Serves 6 to 8 12 chicken thighs (about 3 to 4 pounds), bone in Salt and freshly ground black pepper 4 tablespoons unsalted butter 2 tablespoons olive oil 6 shallots, minced 6 cloves garlic, minced 1/2 cup apple cider vinegar 11/2 cups dry white wine 1 tablespoon tomato paste 11/2 cups chicken stock, preferably homemade 1/2 cup chopped Italian parsley Season the chicken generously with salt and pepper to taste. In a large, deep skillet (big enough to hold all chicken fairly close together; or use two skillets), melt 3 tablespoons of the butter in 1 tablespoon of the olive oil over medium-high heat.

Brown the chicken for about 8 minutes, turning so both sides get nicely browned.

Transfer the chicken to a deep, broad, ovenproof casserole that can go from the oven to the table. Remove the skillet from the heat and pour off most of the fat.

Preheat the oven to 375 F. Place the skillet back over medium heat and add the remaining 1 tablespoon butter and 1 tablespoon olive oil. Add the shallots and garlic and cook for about 1 minute, or until they become translucent. Add the vinegar and wine, and stir up the crispy bits that have stuck to the bottom of the pan. Allow the liquids to cook down a bit, stirring occasionally, for about 8 minutes. Whisk in the tomato paste and let the sauce simmer and condense, about 5 minutes more. Then add the chicken stock, a little at a time. Keep stirring to mix well.

Pour the sauce over the chicken. Bake for 35 to 45 minutes until the chicken is very tender, turning the chicken pieces halfway through, so that both sides are infused with the sauce. Remove one thigh and cut into it to make sure it is done and no red juices flow from the cut.

Uprising’s Super Kids Program Shows Children They Too Can Change the World

or the past five years, spring means SuperKids time at Honeoye Falls’ Manor Elementary School. Inspired by clinical social worker and parent of a special needs son, Amie Wagner and the phenomenal team at Manor School coordinate this event to help show that kids of all abilities can achieve and exceed personal goals, and no matter their abilities, they too can change the world.

Led by Special Education teacher, Margaret Allen, students in the Language Enriched Academic Program (LEAP) classroom at Manor take the lead each year in the SuperKids event. Students learn about the history of the SuperKids event, its beneficiary, Uprising, a nonprofit that has helped build Little Wings Academy in rural Kankoole, Uganda, where there had previously been little access to education.

LEAP students share this information as well as Uprising’s current goals with the rest of the Manor students, presenting to classes and making posters to spread the word around the school. LEAP students learn real-world skills with their coffee cart and soup cart throughout the school year, proceeds of which they donate to the SuperKids event each spring.

Manor physical education teachers prepare students across the school for the event day. All students make goals for themselves, whether it be number of laps around the track or some other goal, and then they raise money through family and friends who sponsor their achievements. On event day, Allen’s LEAP students work with the PE teachers to make the event a success. Each year, music blasts to help motivate the students’ laps, students wear superhero capes as desired, and each participant works toward their personal goal.

Wagner says she sends a special shout out to the phys ed department because they’ve run the event in rain and snow, and always keep spirits high to illuminate the event no matter the weather. She says the year it rained all day, PE teachers even made garbage bag ponchos for the kids and everyone still had a blast.

Wagner notes that the first year of SuperKids, when her son was a student in the LEAP classroom, his goal had been to make it around the track one time with his walker. Five years later, now a 10th grader, Teagan made it two miles around the track throughout that day. Many of Teagan’s teachers remain at Manor, so Amie says it’s been so special for him to return each year for the SuperKids event.

HFL students have raised money to help build the school in Kankoole, install clean drinking water for the school and its community, and helps children who would otherwise not attend school get an education. Little Wings Academy now educates 440 students in nursery school through seventh grade. Thanks to Uprising and the SuperKids program, children attend the school regardless of their family’s ability to pay the small tuition. Wagner explains that families alternatively help in the community garden the program helped grow. This one-acre garden feeds the school children, for many of whom this is the only consistent food they have.

Last year, Uprising was able to install a second water tank at the school to accommodate the school and community’s growing needs, and they also installed solar panels on the school, as there is no electricity in Kankoole. Though they haven’t yet announced this year’s goals, Wagner says they hope to fund more desks and finish construction projects, as well as someday have computers for teachers and maybe students, luxuries we take for granted.

Long-term goals of the garden include working toward ownership instead of leasing the land, and maybe adding livestock to generate income for the school and become more self-sustainable to cover teacher salaries, school supplies, etc.

Wagner’s favorite part of the SuperKids program is “kids helping kids.” She says the children in both Uganda AND Honeoye Falls benefit from the event, with children here learning that “through compassion and hard work they can change the world.”

Amie offers incredible life advice: “We rise by lifting others. Even during the hard times, no matter what is going on in the world, don’t let it change your heart or your compassion.”

Wagner says that as a parent of a child with special needs, SuperKids offers an opportunity that’s usually lacking for such students to shine and be seen as exceptional, confident, capable, and compassionate.

Teagan now thrives in the Abilities Movement program, training for people with disabilities, and his physical limitations won’t stop him.

Through the SuperKids program, HFL students help vulnerable Ugandan children through the Uprising organization that provides educational and vocational opportunities to help break the cycle of poverty and build a different future.

Mail-Order Meds Lose Efficacy if They’re Not Stored Properly ---

DEAR DR. ROACH: I am concerned, and have been for some time, about whether my prescriptions that arrive by mail are compromised, since they sit in vehicles with the sun beating through the windows, heating them up.

Also, the plastic bottles in which the prescriptions are stored give off toxic emissions as they “broil” in the sun.

The instructions that come with some of the meds warn about heat as well.

My pharmacist told me that heat does affect a medication’s effectiveness negatively. So, if this is true, millions of us are taking important medications that are basically not doing the job. After all, the meds that arrive at pharmacies come in hot vehicles, too. What’s your take? -- J.Z. ANSWER: All medicines should be stored in a cool, dark place, as direct sunlight and heat can damage their effectiveness. Studies have proven that medicines sent by mail order can indeed get out of their published temperature range. While this happens most often in mailboxes, I understand your point about medications “broiling” in hot temperatures during the shipment itself.

Liquid medicines, hormones and nitroglycerin are among the most sensitive. Medicines that need to be dosed exactly, such as transplant rejection medicines, biologicals, and seizure medicines, are also particularly likely to cause problems if they are damaged during shipping. Although some medicines are supposed to be shipped in packaging with cold packs and insulation, this isn’t always the case.

I recommend using a local pharmacy, but many people have prescription plans that require them to use mail order. Many states have requirements about customers using retail pharmacies. If that’s not the case for you, try to make sure that the medicine will be delivered when you are available to receive it.

If you have a temperature-sensitive medicine, such as the ones I mention above (you can ask your pharmacist about others), request that your mail-order pharmacy sends it in special packaging during warm weather. You might also consider having them shipped to a place where they will be put into a temperature-controlled environment right away.

Bogey is a little spoiled, but we love him.

DEAR PAW’S CORNER: Can you remind me what foods are unsafe to give to pets? I know onions are bad for dogs, but I’m not clear on other ingredients. My dog loves scraps from the table, and I want to make sure my Thanksgiving dinner guests don’t feed him something dangerous. -- Manuel C., San Antonio, Texas DEAR MANUEL: It may be difficult to keep tabs on all of your dinner guests, so consider placing your dog in a room or in his kennel during the meal and then rewarding him after with some tasty leftovers.

When he does get his treat, make sure that it doesn’t include the following ingredients: onions, garlic, raisins or avocado. Turkey is fine; take the skin off to remove extra salt and seasonings that might upset his stomach. Avoid feeding him stuffing. The mashed potatoes should be plain, and hold the gravy. A little apple or pumpkin pie should be fine, but keep him away from chocolate. And try to limit the amount of fat in the leftovers, because too much can cause some messy digestive problems.

The same rules apply to cats, by the way. Because they’re small, they may have a more severe reaction to ingredients like grapes, avocados or onions.

It can be difficult to keep track of what your pet is eating during the busy holiday season, especially during big meals. That’s why I recommend placing pets in a separate room until people are done eating and the food is put away out of reach. You still need to control their diet, and you can’t always catch Aunt Gladys sneaking peanut butter cups to the dog. Enjoy your holiday, and thanks for keeping your pet safe!

Our Turn to Pay it Backward I was disappointed to read the rant from my fellow senior citizen complaining about paying school taxes. I need to remind the writer that when our children were in school, seniors citizens at that time paid to support them. The medicare and social security benefits that we receive come from the taxes that current workers pay. Think about how our lives would be affected if young people questioned why they should support baby boomers and refused to pay their medicare and social security taxes. Current workers are paying it forward to help us and it is our duty to pay it backward to help the students of today become successful productive citizens.

Why can’t we get along?

Every week it seems that there is somebody complaining about their neighbors. Why can’t we all follow the Golden Rule of treating others as you would want to be treated? Some of the things people do to their neighbors are inconsiderate while some of the things people complain about their neighbors doing are trivial. How about thinking about your actions and how it may affect your neighbors before you act. I’m always touched by the neighbors who mow lawns and do snow removal to make their neighbors lives easier as it is evidence of how our neighborhoods should be. Why don’t we all begin next week with the goal of making our neighborhood a better place?
