Autumn 2014 Cooking Courses (1) Sushi Hands On Workshop Wednesday 5th November Guest chef Sofia Warsaeus is hosting an introduction to sushi at Delicioso from 5-9pm. Sofia Warsaeus trained as a chef in Switzerland and has spent the last 14 years working as a chef on super yachts over 50m. Trained with a Japanese sushi chef in London and has for many years prepared Japanese food for owners and charter guests. The course will cover: • Introduction to sushi preparation Equipment and ingredients needed Sourcing and selection of fish needed Filleting of the fish for sushi preparation Sashimi, nigiri and maki The art of sushi rice making Preparation of sushi Rolling maki, futimaki, inside out roll and rainbow roll Sashimi Nigiri Miso soup A selection of Japanese dipping sauces Tempura prawns Presentation and garnishing Usage of authentic Japanese tableware.
