In this month of bluebonnets, birdsong, and blue skies, we’re talking Texan with Evelyn Billington, who was born in Germany but got here as soon as she could. She showed writer Tiffany White around her ranch, where she’s set up shop as an award-winning taxidermist and croons country music for her appearances as The Yodelin’ Cowgirl. If you’re hankering for ranch food, Laura and Gary Davis share some recipes from Davis Ranch in Andice that’ll have you going back for seconds. And you can “set a spell” and take in a performance by The Showmen Bluegrass Extraordinaire after reading Jana Hunter’s story about this band with a down-home flavor. The Only Rule: Inclusion

“My daughter is intellectually challenged. My son was born with muscular cerebral palsy and ADHD,” John Lorek says, a smile resting on his weather-beaten face. “We tried Special Olympics Texas, but they take only intellectual disabilities—not vision and physical. We tried The Miracle League, but they use a buddy system, and with my daughter’s intellectual disability, there is no way she would go out there with a stranger.” Every organization seemed to exclude somebody, so, five years ago, John started Central Texas Ability Sports (CTXAS), a charity with no rules. It includes all abilities and ages, even children with normal abilities who want in on the fun. The operation of CTXAS is simple. Every Saturday, participants play a game together, switching sports every quarter of the year. For example, fall is kickball season, and summer features golf clinics. Because the organization boasts of having no rules, the games take on a different look. During kickball season, John explains, the kids didn’t like playing outfield. They all just wanted to kick. “Instead of going out to play defense,” he says, “the players will wait up to fifteen minutes in line to kick the ball. It’s different, but it works for them.” CTXAS serves 120 children with disabilities and their siblings and parents. Recently, the group received funding, primarily from Chive Charities, to build a $350,000 sports complex in Hutto, featuring a multipurpose field that hosts most of the sports events. CTXAS has been so successful that John and his family were invited to speak in Washington, D.C., at the White House Summit and Commit to Inclusion Campaign in Oct of 2014. John has received calls from individuals across the country, asking for advice on how to start an all-ability nonprofit. Sarah Beckman, office of civic engagement at Southwestern University, has helped connect students to CTXAS for the past four years. On the third Saturday of every month, birders both experienced and novice flock to Hornsby Bend’s free birding fieldtrip for a healthy dose of nature, adventure, and awe. On these select Saturdays, even late risers become early birds for a chance to escape urban living and enjoy one of Central Texas’ premier birding sites. The trip departs from the Center for Environmental Research in southeast Austin at 7:30 and lasts until 11, promising participants a minimum sighting of 50 species per expedition. Because of Hornsby Bend’s vast and varied environment—1,200 acres of ponds, trails, and rivers—many participants leave the tour having identified far more than 50 bird species and perhaps having caught glimpses of rabbits or armadillos to boot.

In fact, since the Austin Water Utility’s Center for Environmental Research opened the site to birders in 1959, more than 600 bird species have been chronicled, including Central Texas rarities like the Royal Tern, an orange-billed seabird typically found along ocean beaches, and the Ferruginous Hawk, the largest American hawk. The site serves as a flyway for many migratory birds and home to many resident species, explained Matt, my experienced guide on a recent field trip to Hornsby Bend. These characteristics, along with Hornsby Bend’s varied habitats, have drawn an incalculable number of birds—and birders—to its premises. On a recent hike through Hornsby Bend, my group was lucky enough to encounter an Osprey perched atop a branch, making a meal of a fish. Matt explained that the large, rangy hawk is one of the top avian predators spotted at Hornsby Bend; and, I’ll admit, one look through the scope at its long, sharp talons confirmed that the bird is not to be trifled with. Then there was the Loggerhead Shrike, perhaps the most mysterious

bird I saw that day. The petite, whitebellied bird wore an air of intrigue, complete with a gray back, accents of black on its wings and tail, and a black, Zorro-like mask over its eyes. By the end of my trip, I too had spotted more than 50 species of birds, including Lincoln’s Sparrow, the American Wigeon, and the Rubycrowned Kinglet. (I’d also observed a pack of hungry feral hogs and a bathing nutria.) The selection of species differs, depending on the season and migratory patterns. But rest assured: Birders who tour Hornsby Bend are in for a treat. – Rachel Brownlow Lund

Powerful Despite Parkinson’s It’s the fourth Thursday of the month, and Mary Jane Berry greets people arriving for a Georgetown Area Parkinson’s Disease Support Group meeting. She offers hugs and refreshments and gives new members a tour of the group’s free mobile library. “Most of the time, I can identify when someone is new,” says Mary Jane, who first attended as a caregiver of her husband, Dave, when he was diagnosed with Parkinson’s disease. The dramatic evacuation of Saigon took place 40 years ago this month. Bill Kelberlau was there— and he remembers it all.

It’s been forty years, but retired Navy Captain Bill Kelberlau still remembers the day in April 1975 when the USS Hancock (CVA19) was transformed from an old World War II aircraft carrier to a floating refuge. The Vietnam War had officially ended two years prior with the Paris Peace Accords. But the fighting continued between the North and South Vietnamese. Without U.S. military and financial support, the South crumbled. Eventually Saigon, the South’s capital city, was surrounded by North Vietnamese eager to destroy the remaining government and those loyal to them. The USS Hancock and other support vessels were stationed off the coast in the South China Sea, ready to evacuate U.S. embassy personnel and Southern officials. Plans for a safe, calm evacuation had been in place for days, but the order from Washington was de-

layed—Bill knew that sometimes politicians don’t make quick decisions. The USS Hancock was finally given the “Go” order as Saigon began to fall. “Here we were on April 29th and all hell broke loose,” Bill remembers. “It was basically an eighteen-hour operation—one chance, no return. [Our pilots] had one shot to get in there, do what they could, and get out.” The roar of Marine H53 helicopter engines punctured the balmy, clear sky, landing in sporadic waves to unload passengers quickly on the flight deck. Highly trained sailors and Marines made the adrenaline-soaked process a fairly smooth one. Clear the deck. Land. Unload. Leave. Repeat. and operational intelligence, went up for fresh air and witnessed the tragedy of people saying a sudden goodbye to their homeland. Those who fled to the U.S. embassy in hope of evacuation now stood in lines on the flight deck. Most were women whose husbands didn’t make it out. They held only a suitcase or a child’s hand as they waited to be processed before going below to the hangar deck. In the mounting desperation to escape the coming massacre, South Vietnamese pilots loaded their Huey helicopters and headed for the USS Hancock. The pictures some of Bill’s staff took of sailors pushing those helicopters overboard to make room for more to land became stark public images of the tragedy. At day’s end, the USS Hancock—a “floating city” normally inhabited by 4,000 people—made room for 2,000 more on the eight-hundred-foot-long hangar deck normally reserved for aircraft. “The predominant smell on the hangar deck is diesel. These peo32

The USS Hancock was a part of Operation Frequent Wind—a final phase of evacuations of U.S. personnel and at-risk Southern loyalists. On April 29–30th, approximately 1,300 Americans and 5,600 South Vietnamese and third-country nationals were rescued by helicopters. In total, nearly 130,000 Vietnamese refugees were evacuated to the U.S. ple were living on the hangar deck until we got them to the Philippines,” Bill explains. “It would be like camping out on a tarmac at DFW [airport], where they refuel all the planes, for two days.” The crew’s mission suddenly shifted from rescue to caring for their new shipmates. The galley churned out meals twenty-four hours a day. Medical staff saw to the refugees’ health needs. Even the ship’s band played music in the background. Bill was assigned down among the refugees for crowd control.

“It was mindboggling to see all these poor people that had just been thrown out of their country and had no idea what was going to happen to them,” Bill recalls. Two days later, the USS Hancock arrived in the Philippines, and the refugees began the process of rebuilding their lives. “The good part is that all these people, once they got to the States, the vast majority of them got a new life,” Bill says. “They got the freedom and liberties that the war tried to give them in their own country.”

Life in a ranch house up in the Texas Hill Country suits Evelyn Billington. Rustic handmade furniture surrounds a well-used fireplace; there’s a guitar tucked nearby. Mounted animals are the predominant decor. There’s a bobcat crouching on the mantle and even a coyote hiding under the television. Just off the porch, cattle and a handful of horses roam the rugged terrain next to the shops Evelyn and her husband, Mike, built. Some might think she’s an ordinary country gal, but they’d be wrong.

Evelyn grew up in Zuzenhausen, Germany. About an hour south of Frankfurt, the small village is surrounded by fields and forests—ample space for a tomboy who loved the outdoors. The wild and untamed landscape gave Evelyn a taste of where her young heart truly desired to be—Texas. “Ever since I was a little kid, I loved watching Roy Rogers’ movies. I wanted to have a pony and a cowboy hat and sing western songs. I fantasized about being a cowgirl,” Evelyn explains. “I always told my parents—even when I was six years old—‘I’m going to move to Texas, and I’m going to be a cowgirl.’” That fantasy wasn’t the only one lived out in the woods. Under the forest canopy, Evelyn pretended to be a paleontologist. She searched for dead animals among the fallen leaves, knowing that although they were deceased, their bodies still held secrets. The animals Evelyn found, she brought back home—much to the chagrin of her parents. “I was into bones and recreating skeletons,” she recalls. “My

parents were really wondering what kind of a maniac they adopted out of the orphanage, [a girl who] buries dead animals and then digs them back up a few months later and puts the skeletons together.” It wasn’t until adulthood that Evelyn would realize her dreams in completely unexpected ways.

THAT’S MS. TAXIDERMIST At eighteen, Evelyn married an American soldier—a Texan—and said auf Wiedersehen to Germany. The army whirlwind finally set them down in Killeen, where Evelyn joined the police force. In November 1994, Evelyn did what many police officers do to help with the bills: She took a side job. Two of her fellow officers ran a taxidermy shop. When Evelyn stepped inside, she was surrounded by animals frozen in time. Evelyn remembers that first encounter: “Taxidermy was kind of like, ‘Wow, they’re recreating animals that were dead.’ I wondered how they did that.” For the girl from Zuzenhausen, having the chance to resurrect her woodland creatures and bring their form back to a semblance of life was an opportunity she couldn’t pass up. So began her apprenticeship. Evelyn learned the steps to preparing the hides, adjusting the plastic forms that the tanned hide would cover, and most importantly, using an art40

ist’s touch on the minutest details to give animals a lifelike appearance. “The best way to learn taxidermy is through an apprenticeship as well as joining your state and national organization, going to seminars, and hands-on classes,” Evelyn explains. In 1997, Evelyn, newly remarried and living in Georgetown, ventured out full-time into her own taxidermy business, Billington Ranch Taxidermy. She built her reputation one custom piece at a time. But the journey wasn’t a smooth ride. Evelyn faced an uphill battle in a predominantly male line of work. Countless times customers called asking for the taxidermist, thinking she was the secretary. It wasn’t other taxidermists she had to convince of her skills—it was the hunters. And convince them she did. Evelyn captured the title of National Champion in Reptiles and the National Award in Excellence at the 2004 National Taxidermists Association Competition. Over the years, she accumulated many other awards. As her reputation for quality work has spread, she doesn’t get mistaken for the secretary anymore. “It’s starting to change, but it’s still a male-dominated industry. But there are more and more women, and some of the best taxidermists in the world are actually women,” says Evelyn. “We’re slowly but surely starting to make our stand in the industry.” She also taught her husband, Mike, the business. He brought his artistic talents as a custom jeweler and

sculptor to the fine detailing necessary for the finishing touches as well as for creating the habitat the animal is mounted on. Together, they’ve created all manner of creatures, from a tiny field mouse to foxes, various birds, reptiles, and more traditional deer mounts. This past December, they finished their biggest project thus far: mounting a full-size African lioness and waterbuck. “The most fulfilling part is being able to recreate that animal as lifelike as it was,” Evelyn says.

A YODELING COWGIRL Working up in her shop, surrounded by wilderness and livestock, Evelyn is the cowgirl she always wanted to be. She rounds out the image when she starts to sing. “Just about 12 years ago when I started picking up the guitar, I came across a Patsy Montana CD. All I wanted to do was learn some cowboy 42

songs,” Evelyn remembers. “I had no clue she was going to yodel in it.” Growing up in Germany, Evelyn often heard yodeling in traditional folk music. “I never liked [yodeling]; I didn’t care for it. I always thought it was kind of lame,” Evelyn says. But the old-country sound of Patsy Montana hit a nostalgic note inside Evelyn. Here was the music from her childhood dreams. And as she began to learn yodeling, she gained a new appreciation for the skill. “With yodeling, can do so many things; you can go up and down with your voice, really play around with it. You can make it up as you go—it’s wide open for improvisation,” says Evelyn. But practicing during those first few months, in a ranch house with vaulted ceilings, was rough. “It’s pretty horrible when you first start. Yodeling is not something you can practice quietly.” She began performing locally at

private parties and farmers markets and has been a regular face at the Chisholm Trail Festival for the past ten years. While Evelyn sings all kinds of country music, it’s the old yodeling country songs that get the greatest reaction from audiences— especially children. “A lot of these kids have never heard it, and when you see their faces—it’s amazement. It’s almost like you’re reaching a new generation that appreciates what their great-grandparents did,” Evelyn explains. “I’m a part of keeping that kind of music alive and going for the youngsters who have never been exposed to it.” Evelyn Billington isn’t a typical cowgirl. She’s an award-winning taxidermist. She belts out tunes that transport audiences back to the golden age of country music. No, Evelyn’s more than an ordinary cowgirl—she’s a Texas cowgirl.

As water woes force homeowners to rethink their landscaping, “nativescaping” is catching on. Two Georgetown residents show just how practical, easy, and gorgeous nativescapes can be. By Meg Moring

“It was nothing but weeds and one rosebush.” In 1995, when Winnie Bowen bought her Georgetown house, that was the state of her backyard. She could easily have replaced ugly weeds with a plain green lawn like the others in her neighborhood, but Winnie, who’s seen the world as a seasoned traveler, took a different path. She hired a man to shape the bones of a new yard: meandering crushed granite paths studded with natural stepping stones, curving beds rimmed with sturdy steel edging, and a slight berm. Then she got to work planting a yard that could survive while she was away—sometimes for weeks—and still look good. “I made some mistakes,” she confesses, but today her backyard blooms mostly with native, drought-tolerant plants. After Winnie became a Master Naturalist in 2010, she set her sights on transforming her all-grass front yard in the same way. Today, the 82-yearold enjoys a completely grass-free yard that requires little maintenance other than a session each spring and fall for raking, trimming, and adding a little mulch. Other than that, she says, “it takes an hour a week” at most to keep the yard looking beautiful in the summer. “You have to stay flexible,” Winnie adds. “Trees grow, sun becomes shade. If you make a mistake, simply dig the plant up and move it, give it away, or toss it.” Randy Pensabene, a member of the Williamson County chapter of the Texas Native Plant Society, moved into the Sun City home she shares with her husband in 2005. By 2006 she was ripping out the water guzzling, cookie-cutter green lawn, invasive exotic plants, and small, rounded shrubs Randy calls “meatballs.”

While beautiful, native plants also nurture wildlife like birds and beneficial insects. “They use native plants not only for food, but for cover, for laying eggs, and raising their young,” Randy explains. Now, her yard boasts dozens of native plants with colors, scents, and textures that delight year round. And, says Randy, “I’ll match my water bill against anyone’s [with a yard of] rocks and cactus.” The Pensabenes’ water bill averages 5,000 gallons per month over a year (according to the EPA, American families average 400 gallons per day—that’s about 12,000 gallons per month). Native plants, Randy points out, “will get leggy and not bloom as much if they get too much water.” They don’t require pesticides or fertilizers, either. “I may throw around a little compost now and then,” she says, but that’s it. As water usage in Texas punches political hot buttons, more and more homeowners are looking into nativescaping—transforming their watercraving, high-maintenance lawns into drought-tolerant, low-maintenance yards using native plants. Winnie and Randy demonstrate that homeowners can achieve eye-popping beauty and design delightfully personalized yards.

Randy also recommends Native Texas Plants: Landscaping Region by Region by Sally Wasowski and Andy Wasowski. “If you hire a landscaper,” Randy warns, “be sure you tell them you want only native plants,” and if you or they are consulting the City of Austin Grow Green Guide, then read it carefully; the plants recommended are not all native to Texas, and some are considered invasive.

Considering a makeover for your yard? Here are how-to tips for putting in a yard that will require minimal water and maintenance yet delight the eye.

1. REMOVE ALL INVA SIVE EXOTIC PLANTS. Invasives include plants like Chinaberry trees, English ivy, Japanese honeysuckle, vincas, and wisterias. For a list of such plants, go to http://www.srs. fs.usda.gov/pubs/gtr/ gtr_srs062/.

2. DRAW A PLAN. Randy used SmartDraw software to map her entire yard to scale, and she updates it as she adds new plants or entire beds to her yard. Handdrawn plans work fine, too. “There’s no need to hire an architect,” Winnie says. “Just draw a simple design and stay flexible” because yards change over time as trees mature, sunny spots become shady, etc.

3. REMOVE AS MUCH GRASS AS POSSIBLE. “Consider adding more plant beds, sidewalks, or patios to reduce your grass areas because grass is high water use and high maintenance. Grass is a barren monoculture with no benefit to wildlife,” Randy says.

4. FOCUS ON ONE BED AT A TIME. It’s easiest to clear the entire bed, but any healthy native or non-in-

Winnie’s yard is customized with art and objects that hold special meaning for her, like her re-creation of an inuksuk, an Inuit sculpture in the image of man that points to food and water. She saw these sculptures on her travels in Canada and Alaska.

The Showmen Bluegrass Extraordinaire personifies the music’s heritage with genteel charm.

It sneaks up on you, the way bright green leaves appear on trees in springtime. One minute you’re sauntering absent-mindedly through Georgetown Market Days, taking in the wares, smells, and sunshine. Then you notice your head nodding, your toes tapping, and your face smiling as you listen to The Showmen Bluegrass Extraordinaire display mastery of their genre and tell stories that reveal an innocently mischievous side. Such is the vibe bluegrass music gifts to virtually everyone within ear’s reach of its lively pace, distinctive harmonies, and old-fashioned array of acoustic stringed instruments that take turns leading and accompanying the melody. Less obvious than the mood lift to the passerby is the genre’s extemporaneous nature. Just how much of the music during a show is improvised? “Most of it,” says Bill Lloyd, the group’s banjoist. “Ben [Buchanan, the lead vocalist] will say, ‘I’m going to sing this in G.’ While I’m playing the first verse, I’m thinking of my break, which I’ll play during the chorus.” The band completes the genuine atmosphere with their matching jackets—the lead vocalist’s is light gray, the rest wear black—blue jeans, and black shoes, happily transporting listeners back six decades. Bluegrass is both one of the oldest and youngest styles of American music. Immigrants from Scotland,

Ireland, and England brought with them dance music and ballads in the 1600s, planting the original seeds. In the orchard of musical styles, the American Folk family tree of the early 1900s provided the trunk for roots music, from which grew bluegrass and other subgenres such as country, gospel, and blues. But bluegrass didn’t start to stake its claim as the music of Appalachia until Bill and Charlie Monroe began harmonizing and playing their mandolin and guitar, respectively, in the 1920s. Their split led to the formation of Bill Monroe and the Blue Grass Boys, the name a nod to Monroe’s home state of Kentucky. Earl Scruggs, with his three-finger style of

picking the banjo, joined the band in 1945, leading to the sound and style that became known in the 1950s as bluegrass music. Traditional bluegrass sounds today much like it did then, though subgenres such as progressive bluegrass (with electric instruments), bluegrass gospel (with Christian lyrics and fourpart harmony), and neo-bluegrass (with more than one lead singer) have emerged. “Everyone wants to play bluegrass,” says Lloyd, a native of Annandale, Virginia, in his Appalachian inflection. “You can’t make any money at it, but everyone wants to play it.” While that statement may be biased, perhaps it explains why the

genre has remained so pure while rock and roll and country have morphed into completely different musical styles. “When you hear the pop and rock that’s being played now, there is so much going on,” says fiddler Justin Farrow, a Georgetown resident from south Austin. “To me, bluegrass is a simpler, clean sound that still has a lot of soul and depth to it.” Bluegrass musicians play for the love of the culture, the sound, and the somehow natural dichotomy of individuality and teamwork it requires. “I played country for several years,” says Ben, whose musical career began in a church band when he was 10 years old in the foothills of the Smoky Mountains. “But I got tired of the honky-tonks and night life. I came back to bluegrass because it is wholesome.” Doug Taylor, an Oklahoma native who started playing folk music in 1966 but converted to bluegrass because of the movie Deliverance, agrees. “It’s the people of bluegrass—honest, straight-shooters—that’s why I love it,” he says. “We’re all so passionate about it, almost evangelical.” Unlike the subtle way the music grabs the unsuspecting soul, there’s no question that the members of The Showmen Bluegrass Extraordinaire embody their music’s culture. The sword—the one they use to knight the fifth-graders—is real. The knight or lady conferring knighthood is real, too, or at least so it seems to the students when they compare them to their teachers and principal, who are merely dressed up as gentlemen and ladies of the court for the ceremony. EarlyAct FirstKnight® (EAFK) is a proprietary program of The Knights of The Guild that works to build character in children by teaching ten traits: compassion, confidence, discipline, friendliness, honesty, perseverance, respect, responsibility, service, and tolerance. Students study a trait across subjects for several weeks through short lessons, stories, books, and games. By the end of the segment, the students know the ins and outs of that trait. “We don’t just give them the definition,” says Melanie Griffin, a fifthgrade teacher at Mitchell Elementary School. “We say, ‘This is what it looks like. This is how you do it. This is how it makes people feel. This is how it makes you feel.’ Then we create the time and place for them to practice.” The teachers, in some cases with the students’ help, determine who most exemplifies that trait during the segment. Each winner receives a medal at the ceremony, during which

the principal reads the teacher’s accolade describing the winner. The fifthgrade winners also are knighted. “It’s a way to focus on their strengths,” Griffin says. “And our students are really proud of each other. It’s neat to see them be excited for a classmate.” The tears—the ones streaming down the student’s face when he won a medal at a ceremony this past February—were real. “He probably didn’t expect to ever win a medal,” explains Rob Dyer, Mitchell’s principal. “Academics weren’t necessarily his strength, but there are other areas he’s really

strong in. His parents told me he’s continuing to do well. It was a turning point for him.” Because of the generosity of the Rotary Club of Georgetown, Mitchell’s 755 students have participated in EAFK for three years. Matching funds were also provided by Rotary District 5870 and Rotary International. The club raised funds to add the program at Williams Elementary last year and Ford Elementary this year. “By the end of the first semester, you could see the change in kids and in the culture of our school,” Dyer says. “You create role models, you recognize those kids for being role

models, and you hope that other kids will emulate that.” The cost per school breaks down to between a nickel and a dime per student per day. “I think it’s a pretty small price to pay for what we’re getting out of it,” Dyer says. The impact—on each student, the entire student body, and the staff—is real, too. It’s present, for example, in the advice of a first-grade winner of the friendliness medal: “Be nice, and if you can’t be nice, at least don’t be mean”—wise words for children and adults alike.

hat I am seeing lately is a lot of my students coming in with the thought of turning only their shoulders when they swing. With this thought in mind, they are not making a proper weight transfer and are just pulling their hands behind their shoulder on a very flat plane and laid-off position. This can be a disaster! Always remember that when your hands are kept in front of you, you are in control – behind you, you are out of control. In order to not let this happen, think of keeping your head over the ball and then think of turning your left shoulder under your chin on your backswing. Remember to let your weight transfer from the left side to the right side. Do not let your right leg straighten behind you and keep your knees flexed!

Get the feeling of planting your weight on the inside of your right foot. Now push that foot toward your target to initiate your downswing while turning your hips. Remember the downswing starts at the ground, not from the top with your hands. On your follow through you should feel like you are hitting against a wall but you should never lean into the wall with either your upper or your lower body. You should now be standing with most of your weight on the outside of your left foot and barely any weight on your right toe. Make sure your shoulders and hips are square to the target and that your upper body is not leaning way over your lower body. (Remember the mirror drill) Always get your right shoulder closer to the target than your left shoulder. Remember, left shoulder under your chin on your backswing and right shoulder under your chin at impact.

Smoked and Grilled Ribeye Steaks

Ingredients: Ribeye steaks cut ¾-inch thick Sea salt Course black pepper

generation ranchers in the Andice area, offer these simple yet flavor-rich recipes for a ranch-style dinner.

Preparation: 1. Season steaks with salt and freshly ground black pepper. 2. Smoke the steaks at 225° F over oak, hickory, or pecan wood. Remove steaks from the smoker when an internal meat temperature of 120° to 125° is reached. 3. Sear steaks for 60 seconds on each side over a hot grill (450° to 500°). 4. Double wrap steaks in aluminum foil and hold for 3 minutes. 5. Remove steaks from foil and slice into one-inch strips. Serve family style.

Baked Beans Ingredients: 1 55-oz. can of Bush’s Baked Beans, original flavor 3 Tbsp molasses ½ cup brown sugar ⁄ cup chopped onions 4 Tbsp BBQ sauce ½ cup water Preparation: 1. Strain beans and wash away the canned juice. 2. In a bowl, mix beans with molasses, brown sugar, chopped onions, BBQ sauce, and water. 3. Place beans in a disposable aluminum tray. 4. Smoke for 1 hour at 225° to 250° F over oak, hickory, or pecan wood. Stir every 30 minutes.

Olive Cheese Puffs Ingredients: ½ stick of butter 1 cup grated cheese ¾ tsp seasoning salt ½ cup flour 1 jar green stuffed olives Preparation: 1. Blend butter, cheese, and seasoning salt. 2. Add flour and mix. 3. Wrap 1 Tbsp dough around each olive. Place on greased baking sheet. 4. Preheat oven to 400° F. Bake for 10 to 15 minutes until browned.

Banana Pudding Ingredients: 2 large boxes of instant vanilla pudding 4 cups milk 1 cup sugar 8 oz. sour cream 12 oz. whipped topping (such as Cool Whip) 6 to 8 bananas, sliced into rounds 1 box vanilla wafers Preparation: 1. Mix pudding, milk, and sugar until thick. 2. Add sour cream, cool whip, and mix. 3. Add sliced bananas. 4. Line sides and bottom of pan with vanilla wafers. 5. Pour pudding in pan. 6. Layer wafers on top of pudding. 7. Chill for one hour. 84

At the Wagon

A

pril in Texas means spring roundup for most cattle ranches, one of my favorite events to photograph. Even today, ranch cowboys gather for all meals at a chuck wagon and camp in teepees until the spring roundup, which sometimes lasts for weeks or months, is over. The chuck wagon stores goods like flour, sugar, and cooking utensils. The cook folds down a countertop for room to prep the food before it’s cooked on an open fire. This seemingly archaic method is a convenient way to feed cowboys for weeks on vast ranches, since the nearest restaurant is miles away and ranch headquarters can be a long drive from camp. Pinto beans at every meal, sausage jambalaya, hamburger steaks with mushroom gravy, asado, and cherry cobbler provide necessary calories for long days of roping and doctoring calves. On this photo shoot, the wagon cook’s camp bread recipe, with ingredients like “two fistfuls of sugar” and “a half scoop of lard,” made one of the best breads I’ve ever tasted. The day I returned home that April, I had lunch with friends at Monument Cafe. For a moment my mind wandered from the conversation. I looked around the crowded restaurant and thought about the open space I’d just come from, populated only by cattle and a few people. It was hard to believe that only hours prior I was sitting at the wagon in the middle of vast west Texas pastureland, holding a plate of asado, tortillas, and beans and watching a beautiful sunset. – Carol Hutchison

The Story Behind Our ‘Crown-Paw’ Logo In the Fall of 2006, Zoot Pet Hospital + Luxury Boarding was only an idea that had existed inside two people’s heads. Around that time, Jim Root and Dr. Wayne Zeh -- friends since childhood -- were finally ready to bring their idea to life. They began putting their plans of a first-class veterinary clinic with suite-style boarding into motion. After extensive research of markets and cities across Texas, they determined that the northern Austin community of Georgetown was the place to set up their pet hospital. With Jim’s corporate background in marketing and sales, he knew their new clinic would need to quickly make a big splash in the community to attract pet owners. Jim decided to seek out excellent advertising help, just down the road -- at The University of Texas at Austin, whose Advertising program is ranked No. 1 in the country. And since Wayne went to UT for undergrad, he knew firsthand that they would get to work with some of the best. Jim contacted Sean Thompson, an advertising professional and Senior Lecturer at UT with many years of experience in the industry. Sean Jim and Dr. Zeh with UT students took the “Zoot project” to a classroom of students. Their objective? Build the Zoot brand that would strongly resonate with the Georgetown community and attract new clients. The students delivered outstanding results, living up to the UT Advertising program’s top reputation. Zoot Hospital + Luxury Boarding needed an elegant logo that conveyed both the “pet” and the “luxury” together. Thus, a crown was drawn into a dog’s pawprint. This logo, along with the warm color palette the students chose, created a brand identity that made an instant emotional connection with pet owners. The Zoot brand has been loved by area residents ever since!
