COUNTY DOWN OUR HOME

The original house was built on the Estate in 1859 by the Marquis of Downshire. One hundred and sixty years later, under the stewardship of owner Dr Terry Cross O.B.E., the Hinch Distillery was built on the land, sensitively set back into the rolling hills and constructed from complementary local materials that will stand the test of time.
At the Hinch, (taken from Ballynahinch, meaning ‘town of the island’ in Gaelic) and set amongst County Down’s rolling green drumlin hills, we have created a distillery that has aspirations well beyond ‘the ordinary’, ambitions to be creative well beyond ‘the easily achieved’. Our Single Malt whiskeys are inspired by the distilling traditions and skills exchanged over the centuries during the ebb and flow of Gaelic peoples across the Irish Sea. Our Ninth Wave Gin is inspired by our love of Irish mythology, its links to the sea and the role it has played throughout the history of our country.
The Distillery is not only the place where we produce, mature and bottle our range of spirits but also very importantly the place we call ‘home’!
We want visitors to come to experience and enjoy the many facilities on offer at our Visitor’s Centre and to feel part of the Hinch Family. Whether you simply drop in to buy a gift in our lovely Gift Shop or visit the Hinch Brasserie for a delicious meal or drink with friends you can always be sure of a warm, family welcome.
If you want a close up, behind the scenes view of what we do, both guided whiskey and gin tours are available all year round. We have various sumptuously appointed events spaces available for everything from weddings to corporate events and hopefully in the future live music events in our beautiful courtyard.
We hope that you get an opportunity to visit us in the very near future and in the meantime please feel free to either contact us directly by phone, email or via our website with any queries you might have.
Dr Terry Cross, O.B.E., FounderDISTILLERY TOURS
Visitors to Hinch Distillery have the fabulous opportunity to see behind the scenes of our distilling operations on one of our guided tours.

From the earliest design stage of the distillery build everything has been designed not only to produce worldclass whiskey & gin but to allow visitors an unprecedented up-close view of the whole process.

Having booked a whiskey tour online or in person at the distillery reception you will then be met and guided with your fellow visitors by one of our professionally trained tour guides. The tour will take you on a fun, informative and hands-on journey starting in our beautiful Ingredients Room, then to our impressive Mash House, Still House, Spectrum Room and finally finishing in one of our bespoke tasting areas where you get a chance to sample some of our wonderful whiskeys.
Throughout the tour your guide will not only let you see behind the scenes but help you appreciate the skills and craftsmanship required to make worldclass Irish whiskey and of course answer any questions you wish to ask. There are a range of tour types
to choose from and each tour, including the final tasting, should take approximately 1 hour.

Of course, Hinch Distillery is also renowned for producing the multi-award winning Ninth Wave Irish Gin and we have also designed a unique tour experience for gin enthusiasts. Not only do you get the opportunity to see and learn about how gin is produced, the importance of the recipe development, botanical ingredients, the distilling process and a tasting, but you will also get the chance to make your own individual gin to take home with you. Again, these tours are accompanied by specialist guides who you will spend somewhere in the region of 90 minutes with, a significant part of this time spent developing & creating your own unique gin. Lastly having made your own gin masterpiece you can order additional bottles which will be produced to your specific recipe, bottled with a personalised label and which you can arrange to collect or have delivered at a later date.
