OUR STORY

”We are a happily ’mixed’ family whose everyday life is made up of Italian, Swedish and Finnish customs and food culture. We’ve never had time, or even will, to seek perfection – we laugh at mistakes and go with the flow, especially in the kitchen! For us, family and good food have always been the foundation of a happy life.

The Turku based family business HEIROL Oy has brought kitchenware to Finnish tables for over 30 years. Heimo Lehtonen founded the company together with his son Rolf Moborg in 1991 starting from his garage.

Creamy cauliflower soup 1 ONION 500 G CAULIFLOWER 2 TBSP CANOLA OIL 2 CUPS VEGETABLE STOCK SEA SALT FRESHLY GROUND BLACK PEPPER 2 TBSP FRESH OREGANO LEAVES 2 TBSP FRESH THYME LEAVES 1 GARLIC CLOVE 100 ML OLIVE OIL 300 ML ALMOND MILK 1 PINCH FRESHLY GRATED NUTMEG GRATED ZEST OF 1 ORGANIC LEMON 1 TBSP ALMOND BUTTER 4 TBSP CRÈME FRAICHE 1 DASH LEMON JUICE

Preheat the oven to 180 °C. Peel and dice the onion. Trim and coarsely chop the cauliflower. Set aside two handfuls. Heat 1 tablespoon of the canola oil in a large saucepan, add the diced onion, and sweat until translucent. Stir in the cauliflower and continue to sauté. Stir in the vegetable stock and bring to a boil, then reduce the heat and simmer the vegetables for about 15 minutes.

Meanwhile, divide the remaining cauliflower into small florets. Toss with 1 tablespoon of the canola oil in the bowl. Sprinkle the florets with sea salt, pepper, and 1 teaspoon each of the oregano and thyme. Spread on a baking tray lined with baking paper.

Transfer to the oven and roast until golden, about 15 minutes.

Peel and crush the garlic clove and pound to a paste with the remaining herbs, salt, and olive oil. Once the cauliflower in the saucepan is cooked, stir in the almond milk and season everything with salt, pepper, and grated nutmeg. Add the lemon zest and almond butter. Blend the soup with a blender until creamy. Keep warm until serving Season the créme fraiche with salt, pepper, and lemon juice. Divide the soup among bowls. Garnish with créme fraiche and serve with roasted cauliflower and herbed garlic oil. Serve hot.

Flavourful Roasted Root Vegetables

5 CARROTS 3 POTATOS 1 FENNEL 100G FETA CHEESE 2 TBSP FRESH MINT 3 TBSP OLIVE OIL 2 TBSP HARISSA SEASONING 1 TSP SMOKED PAPRIK A 2 TSP GROUND CUMIN 1 TBSP LEMON JUICE 2 TSP HONEY SALT AND PEPPER

Preheat the oven 200°C. Wash the carrots, fennel, and potatoes properly (peel if necessary), and cut them into wedges.

Mix the olive oil, honey, half of the feta cheese, spices, and half of the mint in a mixing bowl. Toss the veggies in the bowl, mix them around so that they all get seasoned, and put them in an oven dish. Bake in the oven for 20 minutes, stir the veggies a bit at the halfway mark.

Take the dish out of the oven, put the leftover feta cheese and mint on top, and serve right away.

Baked Camembert with honey This tasty delicacy will sweep everyone off their feet whether it’s served at the Xmas dinner table, or during an evening spent with friends. Camembert has a powerful f lavor to it, which makes it a great match with honey. I wanted to add a bit of rosemary, chili f lakes, and black pepper to give the dish some kick. The cheese melts and becomes runny in the oven, and the f lavors blend in harmony as I dip a piece of bread in it. May the feast begin… Oh and don’t forget a glass of fine wine.

Preheat the oven to 180 °C. Place a baking sheet in a small cast iron pan (a blini pan works well) and put the Camembert in it.

Use a knife to make deep cuts in the cheese, pour plenty of honey, and decorate with the rosemary branches. Drizzle chili flakes, sea salt, and black pepper on top.

Bake for about 15 minutes. Serve with crunchy artisan bread, for example!

Garlic bread with rosemary and thyme

1 LARGE LOAF OF ARTISAN BREAD 2 CHOPPED/PRESSED GARLIC CLOVES ROOM TEMPERATURE BUTTER 3 TBSP OLIVE OIL 5-7 BRANCHES OF THYME 2-3 BRANCHES OF ROSEMARY

Preheat the oven to 200°C. Mix the garlic, butter, and olive oil in a bowl. Slice the bread into thick slices, but not quite all the way down, and smear each slice with the garlic-butter mix. Place the rosemary and thyme branches between the slices.

Wrap the bread in foil and bake in the oven for 20 minutes. Serve straight out of the oven.

Add ½ a teaspoon of creamed horseradish to the crème fraîche. Sprinkle in a small pinch of sea salt and freshly ground black pepper and a squeeze of lemon juice then mix well. Taste to check its hot enough. Cut a loaf of ciabatta into 1cm thick slices, toast or griddle them then drizzle over a little extra virgin olive oil. Top with waves of smoked salmon (a 200g pack is perfect here) Add a dollop of horseradish crème fraîche to each toast then snip over ½ a punnet of cress. Finish with a tiny drizzle of extra virgin olive oil, freshly grounded black pepper and a little squeeze of lemon juice.

SUGARED CRANBERRIES AND ROSEMARY XMAS TREES:

Sugared cranberries and rosemary Xmas trees: Boil the water and sugar in a pot until the sugar has melted. Let the liquid cool down before you dip the rosemary branches. Place the dipped rosemary branches on a baking sheet and let them rest there for about 15 minutes. Next, put the cranberries into the sugar water for about 10 minutes. After that, pick out the cranberries and place them on a baking sheet for about 30 minutes (the liquid can now be used to make cranberry juice.) Twirl the rosemary branches and cranberries in sugar and place them on a plate until the decoration portion.

The Base: Preheat the oven to 175°C. Prepare two springform cake pans, with a diameter of around 16 cm.

Melt the butter and let it cool down. Whisk the eggs and sugars into a light, even foam. Add the butter and vanilla sugar and mix gently. Mix the flour, baking powder, baking soda, and cinnamon together. Add the mix to the foam through a strainer and mix gently into an even batter. Crush the nuts and add the sour milk and crushed nuts to the batter. Split the batter evenly in the two cake pans. Bake for about 40-45 minutes Mascarpone cheese icing: Whisk the butter until it’s light in color. Add the mascarpone cheese and whisk it into an even mixture. Add the powdered sugar and vanilla sugar and whisk a bit more. If the mixture seems a bit too runny, place it in the fridge for a little while.

Cake assembly: Cut the cake bases in half so that you end up with 4 evenly sized, round layers. Place the first base onto a cake stand. Spread an even layer of the icing. Repeat this process for 3 of the layers.

Place the last layer on top, with the cut surface facing down. Spread the rest of the icing on the sides and top of the cake and decorate your masterpiece with cranberries and rosemary branches.

Citrusy Gingerbread Cookies

1½ DL SYRUP 2 DL SUGAR ¾ DL WATER 150 G BUTTER 1 GRATED LEMON PEEL 1 GRATED ORANGE PEEL 1½ TSP GINGERBREAD SPICE 2 TSP BAKING SODA ~ 8 DL FLOUR

Mix the syrup, sugar, and water in a pot and bring to a boil.

Remove the pot from the stovetop and add the butter, grated citrus peels, and gingerbread spice. Mix and let cool down. The dough should be a bit sticky and soft, it will harden once it has been chilled. Cover the dough with plastic wrap and let it sit in the fridge overnight.

Take the dough out of the fridge and preheat the oven to 200 °C. Roll out the cookie dough into thin discs and don’t be afraid to flour your hands, rolling pin, work surface, and everything in between. Use your cookie cutters to, you guessed it, cut out the cookies, and place them on a baking sheet covered oven tray.

Bake for 6-8 minutes, depending on their thickness.

Dried orange garland

4-5 NAVEL ORANGES SHARP SERRATED KNIFE CUTTING BOARD COOKIE SHEETS PARCHMNET PAPER FISHING WIRE OR TWINE

Line cookie sheets with parchment paper. Slice oranges 1/8 to 1/4 inch thick and place in a single layer on the cookie sheets. Tip: Blot with paper towel to remove excess moisture and speed up the drying process. Place in the oven and bake for 5-6 hours at 120 °C or until the oranges start to turn sligthly brown and dry. Let oranges cool.

String the oranges onto fishing line. Poke the line through the flesh of the orange, not the rind.

Christmas wreath

First things first, make sure you have all the materials and tools you need for your Christmas wreath at hand reach. Use a metal ring as the base for your wreath or prepare a self-made ring out of branches. Cut the branches you have picked out into the appropriate length and make bunches of 2-3. Cowberry is an excellent choice as they are the perfect length without any trimming. If you want your wreath to be more compact, use shorter branches, and if you want it to be a bit airier and looser, longer ones will do the trick. Take your roll of wire and tie the tip properly onto the wreath base. You don’t want it to come loose when you’re halfway. Start attaching the bunches to the wreath base one at a time by wrapping the wire twice around each branch bunch. Keep the same piece of wire going all the way around. Try to attach the branches as evenly as you can, on the sides too if the base is thick, so that the whole base ring is covered.

Keep the wire as tight as you can throughout the process.

Once your wreath is done and you’re about to finish, tie the wire properly to make sure it doesn’t come off.

At this point, you can use the wire to make a hanging hook on the back of the wreath if you’d like. Attach the decorations you’ve chosen with hot glue or more wire, depending on their style and size. Hot glue is excellent with dried orange slices, for example. Now that your lovely wreath is complete, go ahead and hang it on your wall, or give a beautiful gift to one of your loved ones!
