All You Need To Know About Burrata Cheese Mozzarella is, without a doubt, Italy's most famous cheese. It has a smooth outside and a soft inside. It comes from the Campania region of Italy and has been made there for a thousand years. It is loved all over the world, just like burrata and ricotta. So, here are the differences between burrata, mozzarella, and ricotta. Three kinds of cheese Burrata, mozzarella, and ricotta are made with fresh cow's milk and the pasta filata (stretched curd) system. But while Campania has been making mozzarella, also called for di latte, since the 12th century, Lorenzo Bianchino invented burrata in Andria, Puglia, in 1956. Ricotta Italy is the home of both burrata and ricotta. Even though they can be made from the milk of many different animals, cow's milk is the most common source for both of them today. Even though they both come from Italy and are made from milk, burrata and ricotta cheese are very different in many important ways. Ricotta cheese is different from other cheeses because it is made differently. So, if you want to make cheese out of milk, you need to add a chemical that causes the milk to curdle or separate into solid and liquid parts. The substantial amount is called curd, and most cheeses are made from it. What's left is a liquid called "whey," which also has milk solids but isn't as thick. Now, this extra liquid can be used in many ways, like to make ricotta cheese. Cheese makers will add some whole milk and an acidic agent to the remaining whey, like vinegar or citrus juice. Then they will heat the entire thing, which will make the remaining curds stick together into a big lump. Then, they pour the whole thing onto the cheesecloth and squeeze out all the liquid. Now you have ricotta cheese, which is white and fluffy.
