There are really only two cuts of

meat: tough and tender. Tough cuts of meat contain the muscle, which requires braising or stewing to become tender; tender cuts demand quick cooking to retain their texture and seal in their flavor. Look for high-quality cuts of whatever type of meat you are buying.

  Choose a Grade of Meat  

Beef is divided into five grades based on fat content, marbling and quality. Look for select (the least amount of fat; sold in grocery stores), choice (fattier than select, leaner than prime), and prime (the well-marbled cuts high-end restaurants serve, fattier but also more flavorful). The lowest two grades of inferior meat, commercial and utility, aren't typically sold in grocery stores, and home cooks and aspiring chefs should avoid them. Choose beef with minimal outer fat. The fat should be creamy in color, and bones should be soft-looking with a reddish color. The meat should be firm, fine-textured and a light cherry red. Cook it to an internal temperature of 130 degrees F (54 C) for rare and 140 degrees F (60 C) for medium.

Lamb is usually sold as choice in grocery stores and has a purple U.S. Department of Agriculture inspection stamp to signify that it came from a healthy animal. Look for lamb that's been butchered at five to seven months or younger. It has a more delicate flavor and texture than older lamb or mutton, which takes on a rich gamy flavor. Meat from highquality young lambs is fine-textured, firm and lean. It's pink in color, and the cross sections of bones are red, moist and porous. The external fat should be firm, white and not too thick. Cook lamb to an internal

Pork is graded as "USDA government inspected." Select pork that's pinkish-white to pink in color (loin meat is whiter than shoulder meat) and firm to the touch. Well-marbled pork produces tenderer results. Cook pork to an internal temperature of 150 degrees F (65 C). Veal is graded either prime (milk fed for 60 days before slaughter) or choice, which is found at many grocery stores. Ask for prime-quality veal, with almost white to very light pink, firm, velvety and moist flesh. Veal is butchered young, so most of its meat is tender. Bones should be bright red, small and fairly soft to the touch. The fat covering the meat should be slight and whitish in color. Cook veal to an internal temperature of 175 degrees F (80 C). Large cuts of meat will generally keep in the refrigerator four to five days. Overall Warnings: Avoid beef with yellowish or gray fat, absolutely no marbling, a deep red color, two-tone coloration, coarse texture or excessive moisture. You'll be able to tell excess moisture by a mushy or wet-looking piece of meat, or if the shrink-wrap is filled with condensation.

How to Pick a Steak To choose the best steak for your money (and it can be a lot of money), pay attention to the type of cut and the grade - as well as a few things that are not so obvious. Here's what to keep in mind if you want a classic steak to grill, broil or pan fry. Get to know the cuts, which are sold under many different names. Tenderloin, also known as filet, is boneless and is the most expensive; Strip, also known as New York, is boneless and has real beef flavor; T-bone and Porterhouse, which are similar, have a large bone; Rib Steak (with a bone) and Rib Eye (boneless) are fattier, with rich flavor; and Top Sirloin is leaner and less expensive.

Determine how tender you like your steak. The most tender cuts come from the part of the animal that gets the least exercise. From most tender to least tender: tenderloin, strip, porterhouse and T-bone, rib, top sirloin. Use the U.S. Department of Agriculture's grades as a basic guide to quality. Prime beef has the most marbling, or fat within the meat, but is found mainly in restaurants, rarely in grocery stores. Choice, with good levels of marbling, is juicy and tender, and the most widely available. Select tends to be leaner and less flavorful, and dries out more easily. Check with your butcher to find out if the meat has been aged, which tenderizes and mellows the flavor. Allow at least 4 oz. of steak per serving - double or triple that for hungry eaters, or if the steak contains a bone. Tips: The more marbling, or flecks of fat, the more flavorful the steak. Be sure that the marbling is evenly distributed. Look for meat with a smooth, tight grain. A general rule of toughness: The closer the meat is to a hoof or horn, the tougher the meat will be. The porterhouse is also known as the sweetheart steak because it is actually two steaks, providing two servings in one. When purchasing rib eye steak, ask specifically for cuts from the small end, which are closest to the tenderloin, contain the least fat and are best for grilling.

How to Choose Poultry Fly away from flavorless plasticwrapped birds and head for the free range. Uncaged, organic chickens are more flavorful than traditional chicks. Buy your bird either whole for roasting or cut into legs, thighs, wings and breasts. Removing the skin before cooking decreases the fat by 25 to 30 percent, but also decreases the flavor.

Prepare For a Funeral

Step 1 Meet with the other principal mourners to discuss their wishes and preferences. Find out if the deceased left any instructions regarding the funeral. Discuss religious preferences and how much money the family is willing to spend.

Preparing for a funeral is not a topic that most people like to speak of, however, it is an important matter that needs to be addressed. The following information aims to give you a better understanding of what’s involved in making funeral arrangements. This will help you make a more informed choice when the time comes.

Consult with a religious leader or a funeral home if you would like help with any of the details, including location of a burial site or disposition of ashes, casket or cremation container selection, transportation, legal issues, flowers and music.

Appoint pallbearers if you are having a formal funeral. Pallbearers can include special friends or business associates of the deceased, though the funeral home can usually provide them if there are no preferences.

Assign someone to give the eulogy. Typically, the family will choose a family member, religious leader or close friend. Contact the person who will give the eulogy as soon as possible to give him or her time to talk with the family and organize notes for the service.

Choose the Right Materials for Your Deck

There is no single best deck material. Best is defined as how well a decking material fits individual homeowners’ needs.

Decks add both functional

beauty and value to homes and have become a popular home improvement project. To ensure lasting enjoyment, homeowners should carefully select the decking material used to construct their deck. Durability, maintenance and aesthetics should all be considered when choosing decking materials.

When it comes to building a deck there is a wide choice of materials to build it with. Each one has its advantages and disadvantages. If the lowest initial price is the most important factor then a wood deck would be your choice. If overall durability and low maintenance is important than a composite material would be the best choice. Woods decks can be built with several types of wood. Fir or pine are the least expensive, but they require a sealer or paint to keep them from rotting. The next step up in price would be pressure treated lumber. It is treated with a preservative that allows it to withstand rotting. Treated lumber can be very durable and is the best choice for the

structural part of the deck, such as posts and floor joists. Redwood and cedar cost a little more, but generally make the best looking decks and can last a very long time with regular maintenance including a good sealer or stain. Composite decking costs more than wood decks initially but over time their durability and low maintenance make them a great value. Composite decking offers a variety of colors and can be made to look like several species of wood. Many people are familiar with some of the biggest suppliers such as Trex and TimberTech which both offer a large assortment of handrails and additional features including the ability to install using hidden fasteners meaning you do not see screw heads in the boards. Choosing the best composite for your deck comes down to what is available in your area and the color and style you like best.

Selecting a furnace is an important decision, since the furnace is a home’s largest energy user. The right heating/AC system makes a home comfortable and efficient. The wrong one can cause discomfort, humidity and maintenance problems and increase your utility bills. Purchasing a Heating/AC unit is one of the largest investments, both at purchase and in operating costs, that homeowners can make in their own property. As with any major purchase, the more information you have the better decisions you can make. What Should I Know Before Looking? Heating/Air conditioning equipment is available in many different sizes for different types of homes. The term “size” refers to the combined

cooling capacity. a cooling load analysis gives the required size of the Heating/AC unit based on the largest expected heat gain of the house. Heating/Cooling load and equipment size is expressed by BTUH (British Thermal Units per Hour) or TONS; one TON of Heating/AC equals 12,000 BTUH. Many contractors simply add 25 to 30 percent to the cooling load analysis to account for humidity. In many homes this shortcut can actually increase humidity levels reaching 30 to 50 percent of the total cooling analysis. In humid areas, it is important to have a cooling load analysis that gives the humidity gain including moisture from outdoor air, cooking, showers and washing. How Can I Use the Analysis to Select a Unit? Once the cooling load analysis is completed, the heat and moisture gain should be compared to the heat and humidity removal capacities of other models on the market. Different models and brands of Heating/AC equipment, rated at the same overall capacity, can have varying moisture removal capacities. So check both heat and moisture removal and compare to your contractor’s calculations.

time, depending upon the course of the illness. There is no fixed limit on the amount of time a patient may continue to receive hospice services.

1) Hospice is where you go when there’s nothing more a doctor can do. Hospice is care designed for patients with a life-limiting illness. Hospice is not where you go to die, rather hospice professionals are trained to assist patients in living their lives fully, completely, and without pain until the end of their lives. A hospice patient can revoke hospice services at anytime to pursue further treatments or be discharged if their condition improves. 2) To be eligible for hospice, I have to be in the final stages of dying. Hospice patients and families receive care for an unlimited amount of

Most hospices provide hospice services regardless of a patient’s financial situation. 4) If I choose hospice care, I have to leave my home. Hospice is for anyone facing a lifelimiting illness, regardless of age. 7) After the patient’s death, hospice care ends. Bereavement services and grief support are available to family members for at least one year after the death of a patient. 8) Only a doctor can refer someone to hospice. Anybody can refer anyone to hospice. You or your loved one can talk to your physician about hospice or you can call a hospice directly to request services. In either case, the hospice staff will contact the person’s primary physician and coordinate care with them.

Measuring is the single most important step of this project so take your time and check your measurements not once but twice.  A designer or installer will confirm all measurements prior to ordering your cabinets, but having the correct measurements beforehand can help give you a better estimate of cost and allow you to start designing the kitchen of your dreams.

• Mark what is beyond each wall, such as a closet, bedroom, outside, etc.

• Ceiling Height: Height from floor to ceiling. Measure this in multiple locations to determine if your floor to ceiling height varies.

Other important measurements:

• List all dimensions in inches, measuring to the nearest 1/8”. • Starting from one corner, measure along the wall (disregard existing cabinets).

• Door Height: Height from floor to top of the door trim. This is usually not critical.

• Measure distance from center line of sink and range to the nearest wall.

• Floor to Sill: Height from the floor to the bottom of the windowsill trim. This can be important if cabinets will be located below windows.

• Individual measurements should add up to total wall measurements.

• Sill to Trim: Height from the bottom of the windowsill trim to the top of windowsill trim.

One thing to remember when selling Gold & Silver is that the market price is referring to PURE Gold, Silver and other precious metals. There is a different purchase price based on the amount of other metals in the alloy.

Since opening Main Street Jewelers in 1988, Owner/ Founder Pat Bowlby has seen many changes in the jewelry industry. One of the biggest changes is the buying and selling of used jewelry brought on by the skyrocketing price of gold and other precious

metals.

Pure gold is 24 karat, and because it is soft it is usually mixed with other metals (alloyed) to make it harder and more durable for jewelry. The metals used and the proportions of these metals will affect the karat, the color and the hardness. 18 karat is 75% gold, 14k is 58.5% gold, 10k is 41.6% gold; copper, silver and small portions of other metals are alloyed to make yellow, pink and green gold. White gold is usually alloyed with nickel. Sterling Silver is 92.5%, fine silver is 99%, Platinum jewelry is generally 90% or 95% pure.

The best way to find out what your pieces are worth is by visiting with your local jeweler for a proper appraisal. It’s generally not a good idea to sell your gold to the many gold-buying companies that have sprung up since the price of gold has risen. These companies are not regulated, so a consumer cannot determine if they are getting a fair price. I have heard that soap can actually damage my washing machine? Is that true and, if so, what kind of soap should I be using? It is true. How can I boil water in 90 seconds? Is the technology that creates that ability affordable? Induction is a fantastic technology that uses magnetics to create heat. The advantages with electric induction cooking are many. First and foremost: safety. When an induction-compatible pan is removed from a burner, it does not heat. Also, with induction cooking, the pan literally becomes the element, which means the cook top itself retains less heat than with standard radiant glass top cooking. This allows for immediate clean up of spills so they don’t fry onto the cook top surface. Plus, when a burner is turned down, your food does not continue to boil like a regular glass top.
