I’ve always loved strong but refreshing flavors. This year, add some sweet but sour pomegranate, deliciously sour citrus fruits, subtle taste of figs, and roasted nuts to your Christmas meals and you won’t regret it. Do not shy away from garlic either, it goes together fantastically with fish!

Tarragon Smoked Salmon INGREDIENTS: 800 G OF SALMON FILLET SALT PIECE OF FRESH GINGER 2 GARLIC CLOVES A SPLASH OF OLIVE OIL 1 LEMON FRESH TARRAGON

Place the salmon fillet in a casserole and season with salt. Prepare the marinade: Grate fresh ginger and garlic in a bowl and add olive oil. Lather the marinade on top of the salmon. Wash and slice a lemon into thin slices and place them on top of the salmon as well. Decorate and season the salmon with fresh tarragon. Cook in the oven for about 30 minutes at 175°C. SMOKING THE SALMON:

We wanted to add a smokey flavor to the salmon, try this easy tip as well! Smoking in a lidded casserole: On the inside of the lid, where the knob screw is, place a 5 cm piece of dough there. Heat a piece of coal either on a gas stove or with a kitchen torch and use tongs to attach it to the piece of dough. Place some butter on top of the coal and put the lid on the casserole. Let the lid be on until the coal starts smoking.

TIP!

Preparing fish is very common during Christmas, so try this ecological, hygienic, and wood-friendly tip for cleaning your wooden cutting board: Spread two teaspoons of salt on a moist cutting board. Cut a lemon in half and use it to rub the salt on the board. Rinse with water and dry properly.

Potato Mille-Feuille RECIPE FOR 4 PORTIONS

INGREDIENTS: 4 MEDIUM- SIZED POTATOES, EQUAL IN SIZE 200 G OF COLD - SMOKED SALMON 1 BALL OF BUFFALO MOZZARELLA SALT AND PEPPER CHIVES

Wash the potatoes properly and use a mandoline slicer to make thin slices out of them. Boil the slices in a pot for about 10 minutes. Gently pour out the water so the potatoes won’t break. If you are using a traditional oven tray, cover it with a baking sheet. With a HEIROL Pro oven tray, spreading a bit of oil or butter will be enough. Place the potato slices on the tray and try to place them by size, so your Potato Mille-Feuille’s will be the same size. Pour a dash of olive oil on top and sprinkle some salt and pepper. Bake the potatoes for about 10 minutes at 200°C, until the slices are golden brown. Slice the mozzarella into same-sized bits and season the smoked salmon slices with lemon juice. Take the potatoes out of the oven, place a piece of mozzarella on a potato slice, place another potato slice on top, and one more layer of mozzarella and potato. Repeat for all the slices. Place them back in the oven and bake until the mozzarella starts to soften. Take the Mille-Feuille’s out of the oven, place a salmon slice on top, and finish off however you want; chives, basil, dill, and rosehip pepper all work extremely well.

Christmas Salad with Pomegranate INGREDIENTS PECANS FETA OR GOAT CHEESE PEARS APPLES POMEGRANATE SEEDS AN ASSORTMENT OF TYPES OF SALADS DRESSING 0,5 DL OF EXTRA VIRGIN OLIVE OIL 1 TBSP OF APPLE CIDER VINEGAR 1 TBSP OF HONEY OR MAPLE SYRUP 1 TSP OF FRESH GINGER (FINELY GRATED) SALT AND PEPPER

Fry the pecans on a pan on medium heat, until the nuts get golden edges, and the lovely aroma fills the room. Chop the nuts into small bits on a cutting board. Spread the assortment of salad on a flat dish and place the roasted nuts and feta/ goat cheese on top. Slice the pears and apples into thin slices and arrange them on top of the salad. Finish off by sprinkling the pomegranate seeds on top. Mix the dressing ingredients together in a bowl and pour on top of the salad or serve it separately. Don’t pour the salad dressing long before serving it, as it may cause the salad to sog.

Saffron buns DOUGH: 3 DL OF MILK 0,3 G OF SAFFRON 1 ½ DL OF SUGAR ½ TSP OF SALT 1 TBSP OF CARDAMOM 50 G OF YEAST 150 G OF ROOM TEMPERATURE BUTTER 1 ORGANIC EGG 11 DL OF FLOUR FILLING : 150 G OF BUTTER 1 DL OF SUGAR 1 1/2 – 2 TBSP OF CINNAMON

In a small pot, heat the milk until it’s steamy, then add saffron and cardamom and stir. Crumble the yeast into a separate bowl, add milk, sugar, salt, egg, and butter. Slowly add flour, mix well, and knead the dough. Do this until the dough is still a little sticky, but does not completely stick to your hands when you are handling it. Let the dough rise in a covered bowl for about an hour – the dough should double in size. Preheat the oven to 200 degrees. Mix softened butter, sugar, and cinnamon together. Flip the dough on a floured baking mat, split the dough in half, and use a rolling pin to shape into an even rectangle. Spread half of the filling and fold the rectangle in half. Cut into strips that are about 4cm in width. Cut the strips in half, so that the top portion stays intact. Twist the strips and fold the top portion so that it comes under the bun. Place the buns on the baking tray, cover with a cloth of any kind, and let rise for about 30 min. Using a pastry brush, brush some egg wash over the tops and sides of the uncooked buns. Bake in the oven for 10-12 minutes, or until the buns reach a beautiful golden brown color. Mix together 3 tbsp of maple syrup and a splash of water. Mix together ½ dl of sugar and ½ tbsp of cardamom. Brush the buns with the syrup mix, and sprinkle the sugar/ cardamom mix on top.

When it comes to decorating, there are no limits I rarely make exact plans, especially in the kitchen. I want to leave room for creativity. This time my cake turned out a bit outrageous and I loved it!

Christmas Cake INGREDIENTS 2 ORANGES (PEEL AND JUICE) 30 G POPPY SEEDS 100 ML OF MILK 200 G OF ROOM TEMP BUTTER 175 G OF SUGAR 3 EGGS 300 G OF FLOUR 1 TSP OF BAKING POWDER FROSTING 2 DL OF POWDERED SUGAR 1 TBSP OF WATER 1 TBSP OF LEMON JUICE 2-3 TBSP OF UNFLAVORED CREAM CHEESE A SPLASH OF AMARETTO DECORATION FRESH FIGS ALMOND CHIPS EDIBLE FLOWERS

Preheat the oven to 160°C. Place the poppy seeds and milk together in a bowl. Mix the butter, orange peel, and sugar in a separate bowl, using an electric mixer until the mixture is light in texture. Whisk the eggs in and add them gently into the mix. Use a strainer to add the flour and baking powder and finish off by adding the poppy seed/milk mix. Mix well and pour the dough into a prepared bread form. Bake for 55-60 minutes. Once you take the cake out of the oven, let it cool before removing it from the form. Pour the powdered sugar into a bowl. Add 1 tbsp of the lemon juice, and slowly add the rest whilst mixing gently. Add the cream cheese and mix well. You determine how thick you want the frosting to be: if the frosting seems too runny, add powdered sugar; if it’s too thick, add water. Use a palette knife to spread the frosting on the cake. Decorate with fresh figs, almond chips, and some edible flowers.
