp sweet paprika 1 lime, cut in half Fresh coriander sprigs, for garnish

To make the prawns and corn: 2 Preheat the barbecue for medium-high heat.

Place a cast-iron frying pan directly on the barbecue while preheating.

3 Cook the bacon for about 6 minutes, or until rendered and crispy. Add the corn kernels and cook for 3-4 minutes, or until just tender.

4 Meanwhile, in a small bowl, coat the jalapeño with ½ teaspoon of oil and sprinkle with salt. Barbecue the jalapeño for about 3 minutes per side, or until

blistered. Transfer to a small bowl, cover, and let steam for a few minutes. Remove the skin from the jalapeño. Scrape off the seeds for less heat, if desired, and dice. Stir the diced jalapeño into the corn mixture. Season the corn mixture to taste with salt and pepper.

5 In a large bowl, toss the prawns with the remaining 1 tablespoon oil, paprika, salt, and pepper.

Barbecue the prawns for 3-4 minutes per side, or until cooked and still juicy.

To serve: Spoon the corn mixture over the avocado puree and top with the prawns. Squeeze the lime halves over the prawns, garnish with the coriander sprigs, if desired.

3kg Coles Pork leg roast (bone in) 2 ½ tbs olive oil 1 tbs fennel seeds, lightly crushed 1 ½ tbs sea salt 1.5kg washed loose potatoes, halved Ÿ small green cabbage, finely shredded Ÿ small red cabbage, finely shredded 2 pink lady apples, cored, quartered, thinly sliced

coarsely chopped ½ cup (150g) whole egg mayonnaise Ÿ cup (60ml) lemon juice 2 x 165g pkt Gravox Roast chicken with herbs gravy

1 Preheat oven to 230°C. 2 Use a small sharp knife to score rind of pork. Drizzle skin with 1 tbs oil, sprinkle with fennel seeds and salt, pressing into skin.

Place pork on a rack in a baking dish. Cook for 40 minutes. Reduce heat to 200°C and cook for another 1 hour and 30 minutes or until cooked through. Cover pork loosely with foil and rest for 15 minutes before carving.

3 Meanwhile, place potatoes in a large bbaking pan, drizzle with remaining oil and ttoss to coat. t. Season.

½ cup water 1 ½ tsp powdered gelatine 4 ripe mangoes, peeled, pitted; 2 coarsely chopped (about 400g), 2 finely diced 1 tbsp lemon zest ¼ cup lemon juice ¼ cup fresh lime juice 1 tbsp plus 1 tsp lime zest 1 cup caster sugar, divided 3 large egg whites ¼ tsp cream of tartar 1 cup cold thickened cream

1 Place the water in a small saucepan. Sprinkle the gelatine over the water and set aside for about 5 minutes, or until the gelatine softens. Stir the gelatine mixture over low heat for about 1 minute, or until the gelatine dissolves.

2 In a blender, puree the chopped mangoes, lemon zest and juice, lime juice, and 1 tbsp of the lime zest until smooth. With the machine running, blend in the gelatine mixture. Strain the puree through a fine-mesh sieve and into a large bowl.

3 Meanwhile, using an electric mixer fitted with the whisk attachment, beat the egg whites and cream of tartar in the mixer bowl on medium-high speed until stiff but not dry. Gradually add ½ cup of the sugar, beating until the mixture is stiff and shiny.

Whisk one third of the meringue into the mango puree. Fold the remaining whites into the puree.

4 Using the electric mixer with the whisk attachment and clean bowl, beat the cream and remaining ½ cup sugar until firm peaks form.

Fold the whipped cream into the mango mixture.

5 Toss the finely diced mango with the remaining 1 tsp lime zest and divide half of the diced mango among eight 300ml stemless wine glasses or dessert coups. Divide the mango mixture evenly among the glasses. Cover and refrigerate for about 3 hours, or until set. Cover and refrigerate the remaining diced mango.

6 Divide the remaining diced mango over each and serve.

Make ahead The parfaits can be made up to 2 days ahead, covered and refrigerated.

Method 1. In a food processor, crush the butternut biscuits together with the hazelnuts. (Alternately, place in a tea towel and crush with a rolling pin).
