1 cup self-raising flour Zest of 1 lemon

Drizzle:

Juice of 2 lemons

5 1/2 tablespoons sugar

LemonButtercream: 1/2 cup unsalted butter, at room temperature

2 1/4 cups powdered sugar

Juice of 1/2 lemon

Lemon Zest

Preheat the oven to 350° F and get 12 cupcake liners ready. Beat the butter with the sugar until light and fluffy. Add the eggs, self-raising flour and lemon zest and mix until combined. Spoon the mix evenly into the cupcake liners and bake for 18-22 minutes until they are baked through and springy to the touch.

Mix together the lemon juice and sugar for the drizzle in a bowl. Once the cupcakes are out of the oven, carefully spoon the drizzle over the cupcakes, then leave them to cool fully on a wire rack while you make the buttercream.

Beat the butter until smooth; this can take a couple of minutes. Add the powdered sugar in two batches, beating well after each addition, then add the lemon juice and beat again.

Pipe or spread the buttercream onto your cupcakes, then sprinkle each one with some sprinkles and lemon zest.

SLEEP IN HEAVENLY PEACE: Building Beds, Changing Lives

In Rochester and across the country, countless children go to sleep each night without a bed of their own. Sleep in Heavenly Peace (SHP) is on a mission to change that. A dedicated team of volunteers works tirelessly to build and deliver beds to children in need, ensuring that, as their motto states, “No kid sleeps on the floor in our town!”

e Origins of SHP

Sleep in Heavenly Peace began in 2012 in Twin Falls, Idaho, with a single act of kindness. Founder Luke Mickelson built one bed for a family in need during Christmas and, with le over materials, built more. A simple Facebook post led to an overwhelming response from families in need, and the movement quickly grew. Today, SHP has expanded to over 300 chapters in the United States and Canada, delivering more than 100,000 beds to children who otherwise wouldn’t have one.

e Rochester Chapter

Locally, the Rochester chapter has delivered over 1,000 beds, but the need remains great, with a wait list of more than 400 children. Co-presidents Donna and Shawn Ritchie lead the chapter, balancing full-time careers as an event planner and engineer respectively and dedicating evenings and weekends to this cause. Donna, a Girl Scout leader for 12 years, and Shawn, a deacon of youth at their church with years of experience teaching Sunday School, were inspired to start the chapter a er their daughter Meg mentioned a similar initiative in Michigan. Donna says, “When we realized there were kids in Rochester who didn’t have a bed to sleep on, we knew we had to get involved.” As new empty-nesters, “the next thing we knew, we were on a plane heading to the headquarters in Idaho for chapter president training,” and five years later, they continue to build and deliver beds to children in need.

Making a Difference

Jim Holleran, a retired Rochester City School District teacher and former sports editor of the Democrat & Chronicle, has become a core volunteer with SHP, building and delivering beds, and buying and cutting wood ahead of builds. His journey with the organization began when his wife, Mary, introduced him to Donna Ritchie at the Rochester Area Community Foundation. What was supposed to be a two-hour volunteer shi turned into a six-hour commitment. “We were so impressed with the spirit of the volunteers and the mission,” he says.

“SHP embodies what we all should be doing for our community –lending a hand to those in need who don’t have all the benefits that some of us enjoy on a daily basis,” Holleran says. He says SHP does more than provide beds – it provides comfort, security, and dignity to children who would otherwise sleep on couches, air mattresses, or even piles of clothes. Beds include a safe, comfortable, 75-inch wooden frame, with a mattress, pillow, comforter, and bedding. “ e pure joy and thanks among the children would melt your heart,” Holleran says. “ ey are ecstatic to own something that they can call their very own.”

One of Holleran’s most memorable moments was delivering a bed to a former student. “She was asking Donna if that was ‘Mr. Holleran.’ Donna confirmed it. It gave me a chance to acknowledge her and boost her three children. You never get tired of supporting children, including the ones who grow up to be mothers and fathers.”

Sleep in Heavenly Peace Open and Corporate Builds

SHP runs two types of bed-building events: corporate builds and open builds. Businesses sponsor a day for staff to come together, team-building while serving their community. Open builds allow community volunteers to sign up online and join in the effort. In both formats, volunteers are guided through various workstations, including sanding, drilling, assembling headboards and sideboards, and branding the wood with the SHP logo. e beds are then delivered and assembled in the homes of children in need.

“Our greatest need is sanding the wood,” Holleran says. “Everyone takes turns between sanding and building. We assemble siderails and headboards, make bed slats, and dip all our headboards and siderails into a tank of vinegar and steel wool that discourages bed bugs and seals the wood.”

SHP welcomes volunteers aged 10 and older. No experience is necessary, as volunteers guide you through the stages. Working in relaxed, two-hour shi s, SHP builds are great fun and bonding opportunities for individuals, groups, and organizations.

Not Salted To A-Salted

Perhaps you should hibernate at home all winter. NYS DOT (and I assume other departments) have a preset amount of salt to apply based on road conditions. Many go to shift work in the winter to cut down on overtime. Many towns have central locations for salt storage (do you also complain when you pass multiple school busses at the end of the school day?).

Remember, wet roads freeze as the temperature drops to 32F and below, creating black ice. The wind drifts snow across roads. Both require continued maintenance after the snow has quit falling to prevent accidents. If you want to take your vent to mother nature and request snow and ice falling only certain hours and days that would be awesome.

It has been said our volunteer fire department has only one driver qualified to drive the biggest, most expensive truck they had to have and no one can answer a call until that person arrives to drive. That’s an irresponsible use of our tax money.

STAY SAFE ON WET ROADWAYS ALL YEAR LONG

Weather plays a role in driver safety regardless of what time of year it may be. From wind and rain to snow and ice, travelers routinely navigate roads when conditions are far from ideal.

Wet roadways are a common occurrence. The automotive resource AAA advises that wet pavement contributes to nearly 1.2 million traffic accidents each year. Many crashes occur when drivers do not recognize the need to change their driving habits in wet conditions. Mastering driving techniques on slick, water-logged roads can help motorists avoid accidents and injuries.

See and be seen: Before they even get behind the wheel, drivers should inspect all headlights and taillights to ensure they are in working order. Replace any bulbs that have burned out, and clean cloudy lens covers. Drivers need to see roadways clearly, so they should make sure their windshields are free of streaks, debris and water. Periodically replacing windshield wiper blades can ensure they’re working optimally when drivers need them most.

Slow down and give other motorists space: Slowing down and stopping can take extra time when roads are wet. AAA notes that, with as little as 1/12inch of water on the road, tires have to displace a gallon of water a second to keep the rubber in contact with the street. Driving slowly can make it much easier for vehicles to stop. Plus, driving slowly enables drivers to see obstacles or pedestrians more easily, especially in heavy rains.

Exercise caution with puddles and running water: It may be difficult to gauge the depth and ferocity of water flowing in a roadway. Quickly moving water can cause a vehicle to hydroplane or even move a large vehicle. A deep puddle also can affect drivers’ ability to steer or cause vehicles to stall. Take another route rather than risk driving through large puddles or areas where water is flowing on roadways.

Skidding: Do not slam on the brakes if a car begins to skid or hydroplane, advise experts. Instead, ease up slowly from the accelerator and then steer the vehicle into the skid or straight. Then accelerate smoothly once more. Sudden, jerky movements when a car begins to skid can exacerbate the situation.

Maintain tires: Tire treads should be checked at the start of a new season to ensure the rubber will be able to grip the road. Rotate tires according to the manufacturer’s requirements, or every 5,000 miles. Properly inflated tires will improve traction as well.

PREPARING FOR A NIGHT OUT

Make a reservation.If dining out is in the plans,be sure to call the desired establishment in advance to see if they are taking reservations and learn if any restrictions are in place. There’s a good chance indoor dining establishments will still be subject to reduced guest capacity,and even restaurants that had walk-in service may now require advanced notice of dining parties, no matter how big or small.

Don’t fall f Medicare scams

Medicare card scams are on the rise. During one calendar year, Medicare had over $100 billion in fraudulent claims,and the damage cost goes up when identity theft and stolen financial information are added in.

What the Medicare thieves want is your card number, and they’ll try any number of tricks to get you to reveal it.

Scammers might contact you to offer you a “cheaper” Medicare but will need your personal information to sign you up. Don’t fall for it. They might impersonate a Medicare employee and say that your card is about to expire and you need a new one.They’ll ask for your current card number and your personal information to verify it’s really you.

(Wrong: Medicare cards don’t expire.)

Scammers might call and say that your Medicare benefits have been canceled, but claim they can help you get the benefits reinstated if you give them your personal information or even a fee. (Wrong: Medicare won’t communicate with you that way, and if they need to contact you, it will be by mail.)

Thieves might try to claim that your old paper card isn’t good now and that you need a new one with a chip in it, like a credit card. (Wrong: Medicare cards are only made of paper.)

They might offer you a refund of some type or something free, or you might be offered genetic testing. All you need to do, they’ll say, is give them your Medicare card number ... and your bank information for the refund.

Whether you’re contacted by phone, email or text message, don’t give out your Medicare card number or any of your personal or financial information.

As usual, if you suspect you have a scammer on the phone, hang up immediately. If you believe it was an attempt at a Medicare scam, call 800-MEDICARE (800-633-4227) to report it.

DEAR DR. ROACH: I’m a 75-year-old woman who, for at least 10 years now, has been experiencing a rapid heart rate. My blood pressure, however, remains normal. In fact, doctors are usually surprised at how good my blood pressure is since I am borderline obese and slightly diabetic. During this past physical, my doctor did mention my rapid heart rate but didn’t recommend treatment or referral to a cardiologist. Should I insist on a referral to a cardiologist, or would this only bring me to more unnecessary testing? -- M.R.

ANSWER: I unfortunately hear about people (more commonly women) having a potentially serious medical condition that gets ignored for many years, and I fear this is the case with you.

In a person with a persistently fast heart rate (over 100 bpm), an electrocardiogram (EKG) is an essential first step. I suspect you may have had this done, but if you haven’t, this clearly needs to be done. Atrial fibrillation and some less-common heart rhythms need to be excluded.

It’s likely that you have “sinus tachycardia,” meaning that the impulse comes from the sinus node but is persistently too fast. The heart rate is supposed to be fast if you are exercising, and a fast pulse can often come on as a response to an infection or a loss of fluids. But I think that, after 10 years, you most likely have a condition called inappropriate sinus tachycardia (IST).

Since you are writing to me, I assume that this is bothering you. Most people with IST note palpitations, but loss of endurance and decreased exercise tolerance are other common symptoms. Before getting treated, it’s important to make sure that there isn’t some longstanding cause, such as anemia or thyroid disease.

It’s also necessary to exclude the diagnosis of postural orthostatic tachycardia syndrome, which can overlap with IST and seems to be much more common now, especially after a COVID infection.

I have had some success in prescribing exercise for carefully selected patients with IST. The cardiology literature recommends beta blockers or ivabradine to reduce symptoms and improve exercise ability.

Referral to a cardiologist is appropriate given your 10 years of not being evaluated. Even if you decide against therapy, making sure that there isn’t a serious problem is very wise.

Is my rabbit depressed?

DEAR PAW’S CORNER: I took over the care of a rabbit named “Chucky” a few weeks ago, after the previous owner, my aunt, passed away. Since he got here, Chucky has spent most of his days inside his hutch. When I try to take him out, he huddles tightly against the far wall. I don’t see him eat or drink during the day, but he does come out at night after I go to bed. Is he depressed, or is it something else? -- Jim F., Chula Vista, California

DEAR JIM: Chucky does sound pretty stressed out, and depression is definitely on the table here. He also may be having trouble adjusting to his new environment, and is missing your aunt, too. A stressed and unhappy rabbit is tense, staying in a down position with their ears flattened against their body. Their nose doesn’t twitch. They don’t hop around the cage freely, and they’ll hide away if you reach for them.

The first thing to do is establish care, if you haven’t done so already. Take Chucky to a veterinarian specializing in small animals (including rabbits) for a checkup, explain the circumstances, and detail his behaviors. The vet will rule out any underlying health conditions and can give you a wealth of advice on helping him be more comfortable and easing his transition to a new owner.

It’s important to be supportive and not force interaction at this time. Keep Chucky’s cage clean and fresh, change his water and food daily, and provide him with rabbit toys and chews strewn around the cage that he can explore. Talk to him in a soothing voice while you are near his cage. As he adjusts, he will gradually respond and feel comfortable with you.
