elcome to this year’s SPIT Journal!

What an exhilarating moment to introduce a new beginning for Asia’s most respected wine and spirits competition — now reborn as the Global Wine & Spirits Awards Asia (GWSAA). With a brand-new name and look, this evolution symbolises the next step in our mission to celebrate and elevate Asia’s voice in the global drinkscape!

While our visual identity may have evolved, our purpose remains dedicated in representing the spirit of “Asia’s Choice, Asia’s Voice” — ensuring every award is judged, discussed and decided by those who know best of the Asian market. All 45 judges, from importers, leading sommeliers, educators, to wine communicators and media professionals, were Asia-based experts. Their deep knowledge of regional cuisine, climates, and consumers’ preferences are what made our winners as indicators of Asia’s tastes.

We were proud to welcome an inspiring panel of talents from across the region this year, including Bill from Shenzhen, Tommy from Guangzhou, Mason from Singapore, Vi from Vietnam and Thomas from Malaysia.

They have gathered and joined Hong Kong’s distinguished judging community in celebrating excellence across wine, sake, spirits, and beer.

Our winners are more than medallists — they represent what resonates with Asian palates: harmony, balance, and expression. They are wines and spirits that capture not only the technical brilliance, but also the emotional connection — bottles that speak the language of Asia’s tastes and traditions.

As you explore this issue, you’ll meet the judges and unfold their perspectives of their local beverage cultures, and how local producers have adapted the consumers’ preferences to produce a range of beverages that pair well with Asia’s cuisine. You will also find out the trends in guiding Asia’s to the next chapter of ‘taste’!

With pride and optimism, we look forward to continuing our mission — promoting Asia’s palate, carrying out collaboration, and amplifying our region’s voice on the world stage.

CALM IN THE STORM Even the strongest typhoon in decades couldn’t blow Asia’s most respected wine and spirits competition away!

When Super Typhoon, Ragasa (second super typhoon of the year), ferociously stroked across Hong Kong, the Global Wine & Spirits Awards Asia (GWSAA) team has faced a true test of resolve! Flights and transports were suspended, and everything in the city froze for over 10 hours! The GWSAA team acted swiftly upon this and with great coordination and unwavering professionalism, the competition took place with only half a day’s delay.

The experienced GWSAA team worked tirelessly with our venue partner, The Arca Hotel, with a well-prepared contingency plan which ensured the competition could resume safely and smoothly.

“Calling off the competition was never an option!” - one team member remarked.

“We are always ready for challenges under all conditions!”, which GWSAA team has proven that!

GWSAA has upheld high international standards across wine, spirits, sake, and beer for over a decade, while staying deeply rooted in Asian taste and culture. 45 judges have gathered across from Asia, with over 60% of whom are Advanced Sommeliers, to evaluate hundreds of entries from around the world for the competition this year!

TASTING THE WORLD THROUGH ASIAN PALATES Entries were first assessed individually, before undergoing a second stage of evaluation at the Food & Wine Pairing Competition, held at one of our long-term partners, Parkview Hong Kong. Judges have discovered the perfect pairings through Japanese, Korean, Indian, and Chinese cuisine, honouring Asia’s remarkable culinary diversity. The competition remains the only one in Asia to include food pairing as an official judging category—a signature GWSAA distinction!

Award-winning entries have served as a guide for the region’s top beverage professionals throughout the years. These award winners also play a vital role on the beverage lists and market trends every year.

JUDGES’ VIEWS: ASIA’S PALATE, ASIA’S PERSPECTIVE “Taste is not universal,” expressed by one of the judges, putting emphasis on why GWSAA’s panel only consisted of Asia-based experts. “It’s shaped by climate, cuisine, and culture. Our judges understand the delicate balance of sweetness preferred in Japan as well as the spice tolerance of Southeast Asia, and such unique concept is vital and irreplaceable.”

One of our fellow judges, Bojan Radulovic, has added “Having Asia-based judges can ensure decisions are made with the same cultural insight, maintaining a fair judgement. It’s about authenticity and respect— understanding local values while recognising regional potentials. That’s how we build pride and professionalism within Asia’s own wine and spirit culture.”

TEST YOUR PALATE The GWSAA competition opened its doors to the public with “Test Your Palate”, the desired tasting event where consumers are thrilled to meet the experts! Guests have tasted hundreds of entries and award-winning wines, spirits, and beers, gaining a glimpse into Asia’s most exciting beverage trends. The event continues to be a highlight of the judging week, gathering professionals and enthusiasts together in a social celebration of craftsmanship and discovery.

A TOAST TO RESILIENCE We have wrapped up the week with a tasting session at 67 Pall Mall, featuring rare Austrian Magnums, as tributes to endurance, excellence, and the bonds that unite Asia’s top beverage professionals, then followed by a dinner at a Chinese restaurant with comfort local dishes!

Despite the storm’s ferocity, GWSAA’s 2025 judging week appeared stronger than ever and proved that Asia’s spirit of collaboration, creativity, and perseverance shines brightest when tested.

How would you describe the Italian wine market in Asia today?

In my opinion, the Hong Kong market is somewhat similar—perhaps between Japan and Korea.

Italian wine is well established in Japan, a mature market with vibrant on-trade activity. Both fine dining and small Italian restaurants, often run by Japanese chefs who have lived in Italy or simply love Italian cuisine. These close cultural ties have significantly influenced Japan’s wine market.

Natural wine is also hugely popular in Japan, as its minimalist philosophy aligns perfectly with Japanese cooking, both aiming to preserve natural flavours.

In contrast, Italian wine in Korea is still growing, led mainly by off-trade retail. Italian wine pairs beautifully with Korean food, leading to a rapid growth, particularly among easydrinking, everyday bottles.

In China, sparkling and white wines are gaining attention after years of red wine dominance. With many local wineries and distilleries, consumers are increasingly open to exploring new styles—one importer’s bestseller is now a bottle of white Lugana instead of a full-bodied red.

As for Hong Kong, demand for niche Italian wines and local grape varieties remain strong. Growth comes from well-made, well-priced DOC and DOCG classics, such as Chianti Classico, Etna Bianco and Rosso, and Barbaresco. On-trade channels remain cautious after previous challenging years, while the off-trade market is thriving—always seeking new and unique wines to surprise customers.

How would you describe the wine culture in China today?

The wine culture is always changing in China. Wines were purchased as gifts for clients and business dinners previously, but this phenomenon has changed as people tend to buy for personal consumption nowadays rather than gifting, and this has changed the styles of wines that people are looking for, shifting from big and bold red wines to light and elegant wines.

Whites and sparklings are really taking off and have become very popular, such as German Rieslings and New Zealand Sauvignon Blancs.

So, for anyone who’s curious about the China market, I’d say forget about the old stereo-types and spend some time to explore in your local wine bars, and you’ll know what the trend is!

What are the most popular price points or tiers that are currently driving sales in the off-trade/retail market?

First of all, I’d say the mid-range wines are suffering the most and moving slowly because with the economy slowing down, which also lead to entry-level wines are becoming more popular, especially the younger generation is drinking them. On the other hand, the wealthy Chinese are buying the expensive bottles from the overseas, like Hong Kong, London, and New York. So, the mid-range wines are really suffering, as less customers are buying them. This also reflects the middle class is shrinking (the growing disparity between rich and poor) and they’re drinking less and less these days.

Natural wine is very, very important in Japan because its philosophy aligns perfectly with the minimalist, low-intervention approach to Japanese cooking.

It is important for competition to be judged entirely by Asia-based experts because they deeply understand the region’s culture, values, and context.

This ensures fair and relevant judging, respects local perspectives, and has a better understanding on the uniqueness of Asian talents and issues. Their insights led to more accurate and meaningful decisions that outside talents might miss. This also supports the growth and pride of Asian expertise in the competition.

In your view, how does this competition help producers succeed in Asia?

This competition helps producers succeed in Asia by giving them exposure to the regional market and its unique demands. It helps them to understand local consumer preferences, cultural differences, and business challenges. Producers learn how to adapt their products and strategies to fit Asia’s diverse markets by participating. It also builds their reputation and credibility within Asia, and expand to more opportunities for growth and partnership in the region.

How would you describe the wine market in Vietnam today?

The Vietnamese wine market has been evolving in a fascinating, positive, and increasingly diverse direction in recent years.

From my perspective, Vietnam is now importing wines with styles that differ significantly from those brought in during the early years (30 – 35 years ago). I’ve noticed a growing presence of wines with distinctive styles recently, such as pét-nat (pétillant naturel), natural wines, and bottles from regions or countries that Vietnam had never imported before — for examples, regions in Austria and even bottles from New York!

The trend towards natural wines has become more notable in the local market over the past few years. Many importers are now paying close attention to sourcing wines that are more environmentally friendly, such as organic, biodynamic, minimal intervention, and natural wines. These wines often featured lower alcohol content, delicate flavour profile, and are intentionally selected to pair well with local Vietnamese cuisine. The idea of pairing wine with Vietnamese dishes in a modern and localised way has becoming increasingly popular—not only amongst local consumers but also with international visitors.

How would you describe the wine culture in Singapore today?

Singapore’s wine culture is quite vibrant, and fast maturing.

Consumers from a small but sophisticated city-state, are highly curious and well-travelled, perhaps also due to the strength of their currency. They are not bound by traditions and opened to explore all varieties from Burgundy, Bordeaux, to niche regions like Hokkaido and Ningxia. Wine is a social connector, not just a luxury item, and that is why there is a growth of natural wine bars as well as restaurants with lower markups on wines. I think Singapore will be the next “Hong Kong” within Asia!

How does this new perception influence your decisions as a Wine Director? Is the emphasis shifting from expertise to ‘edutainment’ and approachability?”

Absolutely. The role of a sommelier has evolved from being a gatekeeper of knowledge to being a bridge between producer and guest, or even a storyteller. Expertise remains essential as it is the foundation to me. I think the engagement has changed between sommeliers and customers. Wine consumers nowadays value authenticity, humility, and emotional connection more than encyclopaedic details.

I do think about storytelling and accessibility as much as I do about typicity or prestige when I curate wines by the glass. We want to create a connection and develop a conversation with our guests through wines. Wines like a Hokkaido Sauvignon Blanc would bring a great surprise to our guests instead of a popular New Zealand Sauvignon Blanc. Hokkaido Sauvignon Blanc is less known but piques their interests!

Guests would be very intimidated to order a full bottle and commit to it throughout the night for wine list without by the glass option, so it is important to offer wine by the glass options for guests to explore and recommend options to pair with their dishes to enhance their dining experience.

For our sommeliers, we emphasised on conversational hospitality over textbook service. We train them to read the guests’ needs and build a conversation with them, not just reciting information. It’s about meeting curiosity with warmth, so that learning about wine feels effortless and not intimidating.

Between Hokkaido and Ningxia, which ‘non-traditional’ region do you see having the best long-term potential for sustained quality?

Both regions have brought fascinating new chapters in Asian wine, but in very different ways.

Personally, Hokkaido shows a very promising long-term refinement.

Its cool climate, volcanic soils, and deep respect for craft align naturally with the philosophy of fine wine. The Japanese pursuit of harmony and precision has produced wines of great quality.

I feel Hokkaido has a more sustainable journey ahead is due to geographical factor - global warming. Hokkaido was deemed as an area for being too cold to produce quality wines due to a lack of ripeness in the past. However, this has changed due to global warming, as temperatures are rising gradually, closed to the temperature in Burgundy back in the 70s and 80s! So, I see a huge potential in the next 10 years for Hokkaido, as it has already produced some very solid Pinot Noirs and Chardonnays. The quality will only go upwards along with global warming, which will give more ripeness and intensity to the fruits. Other regions like Jura, Switzerland and Champagne, which are also benefited from global warming as they are producing better red wines recently!

How would you describe the wine culture in Malaysia today?

Wine culture in Malaysia in 2025 is at a transitional phase.

It is evolving rapidly. Urban consumers are becoming more sophisticated and experience-driven, embracing wine as part of dining and lifestyle rather than just a luxury marker. Despite the continued price inflation and regulatory constraints, the growth of wine culture is led by premium hospitality, with younger consumers seeking for knowledge and experience, and emphasis on food pairing and storytelling.

For producers, importers, and marketers, the opportunity lies in making wine more accessible in terms of styles, price, education, and aligning with local gastronomic identity and lifestyle values — not just “imported prestige.”

These developments underscore why a competition judged by Asia’s own experts is critical, so that global producers can align with the region’s dynamic and its distinct market trend.

What specific initiatives or marketing strategies do you believe are most effective for producers and importers to genuinely connect with the evolving Malaysian consumer beyond just relying on “imported prestige”?

To truly connect with the evolving Malaysian consumers, producers and importers must lead with experiences rather than discounts — experiential entry builds loyalty and great impressions. Wines should be selected for consumers to enjoy under Malaysia’s tropical climate and in a variety of cuisines. Examples such as refreshing whites, rosés, and lighter reds, would complement the local flavours.

Education remains as a key: empowering trade partners, hospitality professionals, and consumers to understand and share information of each producer, as this builds depth and authenticity.

Digital and lifestyle channels are vital too, serving as gateways for familiarity and aspiration amongst the young wine consumers. Portfolios should be tiered and adapted to navigate taxation and price sensitivities at the same time. While high duties and a relatively small market pose challenges, the solution lies in curating value tiers, developing experiential trade bundles, and engaging duty-free or regional channels.

For Malaysia’s culturally diverse audience, segmentation is essential — lifestyle-driven messaging resonates with urban professionals, while premium storytelling appeals to tourism and fine-dining sectors. Addressing knowledge gaps through educator-led tastings and storytelling campaigns will also strengthen engagements between wine companies and customers, turning from a mere curiosity into sustained appreciation.

How would you describe the Spirit market in Hong Kong today?

We’re seeing tremendous energy, especially driven by creative cocktails in hubs like Hong Kong in the spirits culture. Award-winning bars here are driving substantial demand for artisanal spirits, bitters, and liqueurs, which encouraged creativity and support to niche producers.”

Consumers, particularly younger drinkers, are becoming highly adventurous, curious, and more open-minded in trying out new flavours and diverse styles of beverages. We see that there will be a great demand for agave spirits, low-ABV aperitifs, and various Asian botanical gins as these spirits will be the forthcoming trend.

A defining trend is a cultural fusion.

Spirits in Asia are increasingly blending with local ingredients and traditions with global techniques— examples include yuzu-infused gin, tea-based liqueurs, or elevated baijiu cocktails. This unique concept is giving a distinctive Asian identity within the global spirits society.

Being in the Hong Kong beer industry for years, I would not say that the culture and trend have been the smoothest nor the most predictable. The beer culture has inevitably gone through a rather quaint and tumultuous time for the past few years, just like everything else globally.

Local producers have always had to compete vigorously with the enormous selection of imported beers that always seem to be more prestige, as consumers were willing to pay a fortune for them. There has been a huge decline in imports during the pandemic due to limited products’ availability and logistics arrangements. On the bright side, this is also when our local producers have caught the consumers’ attention and recognised by the local market.

It’s great to have seen local brews that are just as good as the imported ones, if not better. Local beers are now being brewed in various styles, offering a range of flavours in the market, which require lower logistics costs, offering a cheaper selling price, and most importantly, fresher beers to serve to our consumers.

Eyes Wide Shut The Cathay GWSAA is Asia's only double-blind tasting competition.

Despite the best of intentions, even professionals find it challenging to be completely impartial.

Double-blind tasting removes prejudice, favourable or unfavourable, making it the most honest form of tasting. If, for example, a wine was identified as a Bordeaux first growth, or served from a clearly defined bottle shape, even the most practised judge might be swayed.

GWSAA prevents bias by pouring wines in the back room, which is off-limits to judges during judging.

The only identifying feature on the glass is a number.

The wine is what it is—nothing more, nothing less — judges do not know its name or brand, just its context (region, grape, and vintage). This context is important, so judges are comparing like with like and not a French burgundy against a Californian zinfandel.

With judges left using only their palates as a guide, GWSAA entries receive a fair critique. This creates opportunities for amazing wines, sakes, spirits and beers to shine, and for some surprising award winners to emerge.
