“Learning stamps you with its moments.” Famed story-teller Eudora Welty penned that sentence in One Writer’s Beginnings, her eloquent recollections of how she became a writer. I think she’s right. The precise moment when you learn something often sticks with you. I can still feel the way my head seemed to burst into fire the moment I learned this valuable lesson as child: Duck when you ride a horse under a low branch. If you don’t, you will end up on the hard ground with your breath knocked clean out of you and a possible concussion. Oh, and your big brother will get in a whole heap of trouble for plopping his four-year-old sister on the horse in the first place. Stampable moments—also known as Aha! moments—can be scary, funny, accidental, or intentional, and they can change your life. Such was the case for Arthur Blackmore, featured in this month’s All About. As a child sitting in the audience at a junior boxing match, it hit him: If I become a boxer, I can be someone. He worked hard to achieve success and fame as a young boxer. But somewhere along the way, he also lost himself and veered down a dangerous, self-destructive path. Read about how another Aha! moment sent him back into the ring and down a more meaningful path, that of helping other youth experience stampable moments that will help them blaze their own paths to success. This month we also tell the stories of a square dance caller, a legislative chief of staff, a BBQ master, a lifeguard, and a woman who got a makeover she greatly deserved. We look at the old Snake Farm on IH35 in New Braunfels, and a kitchen in which a family gathers to make meals—and stampable moments—together. All of these stories point to the wonderful possibilities of summer, when we can seek Aha! moments by auditioning a new hobby, starting a new job, striking out on a vacation, or simply taking a day off. As you step into your summer, we hope you, too, are stamped by moments that teach you something valuable and lasting. Just keep an eye out for those low-hanging branches!

Tips from Award-winning Dale’s Essenhaus
I
t wasn’t until Dale Cockerell beat out more than a dozen other local teams to bring home the trophy for “Best Ribs” in the 2013 Walburg Invitational BBQ Cookout that he put pork ribs, brisket, and sausage on the menu at his restaurant, Dale’s Essenhaus in Walburg. Here, Dale’s offers helpful hints on mastering the variables, such as seasoning, temperature, and cooking time, that go into producing the finger-lickin’ good BBQ that area folks love. RUB IT IN While there are a variety of thoughts on the best way to lock in the flavor of meat, Dale prefers to use a rub. “We use a good combination of spices in our rub—salt,
black pepper, garlic powder, and cayenne pepper, topped off with a sprinkling of brown sugar after the rub has been applied, to make it not too sweet, not too spicy,” says restaurant manager Bonnie Warwick. The application of the spice rub depends on the meat. “For instance,” Bonnie continues, “we apply rub on the ribs and then let them sit in the cooler for a day to allow the flavors to soak in. About two hours into the
smoking process, we baste them with the same sauce we use for our BBQ sauce. Brisket doesn’t really soak in the flavors of the rub like the ribs do, so we apply rub to the brisket just before we put in the smoker, minus the basting,” adds Bonnie. The restaurant uses Black Angus briskets— tender, juicy, and flavorful cuts of meat.

A
nyone who has seen the hit television show Veep has an idea of the arduous climb one must undertake to become a politician’s chief of staff and the grueling hours that are required once the position has been attained. Suddenly, the chief of staff becomes a behind-thescenes mediator, problem solver, and sounding board, helping the politician turn stumbles into positives and constituents’ complaints into favorable votes.
Such is the life of twenty-sixyear-old Amy Rister, who has gone from volunteering her summers at the Texas State Capitol to a full-time position as chief of staff for Representative Tony Dale, District 136. At sixteen, “my plan was to become a lawyer,” recalls Amy, whose appreciation of the legal process dates back to her childhood days of watching Law and Order. “I thought an internship at the state capitol would look good on my résumé for law school.” Yet as she spent more time around legislators—landing an internship at the Williamson County DA’s office through her criminal justice class at Georgetown High School, interning at the governor’s office between her freshman and sophomore years in college, and eventually running several political campaigns—Amy’s interest shifted from corporate law to legislation.

“It wasn’t intentional at all, but I decided that I liked legislation more. I felt that I could make more of a difference,” she says. At age twenty, after four unpaid internships, she got her break: a paid job during legislative session as the legislative assistant for one of her role models, former Representative Beverly Woolley. “When I first started working for her, she was the chairman of the calendar committee, and I was told that she probably wouldn’t remember my name. But I was just happy to have my own desk!” Amy quips. Two short years later, Representative Woolley became speaker pro tempore, an appointment which not only boosted Representative Woolley’s status but also made Amy’s position more important. (And yes, the representative did learn Amy’s name.) “Her knowledge and passion were very inspiring to me, and I don’t think I would have had the opportunity to get to know her or even to meet her if I hadn’t worked for her,” Amy says. he’s on the floor. But those long work weeks are well worth it, she says, because “my boss has a passion for improving his own party and the state. I know that sounds corny, but helping him achieve his goals is really rewarding to me, and that makes me feel like I’m making a difference because I know that, ultimately, he’s going to make the right vote.”

Becoming a Dance Smith How Brad Caldwell found his calling
M
usic from the three-piece band spilled into the hall where young Brad Caldwell looked to best his friends in their board game. He and the other kids ignored the muffled laughter and the melodic voice gliding over the music—it was just another Saturday square dance for their parents. Little did Brad know that their world would one day become his world. “It wasn’t so much that I didn’t like it [square dancing]—I just thought it was something for my parents,” Brad recalls. He relegated square dancing to the “old people’s dance category”
until his young wife wanted to try something new. As they began to take square dancing classes, Brad’s decadesold opinion began to change. “Once I got involved and saw what it was, and took the time to listen, then it became interesting,” says Brad. But it wasn’t the dancing that really hooked his attention; it was the man at the front of the room calling the moves. Microphone in hand, the caller, Clay Hoge, crafted the enjoyment of others around him. Clay was a one-man show: directing the dance, singing here and there, and even cracking a few jokes to keep his dancers happy. The mix
ture of entertainment spoke to the natural performer in Brad. “I’ve been a performer all my life. I trained most of my life to be a caller and didn’t know it. I took acting classes when I was nine and ten years old. I’ve always sung. I’ve always been a class clown,” Brad explains. “And the way I tell a lot of my [square] dancers now is: I’m not a good enough actor to make it as an actor. I’m not a good enough singer to make it as a singer. I’m not a good enough comic to make it as a comedian. But I have just enough of each one of those things that I could be a really good square dance caller.” Clay saw Brad’s potential as a caller but made him gain the practical experience of dancing first. Brad spent over a year square dancing and learned the joyous complexities hidden within each move. While he turned on the dance floor, Brad studied his mentor’s mannerisms and presentation. When it came time to learn the art of calling, he was ready. Brad logged many nights at the kitchen table memorizing nearly 200 square dance calls with the

help of eight multicolored rectangular checkers. They represented the dancers in a group or “square.” Mimicking the moves each dancer would make, Brad continually worked his pieces until their movements flowed together like musical notes on the page. The more he understood the sheer possibilities inherent in combining various calls, the more Brad appreciated the artistry of such dancing. “Absolutely, it is an art form. Square dance is more of a language than a dance. It has a basis in logic, but the art comes into delivering it in such a way that it’s a new presentation, even though it’s the same old stuff in some cases,” Brad says. One way Brad keeps it fresh is the music. Unlike dancers in his parents’ day, Brad’s dancers promenade to a variety of music. Country and modern pop share the air with Elvis, the Beatles, Lynyrd Skynyrd, and even Ozzy Osbourne. Brad—ever the entertainer— also sings rousing impressions of Frank Sinatra, Willie Nelson, Ray Charles, and even Louie Armstrong while calling. Since 1988, Brad has called square dances in eighteen states at events
ranging from one-night dances to annual two-week-long square dance national conferences. He currently showcases his talents at the Sun City Sundancers’ weekly functions. But whether he’s on the road or just a short trip away from his next gig, Brad hopes to see more people embrace the dance he loves. “My generation hasn’t bought in yet. And honestly, things have changed
dramatically in our social environment from the time when square dance reached its heyday. In the late 1960s to mid-1970s, square dancing was huge. Was it sweeping the nation? No, but it was all over the nation,” Brad says. Brad may walk a tough road as he challenges square dancing’s misleading reputation as a moth-balled relic of the past, but he’s up to the task. Brad’s dream is to introduce square dancing to a new generation—his. Countless parents have or will soon send their newly-graduated youngsters off into the world, and then what? For years, their lives revolved around getting kids to early morning practices or cheering at late night games. Suddenly, the house is empty and the carpooling’s done. This past May, as Brad watched his last child graduate, he planned to coax these empty-nesters to the dance floor as well as to call dances across the country and even internationally. “The thing is, if you’re doing something that you love, then it’s not work. You may have to work at it, but it doesn’t feel the same as the drag on you when you’re doing something you really don’t enjoy. And calling is as natural to me as anything I could possibly do.”

Granny Goose Gets a Makeover

ucy Valdez spends her time caring for her retired husband, Lorenzo “Shorty” Valdez, her sister, two sons, four grandchildren, and anyone else she can reach. Friends and family call her “Granny Goose.” “You want to be at my house for Halloween,” she says. “I spend over three hundred dollars on good candy, hot dogs, nachos, and drinks. We sit outside and give away everything to whoever comes. I’ve been doing this for twenty-five years.” She thrives on giving, but sometimes giving catches up. After spending a long week in the hospital caring for Shorty, she felt and looked exhausted. She read Razmataz Salon’s offer on Facebook for a free makeover and replied, “I really need pampering.” Rachel Smith, salon owner, chose her after reading her story and seeing her picture.
Lucy walked into the salon in the middle of a care-taking shift for her sister—dressed in a scrub top, athletic pants, and tennis shoes, her graying hair gathered into a simple knot at the back of her head. She walked out with a look that better reflected her energetic personality.
1) WHAT LUCY WANTED: When her stylist, Jason, sat Lucy down to start on her hair, she couldn’t stop bouncing with excitement. “I don’t have anything in mind,” she said. “I’m here for a makeover, so you do your magic.”

“That’s what I wanted to hear,” Jason said, and took large sheers and swiftly chopped several inches of hair off.
2) HIGHLIGHTS AND COLOR: Grabbing tin foil and purple and blue tinted dyes, Jason started the new style with highlighting and dying. Once dry, the highlights would be a rich honey color over a deep brown.
They started with primer to smooth the face and help with the application of the foundation, a blend of two different colors to match Lucy’s skin perfectly. They set the foundation with a quick brush of powder all over.
3) TONER AND SHAMPOO: Jason massaged the toner into Lucy’s wet hair before shampooing. This helps soften and blend the color. “I don’t want her highlights to be too blond. I really want more of a honey color.”
4) THE CUT: After thinking over the style, Jason decided on a shoulder-length cut with lots of layers to frame and elongate Lucy’s face and create body and movement.
8) LIPSTICK AND BLUSH: A little lipstick and blush finish the make-up. 9) A GIFT TO GO: Rachel gave Lucy Redken Color Shampoo and Conditioner to maintain the color so that Lucy’s fabulous new look will last.
7) CONCEALER, EYE SHADOW, AND EYELINER: Rachel applied concealer to the lids of Lucy’s eyes to brighten and help the eye shadow stick. She used all-natural eye shadow tones. “We don’t want to use anything shiny for the pictures,” she said. “So we’re going for neutral browns and purples with a brown undertone.” When they finally let Lucy look at herself in the mirror, she cried. “I feel overwhelmed,” she said. “I definitely don’t look grandma-ish. I look more energetic—and I feel more energetic.” A vibrant look to match her loving personality—she deserves it.
5) BLOW DRY: Jason used two round brushes and started blow drying from the top down to build body. Then he set a few pieces of hair with hair spray. “I really like the way this style turned out, so I’m not doing much to it—just nipping and tucking here and there.” 6) FACIAL PRIMER AND FOUNDATION: After her hair was what Jason called “bullet proof,” Lucy moved to the make-up station. Jason and Rachel used Mirabella products to give Lucy a natural, flattering look.

From “labeled” to leader: How Arthur Blackmore overcame his past to help troubled youth

“S
trike three!” Bits of popcorn sailed through the air as bags suddenly became pom-poms. Young Arthur Blackmore struck out the final batter to win the game. Exhilarated, he searched for Dad in the stands. Then he remembered. It didn’t matter if Arthur Jr. was pitching, manning home plate, or playing third base—Arthur Blackmore, Sr. was an empty seat at every game. Even as a kid, Arthur knew that the man who busted his hump on the St. Louis streets for his wife and five kids punched out the moment he walked through the front door. Stony indifference kept Arthur Jr. at arm’s length as he tried to connect with his dad. How could he confide his hopes or the daily hell he faced being bullied at school? “My father wasn’t the most positive person for me to have as a mentor. What I do remember is that he would always be reading The Ring magazine,” says Arthur. One day, Arthur asked about the boxing magazine. Arthur Sr. laid it down and looked at his boy. “See, Arty?” Arthur Sr. said, pointing to the page. “This is Jersey Joe Walcott fighting Ezzard Charles.” Boxing’s greatest fights played out that night in the minds of father and son as Arthur Sr. shared his passion. He offered to take Arthur to see a friend’s son fight. “Next thing I know, I’m sitting at the fights with my dad, Starburst candy in one hand, popcorn in the other. First fight of the night, two little kids get in the ring and the lights went out. I was like, ‘Wow,
those little kids are my age. I want to be that,’” Arthur remembers. ALL GO, NO ANCHOR Arthur’s natural athletic ability and quick mind combined for a potent mix in the ring. Fueled by the desire to please his dad and coaches, Arthur barreled through eighty-nine fights, losing only six in three years. He won three consecutive titles in the Silver Gloves Regionals during that time—all by the age of fourteen. Outside the ring, life improved for Arthur as he gained the confidence to stand up for himself. He confronted the bullies at school, and they stopped bothering him. At home, Arthur went from overlooked middle child, sandwiched between four sisters, to the son who could do no wrong. “My dad was so proud I was a boxer. I’d go into a place where my father would be hanging out, and people would say, ‘That’s Arty! Your dad talks about you all the time,’” says Arthur. Even with all the attention, Arthur still felt a gnawing hole in his heart. Despite how proud his dad was, Arthur still lacked someone to show him the ropes of manhood. Parental neglect was replaced by uninhibited freedom. In the absence of guidance, Arthur drifted towards unhealthy friendships and a darker life. Instead of mowing lawns or delivering morning newspapers, eleven-year-old Arthur
began selling drugs. Hungry to emulate his older friends, he added stealing cars and burglary. To Arthur, their money and toughness equaled respect. “I learned how to make money as a kid because of what I’d see my father do as well. He was a booking agent— a bookie. He would come home and place a gun on the table and set a big wad of money next to it,” Arthur explains. Eventually, the boy with boxing dreams hardened into a calloused young man. “I had a lot of experience with people, with that kind of life, so before long I got desensitized to it and I got comfortable with it,” says Arthur. He spent most of his high school years bouncing from St. Louis to Illinois, in and out of institutions. But no matter where he was sent, he couldn’t seem to es-

Determined to rediscover himself, Arthur got back in the ring. In 1983, he won gold at the Pan Am Games. Three years later, Arthur claimed the Arizona Golden Gloves state title and turned professional. He fought for five years, with a 9–1 record in his first year.

n the early days, runners in Vern’s No Frills 5K looped through primitive campgrounds at Berry Springs Park and Preserve and then ran behind the dam before returning to a short concrete sidewalk. Without a paved path or clearly marked trail, runners not only encountered dirt and sometimes mud under the 300-acre park’s oak and pecan trees, but they also had to stick close to the lead runner to avoid getting lost. Today, the monthly “no frills” event, run on a 3.1 mile concrete course,
draws everyone from seasoned runners to folks pushing strollers and walking dogs. “You definitely needed to follow the leader at the beginning,” explains park manager Susan Blackledge, who remembers what the 5K course was like before the park extended the concrete sidewalk “all the way under IH35.” Now, she says, the course is “easy to follow and has mile markers. [Before that extension] runners would meet in the parking lot and run on the concrete until it ended and then run on mulched and mowed paths … like [in] cross country running. Runners were a muddy mess, but they seemed to enjoy the adventure.” Named for Vern Cantwell, a close friend of race founder Bill Schroeder, Vern’s No Frills 5K has become a favorite over the past five years among competitive and non-competitive participants. Free of charge to those under eighteen and only a dollar for adults, and

supported by sponsorships from the Georgetown Running Club (GRC), REI, Luke’s Locker, No Excuses Running, Luna Chix, and the Georgetown Taco Cabana, the low-cost event draws professional competitors, students, parents with children, and novice runners. “It’s always great to see the children running,” says Bill, who also serves as president of GRC. “Several times a year we have school buses from Belton, Temple, Leander, Pflugerville, [and] Round Rock pull up for the race.” For Bill, who designed the race based on similar events from his Cincinnati childhood, Vern’s 5K provides a simple way to support fitness. “The most important factor is that the course is certified,” he explains, “which means that it is exactly 3.1 miles. People can monitor their fitness … throughout the year on the same course. It’s memorable when I hear someone say they finish[ed] their first 5K or set a personal best time. I
the old barn.” Held every third Saturday, the race offers an opportunity to discover the park itself. “A lot of people who come to the race have never been here before,” Susan says. “They get to see the park from one end to the other—the pecan groves with their ninety-plus-year-old trees, the prairie restoration area, the nature trail head, and the main body of the park. It gives [people] an over-

Funds have helped pay for everything from seeds to signs. “The proceeds help with supporting the donkeys,” says Susan, “[and providing] seeds for the wildflower areas, a log splitter [for removing] fallen pecan limbs, new interpretive park maps [and] trail markers, and, this year, repairs to

tephanie Darimont’s love for aquatics dates back to childhood when, each summer, she’d fly to Illinois to spend time with her dad. Together they’d spend each day at the neighborhood pool or at the lake, splashing around and creating some of Stephanie’s fondest childhood memories. Now Stephanie experiences the joys of summertime aquatics
year-round: After six years directing aquatics in North Texas, in 2009 Stephanie made a home for herself here as Georgetown Parks and Recreation Department’s aquatics coordinator. Today, she oversees the six public pools and from fifty to ninety aquatics employees, depending on the season. Stephanie took time from her busy schedule to give the View a glimpse into her profession.

DID YOU ALWAYS WANT TO BE AN AQUATICS COORDINATOR? Originally, I was an elementary education major; I wanted to be a teacher. I didn’t even know there was a degree in recreation until my sophomore year in college. I was lifeguarding and teaching swim lessons, and one of my supervisors suggested that I major in it. So I did. I got my degree in recreation and leisure studies with a concentration in program man-
agement. To work in [the field of] parks and recreation, typically, we have degrees in that field. HOW MANY PEOPLE USE THE CITY’S POOLS EACH YEAR? Oh, my goodness—thousands. Last year alone, we had over 2,000 in swimming lessons. That, and there’s probably almost 1,000 more when you add up all of our swim teams: East View, Georgetown, Aquadillos, Texas Gold, our city swim teams in the summer, Gateway, the Masters program. And I can’t even put a number on our daily

pool visits; during the summer, it’s hundreds. WHAT TYPES OF SKILLS DO YOU TEACH YOUR LIFEGUARDS? There are a lot of things you learn in lifeguarding that you’ll use forever. I cannot tell you how many people have called me years after working for me—I’ve been an aquatics coordinator for ten years—saying they were a first responder at a car accident and helped on the scene. Or they saved someone in their family from choking.

More Than Snakes The old Snake Farm has a new name and mission BY

even years ago, when the New Braunfels Snake Farm was put up for sale, Dr. Eric Trager made a heart-felt decision: He would buy the run-down property and convert it into a reserve for the preservation of snakes and exotic animals. After years spent rescuing exotic animals that others had eagerly purchased before truly knowing what it takes to care for them, Eric knew that something must be done to prevent such unwise purchases. And while he didn’t know exactly how to go about building a zoo, his desire to solve the problem pushed him forward. “It was impossible for me to rescue every single one of those animals,” Eric says, recalling his thought process when he first bought the Snake Farm. “But if I could get the platform of a facility,
then I could start eliminating the problem through education.” Seven years later, that’s exactly what Animal World and Snake Farm Zoo is doing. In addition to purchasing twenty acres of surrounding land on which to expand its offerings, the attraction has been granted zoo accreditation, a stamp of approval by the Zoological Association of America that has boosted the zoo’s clout and allowed it to procure a diverse array of endangered species. Of course, visitors will still find the famous rattlesnake pit and terrarium-lined walls of snakes— more than 300 in total, including some of the most venomous snakes in the world—but the space has transformed since it first opened in 1967. Today the zoo is home to a variety of exotic animals from around the world— from hyenas and lemurs to white lions and camels. Each animal
is featured prominently, with a strong focus on educating people about the animals and their habitats. At many zoos, the keepers and trainers work quietly behind the scenes, but Animal World’s zookeepers roam the grounds, interacting with patrons and encouraging them to ask questions. Several times a day, they put on educational shows with the animals, providing opportunities for visitors to learn more about the animals and to watch them eat. “Our goal here is to reach every person in their soft spot,” says Jessica Darby, a zookeeper and animal trainer at Animal World. “One day, we’re going to reach that right kid or that right adult, and they’re going to be the ones who change everything—that help save the habitat and the natural environment for these guys.”

tan and Jennifer Mauldin settled their packs on their backs and set out for a hike down the San Gabriel River Trail. They walked six miles to test the packs’ weight in preparation for an upcoming trip to Spain, where they plan to walk the famed Camino de Santiago. “We’ll be walking fifteen to seventeen miles a day along the Camino and will have to take everything with us,” Stan says. “We’ll have one set of clothes to hike in and one set of clothes to change into to continue hiking.” The couple mastered light packing while traveling to Japan, Peru, and Europe, carrying one backpack each. “I’ve done the other way [with suitcases], and this is so much easier for me,” Jennifer says. “I just go. Put a pair of sunglasses on and go.” The first step to traveling light is to purchase a backpack that fits
comfortably and perfectly matches the hiker’s torso dimensions. Jen, who is petite, ordered a custommolded pack from REI so that the hip belt and straps fit snugly. Between trips, Jennifer keeps a list of everything she likes to pack in the bottom of her pack—eye pencil, mascara, lipstick, sandals, Gortex jacket, neck pillow, hat, and medication. For clothes, she usually folds four black shirts (a color that doesn’t show dirt), two pairs of pants, and night clothes into a compression pack that fits in the bottom of her backpack. She uses a plastic mat, complete with a how-to guide for tight storage, to fold the clothes. The couple stops along the way to wash clothes. “We ask the hotel where a washateria is, bring a drink, sit for a few hours, and then we’re off again,” Stan says. “When you’re traveling this

way, people don’t expect you to be glamorous,” Jen laughs. “But you hope that the hotel you stay at has a hairdryer!” Stan carefully plans their itinerary months before embarking. He consults Rick Steve’s guide books on European travel for history, hotel details, must-sees, and tickets that must be purchased ahead of time. Planning gives them the opportunity to look for cheap places that fit their needs and preferences—such as air conditioning, breakfast the next morning, and hairdryers. The spirit of backpacking, Jennifer points out, is one of simplicity and adventure. Backpackers take only what they need and count on finding the rest along the way.

Moms: Write It Down Reduce Stress by Journaling BY

fter my daughter was born I made a journal out of an old three-ring binder by filling the binder with colored paper. What I discovered from the quiet moments I spent writing in this journal was that getting my thoughts on paper helped bring clarity and reduced the stress caused by all the “what-if” concerns I had as a new mother. Whether you’re a new mom or a veteran, journaling is a healthy and low-cost option you can undertake to bring perspective to your thoughts and concerns. Transferring your thoughts to paper allows you to look at your feelings from a distance—
like moving a blurry page out to arm’s length so that the words become clearer and more concrete. Studies show that the act of journaling calms the mind and body and gives you an opportunity for reflection. “There’s been a tremendous amount of research showing that if people occasionally set aside fifteen or twenty minutes a day for a total of three to four days, and write about the deepest thoughts and feelings about the issues going on in their lives, it has beneficial effects on people’s mental and physical health. This has been found to be particularly beneficial for people undergoing transitions in their lives. There are very few things that would qualify more than having your first child,” says Dr. James W. Journal writing can be cathartic because you’re not writing for anyone but yourself. In my writing classes, I teach students to think of journaling as an unfiltered brain dump. In other words, journaling is about letting the thoughts flow without judgment, self-criticism, or editing. What you write is private (unless you decide to blog), just for you, your pen, and your paper. IN THE MOOD FOR JOURNALING Set aside a few uninterrupted minutes and find a comfortable spot. When the weather is mild, my favorite spot to journal is on the bench under a tree in my backyard. You might prefer to write while sitting at the kitchen table, while propped up on pillows on your couch, or while sipping a latte at your local coffee shop. Whether you use pen and paper or the blogging option, just get
started. It doesn’t matter whether you use an 89-cent composition book or an etched Italian leather journal. (Hint: Let your friends know you’re in the market for a nice journal. You just might receive one on your next birthday.) A three-ringed binder left over from your child’s school project will do. Or punch three holes down the side of that leftover scrapbooking paper in your craft cabinet and run ribbon or string through the holes. Use your favorite pen or pencil, or splurge on a new one just for journaling. If you’re wondering how you’ll find the time to journal, remember that you don’t have to journal every day. I journal when I find the time. Having a set time to journal can be helpful. I prefer to write in the morning before the house awakes. Your best time might be at night once the kids are put to bed or during a lunch break at work. Whether you journal every day or as the mood hits you, your journal can be a mother’s friend. Journaling can help you feel more hopeful while reducing the stress of keeping thoughts trapped in your head.

very so often, you’ll have a gut feeling—a pull towards something or someone. In that moment, you know in your heart that if you let it, life as you know it will irrevocably change. In books, these moments go by names like “crossroads,” “turning points,” or “critical moments.” They mark the point in the story when a hero—often an unwilling one—must choose between two paths: Will Cinderella go against her family’s wishes and attend the ball, or will she stay home and forever wonder what might have been? Will The Godfather’s Michael Corleone live out his days as a family outsider or assume the position of mafia boss? Will Atticus Finch turn a blind eye to injustice, in To Kill a Mockingbird, or risk his reputation to defend a man who has been wrongfully accused? We read these stories and root without hesitation for our protagonists to overcome obstacles like ego, evil, and villainy. If our
heroes must endure a harsher struggle for a brighter reward, we allow that they must make sacrifices. Moreover, rather than skipping ahead to the resolution, we engross ourselves in the story’s harsh battles and challenges. Yet when it comes to our own lives, how often do we pick the more comfortable option, forgoing long-term benefits in favor of short-term rewards? An example: Instead of introducing ourselves to new people who could make a difference in our lives, we stare down at our smartphones, answering emails and playing mobile games. Our own crossroad moments— or moments of truth, if you will— may not appear as pivotal as those in popular stories; but over time, these character-building decisions add up.

Recently, I was presented with a crossroads: I could enroll in Marie Forleo’s B-School, an eight-week Internet marketing program for creative entrepreneurs, in hopes that it would provide the opportunities and knowledge needed to fast-track my new business. Alternately, I could continue down the path I’d been on—cobbling together information from library books, free webinars, and affordable in-person events. If I chose the familiar path, I’d retain the thirty prepaid college hours left over from my Texas Guaranteed Tuition Plan and would be free to use the funds for graduate school someday. Meanwhile, the other path seemed to be more of a gamble. To afford the program, I’d have to cash out my graduate school nest egg for a course that would not provide me with a formal degree or certificate upon completion. However, after quite a bit of soul searching (read: research), I opted for the unfamiliar road—the road that prompted me to cash out my “graduate school security

Since I made that crucial decision to invest in myself and in my education, I’ve noticed a few huge changes in my life: For one, my thoughts are becoming less limit-
ing and more global. And two (and this is where the magic happens!), I’m not only clearer about what returns I want from my business, but I’m also clearer on what returns I want out of life. In choosing the path that would force change in my life, I opted to move past a central plot point in my life and turn a page in my story. And, to echo Robert Frost’s “The Road Not Taken,” that has made all the difference.

Putting Spin on the Ball
H
ere is a simple drill to help you put a little backspin on your ball. With your pitching wedge, stand over a ball and shift your weight a little to your front side. Then begin your backswing in slow motion. Stop at the top and observe the position of your club. You will see that it should be positioned to come down on a proper vertical plane, which is a must in order to get the club face into the right impact position. Restricting motion in the rest of your body, begin to slowly swing downward, keeping the weight on your front side. Feel the sensation
of your arms staying in front of (not behind) your body. Continue the slow-motion swing to the point of impact. You will want to see that your right hand has not passed over your left hand. Both hands need to be aligned, promoting a direct strike of the club face to the ball. Now repeat this exercise, speeding it up a bit. Be sure you are swinging down on the ball and not trying to flip your wrists in order to help it up! You will notice when you force yourself to swing down, the ball will have no choice but to trampoline back up. That is because you are now creating backspin. The reverse action would be to swing up on the ball, creating topspin. This will shorten your ball flight and will not hold on the green. Speed this drill up a little each time until you are at full speed. At this point, go back to your normal weight transfer starting with your weight centered, shifting it toward your back side, and then forward. Remember to hit down and through the ball!

More than just food on the plate
L
ately, my friends and family seem to start our conversations with “I know you’re busy, but…” They’re right. As a working mother of three with a heart of service, I have a calendar filled to the brim. Sometimes, carving out family down time is hard. But it’s important. That’s why as a professional chef and wellness advocate, I encourage my clients and subscribers to sit around the table with their loved ones, invite the kids into the kitchen, and open the door to neighbors and friends. Join me in putting away the unfinished paperwork, turning off the social media, and plugging into one another’s lives! Here are some ways to mix some down time with family time. • Ask your children or partner what kind of cooking activity they would like to try. Chinese? Pick out some brightly colored food boxes at the craft
store, along with some chopsticks. What about breakfast for dinner? Have the kids sketch out silly shapes for you to make out of pancake batter. • Delegate a part of the dish’s preparation to each family member. This way everyone takes part in the preparation and works toward a common goal. • Pretend to put on a cooking show. Take turns sitting in the “audience” and asking questions. We enjoy using our best French accents when playing the part of host or hostess. • Do a blind tasting with boys against girls, or mom and dad against kids. Use brown lunch sacks to hide ingredients and have the taster reach in to choose one to try. Make sure to use the blindfold safely!

Pint-Size Pizzas Ingredients: 4 mini bagels, split ¾ cup ricotta cheese ½ cup parmesan, shredded 1 garlic clove, minced Bocconcini mozzarella, about 20 balls, sliced in half 4 cups fresh spinach Olive oil for bagels Salt and pepper to taste Preparation: 1. Rinse and completely dry fresh spinach. 2. Set oven broiler to high. 3. In a bowl, combine ricotta, parmesan, salt, and pepper. 4. In a small sauté pan, cook minced garlic 30 seconds; then add fresh spinach. Cook until spinach is slightly wilted and remove from heat immediately. 5. Brush bagel halves with olive oil. Spread ricotta and parmesan mixture on top. 6. Place ¼ cup of spinach on top of the ricotta mixture, and then finish with 4 halves of bocconcini mozzarella. 7. Place on a cookie sheet or glass casserole dish and broil about 5 minutes, or until cheese is melted and beginning to turn a golden color. Serve immediately.
Sweet Potato Fries Ingredients: 2 pounds sweet potatoes 4 Tbsp vegetable oil Salt for seasoning Preparation: 1. Heat oven to 400° F. Line a cookie sheet with foil. 2. Wash sweet potatoes and pat dry; then peel. 3. Slice the potatoes into halves and then into quarters lengthwise. 4. Carefully slice each quarter into wedges ¼ to ½ inch wide. 5. Place the potato wedges on the baking sheet and drizzle them with vegetable oil. Make sure to gently toss the wedges so that the oil is distributed evenly. 6. Sprinkle with salt. 7. Bake for 30–45 minutes, depending on the thickness of the potato wedges. Serve hot for a crispy side dish!

Honey Chicken Drumsticks Ingredients: 1 Tbsp low sodium soy sauce ½ cup honey ¼ cup water 8 all-natural chicken drumsticks, skin on Salt and pepper to taste Preparation: 1. Preheat oven to 425° F. 2. In a bowl, combine soy sauce, honey, and water. 3. Rinse and pat dry drumsticks. Toss in the honey mixture and season with salt and pepper. 4. Place in a glass roasting dish and cook for 30 minutes, or until the meat begins to pull away from the bone. 5. Toss in pan juices right before serving.
Baked Cinnamon Apples Ingredients: 6 small Braeburn or red apples, cored, skin on ¼ cup brown sugar 1 Tbsp cinnamon 4 Tbsp butter 4 Tbsp honey 6 large cupcake liners Preparation: 1. Heat oven to 375° F. 2. Wash and core the apples. Slice a thin layer off the top of each apple. 3. Place each apple in a cupcake liner. 4. In a small saucepan, melt butter. Add honey and cinnamon. 5. Spoon 2 Tbsp of the honey and butter mixture into the center of each apple. 6. Place in a glass casserole dish or cupcake pan. Cook for 20–30 minutes until apples are soft. 7. Serve hot with a scoop of vanilla ice cream on the side!
