A look back…

Throughout our 70 years there have been so many changes to every aspect of our lives. Technology changes by leaps and bounds every day. Equipment or programs we update today will most likely be outdated within a month.

This is true for every business, and even personally. How many times have you upgraded your cell phone only to find that soon the newest, greatest one becomes available?

Shortly after we moved to our present location in East Avon, we bought our first fax machine. What a boon it was to our business! Customers and our satellite offices could now fax ad copy to us. In turn, we could fax a proof of their completed ad back to them. When we held our grand opening celebration at the office the fax machine became the center of attention – it was “magical!” And now, although it is still used, Email, and all methods digital, have taken over the job.

From cut and paste in our Creative department, we now have computer equipment to design ads, store thousands of pieces of artwork and fonts and produce beautiful ads and print pieces. Digitally we can send those ads from each ad designer’s computer to another computer that lays out the pages you see each week. We are even able to “flow in” the many classified ads on the pages as pagination software sees fit. The pages are then digitally sent to pre-press so plates can be made for our offset presses.

Another aspect of change we have seen throughout the years is the cost of every product advertised. Looking through older issues of the Penny Saver we have found some remarkable price changes ….For the fun of it, let’s compare!

Employees chose three local charities to support. With every ticket purchased, one dollar went to the employee’s charity of choice.

Source of Fatigue Remains a Mystery DEAR DR. ROACH: My wife is 77 years old, goes to bed at 9 or 10 p.m., wakes at 10 a.m. and is exhausted by noon. She has severe arthritis, peripheral artery disease, scoliosis and depression. She has had many surgeries on her back, joints and blood vessels.

In addition to fatigue, she experiences tingling in her hands and feet, and severe back pain, especially when standing and walking.

She has had no success with pain management for her back, and has a clean bill of health from her neurologist and cardiologist.

Exercise/activity results in being tired (with her back pain, exercise is a two-minute walk then rest). She takes an hour nap every afternoon.

We proceed from doctor to doctor with the same issues, and the fatigue source remains undiagnosed. Do you have any suggestions how to proceed? -- G.W. ANSWER: Fatigue is one of the most difficult symptoms to diagnose and treat, since there are so many possible causes. In her case, the underlying conditions that you have mentioned -arthritis, peripheral artery disease and depression -- all may have fatigue as a significant part of their symptomatology. Further, the medications used to treat these conditions often cause severe fatigue and sleepiness, which is confused with and sometimes goes along with fatigue. I can’t tell you how many people treated for chronic pain write to me complaining of fatigue and feeling like a “zombie.”

Depression can be a cause of fatigue, but it also can be an understandable reaction to chronic pain and fatigue.

While I can’t provide specifics on how to help your wife, an experienced physician can review all of the medications to see whether they are likely to be doing more harm than good. He or she will consider treatment for depression that may help the fatigue in particular. Other effective treatments include a graded exercise program (“graded” means starting very slow and building up), which helps more than half of people improve. Finally, optimal treatment of her underlying conditions may help, though I’m sure her doctors are trying to do that now. *** DEAR DR. ROACH: What is the body’s rate of absorption for calcium? -- A. ANSWER: The textbook answer is 20 percent to 40 percent, but in reality, the answer is very complicated, as it depends on total body and intracellular calcium, vitamin D levels, presence of phosphates in food and other factors. The short answer is that it’s usually exactly what it needs to be when things work properly.

If the body is deficient in calcium, then absorption is maximal, but still most calcium in food is not absorbed.

Your Behaviors that may help you reduce your risk for colorectal cancer Colorectal cancer is a formidable foe. According to the U.S. Centers for Disease Control and Prevention, colorectal cancer is the second leading cancer killer in the United States. Colorectal cancer is similarly lethal in Canada, where the Canadian Cancer Society reports it is the second leading cause of cancer death in men and the third leading among women.

Some risks for colorectal cancer are beyond an individual’s control. For example, the CCS notes that a personal or family history of polyps in the colon, rectum or both significantly increases a person’s risk of developing colorectal cancer. Lynch syndrome, a condition caused by gene mutations, causes polyps to develop in the lining of the colon, rectum or both. Since Lynch syndrome is inherited, there is nothing men and women can do to reduce their risk of developing it.

Research into colorectal cancer is ongoing, making it difficult for doctors to say certain behaviors or approaches are sure to reduce a person’s risk of developing the disease. But there are certain things individuals can do that might help save them from falling victim to colorectal cancer.

• Get screened. The CDC notes that colorectal cancer usually begins when polyps form in the colon or rectum. If they go undetected, these polyps may turn into cancer. Screening can detect polyps early so they are found before they develop into cancer. The U.S. Preventive Services Task Force recommends colorectal cancer screening using high-sensitivity fecal occult blood testing, or FOBT; sigmoidoscopy; or colonoscopy for men

• Embrace physical activity. While men and women who are physically active can still get colorectal cancer, the CCS notes that people who live sedentary lifestyles are at a higher risk of developing the disease than those who are active.

• Limit alcohol consumption. The CDC notes that some studies have shown that limiting alcohol consumption may reduce a person’s risk of developing colorectal cancer.

Colorectal cancer is a devastating disease, but men and women who embrace healthy behaviors may be able to lower their risks.

Author and former personal chef Michelle Dudash was once asked by a client if the she could make a healthier version of chicken parmesan. The result of that request is the following recipe for “Skinny Chicken Parmesan with Spinach,” which Dudash ultimately included in her book, “Clean Eating For Busy Families” (Fair Winds). The recipe was a hit with Dudash’s client and will surely be a hit at home cooks’ dinner tables as well.

Skinny Chicken Parmesan with Spinach Makes 6 servings For the sauce: 2 teaspoons extra-virgin olive oil 2 cloves garlic, sliced 1 28-ounce can whole tomatoes 1/4 teaspoon dried basil 1/4 teaspoon dried oregano 2 pinches salt 2 pinches freshly ground black pepper 1/2 teaspoon honey For the chicken: 3 tablespoons grated Parmesan cheese 2 tablespoons whole-wheat flour 1/2 teaspoon salt, divided 1/4 teaspoon freshly ground black pepper 1/4 teaspoon dried basil 11/2 pounds chicken breast, cut into 6 pieces, pounded to 1/4 inch 2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided 4 cups baby spinach 1 teaspoon lemon juice 3/4 cup fresh mozzarella cheese, sliced into 6 medallions (or shredded) 6 cups cooked whole-grain thin spaghetti tossed in 2 teaspoons olive oil Preheat oven to 375 F and coat the bottom of a 9 x 13-inch pan with olive oil spray.

Add oil and garlic and cook gently for 30 seconds. Do not brown. With your hand, squeeze each tomato into the pan and add basil, oregano, salt, pepper, and honey. Reduce to medium heat and simmer for 20 minutes, lowering the heat as needed.

To make the chicken: Combine parmesan cheese, flour, salt, pepper, and basil in a medium dish and coach chicken with cheese mixture. Place a large skillet over medium heat and add 2 tablespoons of oil. When oil is shimmering, add chicken, rounded-side down, and cook until golden on one side, about 5 minutes. Arrange chicken in a baking pan. Pour remaining 2 teaspoons of oil into skillet and add spinach. Cook spinach for 1 to 2 minutes until wilted and swirl in lemon juice. Gently press spinach to release water and divide spinach on top of chicken.

Spoon sauce around and over the chicken, place mozzarella on top, and sprinkle with 1/4 teaspoon salt. Bake for 15 minutes until chicken is cooked through. Serve over spaghetti.
