A word with the Captain Experts in private charters and corporate hospitality, we talk to Harbour Yachting’s chief Captain, Marc Jackson, about his on the water adventures and what makes his fleet and experiences so special…

How did you first discover your sea legs and how long have you been sailing for?

I first discovered my sea legs when I moved to the Channel Islands (Herm Island) at 17. Just 1.5 miles long by 0.5 miles wide there were no cars, only boats, for transport (to go shopping etc). With my love of the water, I soon became Captain of the Island’s boat and cargo ship and it all went from there.

What’s your greatest on the water experience to date?

Every day is an experience, as you see so many different places. From anchoring up and enjoying a nice lunch on the water, to racing Crusade with our team.

We understand that you volunteer for the RNLI - are you on standby at all times?

I am on standby 24 hours per day, 7 days a week, for call outs and we train once a week for different rescues. Helping others in distress, when you know what the seas can be like, is very rewarding.

Panerai Classics: 12th - 19th July 2015 Every year, in late July, the old port of Cowes on the Isle of Wight, and the legendary waters of the Solent - the strait separating the island from England, famous for its unique combination of winds and tides, play host to the most important event in the United Kingdom for classic yachts, part of the Panerai Classic Yachts Challenge since 2010.

Dozens of yachts, mainly from Northern European countries, gather in Cowes to take part in the five races that may bring them final victory, and in the spectacular Panerai Classic Round the Island Race, organised on the first Sunday along the course that in 1851 gave rise to the America’s Cup. Aberdeen Asset Management Cowes Week: 8th - 15th August 2015 Cowes Week brings the world’s biggest sailing stars and excitement to competitors and spectators alike, with over 1,000 yachts and 8,000 competitors taking part in some top-class sailing. Truly experience the event from the water aboard Crusade.

Biennial Rolex Fastnet Race 2015: 16th August 2015 Considered one of the world’s classic ocean races, the 608 mile course is a true test for skippers and crews. Harbour Yachting will be entering Crusade into the 2015 Fasnet race, with 8 places available to crew in a competitive, fun and comfortable environment. Having been on the podium for both the Sydney to Hobart and the Fastnet race, Crusade has a great offshore pedigree. There will no doubt be a big rush of nostalgia as she sails out of the solent nearly 44 years after her first Fastnet Race.

The House of Billecart-Salmon

in the cultivation of the vine. Upon completing his studies, Nicolas François Billecart took over the operation of the family vineyard situated in Mareuilsur-Aÿ where he was also village mayor from 1848 to 1858.

Welcome to an exceptional world where authenticity is adorned with wonder...

As a visionary and precursor for his time, he decided to orientate the commercialisation of his Champagnes on the foreign markets, particularly Bavaria, Russia, Switzerland and then the United-States, where he opened the first representative office.

History of the Champagne House

A family heritage

In 1818, Nicolas François Billecart and his spouse Elisabeth Salmon founded their Champagne House in Mareuil-Sur-Aÿ where the Billecart family has been established since the 17th Century. Since the early 19th Century six generations have succeeded each other at the family home in the heart of the Champagne Region each living by the same motto: “Give priority to quality, strive for excellence”.

Between tradition and modernity The House of BILLECART-SALMON has preserved ancestral vinification methods handed down from generation to generation which are constantly being perfected. As part of the ever present quest to maintain the quality of their Champagnes, in the fifties the House established the technique of chilling the must combined with the use of stainless steel tanks for a longer fermentation at a lower temperature. As a result, the wines conserve their

freshness over time and the aromas intensify, allowing the BILLECARTSALMON Champagnes to deliver the same quality and excellence that has come to be expected. The bottles themselves are then laid to rest in the original chalk cellars dating back from the 17th and 19th centuries.

Continuing this perpetual quest for excellence, a new chai was built in 2010 to hold more than 450 oak barrels to skilfully enhance the vinification of the vintage wines.

A passionate founder From a wine-grower family, Nicolas François Billecart was born in Mareuilsur-Aÿ on 22nd December 1794. His ancestor Pierre Billecart was a counsellor at King Louis XIII’s parliament in 1615 in Chalons en Champagne. The coat of arms of the family was assigned by the King thanks to his role: three bunches of grapes attesting to the long history of the family

Today, the family perpetuates its legend thanks to François and Antoine Roland-Billecart, representing the sixth generation of the family, who lead this independent House in conjunction with their father, Jean RolandBillecart. All of them continue to write the fine pages of the House and to pass down their love for champagne for future generations.

The flagship cuvee of the House is the Brut Rosé non-vintage which has been receiving high praise and accolades since the 1830’s. The production secrets and the vinification method of this cuvée go back to the origins of the House of BILLECART-SALMON and have been handed down for six generations.

The Brut Rosé is a blend of Chardonnay, Pinot Meunier and Pinot Noir.

Furthermore the Blanc de Blancs non-vintage, aged in cellars for five years and elaborated only from grand cru vineyards of the Côte des Blancs, is similarly starting to receive recognition for its high quality.

Named after the House’s founders, current vintages include the Cuvée Elisabeth Salmon Rosé 2002, which is soon to be joined by the Cuvée Nicolas François Billecart 2002, due for release shortly. The House’s most exclusive cuvée is cultivated in the Clos Saint-Hilaire, with Pinot Noir grown from half a century of careful cultivation. This one hectare of precious land is sheltered by a stone wall and gives birth harvest after harvest, to an exceptional champagne of rare complexity and stunning freshness. After several years of painstakingly tending the vines the first limited release of this unique cuvée was the 1995 vintage.

The Cuvée Nicolas François Billecart In June 1999, the Cuvée Nicolas François Billecart 1959 was chosen “Champagne of the Millennium” by a committee of experts at a blind tasting involving 150 vintages from the most illustrious Champagne producers, organized in Stockholm by Richard Juhlin, a great Champagne specialist.

The 1961 vintage, for its part, came second.

Overall, BILLECART-SALMON incarnates a style of Champagne spirit.

If described in three words they would be finesse, balance and elegance.

Seaside Renaissance Steven Hall meets with coastal artist Becky Bettesworth at her studio in South Devon.

It really was only in March 2013 that Becky Bettesworth exhibited her work for the first time at Greenway, National Trust property on the banks of the Dart.

Life in art began many years before, in fact, Becky explained to me that from as long back as she can remember she always loved anything art and craft related. At school she suffered from Dyslexia and so her academic studies were always compromised, but in Art and Design she recognised very early that she had a talent and a passion for it. After doing her A levels she proceeded to Bath University to complete a degree in Graphic Design. She told me that at this stage in her life computers were not for her and she particularly wanted to specialise in any area of art that did not involve them! In London, following completion of her degree, she worked for a number of advertising agencies and was lucky enough to be involved in some amazing campaigns for companies like Cadbury and Coca-Cola.

However, shortly after this, she met her husband to be and two adventurous spirits together took them off on their travels for a year to New Zealand. Becky describes this as a “life-changing” experience. The whole laidback lifestyle they experienced along with the seaside atmosphere made them both fall in love with the quality of life and when they returned to the England they decided to move to the South West. Becky’s husband was originally from Torquay so that was an obvious place to make home and so with time on her

hands and back in her favourite environment, Becky was free to explore her creative side once again.

She exhibited her artwork at Battersea Affordable Art Fair and quickly received offers from publishers to take her on and expand her portfolio but Becky had other ideas.

Firstly, she decided to have her family and three children later, and very much a full-time hands-on mum she then decided that she needed the art outlet in order to express herself.

Her first exhibition after this period was at Greenway NT property and the interest she commanded made the National Trust sit up and take notice. They offered to take her work and offer it for sale in their shops. Becky was delighted that the new style she was keen to develop in her seaside based posters was so popular. I asked her why she thought it was in such demand. “I believe it creates a feeling of nostalgia in people, of happy summer days, holidays, families and simpler lives. There is something enchanting and magical about the South Devon towns, countryside and seaside and I hope I capture that in my art”. With the help of a printer in Exeter and the NT shops the original four prints Becky supplied at her first exhibition have snowballed and she has been able to introduce a range of greetings cards too!

Becky describes herself as a perfectionist. She pays great attention to not only the composition of the picture but also the colours and the place.

They all have to work together and she knows when it is right. She also has now embraced a small part of the 21st century by using Photoshop to improve some of the final images after her own creative handy work. She has surprised herself on this breakthrough!

For now Becky is quite happy with selling her artistic work through the National Trust shops, other galleries, her own website and various other shops around the South West. She is also on www.notonthehighstreet.com. Moving forward Becky would like to do more art and craft fairs. “The South West has always had an excellent number of creative artists and are fantastic at promoting them through these fairs and I am keen to be involved� However it does have to be one step at a time for Becky with three children under ten she has her work cut out!

I asked Becky about the future: “My art is a reflection of me and my outlook on life – I feel I am a very positive, upbeat person and I hope that through my art I can bring these feelings of wellbeing to other people and bring the style of seaside renaissance to the fore”. “The feedback I receive from my Facebook page (another nod to the 21st century) is fantastic and I hope that all the areas in South Devon I focus on in my work will benefit from the interest it creates”.

A taste of Britain Chef Patron for Harbour Hotels, Alex Aitken was thrilled to represent Dorset on BBC’s ‘Taste of Britain’ show, as Janet Street Porter and Brian Turner joined him at The Jetty in Mudeford for an afternoon of filming.

Alex chatted to Brian and Janet about the restaurant’s unique location in Mudeford and prepared his (now famous) Mudeford Crab Croquettes. Brian Turner described them as "a clever combination of seaside flavours" and Janet Street Porter was left speechless! ("I can't speak, I’m enjoying these so much").

Highlighting his philosophy of fresh, seasonal and local, Alex has successfully championed local produce across all Harbour Hotels’ restaurants, with multiple awards and acknowledgments as a result.

Testament to this is The Kings Arms in Christchurch; which received a prestigious Bib Gourmand in the 2015 edition of the Michelin Guide for Great Britain and Ireland, retaining this accolade as the only restaurant in Dorset for a second consecutive year.

MUDEFORD CRAB CROQUETTES RECIPE:

Janet Street Porter was recently left speechless by these Mudeford Crab Croquettes and now you can attempt to make them too, with Alex Aitken’s simple and delicious recipe.

BROWN CRAB BUTTER

110G BROWN CRAB MEAT, 110G SOFT BUTTER, PINCH OF CAYENNE PEPPER, SALT, JUICE ½ OF A LEMON, 1 TBSP CHOPPED CHIVES, 1 TSP CHOPPED TARRAGON • Place the brown crab meat into a food processor and blitz until smooth, then pass through a sieve.

• Mix the crab meat with the softened butter, the chopped herbs and spices and season with salt, cayenne pepper (not too much pepper, it’s nice and hot) and lemon juice.

• Place the softened mixture into a piping bag and pipe into a cylindrical shape onto parchment paper. Freeze.

WHITE CRAB BRANDADE

225G WHITE CRAB MEAT, 225G DRY MASHED POTATO – ALLOWED TO COOL, 2 TBSP CHOPPED CHIVES, SALT AND PEPPER • Mix all together and season with salt and pepper

TO MAKE THE CROQUETTES

• Remove the brown crab butter from the freezer and cut into finger length pieces. Carefully wrap them in the white crab brandade mixture so they resemble sausages and return to the freezer.

• Whilst the croquettes are freezing, you can start to prepare the breadcrumbs.

• In three separate bowls you will need some plain flour, some dried breadcrumbs and 2 beaten eggs let down with a dash of cold water.

• Place the frozen croquettes first into the flour to give them a light coating, then dip into the beaten egg, shaking off the excess then roll in the bread crumbs to coat. For best results do this twice.

• The croquettes can now be placed into the fridge ready for deep frying.

• TO COOK: Heat a large pan of oil to 170’c and carefully place the croquettes inside, turning occasionally to achieve an even golden brown colour. Alternatively use an electric deep fat fryer.

TARTAR BUTTER SAUCE

1 SHALLOT FINELY CHOPPED, 150G BUTTER, 30ML WHITE WINE VINEGAR, 75ML WHITE WINE, 10ML CREAM, 30ML STOCK, SALT AND PINCH OF SUGAR, JUICE OF ½ LEMON • Add shallot, vinegar and wines to a pan and reduce until dry.

• Add stock and cream and simmer.

• Remove the pan from the heat and whisk in the diced butter a little at a time, waiting until the butter has melted and been incorporated before adding any more.

• Season and add and lemon juice, adjust the consistency with a dash of water if nessercary. Pass through a sieve.

GARNISH: Garnish the butter sauce with chopped capers, chopped baby gherkins, chopped parsley and finely diced shallots.

Sidmouth, a gateway to the Jurassic Coast On the doorstep of Britain’s longest and most popular National Trail, Sidmouth Harbour Hotel is the perfect base for exploring the spectacular Jurassic Coast.

This spirit of adventure is reflected in Discovery Sport’s interior, which has been designed with customers at its core. Later in 2015, a highly efficient two wheel drive eD4 turbodiesel engine will join the range with CO2 emissions from just 119g/km.

A service plan will be available for Discovery Sport from launch in the UK, offering five years or 50,000 miles worth of servicing (whichever is sooner) at an Approved Service Centre, for a one-off fee of £499.

“Not only does Discovery Sport mark the introduction of the first new member of our expanding Discovery family, it also brings the versatility of 5+2 seating to the compact premium SUV market,” said Phil Popham, Jaguar Land Rover Group Marketing Director. “Discovery Sport’s versatility is a key differentiator. Discovery Sport will be produced at Land Rover’s award-winning manufacturing facility at Halewood, Liverpool. It goes on sale in January 2015 in the UK alongside the existing seven-seat Land Rover Discovery.

Man at the helm Boasting an extensive record in the hospitality sector, Harbour Hotels’ Managing Director, Mike Warren, has all of the experience and knowledge to oversee the group’s expanding portfolio of luxury coastal hotels. In our first interview with him, we discover how he is leading the group to become the UK’s number one coastal hotel brand, synonymous with luxury stays on the coast.

Where did it all begin?

What do you think sets Harbour Hotels apart from your competitors?

Having been appointed the first ever General Manager at the original Hotel du Vin in Winchester, in 1996, I went on to hold several senior positions with Hotel du Vin and Malmasion, most recently as COO. Before that, I spent five years at Chewton Glen, and gained further experience at The Schlosshotel, Kronberg, Frankfurt and Dromoland Castle and Country Club in Ireland.

We are currently a group of five hotels - all set in incredible locations across the south coast. One of our advantages is our naturally beautiful locations, with each hotel exploiting every inch of its spectacular setting. We also consider the people that work for us as our greatest asset.

What attracted you to the Harbour Hotels role?

We have an opportunity to do something very special here; with a clear shared vision to become THE coastal hotel group in the UK. We have great hotels, in fabulous locations, and a wonderful team of people within our business.

Having those elements in place, coupled with our ambition and potential, makes for a very exciting future.

Our ongoing investment in our staff, and our programme of continued improvement in both the service and the product, demonstrate a commitment in delivering an exceptional experience and stay.

Our continued investment includes the recent addition of 22 new bedrooms and courtyard at our Sidmouth Harbour Hotel. We are also set to introduce a new Jetty restaurant and kitchen, and, in time, a Harbour Spa. 2015 will see the opening of a new bar at our Kings Arms, in Christchurch; having been awarded a Michelin Bib Gourmand for two consecutive years, The Kings Arms really is a restaurant with rooms and the new bar will further enhance the food and beverage experience.

In regards to acquiring new hotels, locations that we are looking at include Brighton, Bristol and the Norfolk coast; with the desire to expand into thriving coastal areas.

How would you summarise the Harbour Hotels’ values and philosophy?

Another key focus across the group is creating consistency with the hotels’ food and beverage operations, making it a talking point among our guests and locals. Our Chef Patron Alex Aitken, together with the hotel teams, will be introducing an exciting range of new menus and dining options, so watch this space.

Further initiatives that we are working on include the addition of new inhouse spa products and treatment menus, connecting the spa to its coastal surroundings and elements.

Salcombe Town Regatta Situated on the estuary, the pretty town of Salcombe attracts visitors for its excellent range of shops and location as a popular sailing harbour. This maritime heritage is celebrated every year in a colourful regatta.

Regatta Week in Salcombe is packed with fun things to do and watch on and off the water. When photographer Lorna Yabsley is asked why she chose Salcombe to house her photographic venue, Bang Wallop - she answers in three parts: “Firstly, I was lucky enough to be born here”, she says. “Secondly, Salcombe has its very own brand identity - it’s our little corner of Mayfair in the West Country” and “Thirdly, we are well placed to offer our portrait and wedding services to the many people who choose to holiday or marry in the area; it’s a good mix for us.

The Bang Wallop Gallery, with shopping, coffee bar and studio, is housed in 2,000 square feet of industrial waterside building in Island Street - Salcombe’s emerging arts quarter and traditional boat-building area.

Lorna, who has worked in the photographic industry for over 30 years, said “I recognised some time ago that in this fast-changing and competitive industry I needed to evolve and grow my business in order to survive. I knew that we were producing really good high-end work, but we weren’t getting the audience we needed or deserved. The advent of digital not only changed an established way of working, but it also put the genre of photography in unchartered territory. Now we all own a camera, there is a huge surge of interest in the subject. As a small company with big ideas, we faced a huge challenge. To meet this we decided to grow and cater for the new emerging market of the photographic-hungry public”. Finding premises proved a five-year struggle for Lorna, but since 2008 she and her team have been firmly established in Island Street and are now very much part of the Salcombe scene.

The Gallery showcases the work of internationally acclaimed photographic artists, as well as providing a backdrop for emerging photographers. You can enjoy a hot beverage from the coffee shop whilst browsing the gallery. For clients who wish to browse through the wider collections, there’s ‘The Pod’, which houses a virtual gallery.

At the heart of Bang Wallop are the photographic studios and post-production facilities; Lorna and her highly skilled, creative team of associate photographers and designers, offer an unrivalled service, to both the private and commercial client.

Famous for their portrait and wedding work Lorna explains: “All our shoots are creative and we are constantly pushing ourselves to be innovative. Definitely nothing naff or tacky - very different from the usual fayre. As well as working from the studios, we are blessed with the most amazing location in and around Salcombe, secret spots and hidden coves, the perfect backdrop for a shoot”.

The Bang Wallop school offers a range of courses to suit every level, from complete beginners to the more advanced; One to One is a way to fast track your learning. Lorna’s third book ‘The Busy Girl’s Guide to Digital Photography’ was published in 2013 and it has consistently been in the top 10 best-selling photographic books on Amazon, and it is the bible for the tuition you receive at Bang Wallop.

With full access to Bang Wallop’s technical facilities, which include Mac digital workstations, two viewing rooms and studio, complete with technical support from gallery staff, it’s a great place to inspire and learn about photography.

“Learning in a professional environment, could feel intimidating” says Lorna “We are very mindful of this and keep the emphasis on fun and learning in a non nerdy way. Most people just want to get a little more from their cameras, we aim to give people some control and get them off auto. You can take it right through to pro standard if that’s what your looking for”.

As if they didn’t have enough going on, Bang Wallop holds major events every year. From 14th Mar to 9th May 2015 Charlie Waite, world re-known landscape photographer is exhibiting in the gallery and will be there in person to talk about his work on 8th April. Later in the year acclaimed lighting artist Bruce Munro will be bringing his iconic ‘Field Of Light’ art installation to the Town and also showcasing his work at Bang Wallop.

Founded by Justin Easton and based in a charming location on Padstow’s harbour-side, the Drang Gallery celebrates contemporary art in all its myriad forms, from original paintings and traditional prints, to studio glass through prize-winning bronze to the most cutting edge carbon fibre sculptures. From its humble beginnings, this family business has grown rapidly, hosting various exhibitions and guest appearances in its airy studio, as well as show-casing the works of artists as diverse as Damien Hirst, Sir Peter Blake, Dan Baldwin, Adam Binder and Ben Eine.

As might be expected, The Drang Gallery has also developed strong relationships with numerous up and coming artists, of whom Alastair Gibson is perhaps the most significant.

Inspired by his lengthy career in Formula One motor racing, Alastair has become the leading sculptor and exponent of carbon fibre art. His working partnership with The Drang Gallery extends back to the gallery’s launch party, when he displayed a three-metre long sculpture of a mako shark, entirely made from carbon fibre and components of Jenson Button’s 2008 F1 car, cleverly alluding to the design similarities between these ostensibly different objects. Alastair’s other works have ranged from skulls to sturgeons, piranha to manta-ray, with every piece supplied with a fully itemised

specification sheet that details the heritage of each Formula 1 component utilised in its creation.

The Gallery has developed a ground-breaking reputation in Contemporary Art as witnessed by the fact that the Drang is the only gallery in the West Country, outside of those owned by the artists themselves, permitted to represent the likes of Damien Hirst and Marc Quinn. The Drang Gallery strives to keep its displays stimulating, colourful and exciting, sympathetically blending the work of established international masters from Picasso to Dali, with national artists of great stature such as David Hockney and Sir Terry Frost, alongside up and coming stars such as Keith Haynes and Peter Brown.

Sea change at Bigbury This summer the golfers at Bigbury have not only enjoyed a beautiful summer and superb course conditions but they also have witnessed a transformation to their nearly 50 year old clubhouse.

Golfers, local Bigbury residents and visitors to the South Hams have watched the rather old and tired, red stained timber cladding be replaced with very smart, contemporary aquamarine Cedral Weatherboard to give a New England feel.

This has allowed for modern insulation to be installed in all the walls and the roof so the Club are expecting a much more efficient and cosy building this winter too.

Bigbury Golf Club was founded in 1923, the course laid out by the legendary JH Taylor; the history books show that in 1964 the old clubhouse burnt to the ground and was found to be caused by an itinerant arsonist who caused havoc in the area. The present building was erected as a temporary measure in 1966 and the Club continued to thrive with extensions and improvements being added gradually.

This latest and significant upgrade has been made possible by a marvellous 4 year fund raising effort by the Bigbury members, special events, donations and a grant from Sport England as part of their 'Inspired Facilities' project following the 2012 Olympic Games.

Bigbury's golf course has long been regarded as one of the finest clifftop courses in the Country and has enjoyed a thriving membership of local people, which is still the case today. The Club is visited and re-visited by thousands of holiday makers, many of whom stay in the cottage adjacent to the club house and eighteenth green, where after a satisfying days golf on the superbly kept course, there is nothing more pleasurable than watching the evening golfers finish their rounds while enjoying the stunning views over the countryside to the sea. There is also a growing number of people who just want to retire to the gorgeous South Hams. Bigbury now has a Clubhouse and a golf course of which to be suitably proud.

Social events are supported by many and the Club is attracting a growing number of social members to complement the golfing community. The famously friendly Bigbury Club is very much available to the whole local community to enjoy, golfers and non golfers alike. Many local people are booking to have their Christmas, Birthday or Anniversary parties at the Golf Club and they will not be disappointed - Jenny Brooks and her catering team

are producing delicious home cooked food, it’s very good value and the stunning views out to sea make for a superb overall experience.

For the golfers there are several creative packages on offer to suit busy modern lifestyles and all standards of golfer, for example people can join the flexible Green membership for as little as £210 for the year and have all the same benefits as a full member.

Moving forward BGC wants to share the wonderful position & facilities on the cliff top and with the support of local company Hatch Marquee Hire are able to host a number of outside social events akin to the Wedding Fayre held last month. A new website www.bigburyweddingsandparties.com is being developed to promote this new opportunity.

The major roofing and wall re-cladding work was awarded to Plymouth based company Clegg & Shortman whose workmanship has given a high quality finish to the project. There have been many additional pieces of work required around the Clubhouse surrounds, that were not included in the contract and hundreds of additional hours of hard graft have been undertaken by a magnificent team of member volunteers. The next focus will be to give attention to the interior decoration and furnishings to match the smart exterior.

Bigbury is indeed fortunate to have so many individuals prepared to give their time and energy to help improve the Club for everyone to enjoy.

The official celebration of the Clubhouse was held on Saturday 20th September with a shot gun start Secretaries Cup followed by an Autumn party for 130 in the clubhouse and specially erected marquee. The Chairman of 'England Golf' Graham Yates attended as Guest of Honour and spoke enthusiastically of the brilliant club atmosphere he found, congratulated everyone at Bigbury for a wonderful achievement attained against great odds and closed by saying the Club can enjoy a bright future. Many other clubs would love to have such a committed membership. Well done Bigbury.
