Welcome to Hugh Black & Sons festive food range for 2024. We are delighted to present our selection of seasonal delights designed to bring joy and warmth to your celebrations. Whether you’re planning a cozy family gathering or a grand holiday feast, our brochure is filled with everything you need to make your festive season truly special.

2024 has been another busy year for our team. By far the highlight of our year came in September when Her Royal Highness The Princess Royal visited our Stirling branch. The Princess Royal toured the Stirling premises to gain first hand insight into our dedication to quality, traceability, and sustainable local sourcing practices as well as our commitment to the Scottish farming industry. It was an honour to have Her Royal Highness visit our shop and this will go down as a very memorable day in the history of our business.

Preparations for the festive season are well underway. Our team has been working hard to ensure that only the highest quality meats make it to your table. Our beef will once again be sourced from local markets at the end of November. Our lamb continues to come from our own farm, Castlehill in South Lanarkshire with Tom Wilkinson in Hawick providing our outdoor-bred farm assured pork.

Our dedicated team of butchers and bakers is working tirelessly to ensure that your festive season is filled with delicious and high-quality food. From expertly crafted cuts of meat to freshly baked goods, every item is prepared with the utmost care and attention to detail. We understand how important these moments are for you and your loved ones, and we are committed to making your celebrations truly special.

As we reflect on the past year, we are filled with immense gratitude for your loyalty and support. Your trust in our services and products has been the cornerstone of our success. We have 2 ways to place your Christmas order. You do not have to pay anything up front as full payment will be taken on collection:

1. In-store: Order forms are available in-store. Once you have filled this out, just hand it to one of our friendly counter staff who will be happy to take your order.

2. Online: You can place your Christmas or New Year order through our website, www.hughblackandsons.co.uk, for collection in store.

You can choose a time and date to collect your order. Once your order is placed, you will receive a confirmation email which includes your order number. Please bring this number when collecting your order.

Be sure to place your Christmas order before 5pm on the 18th of December, and your New Year order by 5pm on the 26th of December.

When placing your order, let us know if you have any special requests, e.g. if you would like your steaks cut to a specific size. If placing your order online there is a section for you to add any special requests. If nothing is specified you will receive our standard sizes. Please note that making a special request will not change your estimated cost although the final amount you pay on collection will change accordingly.

Christmas orders can be collected between the 23rd & 24th December. New Year orders can be collected between the 30th & 31st December.

CTurkey Guide

hristmas is always a special time of year and the highlight of the day, other than the presents, is the food. Here is our handy guide to the different types of turkey we have available to make your Christmas dinner the best meal of the year.

WHOLE TURKEY: The full bird. Contains both white and dark meat. Perfect for stuffing and makes a spectacular centrepiece for your Christmas table.

TURKEY CROWN: The breast meat on the bone with the legs removed. For those who only want the white meat but still like to cook on the bone. These can also be stuffed.

TURKEY BREAST: Just the breast meat without the bones. For those looking for something smaller, quicker to cook and a bit more convenient.

If you are unsure how to cook your turkey, we would recommend looking online where you are sure to find something to suit your needs and cooking ability.

Here are a few tips to bear in mind when you are cooking your turkey:

1. Your turkey will cook more evenly and faster if you start with it at room temperature so remove the turkey from the refrigerator 1 hour before roasting.

2. If you have stuffed your turkey or crown, be sure to add the weight of the stuffing when calculating your cooking time.

3. Make sure that your oven is at the correct temperature before cooking.

4. We cannot overstate the importance of resting your turkey after roasting. Cover loosely with foil and allow to rest for at least 30 minutes (just make sure that you sit it on something that will catch the juices. Nobody wants to spend Christmas day mopping the floor!).

Please note that if you order a turkey product for Collection after the 25th of December it will be frozen. We will remove your turkey from the freezer the day before collection.

Walters Turkeys

The Walters family has specialised in Traditional Christmas Turkeys for 50 years. Their free-range bronze turkeys are able to roam the countryside and have a rich, delicious flavour. They are very passionate about the welfare and production of their turkeys, carefully selecting slow growing traditional breeds that reach full maturity naturally. Traditional farming methods are used to rear Walters turkeys, their diet includes homegrown cereals milled on the farm and is free from growth promoters. They are a family run business where everyone gets involved. Up on the Berkshire Downs our turkeys are able to roam in the beautiful countryside.

Packington Chicken

Packington Free Range Cockerel makes a fabulous and great tasting centrepiece for your Christmas table. Each Cockerel is given time to mature slowly and naturally on the Packington family farm. This allows for a beautiful depth of flavour to develop alongside moist, succulent, tender meat. Award winning, with a fantastic 2-star in the Great Taste Awards – these free-range Cockerels are sure to make your Christmas dinner just perfect.
