t’s 2018, and we’re all excited to be getting another chance to do better. Be better. Live better.

In the spirit of New Year Resolutions, our business club chairman decided to pair us up, so each of us would have someone to account their business resolutions to. While many of us had elaborate lists of what they were going to do differently, my partner only had one. He said, “Harriet, I don’t want to be the life support machine of my company anymore. If I can put an end to this culture we’ve created, I will consider this year a great success.” What a profound statement. It still has me thinking as I write this. Think about it. Would your business survive without you? And for how long? Forget business. What about your family and the relationships you’ve forged? Initiatives that you’re driving?

The Right Attitude

D

ari means canopy in Swahili. A few of our Kikuyu friends who remember Singer Kamaru’s songs are convinced that Dari refers to Darling. The same word means home in Arabic. And in the Persian language called Farsi, there is a classical variant they call Dari. They claim that when we go to heaven, we will all speak Dari. Whatever it means, Dari is not far from what we can refer to as paradise. Villa Raymond The time of our lives in Diani Y

ou can go by a 45 minutes flight. You can easily drive. You can come by SGR. But now, convenience is no longer the only reason to pick Diani for your next holiday- our newly discovered luxury holiday villa is.

To be fair, Villa Raymond isn’t exactly new. And it’s no secret spot, either; the incredible reviews on Trip Advisor clearly show it’s a favourite for many holiday makers. But this stunning holiday villa we recently visited has gotten a complete luxury overhaul, and it’s now at the top of our preferred holiday villas in Diani. A couple of months ago, we touched base with Anita, a lady whose company provides more luxurious hospitality than anything I’ve experienced. Her invitation led to six members of the Karen Inside Out team on SGR (for the first time for all of us), that weekend. The experience was way better than the online SGR reviews we had read. Pick up was organised, the drive was smooth and we arrived just in time. It was sunset. I watched with an unwavering gaze, as the perfect disc shaped sun dyed the heavens first orange, then red, then dark blue. The pool water gleamed in the last rays of


the dying sun. It was magical. I found myself staring at the lustrous grounds and the tasteful villa, basking in warm rays and colour. The manager, Boniface, and Ruwa (the chef), were absolute stars from the word go. While Ruwa was eager to present the pre-ordered meal, Boniface took us round first. Sometimes villas can be almost too flashy to relax in. Not this one. Villa Raymond is by all definitions exclusive, with a clean-cut polished look, designer furniture, its spacious areas practically

designed- but the contemporary look does not get in the way of comfort. You walk into an atmosphere of soothing luxury with none of the hushed pomposity often prevalent in high end hotels-you happily just check in and switch off for the duration. The overall effect is the feel that everything is slotted effortlessly into place, with indoor elegance matching with outdoor style and sophistication. The exclusive structure of the Villa really sells it. Besides the

chic, decked pool, there’s a manicured garden, customdesigned for holidaying, with family-friendliness in mind. Light, airy and characterful, the villa offers superb comforts due to the perfect daytime and night time zones layout. The kitchen, dining, lounge, pool and the barbeque area are perfectly linked, but also well separated, allowing guests to make the most of the warm and pleasant climate! The large and beautiful outdoor kitchen facing the pool is truly world class, featuring the latest in


design and finishing. Whether your culinary expertise is limited or you’re an accomplished chef, you’re provided with everything you’ll need in the kitchen. There’s also a chic mini lounge- complete with a flat screen TV, books and well picked games. Creating the perfect stylish interior is all down to the finer details, and a fusion between elegance and comfort. Well, the bedrooms are a sophisticated sanctuary, combined with a serenity that makes them a haven of tranquillity, and they blend effortlessly with the outdoors. They are simple, elegant and uncluttered, but you still get all the mod cons and high tech touches you’d expect in a modern luxury villa. Chill out on the comfy sofa (one of these sofas converts into a double bed) with a film on 65” Smart TV in the master suite, or use the Bluetooth speakers to fill the room with your favourite music. Soak up in the wine red designer stand-alone bathtub or take a quick shower before checking out the luxurious four poster bed, with beautiful soft cotton linens. Cushions not only match the décor, but are also plush and comfortable. The guest room is light, airy and lofty, with light curtains that flit prettily on the warm breeze. We had an alfresco dinner that evening. Ruwa presented a satisfying selection of delicious salads, fresh sea food, and melt-in-your-mouth ice cream. The next morning, I had my first coffee while sitting in the pool with my colleagues, admiring the sun’s glimmering rays, totally getting spoilt with treats while watching the latest comedy on TV and of course, making plans for the evening. We still had 3 days to go, so most of our first afternoon was spent sun bathing, reading, napping and practising our photography skills. It was the perfect place to

unwind and reconnect with the simpler things in life and it’s hard to imagine a more laid-back yet sophisticated and exclusive retreat than Villa Raymond. For a few seconds, you stare at the buds that have begun flowering, and the splash of colour around you. The place is fairly bursting with life. There are birds everywhere: hunting, wading, nesting. The sounds, sights and smells unite your senses with the natural surroundings in the most immediate and extreme way, making the hectic Nairobi you left behind just 30 minutes ago seem a world away. The made of wood furniture and decor resembles with simplicity, roughness, and heaviness in all geometric shapes. Magnificent African carvings and handmade carpets bring out the originality of Anga Afika’s design. Abundance of decorative African art, in this open plan lounge, gives it a timeless luxury feel that you probably haven’t seen before in Nairobi. Besides, the camp only accommodates 18 people at a time, availing an unrivalled serene and intimate environment where you can completely unwind.

Fonda NBO Bringing Mexican soul food to the heart of Nairobi

I

n recent times, Nairobi has become a mecca for restaurant goers. A melting pot of nationalities has elevated the food-scene and inspired restaurateurs to push the envelope. It feels like almost every day a new eatery, café or pub is opening up. Well-travelled Kenyans with a taste for global flavours go out regularly in search for the new neighbourhood spot. But for much of Nairobi’s restaurant history, a key cuisine that has made its mark all across the globe has been missing from the local scene. Mexican fare was designated as an intangible cultural heritage by UNESCO and so far, no restaurant in the city has been able to do this multilayered cuisine justice. Until now, that is. In October 2017, Roho Hospitality Ltd opened its flagship restaurant, FONDA NBO and so far the reviews have been nothing but stellar. They have an excellent rating on Trip Advisor with diners calling the experience at FONDA one filled with flavour, vibe and authenticity. Dubbed as the place to enjoy Mexican soul food, FONDA NBO was essentially birthed from a lament. It all started one rainy November evening in 2015 when 34

Bindi, Beju, Yash and Salisha were enjoying a drink at one of their favourite local spots. As the drinks flowed, so did grand ideas about opening a restaurant of their own. From a barbecue joint to a beer shack on the beach, the ideas were many. But one found a home in their heads and hearts – Mexican food! Their stomachs rumbled in anticipation as memories of mouth-watering mole poblanos, chile rellenos and tres leches came unbidden to their minds. Realizing that there must be many others that felt the same way, they started to probe further and learnt that their gut instinct to open a Mexican joint was spot on. In addition to the latent market for the cuisine, the similarities between Kenyan and Mexican food are undeniable with the staples being the same - maize, beans, meat, and avocados. And so months later, in early 2016, they took their first steps towards turning this dream into a reality. From the very start, they knew that they wanted to create a holistic experience- that the restaurant needed to be more than just good food. They wanted to take their future customers on a journey to Mexico. They


envisioned a space where people would see, feel, taste and breathe Mexico and in order to fully authenticate their concept, they knew a trip to the place itself was a must. So in mid-2016, they journeyed to Mexico. There they visited numerous restaurants and local markets with a Mexican food critic trying to unearth the core principles of Mexican architecture and design, food plating and menus, drinks and cocktails, serving style and service ware. They also spent 12-14 hours cooking from dawn to dusk for ten days in picture-perfect Tepotzlan, a pueblo magico (magical village), outside Mexico City. Among chopping boards, casual chatter and post-it notes, the first semblance of a menu started to emerge. And as they breathed in the spicy aromas emanating from their own cooking, they realized that the restaurant they would open in Nairobi had to be a fonda. In Mexico, a fonda is equivalent to a “bistro” in Paris or a “trattoria” in Italy. More than that, Mexicans use the word to describe a place where people can enjoy fresh food from locally sourced ingredients based on age-old recipes in casual and comfortable surroundings. The quintessential Mexican fonda evolved out of the homes and dining rooms of women who would cook a basic three-course meal for neighbours and passers-by. The fondas of yore were homeyplaces serving classic food in clay plates on plastic doilies. The quality of food and value for money meant that fondas soon came to dot the streets of every city across the country. Today, Mexico is full of fondas and just like the trattorias and bistros of Italy and France, the concept of a fonda has now broadened. The new-age fonda is a full-service restaurant offering the same high-quality classic Mexican soul food in casual but more upscale surroundings. The warmth, casualness, the freshly cooked food, use

of age-old recipes – the essence of a fonda perfectly fit into the vision the founders of Roho Hospitality Ltd had crafted. Brimming with ideas they came back to Kenya and delved into a frenzy of activity. They started growing the specialty chilies required for Mexican cuisine in their own kitchen shamba, they converted their home kitchen into a test one for the restaurant and conducted numerous tasting lunches and dinners in their house, as they searched for the perfect space. 2 x 250g packs fresh red pepper and chili tagliatelle, or basil pappardelle 200ml pot crème fraiche 20g pack flat-leaf parsley, finely chopped 3 x 450g cooked lobster, halved 2 tbsp. olive oil 3 cloves garlic, peeled, left whole 1 bird’s eye chili, split in half 500g baby plum tomatoes, halved 100ml white wine ½ x 500ml Cooks’ Ingredients Fish Stock

Remove the lobster flesh from its shells. Chop into 2cm chunks and set aside. Place a large sauté pan over a medium heat. Add the olive oil, garlic and chili then cook for 2 minutes to infuse the oil with the flavors. Tip in the tomatoes and cook until starting to soften. Add the white wine and cook until reduced by about half. Then add the stock and continue to cook until the liquid has reduced by half. Place the pasta into the pan of boiling water and cook according to pack instructions. Remove and discard the garlic cloves and chili from the sauce. Toss the lobster flesh into the sauce with the crème fraiche. Cook for 2 minutes until the lobster is hot. Add the drained pasta and parsley, toss to combine and season. Serve with waitrose roasted garlic flat bread.

Separate eggs and place egg whites in a mixing bowl. Let sit at room temperature for 30 minutes. Preheat oven to 250 degrees. Add cream of tartar & coconut extract.

Whip with an electric mixer until stiff peaks form. Add sugar and whip 2-3 more minutes. Scoop meringue into a piping bag. Line a cookie sheet with a silicone mat or parchment paper. Pipe meringue onto lined cookie sheet. Bake at 250 degrees for 40 minutes. While cookies bake, take 1/2 cup of freeze dried raspberries and crush them until they are dust. Set aside. Turn heat off. Take out of oven and gently sprinkle raspberry dust onto cookies. Return to hot oven (with the oven turned off) and let the meringue cookies dry out. 30-45 more minutes. Remove from oven and let cool completely.

Lest we forget By Imelda Ndomo

I

have an enduring curiosity about the lives of my generation, born in the 80s. Whilst High School was about fifteen years ago, the memory of the hankering we had in our hearts to close the chapter on school and step out into the ‘free’ world is vivid to date. First off, we cherish this conviction that from the day we finally stepped out of the shelter of home and our parents clasp and into the world – that we author our own lives, and not follow in the footsteps of tradition or convention. Seems we are better off for this, or, are we? Before we became the young adult city types we are today, the compass for our upbringing was our cultural heritage, yet this is not so apparent from our lifestyles … Our food and eating habits today is quite a departure from our beginnings. Throughout childhood, and even now on those joyous occasions when I am back at home with my parents, all I’ve known is home cooked meals. And whilst the food making process is not the usual shimmer & shine you see on TV today, with all these gadgets taking the hustle out of cooking – most practical but, some I’m convinced just add a touch of glam - all usually leads up to some amazing food, if the looks of it all and the chefs and companions’ enthusiasm is to be trusted! Seriously, the biggest qualification to being a ‘food assessor’ on these shows must be ‘over the top dramatic’ – cue guttural sound if you agree! The food I grew up on is amazing and quite different to what is seen on TV. When you live in the city, your diet tends to be more diverse, but still for us whose early food experience was deeply steeped in our culture with its unique, definitive flavors, we always seek this every now and then. From our meats flavored with smoke for that distinctive aroma and distant bitter and sweet undertones, or hint of bitter in our vegetables, these are specialties that entailed an elaborate, expert process using quality ingredients. I have so often tried to replicate these foods in my kitchen but too many times things just do not go to plan! So, it is always a treat going back home and getting to savor our ‘mamas’ delicacies; original recipes expertly made with authentic ingredients rather than the quick fix that is shop bought artificial flavors. We really ought to shine the spotlight a little more on our traditional specialty foods. It is ironic recalling now how we idealized living in the

city growing up – the array of shopping possibilities, entertainment, the not so little comforts in the homes and the exciting urban culture. Well, I have been a city resident for fourteen years now and what I would do to get back to the quiet, green, rolling spaces of the countryside! Open spaces interspersed with homes and family farms from where virtually all of the families’ food comes. The ideal way all over the world today is grow your own or know your food. Be it poultry, grains, vegetables, fruit or dairy, it went directly from the family farm to the kitchen. Back then, it didn’t even occur to me that this was great, I just assumed that all foods were grown and produced equally safe. This is one of those life lessons where I was disappointed that the perfect looking produce I am drawn to in the market is probably not the best option, if it is genetically modified and likely will have been exposed to more chemicals whether pesticides or others. Healthy produce usually does not look perfect. Finally, the old adage is proven – beauty really is not skin deep! The taste test will prove this to you, the next time you get the chance to dine on food from a family farm that is noncommercial. With a bit of luck, you will also be enjoying this meal somewhere in the countryside. Be sure to soak in the fresh air and relish your break from the hustle and bustle of the city. Whilst the fast tempo of city life is great for career and business, it is not so much for your wellness. One of the early lessons living here is in order to thrive, you need to create personal time every now and then – by yourself or with your dearest ones and spend time together. The pressure to get ahead in the city is real; and particularly so for our generation, trying to establish careers, young families, advance our education and so on. Amidst all these, we so often get our priorities mixed up and tend to neglect personal well-being and relationships. It is thus so important every now and then to make a special occasion of those seemingly mundane everyday things such as mealtimes; and treat yourselves to a special dinner. The city’s vast choice of cuisine means that whatever you crave on any given day will be within reach. Well, with proper planning that is, for the majority of us juggling a tight budget. Silence the Drama Queen

No more exaggeration on what has happened, no assumptions on the reasons why it has happened, no blanket judgment on who is responsible for it…

T

he problem with our generation is that we all just want to be onions; nobody wants to be a potato. No, I have not lost my mind (any more than the usual that is), let me explain. We all just want to be full of complicated layers that take great effort to unpeel and make others overwhelmed and teary eyed as each layer unfolds. There is no charm left in the childlike simplicity of a potato that just innocently sits there with a look that says ‘I’m the most predictable, harmless thing in the world, I have nothing up my sleeve, and you can just eat me’. That’s it, no drama, no complications. Our older generations had quite a few proud potatoes. Life went on at its regular pace without any dramatic twists and turns. Not anymore, we new age onions thrive on drama.

In our heads, we turn these into big wars that need to be fought, big obstacles that need to be overcome. What if, for once, we quit magnifying our problems and let the smaller issues remain small? What if we kill the drama and just get on with ‘regular usual life’? It’s probably a bit boring, isn’t it? If we don’t have the heart-wrenching tragedies and overwhelming grand triumphs, we just won’t get that high. Life is the one movie where we get to be the hero and the drama keeps the movie interesting. The problem is that it also kills mental peace. In our attempt to make life a blockbuster, we end up busting our own overwrought minds.

We are not content with being single or committed, we want to be ‘It’s complicated’. We may live comfortable cheery lives but we want to say ‘my life is messed up’. The only thought in our heads may be the toppings we want on our pizza tonight, but we want people to believe that we are soulful brooding creatures, who silently battle a hundred storms a day.

We obsess over everything – analyze, rationalize and correlate till a theatrical production has been created. Our poor production house of a head is already half dead from creating the ‘crisis’, but then it still has to go into producing another grand blockbuster around ‘surviving the crisis’. By the time we are tweeting our great survival story; our poor brain is attending its own funeral!

We say we don’t, but secretly, we love Drama Don’t lie, my friend, you know we do! We like to create our own tragedy, drown in self-pity over that tragedy, be the hero who ‘survives’ the tragedy and finally get a standing ovation for our great achievement (in most cases it’s just a sitting sigh from our friends who know us too well).

What if for once we avoided the mental suicide? What if something went wrong but we told the drama queen inside us to just take a rest. No exaggeration on what has happened, no assumptions on the reasons why it has happened, no blanket judgment on who is responsible for it, no pleas to the Almighty on why the Universe is singling us out to inflict pain.

A boss’s reprimand for not meeting a deadline turns us into Facebook life coaches. Posts like; “I have already been through hell, so give it your best shot, I will still win, I will survive”. One could have won already if that report was finished. One could get a hundred likes for this post, but that report still needs to be finished.

The universe doesn’t know, the universe doesn’t care, and the universe has its own problems to deal with (Unless we want to handle those planetswallowing black holes while the universe thinks about our break up). So if a friend has stopped talking to us completely, why don’t we just call and ask what’s wrong instead of lamenting to all the common friends and analyzing it till we reach the conclusion that this happened because we are the most misunderstood person on earth. For all we know, the friend is probably peeved because we don’t have time to call, but have the time to post at least 10 soul searching survival quotes a day.

Break ups transform us into the great Antony mourning his eternal lost love for Cleopatra. It lasted six months, you fought six hundred times. There was no war that stopped your everlasting union; it was the natural thing to happen between two ill-suited adults. No layers to unpeel, it’s a potato scenario.
