Esta cita se produjo de la mano de dos expertos cortadores que mostraron al público como se realizaba esta técnica, en el que los espectadores quedaron asombrados. Tras dicho acto, se pudo degustar y adquirir el producto.

El ronqueo es una técnica milenaria que se utiliza para el despiece el atún rojo, uno de los productos más característicos de la zona, que atún permite aprovechar casi el 100% de la carne del animal, usándose para distintas elaboraciones como conservas, salazones, o ahu- mados.

La palabra ronqueo proviene del ruido que hace el cuchillo al rozar el espinazo del atún salvaje.
