WALTZ Brenda Waltz has come a very long way in the medical field since her days as a ward clerk/transcriber in Enid, Okla., during high school. As she retires, she feels “blessed” to have served as chief executive officer for five facilities in five cities. Medicine and administration has been a constant strand in her life. “I worked during my college years in medical records and also as a nurse technician,” Waltz says. “Once I graduated from nursing school, I worked several staff RN positions, was a surgical services director and became a chief nursing officer.” Her entire career has been spent at parent comBrenda Waltz in Ephesus, an ancient Greek city pany Hospital located in Turkey. Medicine, administration run in her blood Quality Measures from The Joint Commission, which is an accrediting body for hospitals for five consecutive years which is truly outstanding which few hospitals are able to achieve.” Waltz also shared about what she has learned and what’s next with Gulf Coast Woman. GCW: What are the most significant lessons on leadership you have learned? Waltz: Hire people that are much better than yourself. This only makes you look better as a leader. Treat others as you expect to be treated. GCW: What was most challenging and how did you overcome? Waltz: I was sent to one of my five hospitals to either “make it better or close the doors.” As a leader, I have always enjoyed a challenge and the option to “close the doors” was not even something I considered. In less than three years, I had grown the earnings in that facility, increased employee and physician satisfaction, and earned numerous quality awards and put that hospital back in a competitive position in that market. That facility continues to do well in all aspects and I am proud of what I was able to accomplish during my tenure at that facility. GCW: What’s next? What’s on your bucket list? Waltz: I am planning to do a lot of travel. I will be traveling to Dubai, Abu Dhabi, and Kenya. I also plan to spend quite a bit of the time in Destin. I have only been able to be present on my mother’s birthday one time in 27 years and I am flying to Oklahoma to surprise her for her 83rd birthday and will then travel with her to Branson, Mo., for a week. My son will be a senior in high school next year and I plan to be a “hands-on” mom for his last year at home, which makes me very excited! My husband has done a fabulous job during my career being a stay-at-home dad, but it is my turn to be mom full-time. Family, friends, health … what else matters?

Or, you can begin taking better care of your skin and I am going to share with you the 3 easiest ways to do that. After all, Ideal skin doesn’t only let you go #nofilter

REGIMEN BASED ON YOUR SKIN TYPE Many products on the market claim to be designed for a specific age group (especially for those woman over 50 who now are supposed to have “mature” skin), but age is NOT a skin type. No matter the age you need to have a good care regimen. Dr. Michael McKay says “ It’s never too soon to start taking care of your skin, your skin will last a lifetime.” Skin types vary from Dry, Oily, Combination, Normal, and Sensitive. • Dry Skin: Dry Skin will feel tight and dry. It is normal for it to be flaky and crack, especially in the winter months. • Oily Skin: Oily Skin will feel greasy and shiny all over. If you feel like you’re constantly reaching for the oil blotting sheets, this means you probably have oily skin. • Combination Skin: Combination Skin usually feels, oily in the T-Zone (the area that includes your forehead, nose, and chin) but dry everywhere else. It can be oily and dry in different locations, but if you notice two or more different textures on your face, it’s a sign you’re dealing with combination skin. • Normal Skin: Normal Skin feels even and balanced. It’s neither too dry nor oily. • Sensitive Skin: The Skin type everyone and their mother thinks that they have. And, that’s probably because ALL skin types can be “sensitive”. If you’re like me and your face can handle retinoids and salicylic acid, but gets a little red and irritated when you use a certain exfoliant—your skin isn’t sensitive. You’re reacting to a specific exfoliant, whether it’s because of a specific ingredient, the degree of the scrub, or something else. issue, like Rosacea, eczema, allergies, etc. All of these genetic predispositions can and should be diagnosed by your Dermatologist. Not by looking in the mirror and guessing you’ve got it. Knowing your skin type will make finding a product regimen much easier.

Whether you’re tanning on the beach (and yes, you can still get a tan while wearing SPF, insert “eye roll”) One of the most important ways to take care of your skin is to protect it from the sun. A lifetime of sun exposure can cause wrinkles, age spots, and other skin problems. As well as increase the risk of skin cancer.

HEALTHY LIFESTYLE CHOICES Your daily lifestyle plays a pretty important role in your skin health. If we’re stressed, we can expect acne and dark circles under our eyes. If we’re dehydrated, our skin looks dry and flaky. If we’re sick, our faces appear pale. Eat or drink too much we wake up with puffy skin. But get a good stretch of feeling great, exercising and eating right, and we positively glow with health. Our skin in the largest organ in the body, whatever goes on inside shows us on the outside. Take smoking for instance, studies find that smoking prematurely ages skin by disrupting the body’s natural process by breaking down old skin and replacing it with fresh new skin. BG HOW I DEFINE BEAUTY As an artist, beauty to me is much deeper than the mere appearance of objects, people or places. Beauty is subtle; it’s hidden, yet stares us right in the face everyday. It can be seen, heard, felt, experienced. It never tries too hard. It’s natural and poised, all the while spontaneous and original. HOW I STAY HEALTHY I believe that spending time outside everyday is vital to maintaining my peace of mind. I relish the fresh air, the warmth of the sun, and the ambiance of outside. I also maintain a strict diet for health reasons, which consequently enforces me to eat healthily (because I tend to stray to an unhealthy diet otherwise). While I typically curse the diet, I am also extremely thankful for it, as I know I am doing my body a favor. Additionally, I must always be listening to music, podcasts or audio books (my fave). They keep me sane during long car rides, tedious art projects or stressful times. MY BEAUTY SECRET? Less is more. I prefer natural makeup, neutral colors for clothes, and a simplistic overall design for my personal appearance and surroundings. I think that all women have something beautiful to show, but it’s very hard to see that if it’s covered up with an artificial facade. I do think there is a time and a place to accentuate and go all out on a look, but you’d be surprised at how far a plain tee, jeans and a trendy necklace can take you.

MY BEAUTY SECRET? I don’t think I have a beauty secret, so to speak. I believe in being true to yourself. That shines through more than any product you can use. However, I also believe you need a good moisturizer with an SPF. Take care of your skin!! I recommend a really good one like EltaMD UV Sport SPF 50 that you can get at your dermatologist’s office. Neutrogena or other over-the-counters are good, too.

Stimulate collagen to lessen breakdown

We have all heard the word in conversation with our aestheticians. We see it on many beauty products but what actually is it? Collagen is the main structural protein found in the skin and other connective tissues. Along with elastin and soft keratin, it is responsible for skin strength and elasticity, and its degradation/breakdown leads to wrinkles that accompany aging. Young skin is made up of approximately 80 percent of collagen. After the age of 25, it is estimated we lose at a rate of about 1 percent of our collagen each year. The result is gradual fine lines and sagging skin from the collagen breaking down and becoming weaker. WHAT CAUSES THE BREAKDOWN OF THIS PROTEIN? The main factors responsible for the aging of our skin are exposure to the rays of the sun, smoking, poor diet and lack of exercise. We southerners love the sun! Fear not, you can be sun safe with proper sunscreens. I recommend using a broad spectrum SPF 50+ daily. You should begin using products to stimulate your collagen in your 20s as this is the age range it begins to weaken. If you do not stimulate your collagen, it will continue to break down and your only option of correction will be surgery. You can use medical-grade skin care products to stimulate your collagen. Salon Alexanders celebrating 17 years by Dana Sleger When Alexander D. Deeks recalls that “ah-ha” moment he knew he was destined to be a hairstylist, it brings him right back to his first teacher in the industry, his mother. “My mother owned a beauty school and was one of the instructors,” Deeks says. “One day, mother asked me to sit in on one of her cutting classes and it was then I realized it was in my blood. Scissor became an extension of my hands and it was as if I had been cutting hair all my life. It became the fuel that excited me to take this venture to the next level and make it my future.” Deeks owns Salon Alexanders on Cowan Road in Gulfport, which operates in one of the Coast’s oldest Victorian homes, and with 20 stations, it’s also one of the largest salons on the Coast. Deeks says the welcoming atmosphere full of southern charm is built on giving clients the best experience in a relaxing atmosphere they can enjoy and also learn in. “You will find our friendly staff is made up of experienced artists that take the time to listen to our clients’ needs and provide the best service and experience,” Deeks says. “Because of our passion and love for what we do in serving the public, we enjoy teaching our customers how to feel good and look amazing by using the right products and tools to the best of our knowledge.” When Deeks was just 18, he opened his first salon in Louisiana in 1988. Even though he was a fresh graduate right out of beauty school at this time, he was already a licensed instructor teaching the class “The Artistry of Hair Cuts/Design” at his mother’s beauty school named “Eve’s College of Hairstyling.” 52

“I saw the passion for hair through my mother’s love for teaching others what she loved to do in this industry,” Deeks says. “As my own passion grew for hair, I realized that I too love teaching and sharing my skills and talents with fellow hair artists.” This knack for teaching helped Deeks develop an apprenticeship program that currently helps new and upcoming artists looking to grow within the industry and at Salon Alexanders, which was established on the Coast in 2000. Stilettos and the lessons of life

I love stilettos! Not only are they beautiful, but wearing them has taught me by Dr. Stephanie great life lessons. Wearing stilettos is like mastering life. You cannot master stilettos Barnes until you understand that there is an art to wearing them. Life is the same way. There is an art to experiencing life to the fullest. Wearing stilettos have taught me five valuable lessons that help me to strut through life with a joy in my step!

1. MASTERY COMES FROM PRACTICE AND EXPERIENCE Walking in stilettos is comfortable for me because, well, I wear stilettos frequently. Wearing stilettos is a sport and requires training and practice. If you only wear stilettos occasionally, your body is not accustomed to the muscle use required to support your body on high heels (Hint! It requires strong quads!) Like wearing stilettos, if you want to master something in life you must get in the game! Life is not fully experienced from the sidelines, but through putting yourself out there and trying, failing, learning and experiencing. You can look at a pair of beautiful stilettos all day long, but you won’t learn to walk confidently in them until you walk in them! 2. KNOW YOURSELF I know the limits of walking in stilettos. I know the fabulous quotient of every shoe I own. Some are “walk in, look fabulous and sit down” shoes. Others are “walk, dance, and strut your fabulous stuff until you get tired” shoes. Stilettos must be the right size. They must be the right height. They must be the right design and fit for your foot. It is important to be sure that you select the stiletto that works for you. Believe it or not stilettos, can be comfortable. I have shoes that are pretty on the shelf, but don’t feel pretty on my feet. They either stay on the shelf or I give them away. Wearing stilettos is an endurance sport, but requires frequent rests to re-energize. As in life, you must know your personal limits. You cannot sprint your way through life without taking care of your mind, body and spirit. You must also know what is the right fit for you. Whether it is a career, location or relationship, don’t settle for what’s available, create the best environment for you. 3. WALK AT YOUR OWN PACE You don’t really walk in stilettos, you saunter — a slow and steady pace that allows you to glide elegantly across the floor. When you wear stilettos, you must walk at your pace and avoid trying to keep up with others. It makes for a graceful and fabulous stride. If you walk too fast, you look like a bucking baby giraffe. A woman in stilettos must be a woman in control and a woman who knows who she is and what is best for her. You 56

cannot be afraid to say, “Y’all are walking too fast. Slow your roll!” You also cannot be afraid to slow down and let the crowd rush ahead of you. Your life should occur at the pace of you. You are in a one-woman race. There is no right time or right pace for when you should reach your goals other than the ones you set for yourself. Be confident in who you are and be courageous to live life on the terms that make you great!

4. WEAR STILETTOS BECAUSE YOU LOVE THEM, NOT BECAUSE EVERYONE ELSE DOES Stilettos are a beautiful creation. Red bottoms are popular, but do people love them because they are great shoes or because of the ubiquitous status symbol of the red sole? My favorite go-tobrand is not a popular designer brand, but it is THE brand that works for me — and my budget! If you don’t like high heels, don’t wear them. If you prefer loafers or tennis shoes or you must wear orthopedic shoes, put them on and make them fabulous for you. You can work magic with a glue gun and some rhinestones if you just must have bling! It is important to choose the lifestyle that makes your heart sing, not one that impresses others. It is so easy to get caught up in keeping up with what everyone else is doing. Do your own thing! 5.WHEN IT’S TIME TO WEAR FLATS, TAKE OFF THE STILETTOS As much as I love my heels, I do own flats. Let’s face it, stilettos are not always practical for some surfaces or situations. So I have to wear flats when stilettos won’t do. Most flats hurt my feet, so even my flats have some height. Cowboy boots are perfect for sturdiness and height. Personally, I don’t wear athletic shoes unless I am exercising. I have wedges specifically for outside events so I can keep the fabulous going without falling or sinking in the ground. Life is rarely a one-size-fits-all or one-size-fits-you for that matter. You must learn to be flexible and adapt to the changes around you. What worked well for you last year may need to be tweaked to work well for you this year. Change is inevitable. You cannot remain static in a dynamic world. Just like it is impractical to wear stilettos to run, it is impractical to think that you can remain stagnant in your thoughts, behaviors and actions and expect to grow, expand and succeed. Wearing stilettos is not all fun and games. As beautiful as they can be, they can also be painful. But the great thing about stilettos is that you can always get a new pair when the ones you have on hurt your feet. Changing your life is not that easy, but you can evolve to become the beautiful design you were meant to be. Stop window shopping and begin designing and creating the best life for you! What is your signature scent? by Dana Sleger

The perfume section in department stores or places like Sephora or Ulta can be like a playground or be really intimidating — or both. Because there absolutely is not one universal perfume that fits everyone, hunting for your signature scent is a task that requires some research. Of course, one of the most iconic fragrances in the world is Chanel No. 5, but as lovely as it smells, the wonder inside that bottle isn’t for everyone. According to The Perfume Society, there are eight fragrance families: Fresh, Floral, Floriental, Oriental, Gourmand, Chypre, Woody and Fougere. Chanel No. 5 falls into the floral category due to notes of neroli, ylang ylang, may rose, jasmine and more, but for someone who’s body chemistry adapts more to a fresh scent would be better off with notes of lemon, bergamot, orange, grapefruit and mandarin. If sweeter scents are your preference, then perfumes in the gourmand family would be best because it draws on notes of caramel, chocolate, milk, coffee, Cognac, toffee, almonds, vanilla and more. Steven Claisse is an internationally known perfumer with a 35year career in scent creation. As one of the world’s best noses and former president of the American Society of Perfumers, he “nose” a thing or two about finding the right scent. “Think of a fragrance as the Mona Lisa,” Claisse says. “Two people can look at the same picture and one sees a wry smile while the other sees a disapproving frown — it’s all perception. How you smell something is very different then how someone else smells something. You may be sensitive to green notes that may be in a floral scent and thus pick up on those green nuances in that fragrance. Your friend, on the

other hand, may smell the same fragrance and pick up more on the heady floral then the subtle green aspects that you key in on. Fragrance is truly subjective.” The best route for finding your scent is simply experimenting with a spray here and there, and letting it linger throughout the day to see how it adjusts to your body chemistry. The immediate smell after a spritz will be different a few hours later, if it’s still there at all. And remember, the higher concentration of oils will determine how long the scent lasts, hence the difference between perfume, eau de toilette and eau de cologne. You want something that sticks around, so it’s really important to know where to apply perfume. If Coco Chanel had her way, her advice is to apply “where you want to be kissed.” The Perfume Society extends this mantra well: “Spray/dab on your ‘hot spots’, or pulse points — behind the ears, temples, wrists, nape of neck, back of the knees, in the crease of your elbows, between your breasts, the small of your back, navel area. The blood flows close to the surface in these zones, and heats the fragrance oils. But do be aware of one no-no: perfume industry ‘insiders’ never, ever rub their wrists together after applying fragrance, because it affects the oils. Spray, waft your wrists around — and be patient!” It’s not easy finding that one special scent that jives perfectly with your body chemistry, but it sure is worth it when your signature makes a lasting impression even after you’ve left a room.

Dr. Irene Amos

EDUCATOR, CONSULTANT, BUSINESSWOMAN, MILITARY VETERAN Dr. Irene Amos is the owner of Amos Education Consulting Inc., which she says provides an individualized, innovative and unique learning experience to current and future customers that inspires their highest potential. Amos earned a bachelor of arts degree in English in 1997 from the University of Mississippi, and in 2004, she received her master's degree in secondary education from William Carey College. Her love for learning continued at the University of Southern Mississippi, where she earned a specialist degree in education administration in 2006 and a doctoral degree in education administration in 2011. Last year, Amos retired from the United States Army Reserve. Her military accomplishments include being a commander and a certified master fitness trainer. Gulf Coast Woman chatted with Amos to learn more about her consulting business she began in 2013 and her deep passion for education. GCW: Please describe what services Amos Consulting offers. Amos: Services offered include tutoring for children and adults, discipline strategies,

writing workshops, reading comprehension workshops, professional development sessions, study skill sessions, test taking strategy sessions, and mentoring. An emphasis is placed on authentic engagement, hands on learning, working with special needs students, immediate assistance for parents that have children with discipline and/or academic issues, enrichment activities for students, parenting strategies, and career management for adults that includes creating and editing resumes. How did the idea come about for the business? Amos: My deceased parents, who didn’t finish elementary school, instilled in me the value of an education at a very young age. After being a coach, a reading and English teacher, and assistant principal, I had the opportunity to be involved with lots of students who were dealing with some type of difficult issue and/ or complex family dynamics. Their unique needs became my “ah-ha moment.” I wanted to make a more personal and positive difference in their lives through education. How has your education background contributed to

the development of your business? Amos: I have 15 years of experience in education. My career began as an assistant teacher at Gulfport Central Middle School. Other positions I have held are track and cross country coach, middle school English and reading teacher, English Department Chairperson, Academic and Professional Development Coach, assistant principal and principal. My background in education allows me to establish and develop relationships that promote success and optimum individualized services for precious children, parents, and other educators. One of AEC’s priorities is to give customers or families a sense of hope for a positive outcome through individualized services. How has your military background contributed to the development of your business? Amos: I began my career in the military as an enlisted administrative or personnel clerk. My first duty assignment was Camp Shelby. Recently, I retired from the military at the rank of captain as an adjutant general

officer. Working with diverse people, various duty stations and being the commander of a military unit instilled in me patience and discipline that is invaluable for my business. My background in the military is a constant reminder of how blessed we are to be citizens of America and the best investment of my time and energy is the children who represent our future leaders. Furthermore, AEC offers an innovative discipline strategy for children that involves military drill and ceremony for parents who want to improve the discipline of their children at school and home.

What is HABU?

Recently, I was working with a client whose director was having trouble meeting her goals (let’s call her Elisabeth). Elisabeth is the managing director of the business, so some of her responsibilities include achieving the company’s business plan, setting company goals, working on company strategy and new ideas, developing the other leaders within her organization, and making sure each department stays within budget. During our conversation, I took Elisabeth through an exercise to develop her organization chart. When we reached her position on the chart, I was shocked to learn that many of her days were spent answering the phone at the front desk and working on bookkeeping. It suddenly became evident why Elisabeth wasn’t reaching her goals. Don’t get me wrong, I believe every leader should be willing to do any job within their organization. In fact, this willingness is a characteristic of a great leader. However, as your business grows out of the startup stage, the leaders should focus most of their time on their highest value contributions…their “unique abilities.” I learned this lesson years ago from one of my mentors when he explained the concept of HABU to me. HABU, or Highest And Best Use, is an old real-estate term that he applied to leadership. As leaders, we must find the highest value contributions that we can make, and then we should spend most of our time working on these things. If your organization is small, you may find yourself occasionally working on lower-value tasks (for example,

I’ve been the janitor, bookkeeper, and marketer in the early days of my businesses). However, if you make yourself focus on the high-value tasks, you will quickly have the resources to delegate lower-value tasks. Remember that a low-value task to you may be a high-value task to someone else… I promise. So, where do you begin? Let’s start with your goals. Pull out your quarterly and annual goals (you do have written goals, don’t you?). Now grab your calendar (I prefer a paper calendar). Write down your daily activities for the next few days in 15-minute increments. You’ll most likely notice several things: you task-switch far too much, you spend too much time on email, and most of your daily activities are not congruent with your stated goals. Beginning tomorrow morning, block off at least two hours on your calendar to work on your most important goal (this should be as early as possible, before you check email). Guard this time with your life and commit to staying focused. It will be hard at first, and distractions will bombard you, but stick to it. It will get easier with time, and your persistence will be rewarded. Focus on your most important goal until you’ve accomplished it, then begin on goal No. 2. Rinse and repeat. Shabazz wins Lifetime Achievement Award

Cecelia Shabazz, the Focus Group’s creative director, received a silver medal, the top award given at the MS Gulf Coast Advertising Federation ADDY Awards program. “I am humbled to have been awarded this lifetime achievement award at this point in my career,” Shabazz says. Shabazz has been a part of the advertising community in South Mississippi for nearly 17 years, and has previously been recognized May-June 2017

for her work with honors such as Art Director of the Year and Creative Director of the Year. As creative director for the Focus Group, a full-service advertising, marketing and digital firm located on the Mississippi Gulf Coast, she is responsible for the overall brand development for their diverse suite of clients. She also is an adjunct instructor at Tulane University, teaching courses in media arts as a means of giving back to her industry.

Independent contractors and their taxes

If you are the brave-independent-self-reliant entrepreneur, you have benefits, meaning tax deductions that employees do not have. The upside is tax efficiency which is a code word for lower taxes. Although one can incorporate their business and get even more tax efficient, this article is directed to the selfemployed. Keep in mind that to be a deductible business expense, it must be both ordinary and necessary. An ordinary expense is an expense that is common in your trade/business. A necessary expense is an expense that is helpful and appropriate for your trade/business. Business expenses by nature exclude personal expenditures and fall into one of three broad categories: • Cost of goods sold • Capital expenses • Operating expenses

COST OF GOODS SOLD If your business is retail or if you are a manufacturer, these expenditures are the items you sell as a retailer or the labor and raw materials that make up your product as a manufacturer. Beginning and ending inventory values must be determined in either case since the inventory you have on hand at year-end is not deductible. CAPITAL EXPENSES These expenditures are not deductible in their entirety in the year you incur the cost; rather, they are capitalized and depreciated over a number of years determined by tax law. These costs generally make up the investment expenditures in your business. They are: • Business startup costs • Business assets • Business improvements OPERATING EXPENSES The following is a list of common business expenses. Advertisement: Must have your business name on ad. Establishing a home office is necessary to start the business travel from the home to the first business stop. Insurance (health): Includes medical, dental or long-term care insurance premiums that self-employed people pay for themselves. Interest: Interest you pay on debts related to your trade/ business. Phone: The basic cost of your initial land line phone into your home/home-office is considered a non-deductible personal cost. Second lines and other costs (e.g. long distant business calls) are deductible. Cell phones can be problematic since they are generally used for both business and personal. Only the business portion is allowable. This means one needs to determine the percentage of business use and to apply this percentage to the cell phone cost. Rent: Personal property (e.g. copiers) and real property (e.g. office or warehouse spaces) are deductible. Repairs and maintenance: Deductible on both personal and real properties. Retirement (SEP, IRA, Roth): Contributions do lower your income taxes but do not lower your self-employment taxes. Self-employment taxes: The tax rate is 15.3 percent and is calculated on your net profits. This tax represents the Social Security and Medicare taxes one pays into the social security system. Training: Must be related to your current trade/business. Travel (local): One needs to define the tax home. Travel within the tax home between business locations is considered business travel. Travel to and from home and office is a non-deductible personal commute. Travel (overnight): Outside the general area of one’s tax home, usually longer than an ordinary day’s work and one needs sleep or rest to meet the demands of work. Utilities: Office electricity, water, heat, and cable are deductible expenses. Do not commingle your business income and expenses with your personal, this complicates matters. The Federal Reserve raised its benchmark interest rate by 0.25 percentage points, which would make it the third such rate increase since the end of the financial crisis. You’ve probably seen the increases affect the rates for credit cards, home equity lines of credit and other loans. But it may be a while before the Fed’s rate increases start to make a difference in one key area of your finances: your savings account. “People need to get used to the idea of [saving account] rates being low,” says Alan MacEachin, a corporate economist at Navy Federal Credit Union. In the past, Fed rate increases have meant better yields on savings accounts. The higher rates make it possible for banks and credit unions to charge more for loans, leaving them with more revenue that can be passed on to consumers in the form of higher yields on savings accounts. But after the financial crisis, which made many consumers more nervous about investing or spending money, many financial institutions are already so flush with cash that they don’t have much of a motivation to bump up the yields on savings accounts, says Sean McQuay, a credit and banking expert with the personal finance website NerdWallet. Although some firms have started to pass those higher rates on to savers, the Fed may have to raise rates a few more times before better yields on savings accounts become the norm, McQuay says. Yields on savings vehicles, such as money market accounts, CDs and traditional savings accounts, have stayed relatively flat since December 2015, when the Fed first began raising interest rates after the crisis. At the time this article was written, the average yield on money market accounts was 0.11 percent, unchanged from 0.10 in December 2015, according to the bank comparison website Bankrate.com. In contrast, consumers are being squeezed by higher rates on credit and other variable loans, which are affected directly by a Fed rate increase. For example, average credit card rates increased to 16.26 percent (at the time article was written) from 15.77 percent in early December 2015, according to Bankrate.com. The average rates for home equity lines of credit, which are also directly affected by the Fed, have increased to 5.15 percent from 4.75 percent in that same time period. Even after more banks start to offer higher savings rates, we are “light years” away from seeing the generous yields of 5, 6 or 7 percent on five-year CDs that were common during the 1980s and 1990s, says Greg McBride, chief financial analyst for Bankrate.com. “It’s going to be a long, tough slog,” he says, adding that the Fed is expected to move slowly. Until then, people saving for major financial goals will generally need to save more, or wait longer, to make up for the lower yields.

The development of dementia or other debilitating illnesses bring tough dilemmas to many families. When my father developed Parkinson’s disease, he was living in a different state and I was faced with tough choices about how to best care for him. The first hurdle was to stop him from driving and get help for him in his home; it quickly became apparent that he could no longer live independently. That is always a time when the most difficult decisions must be made. When discussing similar situations with clients and their family members, I’m frequently asked if the elderly family member should deed away the home to a child or other relative. In most cases, I do not think that deeding away the homestead is a good idea for several reasons. Here are four important things to consider:

INHERITANCE IS MORE ADVANTAGEOUS Certified public accountants will tell you that the tax basis for inheriting real property may be better than the potential capital gains tax that may have to be paid if the house is deeded away before death of the owner. The tax differential may be greater, particularly if the elderly person has owned the property for a long time and the value of the property has greatly increased. For example, my father had lived in the same house since the late 1940s and had a very small tax basis in the house. You can check with a certified public accountant for specific details on your situation, but generally it is more advantageous to inherit real property. PROTECTION AFFORDED BY THE HOMESTEAD EXEMPTION State law provides some protection, called homestead exemption, for a person’s home even if you have to file for bankruptcy. This is a way to “shelter” some assets. [See Miss. Code 85-3-21: homestead exemption of 160 acres worth $75,000.00, plus additional $50,000.00 if over age seventy, Miss. Code 85-3-1 (h)]. DEMENTIA REDUCES LEGAL CAPACITY If the elderly person has dementia which has progressed so that they cannot live alone, then chances are that he or she does not have the legal capacity to make financial decisions or to deed away real property. The elderly person could later regret such a transfer, or it could result in later litigation. While it is a difficult task, I have helped three HOUSE continued on page 80

elderly clients, each suffering from dementia or weakness of intellect, to recover their homes in heart-wrenching situations where they were “unduly influenced” to deed their home to children or relatives, only to find that such actions were a big mistake when later they were, essentially, forced out of their home by the children.

DEEDING A HOME CAN DISQUALIFY BENEFITS The elderly person may need certain benefits, such as Medicaid, or to pay for nursing home or other care. Sadly, the transfer of their home or other assets may disqualify them from receiving such benefits. In general, your homestead residence is considered a “non-countable” asset for qualifying for Medicaid benefits. What this means in normal language is that you do not have to “count” that asset when adding up the value of your assets to determine if you qualify for Medicaid benefits. The Medicaid application asks, however, if you have conveyed or transferred away any assets, and if this has occurred then it may disqualify the Medicaid candidate for a period of time. In common terminology, this is referred to as the “Medicaid look-back period” (which, as a rule of thumb, is currently around five years… but rumors are that it may be extended in the future to as much as 10 years). If the elderly person conveys away interest in their homestead and then the person needs Medicaid benefits within the “look-back period,” it may disqualify them from such Medicaid benefitsat least for a period of time. At this point, most families ask, “But will Medicaid take the homestead property or have a lien on the house when the person dies?” This point has been greatly debated and, in fact, has been the topic of “elder law” seminars. But when asked, I direct my clients to Mississippi Attorney General Opinion No. 2015-304, December of 2015, which states in relevant part: “Property exempt under Section 85-3-21 of the Mississippi Code is not part of the estate. Darby v. Stinson, 68 So. 3d 702 (Miss. 2011). Further, [the Mississippi Assistant Attorney General could] find no authority for the Division of Medicaid to seek recovery from property other than the recipient’s estate by requiring a waiver of homestead exemption.” As a result, I cannot guarantee what anyone will do — certainly not a governmental entity — but when clients pose this question, my response is that the Office of the Mississippi Attorney General has stated he knows of no way for the Division of Medicaid to seek recovery against property exempt under the “Mississippi Homestead Statute,” and so I defer to him. My heart goes out to clients and their families in these situations, particularly because of my personal experience. Hopefully these tips help guide you in your situation. Renter’s insurance: ‘Do I need it?’

Have you ever heard of a house or an apartment complex catching fire? Have you seen the sad stories in the news about how by Kathy the people lost everything and did not have Rogers any insurance? These stories are especially heartbreaking around the holidays or if the people are elderly or have children. Would your story be one of heartbreak if your personal belongings were destroyed in a fire, tornado or hurricane? Are you aware that your landlord’s insurance won’t pay for your things? Neither your landlord nor his insurance company is responsible for your belongings. If their building is damaged or destroyed and, as a result, your possessions are also damaged or destroyed, their insurance covers only the things they own, not the things you own. This same principle applies if you are renting from a family member. How about this scenario? Your friend comes over for a visit and sits on your chair and it breaks under them and they are injured. Of course, you call the ambulance, because they are really hurt. They don’t have health insurance. Who pays for their injury? Do you have the money to pay for it? If you are like many people your response may be “I don’t have that much stuff ” or “insurance is too expensive” maybe even “my friends would never expect me to pay if

they were injured at my place.” May I ask you a question? If you lost all the contents of your home or apartment, are you in a financial position to replace everything out of your pocket? Would it bother you to have to ask your parents, siblings, friends, or even strangers for help to get back on your feet? Are you sure your friend would not expect you to pay if the injury were your fault? One of the reasons to purchase insurance is to cover the risk of financial loss caused by an unexpected event that you cannot or do not want to pay for yourself. The amount of the risk you cover yourself is commonly called the insurance deductible. As we see the seller’s regain control in the housing market, there are ways you can position yourself to submit your strongest offer. • Get pre-approved! Know the top dollar you want to spend and more importantly be comfortable with the monthly payment. • Know the financial impact insurance is going to have on your monthly payment and understand what zones maximize your purchasing power. • If you are looking at existing construction be realistic about your strengths when it comes to renovations and or repairs. Know when to walk away. • Realize home inspections are not code inspections. • Make sure to use contingencies only when necessary. • And most importantly, make sure someone who can professionally write and submit your offer represents you. It is fun to browse websites to find the perfect place to call home, however, it is essential to meet with a mortgage loan specialist first. Before making decisions such as brick or stucco, another important factor to consider is insurance. The final step before setting out to find your dream home is to make sure you have representation. Realtors adhere to a strict code of ethics and understand the complexities of today’s market. There are agents who hold designations such as Accredited Buyer’s Representative

(ABR) who have special training that they can put to work for you. So you have found the perfect home, now what? You make an offer, you negioate and you go under contract. Chances are your agent will encourage you to hire a home inspector. Keep in mind a home inspection is not a loophole to get out of a contract and it is not a code inspection. It is a visual inspection conducted by a state licensed inspector to bring possible deficiencies or safety concerns to your attention. This maybe a time where some negotiation is required between the buyer and seller in order to move forward with the transaction. Next is the appraisal. Remember that sales do not always equal comparables. While we are seeing our local inventory shrink and sellers regain a stronger position in the market, there is a possibility that the home may not appraise for what you have offered. Currently, days on market are shorter and the prices as well as the interest rates are inching up so we are seeing fewer homes come in below appraisal. Superbells

One thing I dig about the summer season is the selection of annual color available for the garden and landscape. I think most of my readers know I really like Supertunias. Besides their tremendous growth potential, I think what I like best are the flower shapes. There’s something about a funnel-shaped flower that adds a little extra pizazz to the landscape. This year, I’m going to plant more of a hybrid called Superbells. These are tough plants with good summer heat tolerance. One of the attributes I like about Superbells is their ability after a rainstorm to recover and perk up faster than many other summer-flowering annuals. These plants look great in containers and hanging baskets, as well as massed in landscape beds. I’m really impressed with the range of colors available in Superbells. In the past several years, I’ve grown some pretty outstanding landscape performers. I’ve had Superbells like Cherry Star that feature bright, cherry-red flowers with a yellow starburst in the center. Lemon Slice is a bright, cheerful yellow with a white, pinwheel-center pattern. Saffron flowers have golden-yellow petals and red artist highlights in the center. One of the best selections I’ve grown was Superbells Pomegranate Punch. This plant has deep, velvet-red petals and an almost black center eye that drew many compliments from around my neighborhood all summer 96

long. This year, I’m growing a new-to-me selection called Superbells Tropical Sunrise that features flowers with a variety of yellow and pinkish-red streaks. I greatly appreciate the heat-tolerant flowering of Superbells, especially as petunias start to fade late in the summer in South Mississippi. Superbells Supertunias will grow up to 10 inches high, and their trailing and spreading growth will hang over the edges of the container. You can plant Superbells in the landscape, where they will spread up to 48 inches, depending on the variety. Make sure your landscape soil is well drained, as these plants don’t like wet feet. Raised beds — which are sort of like growing in a container — are a must. To keep the plants blooming all summer, feed them with a balanced, controlled-release fertilizer. A tablespoon in the planting hole will get the plants off to a good start. Regular applications of water-soluble fertilizer will maintain the nutrition at optimum levels to keep the foliage dark green and the flowering nonstop. At planting, use sharp scissors to snip the branches a little bit to encourage full-looking growth. The plants may open up a little bit during the summer, so go ahead and give the plants an overall trim. This pruning will stimulate more growth, so trim any time the plants get a little untidy. Be sure to fertilize right after these trimmings. Start making plans now to include Superbells in your garden and landscape this summer.

DOROTHY WILSON >>> NEARLY 50 POUNDS! The past six months have been an incredible journey to a healthier me. My goal was to lose 40 pounds and then learn how to maintain my ideal weight. As of March 31, I have lost nearly 50 pounds (1.6 pounds shy of that!). The keys to my success: Commitment and a great support system through my dietitian Joanna Allen of Garden Park Medical Center and Brendan Jones of Body Axis Fitness and Anytime Fitness Center. If you say, “I’ll try” to lose weight, you’ve already BEFORE missed your target. You must say, “I will” and do what it takes to stay on track. Secondly, choose wisely which program you’ll pursue. I chose Ideal Protein at Garden Park Medical Center because it worked best with my crazy schedule, making it easy for me to stay on course, and you get great results if you follow the instructions. Marcia McDowell inspired me to do my phase 2 conditioning/weight maintenance program with Brendan Jones at Anytime Fitness. Brendan works with his clients individually and through classes like the Honeybees on Tuesdays and Thursdays. I love the camaraderie of working out with a no-pressure group and the new friendships I’ve made. It also was really important to have a trainer who could adjust the workout when my right knee wouldn’t cooperate. I am so thankful for my team!

It’s hard to believe that it has come to an end, but realistically, it is just going to keep going for me. If I had to describe the hardest part of it all it would be the mental aspect. The actual exercise and physical work that was involved was challenging, but I had a hard time getting in my head and mind that I couldn’t do it when in fact as my trainer, Richard, would point out, I just did it! When I began this journey, I was the biggest I have ever been and really BEFORE had just let life get the best of me. I wasn’t making time for myself and it was taking its toll. At the beginning, I never really set a “number of pounds I want to lose” goal, I just wanted to change my diet, exercise and see results. I also wanted to be able to go into any of our fantastic Coast boutiques and buy a smaller size in clothes! I would be lying if I said I never fell off the diet wagon or that my weight didn’t fluctuate throughout, but at my final weigh-in I was down 26 pounds and lost over 10 inches! I felt so good and my confidence was boosted beyond what it had been in a long time. I never could have done this without the motivation and support of my family and friends and I thank you all for everything, but most importantly, I couldn’t have done it without the support of my team and sponsors. I will never be able to thank them enough for what they did for me. Not only were they super supportive and encouraging, I feel like I can call them friends now as well. When I thought of the campaign it was for selfish reasons because I thought if I had to publicly share my journey it would keep me accountable. I have failed so many times at losing weight and I was tired of the excitement of starting the journey and the disappointment of not seeing it through to the end. Six months later this BEFORE selfish idea turned into life changing reality. I began my journey at 340 pounds and it was painful for me to walk and was constantly tired. Six months later, with the coaching and support of my nutritionist dietitian, Miranda Hebert, I have shed 50 pounds to date. Through ups and downs and times when I got off track, she stuck with me. She even came to workout with me and has taught me so much about making wise food choices while still enjoying food! I also have gained a whole new family — a Crossfit family. These people are some of the most determined and dedicated people I have ever met. The owner of my Crossfit gym, Ryan Webb, welcomed me with open arms. My fitness level was zero but my Crossfit family didn’t care. They cheered me on and challenged me. A proper fitting bra may seem nonessential, but for a large busted woman, proper fit is critical. Jumping rope, running, etc., can be very uncomfortable without the proper bra. Foundations Bra Fitting came to the rescue and gave me a wonderful bra that has gotten me through the past six months of workouts. The owner, Melissa, takes pride in servicing her customers and making sure they have the ideal fit. This health challenge also influenced my family: my husband has lost 30 pounds, my best friend joined Crossfit, and my children play like they are doing Crossfit at home. Brandon Sherwood’s STORY BEFORE MY TRANSFORMATION I had a health scare in October that helped me realize I will not be here forever. I have three sons that I need to be around for as long as possible. My mother passed away at 51 and I don’t want that to be me. MY GOAL I want to lose 90 pounds and I want to maintain it by living a healthy lifestyle. I don’t want to lose it and gain it back. Six years ago I lost 108 pounds, but over time I gained 115 pounds. I didn’t exercise or live healthy, and I did a fad diet that isn’t sustainable. This time I want to sustain and be healthy overall. WHAT I DID The Monday after Thanksgiving I joined Radical Alterations, which is owned by Nolan Halliburton. He put me on a clean eating plan and laid out an exercise program where we meet in a class setting in the mornings Monday through Friday. He understood where I was at and worked with me to get going. HOW IT WORKED So far I’ve lost 50 pounds. I’ve become much stronger and am in much better shape than before. I was in really bad shape before I started. I had a couple of friends who encouraged me to start: Rob Stinson and Rick Camarena. If it wasn’t for those two, I would have never started the program. MOST DIFFICULT PART Taking the first step was the most difficult part. I was nervous about going to a place I didn’t know and I knew I was completely out of shape. I had to change my schedule in the mornings, but Nolan welcomed me in and made it very enjoyable. I have a great class. MY ADVICE TO OTHERS Don’t wait. There are people who love you and depend on you. None of us really understand the overall impact we have on people’s lives. God has a plan and a purpose for each of us and it’s our responsibility to take care of ourselves. I’m thankful for the opportunity I get each day to try to better myself. In the 2017 legislative session, Rep. Sonya Williams Barnes reached across the aisle to Sen. Kevin Blackwell about authoring a bill that would require clinicians to notify women if they have dense breasts based on the results of their mammogram. Constituent Tershara Matthews-Shabazz is an advocate for breast cancer and she helped influence this bill, which was signed into law on April 11 and will go into effect on July 1. According to the U.S. Department of Health and Human Services, women with denser breasts have a higher risk of breast cancer compared to women of the same age who don’t have dense tissue. This is because dense tissue makes it harder for X-rays to spot the tumors that could lead to breast cancer. Creative ways to say 'I

love you' to parents

by Rebecca Ritchey Michael Jordan said, “My heroes are and were my parents. I can’t see having anyone else as my heroes.” The months of May and June are months to honor mom and dad — the months we, as a society, take time to say “thank you” and “I love you.” Besides buying a card or dinner, here are some creative ways to say “I love you” to parents. JOURNAL Ask your parents to tell you a happy story from their childhood. Write it down and present it to them in a journal along with other happy memories. SPEND TIME Pastor Rick Warren said, “The best expression of love is time.” Spend meaningful quality time at regular intervals with your parents. Make eye contact, speak face to face, make memories, and watch a movie together. Time is love. SAY IT Hearing a heartfelt “I love you” can brighten anyone’s day. Hearing “I love you” from your child means the world — not a flippant saying, but a heartfelt and true statement of love. PAY ATTENTION A gift that says you’re paying attention is extremely appreciated. My mom loves the scent of patchouli so when I am out and about and I find something unique with the scent of patchouli, I pick it up for her.

PICTURE IT Put together a physical photo album for your parents. Pictures of their lives from childhood, or of your life as a child and growing up. Include some thoughts about the pictures and make it fun. A picture truly is worth a thousand words! LOVE LANGUAGE Learn your parent’s love language, which is the best way they receive and feel love, and then put it into practice. The five love languages are acts of service, physical touch, words of affirmation, quality time and receiving gifts. Observe your parents and find ways to show them love in their own language. WRITE A LETTER The art of letter writing is fading as technology takes main stage. Write your parents a letter telling them how grateful you are for them. Let them know what makes them special, what you appreciate, and make sure you express your love for them. As mothers we are constantly going. We wake up and keep going full speed until our heads hit the pillow at night, and then our brains continue to remind us of what we need to do! Because it’s easy to get caught up in the day-to-day of being a mom, sometimes we forget to take care of ourselves outside of being mom. Maya Angelou put it perfectly when she wrote, “Every person needs to take one day away. A day in which one consciously separates the past from the future. Jobs, family, employers, and friends can exist one day without any one of us… Each person deserves a day away in which no problems are confronted, no solutions searched for. Each of us needs to withdraw from the cares which will not withdraw from us.” A day to ourselves may not be practical or even doable, but an hour or afternoon is. Sit back and close your eyes — go ahead, I’ll wait. What does a time just for you look like? What does it sound like? Okay, open your eyes. What you just envisioned, make it a reality. If an afternoon of pampering is what you desire, make it happen. Get a massage, get a pedicure, get a manicure.

Pamper yourself! If a day at the beach is what you want, since we live on the Gulf Coast, take a drive and unplug for a day. Or, if a day of sleep is needed, go to a hotel for 24 hours and use room service! You may be thinking this is out of the question and unrealistic, but it’s not. If your best friend never took time for herself and was exhausted, you would encourage her to take a break. Be your own best friend and treat yourself well! Naturally, as moms we want to make sure everyone else’s needs are met before we meet our own. We are all guilty of putting ourselves last, but we can’t be all that we need to be if we aren’t allowing ourselves a time of rest and relaxation. You can begin with baby steps. Meet a friend for coffee. Sleep in on a weekend. Go to Target by yourself and get Starbucks while you’re there! Take some time to dream what a break would be like. Who are you wearing? by Robin Killeen

Did you know women in the U.S. spent $80 billion on external appearance improvements in 2016? Now don’t get me wrong, I love my bag of miracles that I refer to as my makeup bag, but no matter what we spend on our external appearances, if our internal is not addressed, we will never achieve true joy and fulfillment. How many remember watching the mother/ daughter duo Joan and Melissa Rivers hosting the pre-Oscar show? The coverage on the red carpet became just as important as the award show itself! It wasn’t enough to see who took home Best Actress or Best Film. It became just as important to know about the wardrobes, the dresses, the glam, the jewelry, and the hair and makeup. And the main question on everybody’s mind: Who are you wearing? People watched as the stars walked up and down the red carpet wearing someone else’s clothes designed for them. So fashion forward, if Jesus were to walk that red carpet today, I can only imagine what he would be asked: “That’s quite the sparkly robe you have on there, Jesus. Who are you wearing?” Romans 13:11-14 in the Message version of the Bible says, “But make sure that you don’t get so absorbed and exhausted in taking care of your day-by-day obligations, that you lose track of the time and doze off, oblivious to God. The night is about over, dawn is about to break. Be up and awake to what God is doing! God is putting the finishing touches on the salvation work he began when we first believed… Get out of bed and get dressed! Don’t loiter and linger, waiting until the very last minute. Dress

yourselves in Christ, and be up and about!” Do we live dressed and ready? Or, are we trying to wear items that were designed or someone else? Just maybe this life is less about the labels we wear and more about our identity as daughters of the King — the flawless one that loves us just as we are. The wardrobe God designed especially for each of us fits perfectly. Matthew 6:33 essentially says, “Seek my face first, put me on, and wear me. Wear my robe of righteousness with ease. I custom made it only for you. My robe is fit for a King.” You cannot purchase this royal garment — not by performance, not by merit, not by self-sacrifice! Righteousness is a gift. Put on your luxurious, velvety robe, keep your eyes on Him and relax: “I didn’t make your robe out of left over material, it was designed specifically for you. You are my unique design!” If you try to wear a robe created for someone else, be like someone else, have a ministry like someone else, it will never be the right fit. Paul says, “Above all, clothe yourselves with love, which binds everything together in perfect harmony.” Now, unlike most fashion accessories that are optional, Paul says, it is love that binds everything together. Love isn’t optional, it’s a necessity. Love is like the jacket that we put over all of our other clothes and it ties the whole ensemble together. So, regardless of what else you wear, put on love! Fire up that grill! Grilling season is upon us and have we got some fabulous recipes for you! From salads, main courses, side dishes and desserts, you can stay outdoors from start to finish to serve your guests a tasty full-course, hot-off-the-grill meal. Enjoy! GRILLED ROMAINE SALAD WITH BACON AND BLUE CHEESE 3 Romaine hearts 12 pieces of thick cut bacon 5 oz. blue cheese crumbles For the dressing: ¼ cup balsamic vinegar ¼ cup light olive oil ¼ tsp. dried thyme ¼ tsp. dried parsley ½ tsp. dried oregano A little salt and pepper ¼ tsp. Dijon mustard Fry bacon in a large skillet and reserve the bacon fat. Slice each Romaine heart in half and set aside. Heat your grill up over high heat (you want very hot grates so you get a quick char without cooking the lettuce too much or wilting it). Using a basting brush, lightly brush a little bacon fat onto the flat side of each omaine half. When you are ready to grill, place the Romaine halves flat side down on the grill and just keep them on there until they have light char marks (it shouldn't take more than 30 seconds). Remove the Romaine halves to a plate and turn off your grill. For the dressing, add all ingredients into a bowl and whisk together, or add to a jar and shake. To assemble the salad, top each Romaine half with bacon and blue cheese crumbles, and drizzle on the balsamic dressing. Pinterest source: The Garlic Diaries

GRILLED HONEY SRIRACHA CHICKEN THIGHS 2.5 lbs. chicken thighs 3 Tbsp. unsalted butter 1 Tbsp. minced fresh ginger 2 garlic cloves, minced ¼ tsp. smoked paprika ¼ tsp. ground cloves 4 Tbsp. honey 6 Tbsp. Sriracha 1 Tbsp. lime juice Heat grill to medium high heat, about 400 degrees. In a small saucepan, add butter. Once melted add in fresh ginger and garlic. Stir until fragrant, about 1 minute. Next, add in smoked paprika, ground cloves, honey, Sriracha and lime juice. Stir to combine and let simmer for 4-5 minutes. Pat chicken thighs dry. Season with salt and pepper on both sides. Spray grill grates with cooking spray or rub with olive oil soaked rag. lace chicken thighs on grill, skin side down first. Grill for 4-5 minutes. Flip the chicken over and grill on the other side for 4-5 minutes. Continue to cook chicken, flipping every 3minutes so it doesn't burn until the internal temperature is 165 degrees (about 25-30 minutes). PESTO GRILLED SHRIMP ½ cup basil, packed 1 small clove garlic 1 Tbsp. pine nuts, toasted 2 Tbsp. Parmesan, grated 2 Tbsp. olive oil 1 Tbsp. lemon juice (¼ lemon) Salt and pepper to taste 1 lb. Gulf shrimp, peeled and deveined Pulse the basil, garlic, pine nuts, Parmesan, oil, lemon juice, salt and pepper in a food processor or blender until smooth. Marinate the shrimp in the pesto for at least 20 minutes, up to overnight, in the fridge. Skewer the shrimp and grill over medium-high heat until cooked, about 2-3 minutes per side. Pinterest source: Closet Cooking GRILLED POTATOES WITH ROSEMARY AND SMOKED PAPRIKA 1 lb. russet potatoes, cut into 1-inch pieces 1 medium onion, cut into small chunks 6 garlic cloves, peeled and cut into thirds 1 Tbsp. + 1 tsp. olive oil 1 ½ tsp. crushed dried rosemary ½ tsp. smoked paprika ½ tsp. salt ½ tsp. ground pepper Preheat the grill to medium heat. In a large bowl, combine the potatoes, onion, garlic and olive oil. Toss to coat the vegetables. Add in the rosemary, smoked paprika, salt and pepper, and toss to coat again.

Using 2 pieces of foil (each 24 inches long), form an X by overlapping the foil. Place the potato mixture in the middle of the X, arranging so that it is an even height. Wrap the pieces of foil over the potato mixture, pinching the foil to seal. Use a third piece of foil to wrap around the package. Place the foil package on the grill and cook for 20 minutes. Flip the package over and cook for an additional 15 to 20 minutes, or until the potatoes are tender and start to brown. Be careful when opening the package to test the vegetables, as hot steam will be released. The vegetables will stay warm in the package for 10 to 15 minutes. Serve. Pinterest source: Cookin’ Canuck CINNAMON SUGAR GRILLED PEACHES ¼ cup (½ stick) salted butter, at room temperature 1 Tbsp. + 1 tsp. granulated sugar ¼ tsp. cinnamon ripe, yellow-flesh peaches, halved and pitted Vegetable oil In a small bowl, whip the butter with a spatula until smooth. Add the sugar and cinnamon and mix well. Get your grill going on medium-high heat. Lightly baste the peaches with the oil and place face down on the grill. Cook until the tops are slightly softened when you touch them (no need to move them or check them, just wait until those tops are slightly soft). Celebrate Mother's

Day with brunch

Mom, it’s your turn to be queen for the day, so let the family pamper you with a brunch. For this special menu, let’s do a crustless bacon and cheese quiche, which can be made the day before and popped into the oven on Mother’s Day. To combine a second entree and dessert, another casserole that works well is baked French toast casserole. This also can be made the day before and baked along with the quiche. For that final touch, how about a fresh fruit salad of strawberries, pineapple, grapes and bananas? It couldn’t be easier: Slice the fruits and place in a large crystal bowl and serve with a store-bought poppy seed dressing. Remember to place bananas in lemon juice before adding the salad so they do not turn brown. Enjoy! CRUSTLESS BACON AND CHEESE QUICHE

BAKED FRENCH TOAST CASSEROLE

1 cup sliced green onions, about 5 medium 1 cup chopped tomatoes, about 1 medium 12 slices of bacon 1 cup sliced fresh mushrooms 12 eggs cup sour cream 1 cup shredded Cheddar cheese 1 cup shredded Mozzarella cheese

1 loaf French bread (13 to 16 ounces) 8 large eggs 2 cups half-and-half 1 cup milk 2 Tbsp. granulated sugar 1 tsp. vanilla extract ¼ tsp. ground cinnamon ¼ tsp. ground nutmeg Dash of salt Praline topping (recipe follows)

Preheat oven to 325 degrees. Reserve 2 tablespoons each of onions and tomatoes, set aside. Cook bacon in large skillet until crisp. Remove bacon with slotted spoon to paper towel-covered plate, reserving 1 tablespoon of bacon drippings in skillet. Add mushrooms to skillet; cook and stir 2 minutes or until tender. Remove from heat. Chop bacon. Add to mushrooms along with the onions and tomatoes; mix well. Beat eggs and sour cream with wire whisk until well blended. Pour into greased 13-by-9-inch baking dish and top with bacon mixture and cheeses. Bake 30 minutes or until center is set. Sprinkle with reserved green onions and tomatoes. Let stand 5 minutes before cutting into pieces to serve. Makes 12 servings. If making ahead, after mixture is placed in baking dish, cover and refrigerate. Take out the next day and bake. Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 13-by-9inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight. The next day, preheat oven to 350 degrees. Spread praline topping evenly over the bread and bake for minutes, until puffed and lightly golden. Makes enough for the French toast casserole.

Gulfport restaurant showcases steaks and spirits by Chris Dearman

With outstanding cuisine and a terrific ambiance, The Rack House Steaks & Spirits in downtown Gulfport is a great venue for succulent, made-from-scratch food that will have you coming back for more. The Rack House opened in March and is the brainchild of the Gulf Coast Restaurant Group, which has won numerous awards with its flagship brand, Half Shell Oyster House. Partners Bob Taylor, Rob Heffner, Kevin Fish and Brian Raspberry saw a need for a restaurant that filled the gap between fine dining and chain steakhouses. “Our price point is very reasonable for what you get,” says Josh Lord, general manager of the restaurant. “We provide the quality and service of high end restaurants such as Ruth’s Chris and Morton’s, but at a price point that is not quite as expensive.” The decor of the bourbon- and steak-themed restaurant captures the feel warehouse distillers use to store and age their barrels, and of course, many mouthwatering dishes feature the spirit. Start with an appetizer or two from cold or hot varieties. From the cold side, they offer three versions of tartare: filet, salmon and Yellowfin sashimi. They also feature a beautiful charcuterie board of premium meats and cheeses, and a Tuna & Crabmeat Stack garnished with sushi sauce and sriracha lime mayo. From the hot side, you will find the delicious Bourbon Pecan Glazed Bacon, Bone Marrow Canoes, and the highly popular New Zealand Lamb Lollipops. The Rack House entrée menu features USDA Prime and High Choice steaks that are flame-broiled at high temperature, seasoned with Himalayan pink salt and fresh ground black pepper, and finished with house-made herb infused olive oil. They also serve veal, lamb, short ribs and fresh seafood — all 128

with a “Rack House style” flair. As an added bonus, you can choose from any of their six salad options to be included without an extra charge. I decided to go with The Rack House’s staple steak, which is a huge 28-ounce Angus Tomahawk Ribeye. The beef is aged 28 to 40 days and is cooked to absolute perfection. The bone literally hangs off the plate! Any steak can be accompanied with a number of infused butters such as sun-dried tomato and basil, truffle, bourbon or roasted garlic. Other additions available include sautéed wild mushrooms, seared scallops, Vidalia onions, Oscar topping, broiled shrimp or even a savory cold-water lobster tail. If at all possible, try to save room for one of the signature desserts. The Chocolate Grand Marnier Creme Brulee is a crowd favorite, along with the Banana Nut Bread Pudding, which is topped with house-made salted caramel bourbon ice cream and bourbon maple syrup. The Rack House also has started the first Bourbon Society on the Gulf Coast with an aim of bringing members together to share their love of various bourbons, ryes, whiskeys and scotches. Pink Heart Funds was founded 20 years ago and exists to inspire, encourage, and restore hope for persons affected by cancer and hair loss disorders. The organization is a nonprofit 501(c)3 charity that provides free wigs to children with severe cases of hair loss such as alopecia, trichotillomania, burned scalps and cancer. We also provide free breast prosthetics and post-mastectomy bras to uninsured or under-insured women receiving cancer treatments, as well as serve as a resource for those seeking support or advice. I know firsthand the emotional and psychological impact of cancer and the determination necessary to get through diagnosis, treatment and recovery. I have been a hairstylist since 1978, and prior to being diagnosed with breast cancer in October 2002, I assisted women with cancer and other hair loss illnesses to find comfortable, natural looking wigs. Working with these beautiful and courageous women inspired me to dedicate my life to helping others, which is how Pink Heart Funds was established. Our location in Long Beach is a safe place for cancer patients to receive support, encouragement and relax in a comfortable and private atmosphere. We are grateful to have at least 20 volunteers that help run the facility in their spare time. When you enter the doors of the Pink Heart Funds center, you will be welcomed by a friendly volunteer who is most likely a cancer survivor. As you walk down the hall in the very nonclinical atmosphere, the walls are adorned with people from all over the

world who have donated their ponytails to help children receive free wigs. You also will find pictures of celebrities and even a past U.S. president — all supporters of Pink Heart Funds. Our Victorian Wig Parlor is where women and children are fitted with their custom order wig. Another room is the Hope Boutique where ladies are assisted by certified breast prosthetic fitters to receive free breast prostheses and a prosthetic bra. At Pink Heart Funds, we feel it is important to give support after a diagnosis, which is why we host Women’s Inspirational Networking luncheons and monthly support groups and classes. For example, the Bald & Beautiful class teaches women how to deal with skin and hair loss side effects. Head wrap demos are conducted and free products are given to cancer survivors to help during this trying time in their lives. Every year Pink Heart Funds also hosts an annual Walk of Hope on the second Saturday in October in Long Beach. The organization depends on donations and fundraisers, and one Pink Heart Funds event coming up on June 10 is an “Evening in Pink Gatsby” at the Climb CDC in Gulfport. Tickets are $50 each and includes food and spirits. There also will be a silent auction and a cancer survivors fashion show. As a 14-year cancer survivor, I count my blessings daily and am so thankful to be a part of an organization that encourages and gives hope to children and women affected by cancer and hair loss disorders.
