1 Tbsp olive or rapeseed oil
1 Onion, finely chopped
3 Garlic cloves, sliced
1 Tsp smoked paprika
½ Tsp ground cumin
1 Tbsp dried thyme
3 Medium carrots, sliced (about 200g)
2 Medium sticks celery, finely sliced (about 120g)
1 Red pepper, chopped
1 Yellow pepper, chopped
2 X 400g cans tomatoes or peeled cherry tomatoes.
1 Vegetable stock cube made up to 250ml
2 Courgettes, sliced thickly (about 300g)
2 Sprigs fresh thyme
250g cooked lentils (we used merchant gourmet ready-to-eat puy lentils)

Heat 1 tbsp olive or rapeseed oil in a large, heavy-based pan. Add 1 finely chopped onion and cook gently for 5 – 10 mins until softened.
Add 3 sliced garlic cloves, 1 tsp smoked paprika, ½ tsp ground cumin, 1 tbsp dried thyme, 3 sliced carrots, 2 finely sliced celery sticks, 1 chopped red pepper and 1 chopped yellow pepper and cook for 5 minutes.
Add two 400g cans tomatoes, 250ml vegetable stock (made with 1 stock pot), 2 thickly sliced courgettes and 2 sprigs fresh thyme and cook for 20 - 25 minutes.
Take out the thyme sprigs. Stir in 250g cooked lentils and bring back to a simmer. Serve with basmati rice or mash.
INGREDIENTS
1 Tbsp sunflower oil
1 Onion, finely chopped
1 Garlic clove, finely chopped
1 Tsp ground coriander
1 Tsp ground cumin
1 Tsp ground turmeric
½ Tsp cayenne pepper
400g butternut squash, peeled and cut into 2cm (prepared weight)
400g can chopped tomato
1.2l chicken stock
1 Heaped tbsp mango chutney
300g red lentil
This is my fave recipe in Autumn and I cook it at least once a week’ Rosie
Small pack coriander, roughly chopped Naan bread, to serve
STEP 1
Put the oil and the onion in a saucepan and cook for 5 mins. Stir in the garlic and cook for a further 1 min, then stir in the spices and butternut squash. Combine everything together.
Tip in the chopped tomatoes, stock and chutney, and season well. Bring to the boil, then gently simmer for about 10 mins. Add the lentils and simmer for another 20 mins until the lentils and squash are tender. Stir in the coriander and serve with warmed naan bread.
STEP 1
Heat the oven to 180C/160C fan/gas 4. Cut the pumpkin into wedges or chunks (keep the skin on) and tip into a bowl. Put the garam masala, 1 tsp each of the coriander and cumin into a small bowl and mix with 2 tbsp of the oil and season. Drizzle over the pumpkin and toss well to coat in the spiced oil. Transfer to a baking tray, spread out evenly and roast for 40-45 mins, until the pumpkin is very soft when pierced with a fork. Leave to cool on the tray for a few minutes.
STEP 2
Heat the remaining 1 tbsp olive oil in a large saucepan and fry the onion with a pinch of salt for 10 mins until soft. Add the ginger, garlic and remaining spices and chilli flakes, and fry for a few more minutes until fragrant. Pour in the stock and bring to a gentle simmer.
STEP 3
When the pumpkin is cool enough to touch, use a spoon to scoop the soft flesh from the skins. Add the soft pumpkin to the stock pan, discarding the skins. Remove from the heat and blitz the soup with a hand blender until creamy and

Ginger, Peeled And Finely Chopped
2 Garlic Cloves, Finely Chopped
900ml Veg Stock
100ml Double Cream Or Crème Fraiche, Plus Extra To Serve

smooth. Season to taste, adding extra chilli or garam masala if you like. Put back over a low heat and stir in the cream. Bring to a gentle simmer, then serve in bowls with a drizzle more cream and a pinch of chilli to serve. Top with toasted pumpkin seeds, if you like.
STEP 1
Line a baking sheet with baking paper. Reserve a little of the beaten egg in a small bowl to glaze the pastry. Fry the onion and apple over a high heat for a few minutes. Lower the heat, cover the pan and leave to cook for about 15 minutes until softened. Remove the pan from the heat, transfer the onion and apple to a bowl and leave to cool. Add the sage, breadcrumbs, Stilton, mustard and the remaining egg to the onion and apple, season well and stir.
Place the pork on a board. Cover it with baking paper and bash with a wooden rolling pin in the thickest areas, until the fillet is the same thickness throughout. Keep it in a circular shape. Season the meat and spoon the filling mixture on top, spreading it out to cover the pork fillet completely.
Unroll the pastry and lay it on a floured work surface. Roll it out to make a rectangle that is big enough to encase the fillet. Place the pastry on the baking sheet. Put the fillet in the centre of the pastry and brush the pastry around the pork with egg. Slice the pastry extending from the pork into 2cm (3∕4in) strips. Fold these over to make a plait on top – just like you would plait hair – then trim away any extra leftover pastry. Chill for 30 minutes.
Preheat the oven to 220ºC/200ºC fan/Gas 7. Brush the plait with egg, then bake for 35-40 minutes. Cover the plait with foil if it is getting too brown. Rest for 10 minutes.

1 Dessert apple, peeled and chopped into tiny dice
1 Tbsp chopped sage
15g (1∕2oz) panko breadcrumbs
50g (2oz) stilton cheese, coarsely grated
1 Tsp grainy mustard
Large pork fillet, trimmed
375g (13oz) sheet of ready-rolled puff pastry
Plain flour, for dusting
Salt and freshly ground black pepper
200ml (7floz) white wine
300ml (10floz) double cream
50g (2oz) Stilton cheese, grated
1 tsp Dijon mustard
1 tbsp chopped parsley
STEP 5
Meanwhile, make the sauce. Pour the wine into a large pan and reduce by half over a high heat. Pour in the cream, bring to the boil and reduce a little. Add the Stilton and mustard. Season, then stir well, as the cheese may stick to the bottom. Stir in the parsley just before serving. Carve the pork into thin slices. Serve with the sauce and green vegetables.

cooking fish we had caught earlier that day and picking wild blueberries and redcurrants.

Add some hygge to your evening dog walk by bringing along a thermos full of delicious mulled cider, a delightfully warming Autumnal beverage.
In a large pan stir all the ingredients together apart from the orange slices, cover the pan with a lid and bring slowly up to a simmer, this will take about 10 minutes.
Once the cider is bubbling, turn off the heat, add the orange slices and leave the lid on to infuse for 5 minutes. Pour into heatproof glasses or mugs.
Garnish with the orange slices, and cinnamon sticks if you like
If you’d like to add even more warmth to your mulled cider,
Litre good dry cider, scrumpy is best for this
Tbsp light brown sugar
Bay leaves
Star anise
Cloves
Vanilla pod, halved lengthways
Cinnamon sticks, snapped in half
1 orange, plus 1 sliced
additional alcohols, such as sloe gin, calvados or brandy, can be added sparingly.
Mulled cider can be kept in a sealed jar in the fridge for up to 3 days. Gently reheat in a pan.
This scrumptious mocktail can be served warm or chilled and is tasty either way!
Place ginger, cinnamon stick and cloves into tea bag and pull drawstring tight.
Pour 4 cups of cranberry juice into a saucepan. Place the teabag of spices, orange juice and apple slices in pan.
Simmer over low heat for one hour.
Remove teabag of spices. Chill to serve cold over ice

½ Apple (Sliced)
1 Tsp Cloves
1 Cinnamon Stick
1 Piece Of Fresh Ginger (Size Of A Penny)

The outer layer is packed with Vitamin C and they are renowned for helping stave off Winter colds. They are good in wines, jellies, jams and can be used to make a delicately flavoured rosehip syrup for cordial.
Bullace fruits are similar to damsons and can be used to make crumbles, jams and fruit liqueurs like sloe gin. They tend to taste acidic until they’re ripe. This is a great late season fruit as it ripens up to six weeks later than many others from October to November.

Scrape off the outer brown skin to reveal the triangular seed. If you do collect more than a few, they can be used in a similar way to pine nuts, sprinkled on salads and risottos. Roast in the oven then place between two tea towels and rub to remove shells.
Chestnuts can be baked, roasted, boiled or microwaved. Remember to score a cross in them to stop them from exploding when they are cooked! Once cooked and peeled they can be eaten as they are or used in desserts and stuffings. You can also candy them, puree them or store them in syrup.
