22 OCTOBER – 30 NOVEMBER WAR HORSE The global theatre phenomenon, War Horse made its South African première in October, beginning the season at The Teatro at Montecasino. War Horse is produced by Pieter Toerien, RMB and The National Theatre of Great Britain, in association with Handspring Puppet Company. The production has been seen by over 5 million people worldwide since its opening in 2007. During its successful run on Broadway, it received five Tony Awards, plus a special Tony Award for Handspring Puppet Company. 26 – 28 NOVEMBER CHRISTMAS WITH NATANIЁL In this special Christmas production Nataniël is joined on stage by the Charl du Plessis Trio featuring Werner Spies (bass) and Hugo Radyn (drums). 5 NOVEMBER – 28 DECEMBER PETER PAN A sprinkling of magic dust (and a real helicopter on stage) is all that’s needed to reach Neverland in Janice Honeyman’s swashbuckling pantomime adventure, Peter Pan. In true panto style, the villainous Captain Hook will have audiences booing and hissing, while his side-kicks, the non-conforming Mr Smee and “Dame” Clementina Coconut, balance out the villainy with laughter and fun. unch, much to the delight of the English and the dismay of the Americans, is actually the first real taste the western world would have of cocktails. According to the bar ‘intelligista’ around the world, Punch derives from the Hindi word ‘Panch’ meaning ‘Five’. During her Majesty’s reign over India, circa 1730, English officers encountered fragrant teas, spiced with cinnamon, cardamom, sugar and berries. These were popular and refreshing amongst the local population and amongst Her Majesty’s finest on hot days. All British officers’ clubs adorned around the vast Empire carried an impressive array of spirits and wines and with a little courage, (whether Dutch or otherwise) some naval officers had the inkling to mix spirits, wines and spices to westernise the Indian concoction, in large grand bowls for jovial and communal consumption amongst gentlemen. The trend spread to the entirety of the Empire, including South Africa, where documented in the first South African cookbook, written by the Grand Matron of

Groote Post, Franschoek in 1808, Hildagonda (Hilda) J Duckitt, “Hilda’s Where is it?” documented the Milk Punch: a combination of brandy infused with lime and orange peels, rum, sugar, the juices of said 12 oranges and 12 limes required and boiling milk which was strained and then bottled. Apparently a favourite of a gentleman named Admiral Etheridge. It was his Madras recipe! Drinks of all sorts were prepared and consumed either warm or hot. Ice, even in the Delhi heat, was not only unheard of, it was unspeakable. Ice would only catch popularity with European palates in the early 1800s, in even the most humid parts of the Empire. When it did, it was sold in massive 20kg blocks, harvested from frozen ponds in the United states but was as clear as glass and would last days, if not weeks in the ‘ice box’. One pound of this ice would chill a punch perfectly without taking away the bite of the liquor and gentlemen could sip their beverages at leisure and without haste. Punches never lost their vigour and purpose, as to consume stimulating liquor always has

been (and always will be) consumed with colleagues, friends and relatives. The craft of the cocktailtalian bartender, however was almost all but disposed of after the 1950s and the home mixologist was now commonplace. Not needing to purchase large blocks of ice anymore, thanks to the invention of the home ice machine, cubes of ice found their way into punch bowls and white spirits, namely vodka, were poured by the gallon for the kick and not the taste. Non-alcoholic punches were found at school socials (and to say they weren’t spiked by rebellious teenagers would be naïve) and had become a large bowl of slurry, very distant to the masterpieces crafted in the 1850s. Now punches have seen a revival, thanks to the cocktail renaissance gripping the planet and are being made with great care and amazing ingredients that our forefathers of the 1850s would have been most impressed with. To follow are some recipe ideas for the amateur and professional alike to master. They are tried and tested but are entirely up to the creator to make according to taste. H

CLEAR ICE BLOCKS Here’s a handy tip on making 1800s style clear ice at home: You will need • 1 x 5.5L cooler box with a removable lid. This should fit into most commercial freezers • Plastic jug • Water filter • Kettle • Clean freezer Method Fill up your kettle with about 3L of filtered water (Joburg still has some of the cleanest drinking waters in the world so it won’t take much) and bring to a boil. Allow to cool just slightly, pour into a clean plastic jug and give it a few gentle taps to push any unforeseen air bubbles out. Then remove the lid from the cooler box and pour in the hot water slowly, ensuring there is as little turbulence to invite unwanted air bubbles into the water. Now place in the freezer and leave undisturbed for approximately 48 hours. When removing the ice, do not pour hot water over the block as it would encourage it to shatter into large pieces, instead, turn your cooler box upside down and let nature do it for you. Once free, you have a splendid block of ice for your punch. If you wish to keep it for later, wrap it in greaseproof paper and place it in the freezer until you need it.

DUCKITT PUNCH

HILDA’S MILK PUNCH

Serves 10 You will need • Large punch bowl (these are often called champagne coolers these days) • 3L of block ice • 2 bottles Van Ryn’s 10 year old Vintage Brandy • 500ml raspberry syrup (see recipe below) • 250ml Orange curacao (Grand Marnier is fantastic here!) • 500ml filtered water • 3L mild Earl Grey tea (chilled) • 2 bottles chilled Champagne (Avondale MCC works well)

Cold and improved You will need • Zests of 6 oranges • Zests of 6 limes • 2 bottles fine brandy (I would recommend Oude Meester Demant) • 2 bottles good quality Jamaican Rum (Mount Gay Single Barrel) • 1.5kg Demerara Sugar • 2L full cream Ayrshire milk • 3L block of ice

Method In the punch bowl, pour in the raspberry syrup and brandy. Use the punch ladle to dissolve the syrup into the brandy. Once dissolved, gently place your ice block into the punch bowl, careful not to splash or spill. Add the remaining ingredients. Garnish with the cut wheels of 2 oranges, 2 grapefruit and some chamomile flowers. Ladle into teacups.

Raspberry syrup Makes 750ml Boil 1L water. Add 300g whole fresh raspberries and allow to simmer on a medium heat for 20 minutes. Then add 500g white sugar and stir to dissolve. Allow to reduce for 20 minutes. Remove from heat and allow to cool. Strain through muslin cloth and funnel into a clean glass bottle and seal. Will last three weeks refrigerated.

Method Zest the oranges and limes with a coarse and sturdy potato peeler and place the zests into the bottles of brandy and rum and allow to sit for three days. In the punch bowl, add the sugar and the infused rum and brandy. Stir to dissolve the sugar. Carefully add the ice block to the punchbowl, careful not to splash. Add the remaining ingredients. Stir to mix and garnish with star anise, cinnamon quills and coat with a liberal dusting of ground nutmeg. Note: this is also spectacular when served warm for the winter months, all you need do is heat the milk on the stove but avoid boiling and omit the ice. Serve into handled cups.

LE ROUX LA VALLÉE Serves 4 Ingredients 750 ml popped popcorn 125 ml store-bought honeycomb candy, crushed 120 ml castor sugar 30 ml water 50 g butter

1 Mix the crushed honeycomb and popcorn together in a large mixing bowl until well combined. 2 Place the castor sugar and water in a small saucepan over low heat. Leave to dissolve. Brush off any sugar crystals that form on the sides of the pan with a clean pastry brush dipped in hot water. 3 Turn up the heat (do not stir again) and cook until the sugar caramelises. 4 Remove the caramel from the heat and add the butter. Be careful: it will splatter. S

ince its foundation in 1811, Perrier-Jouët Champagne has maintained a creative spirit and quest for perfection. The Champagne house, founded by Pierre-Nicolas Perrier and his wife Adèle Jouët, has become synonymous with crafted elegant, floral wines of rare finesse with a Chardonnay hallmark. Made from the same superlative vines - the Avize and Cramant vineyards in France’s Champagne region, nearly 200 years since its creation, the French house was the first to recognise the importance of their fine Chardonnay grapes and soon began to export. In 1815, the luxury Champagne’s first shipments went to Great Britain, and in 1837, strawfilled baskets carrying a cargo of 2,000 bottles of Perrier-Jouët arrived in New York - a delivery that was pivotal in introducing one of France’s greatest exports to the rest of the world. In 1854, Pierre-Nicolas’s son Charles Perrier took over the helm of the brand and proved himself to be another visionary innovator. It was then in 1874 that he passed on the firm to his nephew Henri Gallice. Following in the footsteps of his predecessors, Gallice was interacting with painters, sculptors and creatives who were playing key roles in the new wave of decorative arts that was sweeping the western world. Keen to continue the house’s philosophy of perpetuating an appreciation of fine art, he turned his

efforts to the house’s packaging and label design. It was in 1902, that he commissioned Émile Gallé a leader in the art nouveau movement to design a new bottle, the Belle Époque range which were hand painted decorated with her elegant Japanese anemones. However the evocative edition, decorated with Gallé’s design was, initially at least, underappreciated and ended up being stored in one of Perrier-Jouët cellars until 1964 when four examples were discovered. The discovery was considered so beautiful that the house re-released the Belle Époque prestige cuvée a few years later to celebrate the 70th birthday of American jazz legend Duke Ellington at the Alcazar restaurant in Paris. Two centuries on and the personal touch of the brand has not changed, with the sophisticated luxury Champagne preserving its secrets through only seven Cellar Masters. In 1993, Hervé Deschamps became the 7th Perrier-Jouët Cellar Master, after ten years spent at his predecessor’s side mastering the subtleties of the House style and its unique floral tonality. N

othing deters dynamic couple, Mo and Jo from a challenge. Leaving their one month old baby and teenage son at home - a house in the process of being completely renovated - to follow their dream and compete on season two of the Ultimate Braai Master, was merely a step to pursue their passion for food, cooking and entertaining. The abridged story goes something like this… After three grueling auditions, Mo and Jo had earned their spot (along with 15 other teams) on South Africa’s original and authentic reality tv show, the Ultimate Braai Master. They spent one month on the road, competing in challenges that saw them cooking a quail pie in a snowy Tiffindell; cooking a ‘smiley’ for a village community in Lesotho (after a six hour donkey ride up the mountain); fishing for their own trout, to then

bake in clay – all of these done over a fire/ braai. Eventually it was their pineapple and cherry tart tartin that let them down – the syrup burnt – and they were sent packing, but had proudly made it to the final seven. To say that Mo and Jo left the show knowing how to braai is an understatement. They can expertly smoke, grill, bake and fry anything from starters to mains to desserts over the braai. Take about a cup of your favourite wood chips and soak them in enough water to cover them for at least an hour or, even better, overnight. When you’re ready to cook, drain the wood chips. Wrap them in foil and seal the edges. You can also place the soaked wood chips directly on the fire to get more immediate smoke. Using a skewer poke several holes in the top of the packet. Set the packet aside. Then prepare the grill: on a standard kettle grill, bank your charcoal to one side or around the braai, leaving a cold area for the meat to be placed (an ‘indirect’ heat area, where the meat is not directly over the flame but is still being cooked). Then place that packet of wood chips underneath the charcoal. Place the lid on the kettle and control the level of the heat with the kettle grill’s vents, opening them up more to cool the smoker and closing them to raise it. Keep an oven thermometer at the point furthest from the heat to gauge the temperature in the braai.

Smoked Turkey • Let the turkey sit at room temperature for one hour. Brush the legs, breast, and wings with butter and coat with a rub of your choice. I personally use a mixture of garlic powder, ginger powder, onion powder, paprika and origanum • Place one large disposable foil pan inside the other and add vegetables, herbs, and two cups of chicken broth. I use celery, onion and carrot which I cut into large chucks. I use the juices collected at the end of the smoking process to make a rich gravy for the meal • Arrange the charcoal (I use a mixture of charcoal and wood for the smoking as it gives a better flavour to the bird). A large disposable foil pan filled with warm water will help you maintain the temperature of the fire. • Place the turkey, breast side down, inside the foil pans and over the vegetables. • Add damp wood chips to the charcoal (I use a mixture of hickory and apple wood chips for a ‘sweeter’ smoke) and set the pan on the cooking grate over the water pan, with the legs facing the hottest side of the grill. • Keep the grill temperature inside the range of 180˚ to 220˚C, adding charcoal as needed. • After smoking for 1 hour, flip over the turkey so that the breast side is facing up. • Continue grilling and smoking the turkey, occasionally adding damp wood chips. • After the turkey has been on the grill for 1½ hours, cover any parts that are getting too dark with foil. The turkey is done when a meat thermometer inserted into the thickest part of the thigh (not touching the bone) registers 76˚ to 80˚C. Transfer the turkey to a platter cover loosely with foil and let it rest for 20 to 30 minutes.

Stuffing

Ingredients • ½ large loaf rye bread • 3 croissants • Small pack of pork sausages • 1 onion, chopped • 4 stalk(s) celery, chopped • 1 punnet of mushrooms (chopped) • I small container of chicken livers, finely chopped • ½ cup fresh parsley leaves, chopped • 3 sprigs of thyme • salt • ground black pepper • 2 cups chicken broth (good quality chicken stock works fine)

Method • Blitz bread using a blender until you have breadcrumbs. You can toast the crumbs now or leave them as is. • Remove sausage meat from casings and fry off in a little oil. Just before completely done, add crushed garlic and some of the chopped parsley. Once done remove from pan. • In the same pan add a bit of butter and then the chicken livers fry off in the butter with the thyme until completely cooked. Remove from pan. • Using the same pan add more butter and then the celery and onion. Sweat off. • Add in mushrooms and cook through. • Add cooked sausage meat and livers and mix. • Add breadcrumbs a bit at a time, mix. • Slowly add chicken broth until completely mixed • Put into a heat proof container and put onto the grid of a kettle braai over indirect heat. • Close cover and maintain a temperature of between 180˚ and 200˚C (using the opening and closing of the top vents to regulate the heat. • Bake for between 30 and 45 minutes. • Once baked you can either keep separate or stuff cavity of the turkey (note that if you do stuff the bird with the stuffing it will take longer to reach the done temperature.

Victoria Sponge Cake Ingredients Cake • 200g caster sugar • 200g softened butter • 4 eggs, beaten • 200g self-rising flour • 1 tsp baking powder • 2 tbsp milk

Filling • 100g butter, softened • 140g icing sugar, sifted • drop vanilla extract (optional) • 340g jar good-quality strawberry jam • icing sugar, to decorate

How to prepare a kettle or other charcoal braai for smoking

Method • Heat kettle braai oven to 200˚C. Butter two 20cm cake tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter. • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon, then bake over indirect heat for about 20 mins until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely. • To make the filling, beat the butter until smooth and creamy, then gradually beat in icing sugar. Beat in vanilla extract if you’re using it. Spread the butter cream over the bottom of one of the sponges, top it with jam and sandwich the second sponge on top. Dust with a little icing sugar before serving. Keep in an airtight container and eat within 2 days.

Gravy Ingredients • Dripping from turkey (1/2 cup – skim of the oil and fat from the top) • ½ cup flour • 2 tbsp. Worcestershire sauce • 4 tbsp. butter • ½ cup cream • 2 cups chicken broth (good quality chicken stock works for this) • Salt and pepper to taste Method • Add butter to a pot sitting on medium to hot coals • Add flour, creating a roux, and cook until mixture starts turning slightly brown. Be careful not to burn the mixture • Add chicken broth aa bit at a time whisking continuously to prevent lumps • Add in turkey dripping and Worcestershire sauce • Bring to a boil, add cream • Add pepper and salt Hello Festive Season • 2014 • www.gohello.co.za

Chef Sewan of Maximillien restaurant at the Da Vinci Hotel in Sandton serves us the recipe for his favourite festive dish. PECAN AND FIGS STUFFED TURKEY ROLL Complemented with sautéed asparagus, baked baby potatoes and gooseberry gravy. A twist on the traditional Christmas favourite, this turkey breast is stuffed with a sweet and crunchy pecan and fig stuffing. Serves 10 Ingredients Turkey breast about 2kg Olive oil 2 tablespoons Red onions chopped finely 300g Garlic gloves crushed 100g Dried figs chopped 150g Sea salt per mouth Black pepper coarse per mouth Brandy 2 tablespoons Japanese breadcrumbs 150g Pecans nutscoarsely chopped 100g Chicken stock 100g White wine150ml Butter 50g Plain flour 75g Gooseberries 50g Asparagus 500g

Tomatoes 150g Baby potatoes 1kg Cumin seeds 10g Coarse Salt 5g Orange juice 100ml Rosemary 5g Method 1 Preheat oven to 200°C. Heat half the oil in a frying pan over medium heat. Add onion and garlic, stirring occasionally, for 5 minutes or until onion softens. Add figs and brandy, stirring, for 1 minute or until figs soften. Transfer to a bowl. Add breadcrumbs and pecans and stir to combine. Season with salt, pepper and finely chopped rosemary. 2 Place turkey, skin-side down, on a clean work surface. Open the tender loin so the breast lies flat. Use a knife to slice from the center of the breast outwards. Note - don’t cut all the way through. Repeat with opposite side. Open breast out so it lies flat. Spoon stuffing down the center of the turkey. Fold in sides to enclose filling. Use kitchen string to tie at 2cm intervals to secure. 3 Place a wire rack in the bottom of a roasting pan. Place turkey on the rack. Brush with remaining oil and season with salt and pepper. Pour chickenstock

and wine in pan. Roast in oven, occasionally brushing with pan juices, for 11/2 hours, or until juices run clear when turkey is pierced in the thickest part. Remove from oven. Cover with foil. Set aside for 15 minutes to rest. 4 Strain pan juices into a jug and add the gooseberries and orange juice. Heat butter in roasting pan over medium heat until foaming. Add flour, stirring with a wooden spoon to dislodge baked-on juices, for 2 minutes or until it becomes lightly golden. Add mixture of orange juice and gooseberries and let cook while stirring for 5 minutes or until it boils and thickens. Remove from heat. SIDE DISHES Baked baby potatoes with butter, coarse salt and cumin seeds. Blanch the asparagus in boiling hot water and cool down in ice. Sautée asparagus with olive oil, chopped tomatoes and red onions. Place turkey on a serving platter and remove the kitchen string. Cut into slices and serve with the baked baby potatoes, sautéed asparagus and glaze with the gooseberries jus.
