Traditional Holiday Treats Get a Modern Makeover

with Mackenzie Piccarreto

Self-taught foodie Mackenzie Piccarreto has spent years building her food blog, creating new recipes, and preparing meals for dinner parties. Her modern twist on fresh, seasonal dishes that taste great – and happen to be healthy – is shaking up how we think about and prepare food. We sat down with Piccarreto to talk about her food journey and to get her advice on spicing up traditional holiday dishes with modern takes that are far from “bah humbug!”

Rochester Food Experience When Rochester native Mackenzie Piccarreto first moved back to Rochester, she was “craving grass and space.” She quickly immersed herself back into the community with great appreciation for all that Upstate New York has to offer. “There has been such an explosion of incredible food, and I’m always blown away by the new restaurants and experiences that open here!” Piccarreto noted.

She would be no exception.

A Knack for the Kitchen Piccarreto always had an intuitive knack in the kitchen herself.

Her mom, a naturopathic doctor, taught her early on about highquality ingredients and how they nurture our bodies. Paired with her experience working in and around restaurants, this ultimately led her to pursue her passion for creating and serving unique combinations of flavorful ingredients.

After becoming a certified health coach through the Institute for Integrated Nutrition, Piccarreto launched a food focused blog on which she posted her experiments with different ingredients and custom recipes. She also used her platform to share thoughts and theories about food. As she recalls, “It just snowballed from there.”

Her network quickly grew to over 6,400 Instagram followers.

Shortly afterward, she expanded to host unique, interactive food experiences. What started as an experimental dinner in early 2019 turned into much sought-after (and often sold out!) monthly popup events featuring a five-course, health-centered meal with a surprise menu held in an intimate setting. Each event incorporates

seasonal ingredients with a twist, focusing on foods that make you feel good when you leave.

Her innovative concepts have expanded again with the recent opening of Crosby Lane, a bakery + market nestled in the heart of the city. Piccarreto believes healthy food doesn’t haven’t to be boring or bland, and she looks for opportunities to incorporate fun, seasonal twists into everyday dishes. During the holidays, she often turns to warm and comforting spices such as cinnamon, nutmeg and clove, while also looking for ways to add savory elements with sage, rosemary, and thyme – all of which wonderfully complement fall and winter produce.

Each of her recipes highlight local, seasonal ingredients, many of which she sources from local farms and markets in the community.

Although fresh produce is harder to find when preparing holiday meals, she incorporates as many seasonal elements into her menu as possible, including apples, potatoes, pumpkin, cabbage, and various kinds of squash in the fall. She loves to make unexpected swaps with either the ingredients or the preparation – such as pears for apples or leeks for onions. “Sometimes a small change can make a big difference,” Piccarreto states.

A Creative Twist on the Holidays While Piccarreto does not generally consider herself to be very traditional, she admits to a certain nostalgia about the holidays.

She recognizes it as the opportune time to gather with people you love around great food. And that is something that she will take at any time of the year.

INGREDIENTS

Drop-On-The-Table Cookies

2 cups dark chocolate chips (I use Enjoy Life’s vegan variety!)

2 tbsp coconut oil ¼ tsp sea salt ½ cup peanut butter 2-3 tbsp coconut sugar 1 tsp vanilla 2 cups rolled oats

RECIPE

1. Melt chocolate chips, coconut oil, and salt over low heat.

2. Remove from heat and stir in peanut butter, coconut sugar (up to 3 tbsp if you like sweeter), and vanilla.

3. Stir in the rolled oats until fully combined. Line a sheet pan with parchment paper.

Using a large spoon, “drop” the cookies on top. Top with coarse or flaky sea salt if you have it.

4. To set, place in refrigerator for 30 minutes. Refrigerate in air-tight container for up to 2 weeks.

Growing up, Piccarreto’s family holidays were filled with many of the traditional dishes and gatherings to which most are accustomed. Piccarreto constantly looks for ways to make small changes in these classic recipes that incorporate more flavor and fun into the holiday dishes she serves. For example, consider adding pomegranate seeds to your brussels sprouts or pickling a seasonal vegetable like bell peppers, radish, or beets. As Mackenzie Piccarreto explains, “It is really about celebrating the seasonality of the food and bringing people together to enjoy it!”

Mackenzie’s Small Tips for Big Flavor Think about potential swaps, in either ingredients or preparation.

“Consider the purpose of something in a recipe. Things don’t have to be exact; they just need to emulate something similar to get the desired end result.”

Lean into healthy ingredients. “This is where my brain tends to go immediately: how can I make this a bit healthier without sacrificing flavor and the overall experience? I like to use sweeteners such as coconut sugar, dates, or maple syrup. It doesn’t impact our blood sugar as much, and it also adds a nutrition boost!”

Add something unexpected. “Like pomegranate seeds with brussel sprouts, not only does it visually brighten things up, but it adds a nice texture (who doesn’t love a crunch?) and a little acid, something almost every savory dish needs. An unexpected ingredient makes a dish unique and special.”

INGREDIENTS 1 lb. winter squash, cubed (I use delicata and butternut!)

10-12 oz. brussel sprouts ½ cup quinoa, dry 1 bulb fennel 1 large shallot (or 2 small) 2-3 slices of thick sourdough (or any fresh bread) Sage (1 tsp dry or 2 tsp fresh) Thyme (1 tsp dry or 2 tsp fresh) Rosemary (1 tsp dry or 2 tsp fresh) 1 tsp garlic powder 2 oz. goat cheese 4 oz. pomegranate seeds

DRESSING 2 tbsp apple cider vinegar 2 tbsp olive oil 2 tsp dijon mustard 1 tsp maple syrup ⅛ tsp garlic powder ⅛ tsp salt

RECIPE 1. Heat oven to 400 º. Mix chopped (or dried) sage, thyme, and rosemary, and garlic powder in a small bowl.

2. Chop off brussel sprout ends and slice into 1-inch pieces.

Cube squash of choice (Hack: If using delicata, you can leave the skin on!). Place on parchmentlined sheet pan and toss lightly with olive oil, salt, pepper, and half seasoning blend. Make sure sprouts are cut side down. Roast 30-35 minutes until start to brown.

3. Bring quinoa to a boil with ¾ cup of water then simmer and cover for 15 minutes. Remove from heat.

7. Pour cooked quinoa into a large bowl to cool for a few minutes.

Then add in brussel sprouts, squash, fennel, and shallots.

Crumble the goat cheese + add the croutons. Pour the dressing in and toss well. Top with pomegranate seeds.

6. Cut thick bread into small cubes.

Toss in a bowl with a generous pour of olive oil, salt, and the rest of the seasoning blend. Massage well to mix. Broil for 3-5 minutes until toasted.

4. Heat a frying pan with a little olive oil over low-medium heat.

Roughly chop shallots. Cut bases and any darker green tops off fennel and remove hardest bit of its tough core. Sauté with a pinch of salt until softened.

Gluten-Free Spinach Gnocchi SERVES 4

INGREDIENTS

PESTO

6 oz. spinach 1.5 cups almond flour 1.5 cups tapioca starch (or arrowroot) ¼ tsp salt • ¼ tsp garlic powder 1 large egg • 4 egg yolks *Dough can be refrigerated.

Allow 30 minutes to soften.

4-6 oz. mushrooms + Parmesan cheese optional

2 cups fresh basil 1 cup fresh parsley 1/3 cup unsalted pepitas (pumpkin seeds) 2 garlic cloves ¼ cup olive oil • ¼ cup avocado oil ¼ cup lemon juice 2-4 tbsp water ¼ tsp salt

RECIPE 1. PESTO: Puree all ingredients in a blender or food processor until creamy and smooth.

2. Steam spinach until wilted and bright green, (3-5 minutes). Squeeze all excess water out with a paper or tea towel.

3. PASTA: Add almond flour, tapioca starch, salt and garlic powder to food processor.

Pulse to lightly mix. Add full egg, egg yolks, and spinach. Process until dough ball forms, not too sticky. If too wet, add more almond flour and starch a little at a time.

4. Sprinkle down some tapioca starch (or any gluten free flour) on your countertop.

Section dough into 5-6 parts and roll long “logs,” about ½ inch thick. Cut into small gnocchi-looking pieces. Feel free to make them smaller or even use your thumb to press down into an orecchiette style!

5. Cook pasta in boiling water generously salted (1-2 tbsp sea salt) for about 7-8 minutes, checking it around 5 minutes.

6. Cook sliced mushrooms over medium heat with a little olive oil, salt, and pepper.

Add butter if desired. Turn heat to low; add pesto.

7. Drain pasta; combine with pesto/mushroom mix. Top with fresh parmesan.

There’s something special about gathering around the table during the holiday season. The mood feels lighter, warmer, as we come together with the promise of good food and even better spirits. We pass the time with laughs and laden dishes— some of which are staples, and others bearing witness to someone trying a new recipe for the first time.

In the middle of it all, at the heart of our tables is the centerpiece, whether it’s eyecatching glass bulbs that reflect the light, crystal pieces passed down through the generations, or decorative family heirlooms which would be innocuous to anyone else. Our centerpieces are special, if not always recognized as such. Each tells a story in its own way of the house around them and the families who make it a home.

Home is where the heart is—it isn’t just a cliché. Home is where we gather, making four walls ours. Interior designer Sarabeth McElhaney helps encapsulate that. The mother of two (Fox, 6, and Charlie, 2) works closely with her clients to highlight and promote functionality in their homes, putting a creative twist on décor we may often overlook or on the usuals to which we default.

“At the holidays, the food is almost always the same,” McElhaney says of the dishes she had growing up. Reflecting back on family photos, it’s easy to think about how people have changed over the years, but it’s the backgrounds that stand out to her.

“I think about the houses at the time: colors, wallpaper, even the carpet.” The designs stand out in holiday memories, too. While the family may grow and a new recipe might be introduced, she notes the gentle way the styles of homes change through the years.

At Christmas, we often think of red, green, and gold. McElhaney? This year she’s opting to blend together gray, mustard, olive, and clay, a play on the traditional scheme with hues that are removed just enough to make it unique. Is it traditional? No, but it works for her home, and she is enamored by the colors.

“It’s important to stay true to your personal style,” McElhaney says of decorating and crafting centerpieces. “Conventional color schemes don’t always feel like you, so it’s best to choose ones that fit in your home and that you find yourself drawn to.”

When it comes to offering her clients and audience advice, McElhaney often defers to personal preference. “Decorate for yourself.

I was decorating based on what I thought my followers wanted to see. Once I started doing it in different styles and what I liked, I found myself more comfortable.”

McElhaney has always dabbled in design and decoration, first in her native Western New York, then in Southern California for a few years before moving back home. It was in 2020 when she was asked if her Buffalo home had been staged during the selling process that the gears truly began whirring. She’s been in the business of interior design ever since.

For those looking to put together their own centerpieces for the holidays (or year-round), McElhaney recommends starting with meaningful pieces, whether they’re items at home or spotted walking down the aisle that feel right or speak to you.

Keep in mind a color scheme, too: “Use two to three colors so that it’s not overwhelming, but keep it true to you,” McElhaney says. “Mix textures, patterns, metals and woods!”

McElhaney also recommends starting with a couple items for inspiration, including family pieces, something thrifted, or a few pieces from the store. You might have an idea but no real plan; let things happen organically with whatever you find more appealing and let it snowball from there.

And don’t limit the centerpiece to only the main dining table, either. A few articles can add a pop of festivities and a focal point on a coffee table, a console, or entryway table, to name a few.

“I usually mix a variety of items instead of a pulled together piece,” McElhaney says, reflecting on her last house that was more farmhouse style and included a table runner. For Thanksgiving one year her son, Fox, helped set the table—even when that meant moving around some things mom had already set into place—and later earned her approval. “Fox likes being part of things and the ideas. He actually re-envisioned one centerpiece by taking things off and put them back in different spots.”

Incorporating different heights is something she says truly helped get her out of a slump one year when a centerpiece just didn’t feel right. She elevated the piece by turning a bread bowl upside down. A few taller items kept the set interesting, and she suggests trying out different platforms and adding in a few tall flowers or votive candles for some extra flair.

While piecing together store-bought or thrifted items, a family heirloom can serve as the focal point of the centerpiece, as well. A few special or nostalgic pieces passed down through the years or something that holds a significant value to you personally may help bring together a more meaningful piece. For McElhaney in particular, it was a toolbox that belonged to her grandfather, a table of her grandmother’s made by her father, and smaller pieces like her grandparents’ serve ware and dinnerware that exemplified her own unique signature style.

We all have our own items that have special occasions tied to them, whether it’s the crystal we toast one another with or the rocking chair from our great-grandparents we read holiday stories from. The holidays are for us, just as they are for one another. “Use items that mean something to you,” McElhaney says. Better get decorating. Dinner is almost done.

SUPPLIES: Foam floral cone or foam topiary form ... hot glue gun & glue sticks (with the help of an adult!)

Optional: small-medium wood slices to create tree bases!

DIRECTIONS: Create a layer of hot glue around the base of the foam cone. Wrap yarn evenly around and slowly move upwards, adding dots of glue as necessary. At the top, wrap the yarn in a coil shape until foam is no longer visible and adhere with glue.

Snip off excess yarn.

If you’re adding a ‘trunk,’ glue together 2-3 wood slices with the largest as the base, and then adhere to the bottom of the foam tree.

For a “chunky” effect, instead of wrapping yarn evenly around the foam, follow a crisscross pattern until you get your desired look!

It all started when Ed Schram, a longtime supporter of musical theater, attended a musical production of Grease.

Schram noticed a child in the audience who was singing and dancing along to the musical. After the production had finished, he approached the parent of that child and told them how their kid should be up there.

Unfortunately, that parent said, “Nobody wants my kid on stage.” That was where Rochester’s Artists Unlimited began.

The mission of Artists Unlimited is to provide opportunities for individuals with special needs and developmental disabilities to participate in musical theater in a way that they haven’t had before. Schram wanted individuals like the one he saw in the audience that night to be able to showcase their talents just like anybody else. So, in 2002, he took action, launching the nonprofit.

About nine years ago, Bethany Wager was asked to help stage manage for RAU. She recalls, “I was instantly hooked on the energy and excitement, so I committed to helping every year.” Wager had known Schram for years; her father, being a musical director, had always helped with school productions. Now, Wager is Vice President of Artists Unlimited and has witnessed the growth and progress that the organization has made each year.

Artists Unlimited started with just musical productions which grew in both audience and participation size year after year. Eventually, the program had so many people asking to be in shows and the waitlist grew so long that Artists Unlimited decided they wanted to be able to provide more opportunities. This need for expansion is what created the program “Voices,” a choir in which over 100 performers showcase their singing abilities.

Wager says that the productions have continued to grow.

They started out in a tiny theater downtown, eventually moving to several larger theaters like the one at the Kodak Center. She explains that there are also logistical benefits to using a big theater, as they must consider handicap access to both the audience and stage when putting on these productions.

A lot of factors go into choosing which production will be done, such as what size theater Artists Unlimited will be able to get. The most important factor, however, is the moral and message of the story being told. Artists Unlimited wants to choose a story that its participants can relate to. The most recent production from Artists Unlimited was The Lion King Jr. Wager says that the ones that stand out were the most fun and technically challenging, like The Little Mermaid. For that production, an aerial choreographer even donated time to assist with the difficulties. More important than technicalities though, Wager says that the most memorable moments are those when she has witnessed performers overcome personal fears and obstacles. She recalls an actress playing Peter Pan who was afraid of flying. Every single show, that performer would put herself into actress mode and overcome her fear as if it were nothing.

In short, the most gratifying part of Wager’s job is witnessing the confidence that individuals gain, being able to showcase their talents without fear. Some of her fondest memories are recognizing a kid who once had reservations about performing and being able to see how much they’ve improved by putting themselves out there and fully committing to the performance. Some of the performers are so timid starting out but then are able to challenge themselves and improve enough to have their own line in a show.

“Nobody wants my kid on stage...” That was where Rochester’s Artists Unlimited began.

As for the future of Artists Unlimited, Wager hopes that the organization can continue expanding the types of programs it can support and offer. Artists Unlimited wants to be able to give even more opportunities to individuals so that many others can witness the talents they have to share.

Every year these productions continue to break barriers and show that individuals both with and without disabilities are more than capable of creating memorable theatrical experiences. It’s quite evident that giving people the opportunity and open-minded environment to showcase their abilities is what truly allows them to shine, and Artists Unlimited of Rochester does just that.
