Chef Patron Ian Orr Since establishing Browns Bonds Hill Group in 2009, Ian and his Business partner Marcus Roulston have aimed to provide customers with an exceptional fine dining experience and a menu focusing on local produce which changes with the seasons. Inspiration for the menus comes from the team, researching new ingredients and new techniques to give diners an unforgettable experience - the best food tourism experience in Northern Ireland, 2017.

Named Best Chef in Co Derry five years in a row by Restaurants Association of Ireland and being instrumental in developing Tourism Northern Ireland's new signature dish in the Year of Food and Drink, Ian frequently appears on local and national television showcasing his culinary skills, most recently BBC’s Saturday Kitchen and UTV Life.

Ian has represented Northern Ireland in New York, appeared on Great British Menu, has been named five times in Bridgestone / McKenna Top Ten Chefs to Watch and was awarded Georgina Campbell's Ireland Chef of the Year in 2013. Despite all the accolades, Ian’s favourite place to be is in the kitchen cooking.

Fantastic Gift Idea

Clay Pigeon Shoot £85pp We will gather at Browns Bonds Hill for breakfast at 9.30am. A luxury coach will depart Browns at 10.30am and transport us to and from the shoot site, where qualified supervisors will be on hand to advise beginners and the more experienced among us on the art of shooting clay. The competition will then commence at 12noon. We will stop briefly on our return at Ardtara Country House for prize giving and to quench our thirst. Then it's back to Browns for a game themed three course dinner.

Marinated Monkfish Cheeks with Ketchup Dressing Tarragon Mayo.

Salt & Vinegar Crisps (Serves 2)

Ingredients For the Monkfish Cheeks 8 Monkfish Cheeks, Trim off all membrane (ask your fishmonger) 1 Tbsp of Fennel Seeds, Crushed 1 Tbsp of Coriander Seeds, Crushed Zest of 1 Lemon, Keep the juice for later 3 Tbsp of Olive Oil For the Ketchup Dressing 2 Large Shallots, Chopped 20 Small Capers 100ml Tomato Ketchup 1 Tbsp of Red Wine Vinegar 50ml Extra Virgin Olive Oil 2 Tbsp of Worchester Sauce 5 Small Heirloom Tomatoes, cut into quarters Small Bunch of Basil, Roughly Chopped Small Bunch of Parsley, Roughly Chopped For the Crisps 3 Large Maris Piper Potatoes, Peeled 4 Tbsp of Vinegar Powder (Malt Vinegar can be used) Fine Sea Salt, to taste 1 Small Bunch of Micro Basil, if available For the Mayo 1 Egg Yolk 1 Whole Egg 1 Tbsp of Dijon Mustard Squeeze of Lemon Juice 1 Bunch of Tarragon 300ml Olive Oil

Method 1. Place the Monkfish Cheeks in a sealable bag or in a covered dish; add the Fennel Seeds, Coriander Seeds, Lemon Zest and Olive Oil and leave to marinate for 30 minutes.

2. To make the Ketchup Dressing – mix all ingredients together and season to taste 3. For the Salt & Vinegar Crisps – heat the fryer to 180°C. Use a Vegetable Spiralizer/Slicer and slice the potato into long thin strips. Deep fry potato strips until crispy, take out and place on kitchen paper to drain excess oil and season with the Fine Sea Salt & Vinegar Powder (or Malt Vinegar) 4. To make the Tarragon Mayo – In a blender, blend together the Olive Oil and Tarragon to make a green oil, take out of blender and set to one side. Using the blender again, add the egg yolk, the whole egg, mustard and pinch of salt. Blend together and then slowly add the green oil until thick. Finish with a squeeze of lemon to taste.

5. Take the Monkfish Cheeks out of the marinade, season and cook in a hot pan for 1 minute on each side. Finish off with the juice of half a lemon before taking them out of the pan.

6. Place the Monkfish Cheeks on the plate, spoon some dressing over them, place some tarragon mayo on the side and finish off with the salt & vinegar crisps on top and micro basil.
