GENERAL OBJECTIVE Encourage and promote a healthy life among students through the creation of a digital magazine.

JUSTIFICATION Active and collaborative learning: Working in groups, students will have the opportunity to research, discuss and share ideas about good nutrition. This will promote active learning and collaboration between students, who will be able to exchange knowledge, experiences and advice related to healthy eating. In addition, the process of creating the digital magazine will involve research, writing and design skills, allowing them to develop multiple skills.

RECIPE #1 INGREDIENTS 1 cup white long-grain rice 2 celery stalks, trimmed, finely chopped 1 small red capsicum, finely chopped

METHOD STEPS STEP 1 Cook rice in a saucepan of boiling, salted water, following packet directions, until tender. Drain. Refresh under cold water. Drain. Cool completely.

2 green onions, thinly sliced 2/3 cup dried diced apricots 1/3 cup slivered almonds, toaster 1 tbsp olive oil 1 tbsp lemon juice 1 tbsp white wine vinegar 1 tsp curry powder 1 tsp caster sugar

STEP 2 Combine rice, celery, capsicum, onion, sultanas, apricots and almonds in a bowl. Place olive oil, lemon juice, vinegar, curry powder and sugar in a screw-top jar. Season with salt and pepper. Secure lid.

Shake to combine.

STEP 3 Pour oil mixture over rice mixture.

Toss to combine. Serve.

RECIPE #2 INGREDIENTS 1 tofu hamburguer meat 1/2 Tofu cheese

METHOD STEPS STEP 1 Chop the onions, tomatoes, in slices, place them in a bowl and wash them to remove any bacteria.

1 bag of french fries 1 onion 1 tomato 1 lettuce Hamburger buns Air fryer (for fries, bun and meat) Optional: Tomato or any sauce Anything you like to add

STEP 2 Open an air fryer, place the tofu hamburger meat and wait 10-20 minutes. Then, take out the meat and place the french fries and fry for 10-15 minutes.

STEP 3 Cut the hamburger bun/s in half and place any sauce you like, then place the vegetables and add lettuce if you like, place the meat and tofu cheese, then, close the hamburger. Finally, place the french fries in your plate and enjoy!

RECIPE #3 INGREDIENTS 70g broccoli, cut into florets 70g can Edgell Snack Time Chick Peas with Zesty Vinaigrette, undrained 20g feta, crumbled 1 small vine ripened tomato, finely chopped 1 x 42g Simson’s Pantry Lite Low Carb Super Grains wrap 20g baby spinach

METHOD STEPS STEP 1 Cook the broccoli in a steamer basket over a saucepan of boiling water for 3-4 minutes or until bright green and tender crisp. Drain well then coarsely chop.

STEP 2 Place the chickpeas in a small bowl.

Use a fork to roughly mash, keeping some texture. Combine the broccoli, feta and tomato in a separate small bowl. Season.

STEP 3 Spread the chickpeas over one half of the wrap. Top with the broccoli mixture and spinach. Fold to enclose filling. Place in a sandwich press (see notes) and toast until golden.
