Christy Choi

Christy is a promising talent in the F&B industry specialising in marketing and PR, following her recent graduation in communication studies and currently pursuing a master's degree in a related field. Fuelled by her passion for wines, she achieved WSET Level 3 Award in Wines certification at a young age as a personal pursuit. With a foundation in wine knowledge and a versatile writing skill set spanning various content genres, she enriches the F&B landscape through her distinctive perspectives and compelling contributions.

Natalie Wang

Natalie Wang is a Hong Kong-based wine journalist from Chongqing, China, with a Master’s in Journalism from the University of Hong Kong. Since 2015, she has worked in the wine industry with James Suckling and Drinks Business Hong Kong, while previously contributing to the International Herald Tribune and Thomson Reuters. Recognised for her expertise on China's wine market, she was nominated for the 2023 IWSC Wine Communicator of the Year Award and serves as a judge for the 2024 67 Pall Mall Global Wine Communicators Awards.

A DipWSET, Certified Sommelier and Certified Specialist of Wine, Anty has recently founded Mato Coffee Wine, an innovative wine, coffee and food concept featuring monthly changing All You Can Taste selections. She currently divides her time between Mato Coffee Wine, Hip Cellar, a professional wine storage and a wine-and-dine concept AnOther Place, online wine trading platform WWXplorer and teaching WSET courses at MWM Wine School by Debra Meiburg MW. Anty has diversified her global understanding of wine and food and beverage management with professional exposure in Hong Kong, Las Vegas and Maldives.

If 2023 was the year of excitement, 2024 can be characterised as a year of challenges. Last year, the people of Hong Kong celebrated the successful navigation of the COVID-19 pandemic, embracing a return to vibrant life and a surge in travel. However, as we settle into this new normal, we are confronted with significant challenges, particularly within our economy and the food and beverage industry.

Yet, where challenges arise, opportunities also present themselves. It is how we tackle these hurdles with creativity and resilience that will define our success. In Anty Fung’s article, she explores how various restaurants are innovating to sustain and boost their sales in this evolving landscape.

The Hong Kong Government has also taken proactive steps to support the industry, notably by reducing spirits taxes and collaborating with the Chinese government to raise the duty-free limit for mainland tourists.

Opportunities abound. Following the opening of the Chinese market to Australian wine imports, we witnessed a remarkable rebound in the popularity of their wines in China. Exporters now face the challenge of refining their strategies to engage with this vast and burgeoning market. In this dynamic environment, we are witnessing a proliferation of emerging wine regions over the past decade. This growth stands as a testament to the collective efforts of wineries and regional governments, and we are particularly thrilled to see young winemakers embracing the challenges of the industry. Notably, the best Chinese wine at this year’s Cathay Hong Kong International Wine and Spirit Competition is an orange wine crafted by a young winemaker who left a lucrative career to pursue his passion for winemaking.

Additionally, we had the pleasure of interviewing two international judges. Lana Svitankova, an independent beer writer and consultant from Sweden, delves into global trends that are yet to establish themselves in our markets and how cultural differences influence beer consumption. Denman Chan, the Head of Sales at Brown-Forman, shares his insights on underrated wines in Taiwan and current consumer trends in the region.

Where Flavours Speak of Excellence

The Cathay Hong Kong International Wine & Spirit Competition (HK IWSC) stands as a beacon of excellence, consistently elevating industry benchmarks by bringing together Hong Kong's most respected experts in wines, sakes, beers, and spirits. Judging for the 16th edition of the HK IWSC, a sister competition to London's IWSC, took place in September at the picturesque setting of the Arca Hotel, nestled in the southern region of Hong Kong Island.

Under the guidance of the esteemed Debra Meiburg MW, a pioneering Master of Wine based in Asia, this year's competition featured a panel of 56 of Hong Kong's most distinguished wine, sake, beer, and spirit judges, divided into five panels each day. Upholding its tradition of offering culturally relevant perspectives tailored to the discerning tastes of Asian consumers, the competition attracted hundreds of entries from around the world. Winning beverages, meticulously selected by judges, serve as trusted guides for consumers when navigating choices at top-tier restaurants, hotels, bars, and wine stores across Asia.

Renowned Beer Judge Nick Ho, the visionary behind Beer Geeks Generation, shared an intriguing observation from this year's judging process. With a larger panel of judges than in previous years, evaluations have become more impartial. Besides, participants have honed their grasp of HK IWSC's standards, resulting in a more discerning approach to selecting entries. highlighted the evaluation of exceptional brandies and rums this year. Among those, the Australian whiskies stood out with remarkable craftsmanship and a distinctive character. Particularly noteworthy was the impressive consistency and alignment of scores from his panel, significantly enhancing his role as the panel chair.

This year's competition distinguished itself through the increased presence of international judges, providing fresh perspectives on the ever-evolving trends within the Asian beverage market. A remarkable highlight was the contribution of Ian Dai, a winemaker from Petite Garden Winery, who shed light on the dynamic growth opportunities within the current Chinese wine industry, particularly in regions such as Northern Yunnan and Diqing.

The Food and Wine Pairing segment of the competition, once again in collaboration with Hong Kong Parkview, offered a tantalising journey through the vibrant flavours of Asian cuisine matched with wines, sakes, beers, or spirits. Embracing a forward-thinking attitude, the judges ventured beyond conventional pairings with a receptive stance. As the only international wine competition offering a comprehensive programme dedicated to Asian food pairing awards, this event presented a distinctive stage for participants to showcase their products to the lively culinary landscape of Asia.

appreciated the enriching insights shared by the other fellow judges. Participating in discussions and exchanging his insights on wines has been a rewarding journey for him. Par ticularly delving into the intricate world of wine and food pairing, he delighted in the diverse viewpoints on each combination, sparking intriguing discussions stemming from differing interpretations.

Test Your Palate, one of the most highly anticipated events of all time, made its mark at The Strand in Sheung Wan this year, leaving a lasting impression on all who attended. Wine enthusiasts flocked to the event to taste hundreds of wines judged in this year's competition while engaging with our judges to exchange differing insights. Another innovative addition was Bottles on The Table — a unique wet market dinner experience showcasing over 10 local Cantonese dishes paired with 150+ wines at Fu Bo Seafood Restaurant. The evening was an enchanting affair, with attendees savouring the exquisite cuisine and exploring a range of diverse wine pairings.

Finally, elevating the week's finale with excitement, the HK IWSC Judge Dinner shone a spotlight brightly on Austrian wines, captivating the judges with an extensive array of exquisite offerings. The event was graced by a special guest, Chris Yorke, the Managing Director of the Austrian Wine Marketing Board. During the tasting sessions, a spirit of camaraderie and enjoyment filled the air, nurturing bonds among both local and international judges. Following the HK IWSC, the award-winning Austrian wines of HK IWSC 2023 took centre stage at "Austria's Best Kept Vinous Secrets" event curated by Simon Tam at Nove at Galleria, enriching the celebration of fine wines and fostering a deeper appreciation for Austrian viniculture.

WHAT CULTURAL DIFFERENCES INFLUENCE BEER CONSUMPTION?

Cultural differences often play a significant role in shaping beer consumption patterns, with countries embracing experimentation and a wide range of preferences leading the way towards a more dynamic beer scene. While traditions are valuable, they can sometimes hinder the spread of new ideas within certain cultures. But ultimately the world of beer is inherently exciting and abounds with unexpected delights. Countries that embrace a variety of tastes and innovative ideas cultivate an atmosphere where the blending of tradition and novelty gives rise to a richer spectrum of flavours and preferences compared to other countries.

The interplay of various food flaovours not only enhance the beer-drinking experience, but also serves as a catalyst for the evolution of beer culture, fostering a dynamic relationship between food and drinks.

Hong Kong Restaurant Scene: Beyond Doom and Gloom

Running restaurants in Hong Kong is ultimately a “survival for the fittest” game.
And by the fittest, it is not so much about being best the in class...

“Just plan for the next seven days,” Nansen Lai, founder of 30-seater premium Cantonese private kitchen Flower Drum, chimed in over a casual lunch among him, Ricco Yeung, operator of 10-seater sushi omakase Murasaki and myself. Running restaurants in Hong Kong is ultimately a “survival for the fittest” game. And by the fittest, it is not so much about being the best in class, after all, taste and preferences are subjective. Operating a restaurant is more a challenge on stamina, mental willpower and multi-tasking abilities. At the core of it, it takes an adaptive, responsive, hands-on approach to navigate and stay afloat. Thus, the 7-day planning mentality. And if you have the guts to make some smart (tough!) decisions, you may even be able to optimise your revenue and take control of reservation momentum. “If we know that the reservation comprises non- drinking guests, we will allocate lunch slots to them. We prioritise all dinner bookings to drinking guests,” Ricco Yeung confided on how he balances between guest preferences and revenue management for his 10-seater restaurant Murasaki, of which dinner session is fully booked from now till the end of the year.

Like many of our industry peers, the three of us strive to remain “insiders”. We want to stay “in” business, and “in” this trade that has shaped who we are. While mainstream media focusing overwhelmingly on mourning over restaurant closures, little light has been shed on the survival strategies that restaurant and bar operators are attempting to keep the ship sailing in post- pandemic era. Over Flower Drum’s signature baked pork chop rice and seasonal feature uni and crab fried rice, we pooled our thoughts on the lessons learned from the industry, and how the reshaped market landscape has inspired us.

On Food – Back to Fundamentals, Not Basics

With the boom of low-budget concepts like “two-dish rice meals” and the closure of a handful premium eateries during and after the pandemic, many are questioning whether Hong Kong’s reputation as a “foodie paradise” is being discredited. Are diners, whether local or visiting, now leaning towards simpler flavours, and rudimentary offerings? “If anything, I believe that diners are simply becoming more polarised. The affluent diners are still there to be served. They are just looking for more specialty and better value. After all, they now have the option to fly out to seek for something exceptional,” Ricco shared. With an average dinner spending of HK$4,000 - $5,000 per person, of which food and beverage hits

an even split of 50/50, Ricco is confident that the demand is still there, as proven by their long dinner waiting list. Value is key, and his chefs at Murasaki focus on fundamentals like flavour innovation (Mapo-styled Shirako, anyone?) and ingredients quality. “I focus on what we do best – which happens to be baked pork chop rice for lunch, and shark fin and birds’ nest for dinner. 90% of the “What’s New” on the menu don’t stay. They are good to have and do excite my regulars, but it is the classics that make them return,” Nansen confessed. In the arena of refined dining, it appears that a strong focus on product quality is more important than ever.

On Wine – Value, Allocation, Experience

How wine is to be distributed on-trade is a tough post- pandemic challenge for not only restaurant operators, but also importers and wholesalers. Leveraging his ample experience from operating champagne specialist Avize, Ricco has devised a wine programme that features a selection of fine and rare wines with modest markups. He combines exclusivity, provenance and decent stemware and service to curate a list that satisfies both himself and his customers, even if they are spending half a million in an evening at Murasaki. At Mato, the game is different as the wine programme focuses on diversity. Putting 100+ wines on Wine By The Glass and maintaining a monthly changing All-You-Can-Taste programme form the cornerstone of Mato’s wine experience. Diners are now setting higher expectations on overall value (when it comes to fine and rare) and experience (when it comes to diversity) on wines. Where does sustainability lie? It requires all stakeholders to play smarter. On the fine and

rare side, who should get the allocations and at what prices? In terms of diversity, how can importers enable on-trade operators to reach a broader audience? Is the future of on-trade promotions about events (tastings, dinners) or non-events (social media campaigns, casual pairings)?

On Momentum – To each their own, as long as it’s sustainable. An often-underdiscussed element of restaurant operation is momentum. “It’s one of the most important factors for restaurant openings,” Ricco stated. Conventionally, momentum building relies on having a great public relations and marketing team. For his 10-seater omakase outlet, Ricco chose instead to “keep the mystery”. Being difficult to book and maintaining the secrecy of its menu is part of what draws diners to Murasaki. Nansen, 7-yearold Flower Drum founder- operator, chose a different strategy. “I always keep a few tables open every day for either my regulars or international visitors to make last-minute bookings. If the next reservation is always 3 months later, they may lose the habit to visit regularly.” Guest profiling plays a key role in sustaining a restaurant and bar’s business. At Mato, regulars crave special coffee and wine experiences, and that justifies our efforts to host an average of 3 event experiences per month.

The Cathay HK IWSC is Asia's only double-blind tasting competition.

Despite the best of intentions, even professionals find it challenging to be completely impartial. Double-blind tasting removes prejudice, favourable or unfavourable, making it the most honest form of tasting. If, for example, a wine was identified as a Bordeaux first growth, or served from a clearly defined bottle shape, even the most practised judge might be swayed.

HK IWSC prevents bias by pouring wines in the back room, which is off-limits to judges during judging. The only identifying feature on the glass is a number. The wine is what it is—nothing more, nothing less — judges do not know its name or brand, just its context (region, grape, and vintage). This context is important, so judges are comparing like with like and not a French burgundy against a Californian zinfandel.

With judges left using only their palates as a guide, HK IWSC entries receive a fair critique. This creates opportunities for amazing wines, sakes, spirits and beers to shine, and for some surprising award winners to emerge.

From the luxury wine corridors of Tokyo and Seoul to the emerging palates in Bangkok and Mumbai, the region’s top importers are the gatekeepers, driving trends and shaping the future of global wine consumption. As Asia’s demand for fine wine continues to grow, understanding the power players behind the bottles has never been more critical.

This report spans the vast and diverse wine markets of Asia, profiling the leading importers from established giants in Japan, South Korea, China, Singapore, and Hong Kong to emerging growth hubs in Thailand, Vietnam, India, the Philippines, and Taiwan. Each market offers its own unique opportunities, but collectively, they illustrate Asia’s significant role in the global wine landscape.

For top wine-producing countries such as France, Italy, and Spain, Asia’s allure is undeniable. Japan, South Korea, China, Hong Kong, and Singapore consistently rank among the top 10 most desirable export destinations, as highlighted by the 2023 ProWein and Geisenheim University report.

However, the highs of chasing growth in this region have not been without challenges. The region has seen dramatic swings. In the 2000s, China was the red-hot darling of the wine world, but after anti-corruption measures, the pandemic, and property woes, it is entering what some lampoon as “garbage time.” As it slows, South Korea emerged as a new growth engine during the pandemic, with strong home consumption driving rapid wine sales, though this was later tempered by a wine glut, as shown by sales revenue from all the key importers we have profiled in this report with declines ranging from 5.6% to 20.4% in 2023.

One of the most exciting markets to watch in 2024 is Thailand. The market has evolved significantly in recent years—mergers among importers, the removal of stiff taxes, and a strong tourism recovery have set the stage for exponential growth. According to Austrade, Thailand’s wine market was valued at US$1.21 billion in 2023, making it the largest in ASEAN countries. The Thai government’s recent landmark policy to cut import tariffs and reduce excise taxes has the potential to turbo-charge the country’s wine market. Thailand’s well-established hospitality industry and steady flow of tourists from neighbouring countries and the West could lead to a wine boom similar to Hong Kong’s post-2008 surge following its tariff removal.

As a result, the leading Thai importers we profiled in this report have all seen significant growth. Some have reported revenue increases of over 100% during the pandemic. Across the board, in all seven leading Thai importers we have profiled, the majority have experienced double-digit growth in 2023, with only one exception—an importer heavily reliant on Bordeaux. To put it in perspective, despite Thailand’s economy being less than one-third the size of China’s, the country’s largest wine importer, within just a few years, has grown to generate significant revenue last year —on par with China’s biggest fine wine importer, ASC Fine Wines. 2022, the Vietnamese wine market had reached 16 million liters, valued at US$341 million, making it the fourth-largest in ASEAN. Vietnam imported US$35 million worth of wine in 2022, with most of it coming from Italy, France, Chile, and Australia. However, challenges remain, including the impending doubling of wine taxes by 2030, which will impact future growth.

Singapore, though the smallest market by size, remains one of the wealthiest and most influential, while other markets like Malaysia and the Philippines face higher hurdles due to steep taxes. In Malaysia, taxes on alcohol can range from 150% to 250%, and in the Philippines, wine is taxed based on alcohol content and retail price. Meanwhile, in India—one of the region’s most promising yet complex markets—prohibitive tariffs and provincial regulations create substantial challenges for even the most determined wine importers. Wine taxes in India vary significantly, from a low of 49% in Goa to a staggering 83% in Karnataka.

Despite these hurdles, our extensive research and interviews have uncovered the top 50 wine importers in Asia, with 25 reporting annual sales exceeding US$ 10 million, 22 surpassing US$30 million, and 7 exceeding US$100 million. At the top end, one importer has seen revenues soar to USD 236 million. Large conglomerates such as Suntory, with its sprawling network across Europe, Japan, and China, and Thailand’s Siam Winery, which produces and distributes a variety of alcoholic drinks, both reported a surge in revenue.

The selection of the Top 50 wine importers in this report is based on a combination of factors, including annual revenue, market influence, distribution networks, import volumes, and growth trajectory. Each importer was carefully evaluated to ensure their impact on the market is significant and represents both established and emerging players.

In the heart of China’s burgeoning wine scene, Ian Dai emerges as a pivotal figure. As the owner of Xiaopu and the host of the engaging podcast Tipsy Proof, Dai embodies the spirit of innovation that defines a new generation of winemakers. His journey from sommelier to the head of wine for Amazon China, and ultimately to founding Xiaopu in 2017, reflects both personal ambition and a deep commitment to the craft.

Originating from the expansive vineyards of Ningxia, Dai’s influence extends across diverse regions, including Yunnan, Sichuan, Gansu, Hebei and Inner Mongolia. He partners closely with local growers to capture the unique terroir of each locale, conducting experimental wine makings that push the boundaries of traditional winemaking. This nomadic approach not only enriches his own offerings but also invigorates the broader landscape of Chinese wine.

Dai’s vision extends beyond his own winery. He champions a collaborative ethos among young winemakers, coalescing around the initiative he dubbed “YGCW (Young Generation China Wine) China New Force.” This collective, while informal, serves as a platform for emerging talents to share costs and showcase their innovations. Dai explains, “Initially, it was simply about sharing booth fees, but over time, we found a community willing to explore and create together.”

This spirit of inclusivity has not only attracted a diverse array of winemakers but has also breathed new life into an industry once dominated by established players. Dai notes a significant shift: “In the past, establishing a winery could cost tens of millions of yuan. Now, with industry growth and a more robust supply chain, smaller projects are flourishing.” Today, young winemakers are exploring niches like fruit wines and orange wines, each adding their unique flavour to the mix.

Since its inception, Xiaopu has embraced a philosophy of exploration. Dai acknowledges that his brand is still navigating its identity, experimenting with various styles and techniques. With offerings that represent the distinct characteristics of regions like Ningxia and Yunnan, each bottle tells a story of terroir and innovation. “Even those without formal training can carve out a unique style,” he asserts. “This ‘wild’ approach to wine making harmonises with traditional methods, creating a distinctive balance.”

Ian Dai’s narrative is emblematic of a broader trend among young winemakers in China, driven by a relentless quest for experimentation and growth. At this year’s HK IWSC, attendees were treated to a showcase of their creations, including Inner Mongolia’s Lavie, Xiaojin’s Four Girls Mountain Wine, and several offerings from Ningxia’s burgeoning scene. Alongside these newcomers, well-established names like Tiansai and Grace Vineyard remind us of the rich tapestry of Chinese winemaking.

What is the most underrated wine in Taiwan?

Based on the latest IWSR data, approximately 50% of the volume in the Taiwanese market still originates from France, Italy, and Spain. Consumers continue to gravitate towards wines from these classic regions, resulting in what I believe is an undervaluation of many high-quality new-world wines. For instance, premium South African wines such as The Sadie Family Wines and Porseleinberg Syrah face challenges in gaining traction in this market, as per my discussions with importers. Similar trends persist with premium Australian and New Zealand wines. To shift consumers' perceptions, there remains a crucial need for heightened awareness campaigns and educational efforts to dispel stereotypes associated with new-world wines — often unfairly linked with mass-market, entry-level, and easy-drinking styles.

I show appreication for the emergence of new wine bars in Taipei, such as Graft and Park90, for their efforts in expanding the horizons of local consumers. By offering a broader selection of international wines by the glass, these establishments are actively introducing the latest global wine-drinking trends to the Taiwanese audience.
