1 sprig fresh sage 12 strips pancetta or thinly sliced streaky bacon 1 bulb garlic, broken into cloves 4 medium red onions, peeled 2 sticks celery, trimmed and chopped 1 big handful breadcrumbs 1 handful dried apricots 300g minced pork 1 lemon, zest of 1 pinch grated nutmeg 1 large egg sea salt freshly ground black pepper 12 small sprigs of fresh rosemary 10-11 lb turkey, at room temperature 2 carrots, peeled 1 large orange olive oil 2 tablespoons plain flour 1.1 litres chicken or vegetable stock

METHOD:

1.

Preheat the oven to maximum. Heat a saucepan until medium hot and add olive oil, the sage leaves and 6 of the pancetta or bacon strips. Peel and chop 2 garlic cloves and 1 onion. Add the garlic, celery and onion to the saucepan and fry everything gently until soft and golden brown. Take the pan off the heat, add the breadcrumbs and, while the mix is cooling down, chop the apricots roughly and stir them in. When the stuffing has cooled down, add the pork, lemon zest, nutmeg, egg and lots of salt and pepper, and mix everything together well.

Slice the remaining strips of pancetta or bacon in half and slice 1 peeled garlic clove into thin slices. Place a rosemary sprig and a garlic clove on one end of a halved strip of pancetta and roll it up tightly. Repeat with the other pieces of pancetta until you have 12 little rolls. Stab the thighs and drumsticks of the turkey in 6 places on each side. Push a little pancetta roll into each hole until it just peeps out. This’ll give your turkey thighs a fantastic flavour and will keep them moist while they cook.

Chop the remaining onions in half and slice the carrots thickly.

Give your turkey a good wipe, inside and out, with kitchen paper, and place it on a board, with the neck end towards you.

Find the edge of the skin that’s covering the turkey’s breasts and gently peel it back. Work your fingers and then your hand under the skin, freeing it from the meat. If you’re careful you should be able to pull all the skin away from the meat, keeping it attached at the sides. Go slowly and try not to make any holes! Lift the loose skin at the neck end and spoon the stuffing between the skin and the breast, tucking the flap of skin underneath to stop anything leaking out. Pop the orange in the microwave for 30 seconds to warm it

a Turkey for the first time up and stuff it into the cavity. Weigh the stuffed turkey and calculate the cooking time (about 20 minutes per 500g/1lb 2oz).

Place the bird on a large roasting tray, rub it all over with olive oil and season well. Surround with the chopped carrots, onions, remaining garlic, cover with tinfoil and place in the preheated oven. Turn the heat down right away to 180°C/350°F/gas 4, and roast for the calculated time, or until the juices run clear from the thigh if you pierce with it a knife or a skewer. Remove the tinfoil for the last 45 minutes to brown the bird. Carefully lift the turkey out of the tray and rest on a board that’s covered loosely with foil for at least 1 hour, preferably 2 hours for bigger birds. When the resting time’s nearly up, skim the surface fat from the roasting tray and add the flour and stock. Place the tray on the hob and bring to the boil on a high heat. When the gravy starts to thicken, strain it into a bowl. Carve your turkey, serve with the gravy and enjoy!

When you are painting a room it’s good to have some paint left over to help with paint touch up jobs at a later date. If you have a gallon tin of paint that is pretty full you should keep this in the can.

Now, if you happen to have a quarter of a gallon left and you are planning on keeping the paint for a long time you are better to transfer this to a smaller container, that way you would have less air in the container and therefore will have a lower chance of the paint drying out. If the paint has been sitting for a while it’s important to stir this paint up. Make sure you mix it properly in a circular motion while pulling up to get everything that is settled on the bottom of the can mixed in properly to avoid some colour variation where you are painting back over.

There are several paint applicator options that you can use. You can use a foam type applicator for smaller areas or a disposable foam brush or you can use just a standard paint brush for doing this. If using the disposable brush use very little paint and a very common area to touch up is on the corners where you have a lot of traffic. Get the paint in the corners and do some quick light strokes to smooth it out form the centre.

Touch up is on the corners where you have a lot of traffic What this does is it gives you a nice blend into the surrounding paint. Now, this is going to be a little lighter when this first goes on. You don’t need to be concerned about this as all paint darkens up a little bit as it dries.

If the paint was used on the Kitchen wall, mark kitchen on the lid so that if you have some similar colours used in other areas of your house you know which one to use to touch up.

They immediately knew it was a murder not a suicide – How?

For years all the enthusiasts at the allotments have had an intense rivalry with the local vicar to see who can grow the biggest marrow for the annual garden fete in July. Fred in particular was frustrated that he always came second and has almost come to blows on occasion when the vicar has cast aspersions on the size of Fred’s marrow when drink had been taken in the prize giving tent. Yesterday the vicar won first prize for his marrow and Fred was runner up – again! This morning the vicar was found bludgeoned to death with Fred’s losing marrow in Fred’s padlocked shed down in the allotments. As Fred’s best friend, you know he is too gentle a soul to have done it and he certainly would never damage his beloved marrow! However, he is about to be arrested on suspicion of murder and desperately seeks your help to prove his innocence.

He explains that his shed was locked with a padlock which must be opened with a key but can be closed by simply clicking it shut without

the key. Nobody could have opened the shed because Fred was the only person with a key and when Fred left his losing marrow in the shed yesterday after the show the body of the vicar was definitely not there. When he left after ten minutes of cleaning up the shed, he definitely remembers clicking the lock closed so nobody could have got in. To get him off the hook there has to be reasonable doubt that Fred may have done it. This means you have to prove that the real murderer could have gained access to the shed even though Fred had locked it securely and was the only person with the key. How could it be done?

Murder Mystery Puzzle 3 (difficult 5 marks)

A murder took place over the Christmas holidays when an extended family took a break in a remote country mansion.

The father and mother brought their son and daughter and the step daughter by the father’s first marriage and the step son by the mother’s first marriage. One of the party was murdered by one of the others and one of the party witnessed and covered up the murder. The police know some of the facts but need help to work out what they mean. Can you figure out who the murderer must be?

The police have established that: • The murderer was older than the victim;

Gingerbread Men Cookies

Mulled Wine Quick and Easy Recipe

Homemade Mulled Wine is very easy to make and needs hardly any ingredients.

It’s literally just a bottle of Red Wine, Sugar, Orange, Cinnamon, Nutmeg and Mixed Spice if you’ve got it. So let’s get started!

Put a pan on the smallest hob and make sure it’s over a medium heat. Then all you’ve got to do is pour in the Red Wine.

Pick your favourite bottle or if you’re not much of a connoisseur of wine, just go with the cheapest possible. Add in 50-60 grams of Sugar, break a stick of Cinnamon in then a pinch of Nutmeg and a pinch of Mixed Spice or some other spices of your choice and then just add some Oranges.

Then all you need to do is stir the Wine until the Sugar dissolves. Keep an eye on it and once it starts to bubble turn it right down because you don’t want any of the alcohol to evaporate or any of the Wine to boil off.

You’ll need to leave it to mull for at least 30 minutes to get that really good Mulled Wine taste.

After 30 minutes try it to see how it tastes.

So all you need to do now is put it in your glass.

If you’re cooking it in large quantities, It’s always useful to put it in the slow cooker because then you know it’s not going to boil too much.

To make gingerbread men cookies start off beating half a cup of unsalted butter, beat this until it is smooth and creamy. Add half a cup of brown sugar and just beat that in until it is well combined. Now you’re going to crack in one egg along with half a cup of treacle. Make sure to grease your measuring bowl before you use it. Now, add your spices which is one-and-a-half teaspoons of cinnamon, one-and-a-half teaspoons of ginger a quarter teaspoon of cloves, add half a teaspoon of baking soda and half a teaspoon of salt. Next we’re going to add two and a half cups of all-purpose flour and mix it all together. Put some flour on your hands and massage the dough into one ball. Place the dough onto a piece of baking paper and then you’re just going to flatten it into a disk shape but first put some more flower on it so it wouldn’t stick to your hands.

Cover up the dough with the baking paper and place it in the fridge for about two hours so that it is nice and firm and ready to work with.

Sprinkle your workspace with some flour. Roll out the dough to about 18 inch thick. Use your Gingerbread man cookie cutters to cut out the shapes. You can also use other Christmas themed cookie cutters eg a star, a Christmas tree and a Candy Cane.

Take the leftover dough and you just flattened, roll it up again and wrap it back up in the baking paper. This will keep in the fridge for about another two to three days or you can freeze it in your freezer for a couple of weeks and then you can use it again to make more cookies.

Bake the gingerbread cookies at 350 Fahrenheit / 180 Celsius /gas 4, for about eight to ten minutes.

To make the icing, this is really simple. Use one cup of icing sugar, add half a teaspoon of vanilla extract and two tablespoons of milk, you can add more or less milk depending on the consistency that you want.

Use a whisk to mix this all together. Add a food colour of your choice to the mixure to change the colour of the icing.

Transfer the icing to a piping bag for decorating. You can also use sweets, cake decorations and tube icing for decorating.

Pavlova Mixed Berry Wreath Serves 8 Ingredients:

• 250g Caster Sugar • 4 egg Whites • 1 Teaspoon White Wine Vinegar • 2 teaspoons cornflour • A few drops of vanilla essence • 300ml Double Cream • Strawberries, Raspberries, Blueberries Before you start, draw the shape of the wreath with a pencil on the baking paper. Preheat the oven to 180 C / Gas 4. Make sure the eggs are at room temperature. It will not work as well with eggs taken from the fridge.

Method: Beat the whites of the eggs

using an electric mixer until they are holding stiff peaks. Gently whisk in the caster sugar, add the white vinegar and corn flour. Fold in a few drops of vanilla essence, try not to loose any air whisking. The meringue mix should now be thick and glossy. Place the mixture into a piping bag and start piping little

mounds of mixture inside the wreath shape on the baking paper to form your wreath shape. Place Pavlova in the oven and immediately turn the oven down to 150 C / gas 2 and cook for 1 hour. The meringue’s outer shell should be crisp, but only just. When it’s ready, turn off the oven and leave the Pavlova base inside the oven until it’s cool. Once the Pavlova base is cool, lift it carefully in its paper and place it top-side down on a large flat plate then gently peel off the paper.

Turn Pavlova again until top-side is facing up. Spoon the whipped cream over the Pavlova Wreath and add the berries on top to decorate and it’s ready to eat.

What to ask yourself when things go wrong Why do some people handle things well when things go wrong whilst others sink into despair? You don’t see the opportunities all around you to avoid the worst outcome. If you are not thinking about improving your life you will not take the necessary steps to overcome difficulties. Inevitably, if your mind is not looking for a positive the only possible outcome is the negative one you imagined. If you have been thinking about disaster you recognise it when it happens and you repeat into yourself “I told you so”. By confirming to yourself that the worst will always happen you play a trick upon your own mind and end up only recognising crisis after crisis in your life.

You do not notice the good things in your life. Soon you see yourself as unusually unlucky and resentful of your lot in life.

Chopra says most people make their own despair worse by not deciding at the start whether they are going to fix the problem, learn to live with it or just walk away from it. Some people misplace their energies by flip flopping from one approach to another without consciously deciding which approach is best for their particular situation. One minute they are trying to change things they cannot change, the next moment they are walking away from things they could do to help themselves and then they indulge in wishful thinking that the problem will just go away on its own.

The result is an exhausting roller coaster of hope and despair as energy is misplaced and the problem stubbornly remains or gets worse. You must make sure the approach you take matches the circumstances you are presented with.

To avoid this confusion, look first for things you can change about your problem and act upon them. For example, a diagnosis of cancer may spur you to change your diet, to stop smoking or to find a specialist clinic. Perhaps an injury makes it impossible to continue in your job – accept that and re-train for a better job. If someone you love dies you cannot change it so walk away from the circumstances and throw yourself more deeply into the relationships with the other people you love. Thinking through and deciding how to respond eliminates any feeling of being a victim and puts you back in control of your emotions. This helps to combat despair.

Thinking through your problem can be emotionally difficult in a crisis so it is worth making a list of people you know who have successfully overcome the same problem and get their help by talking it through.

Lastly, never forget that you have more inner resources to cope than you think you have. You have an intuition within yourself which tells you what to do – what feels right. Chopra says that you can unlock this intuition when you allow yourself to become silent and to meditate or pray. Can humans catch diseases from pets?

Avoiding infectious diseases from animals is straightforward if you follow simple hygiene rules and make sure your pet is regularly checked and treated. Most infectious threats from animals to humans come from bacteria, viruses, fungus, or parasites.

THE TOP 8 DISEASES WE CAN CATCH FROM OUR PETS ARE:

Tapeworm: Long white worms which burrow their heads into the digestive tract.

If larvae get into humans through contact with fecal matter, they can cause cysts on the lungs, liver and brain which can cause death but only in extreme cases.

Ringworm: Not a worm, but a fungal infection causing itchy scaly skin. Cats can get it from bedding, dishes and other materials that have been contaminated with the skin cells or hairs of infected animals. The spores can survive up to a year in the environment.

Roundworm, Can cause blindness, swelling of organs and fever, coughing, asthma, or pneumonia.

Humans become infected by swallowing infective roundworm eggs in soil or other contaminated surfaces.

Hookworm: Long thin worm attaching to the small intestine. They are very common in puppies and through contact with the eggs in fecal material they get into humans by penetrating flesh and migrating under the skin causing a rash.

Cat scratch disease: Caused by a bacteria caught from a bite or scratch from a cat. The symptom is a swollen red round raised area around the bite site about 14 days after the infection. Lymph nodes nearest the infection may also swell.

Leptospira: (Weils disease) A bacterial infection causing mild flu like symptoms such as chills, muscle pain and headaches which can be treated by anti-biotics.

However, in rare circumstances it can lead to organ failure and requires hospital treatment. It spreads through the urine of rodents in particular but can also be carried by cattle, pigs and dogs.

Toxoplasma, Caused by a parasite founded in the infected faeces of cats or in raw infected meat. It gets into humans when, for example, they accidently swallow some cat litter or they wash vegetables with water infected with faeces from cats.

Alveolar echinococcosis (another tapeworm): a parasite picked up by dogs, foxes and cats by swallowing rodents. If the eggs of the parasite from the faeces of the dog are accidently swallowed by humans the eggs can incubate for 10 years and eventually cause severe stomach pain and jaundice after invading the liver.

HOW DO YOU PREVENT INFECTION FROM PETS?

Wash your hands every time after you touch and play with your pet. Make sure children in particular are taught to do this. Wash your hands again before eating or preparing a meal. Bring antibacterial wipes with you when walking the dog and use them after you clean up after the dog. Wipes and sanitisers are not enough however, as they do not eliminate organic material on your hands and under finger nails which harbour bacteria, viruses, fungi, or parasites. Wash properly for at least 20 seconds using soap and warm water under running water that takes infection away from your hands.

Keep an eye out for ticks which have attached themselves to your pet just under the fur. They look like small warts but are actually sucking and infecting the pet’s blood. Your vet can advise on tick prevention remedies and you can pull them off with tweezers if you check the dog regularly.

Get rid of dog poo and change the cat litterbox every 24 hours so that parasites and organisms don’t get a chance to become infective.

Cutting the cost of petrol and diesel

With fuel prices falling internationally motorists are finding it cheaper to travel. However, there are things you can do to reduce fuel consumption and get more miles per litre that do not depend upon the international price of oil.

PREPARE YOUR VEHICLE

1.

Keep your tyres inflated to the correct pressure. Fuel efficiency drops 0.3% for every 1 psi drop in pressure of all four tires. Improvement of fuel consumption by 2% is easily achievable.

2.

Ask for Low Rolling resistance Tyres which reduce fuel consumption by about 2% by using less energy to return a tyre to shape as it rolls under the weight of the vehicle;

3.

Take all unnecessary weight out of your vehicle – empty the boot and don’t use the car for storage. Every 45 kilograms of weight reduces fuel efficiency by 1 - 2%.

4.

Take the roof rack off to reduce drag and use the boot or inside of the car to carry necessary items;

5.

Keep the vehicle well-tuned with regular oil, spark plug and filter changes

Driving slightly more slowly along the motorway at 60 mph instead of 70 mph could cut your fuel

consumption by 9%;

Accelerate and slow down gently.

The more you use the brake the more inefficient your driving is. You spend energy to increase speed only to cancel it out mechanically with a brake. Use the cruise control on the motorway rather than keeping your foot on the accelerator as the car is more likely to drive evenly than you are.

Music breakthrough for “Alive Inside” Alzheimer’s Patients

The Dream “to wake a million souls”

Social worker Dan Cohen was appalled that people in nursing homes are static and sedated 90% of the time and that 50% of residents never get a visit from anyone. He began to ask questions when his friends in India complained about how uncivilised America was for dumping the elderly in nursing facilities when people in India cared for their elderly relatives at home and gave them pride of place. Was there another way?

Dan wondered what would happen if nursing homes could give everyone an ipod so that they could amuse themselves playing music personal to them whenever they wanted. What happened next was so surprising that it has begun a revolution in the way moribund lifeless patients are treated to bring them back to life.

Everywhere the music therapy was tried, forgotten people burst into life again. No longer are they left in a corner to mutter to themselves and be confused. It seems that music is a powerful medicine for bringing Alzheimer’s and other dementia patients back to life. The revolution waking up Alzheimer’s patients is spearheaded by Dan’s “Alive Inside Foundation” which has vowed to bring forgotten Alzheimer’s patients around the world out of their dark corners to dance and sing like they were 20 again. Already the movement has spread to Australia, South Africa, Israel, Holland, the UK, and Denmark.

plans to remedy the other problem of abandonment and loneliness by organising a movement of young people to go into nursing homes to engage with abandoned patients to put personal music on to their ipods for them.

His belief is that never before in history have there been so many older people – and the younger people need them. “…right now, we have a generation of young people who are not raised with the old. For most of human history, the Google of the world was the old people. The old people were the carriers of the history, of the ‘how to’ survive”.

In January 2014 our teenage daughter Leah was dying in ICU in Belfast, after a relatively short but very serious illness.

Our hearts were breaking. Leah was unconscious and on a ventilator. We asked what our options were for her end of life care and were told we had no options that she was too ill to be moved and would die in Intensive Care.

I couldn’t bear the thought of our ‘little girl’ spending her last moments in an acute hospital setting.

Leah was always happiest when surrounded by her large extended family. Most of our family had not yet had an opportunity to say goodbye to Leah, as her illness had unexpectedly taken a turn for the worse and she was now in hospital 70 miles from home. I pleaded with the staff to allow us to take Leah home to die or to the nearby Children’s Hospice but I was told that this was not possible.

At the ‘eleventh hour’ I was put in touch with a Specialist Doctor in Paediatric Palliative Care from the WHSCT. She drove to Belfast to meet with the staff looking after Leah and outlined

to them how it was both safe and possible for Leah to be moved to the Children’s Hospice for her end of life care. Immediately the staff caring for Leah came on board and made all the necessary arrangements.

Two days later Leah was transferred to the N.I. Children’s Hospice (Horizon House). Leah’s boyfriend, his immediate family, our extended family and our minister were all there. Leah was made comfortable in a pretty pink bed in a lovely room with her name on the door. Leah’s favourite Christian music played softly in the background. We each had time to say our goodbyes – the ones we didn’t want to say. The hospice staff were there discreetly in the background, always ready to help when needed.

After Leah died, the Hospice provided lunch for everyone. There was no need to rush away. Leah Whyte Initially, a combination of busyness, exhaustion and shock shielded me from feeling the full force of pain and loss. As the weeks turned into months I began to feel the full impact of grief and loss.

Sometimes I felt like I was standing at the edge of a huge abyss that wanted to suck me in.

Child loss is like a deep wound that has scabbed over, it doesn’t take much to knock the scab off that wound and leave us raw and bleeding again. Some days it’s the big things, like birthdays and special family occasions. Other days it’s the little things, like seeing Leah’s favourite Ben and Jerry’s ice cream on promotion, or spotting a ‘onesie’ in Primark that she would have loved. The absence of her presence is everywhere.

My husband and I have learned that the only people who can really understand how a bereaved parent feels is another bereaved parent. That is why we, along with some other local bereaved parents, are setting up a branch of The Compassionate Friends in the North West. The Compassionate Friends is a support group run by bereaved parents for any bereaved parent who has lost a son or a daughter of any age.

Debts & Illegal Loan Sharks What to do about them

What are Illegal Loan Sharks?

Loan sharks are people or firms which illegally lend money without a licence from the Financial Conduct Authority (Part of the Bank of England). They are not to be confused with licensed payday loan companies which have a Consumer Credit Licence and trade legally.

How do you know a lender is illegal?

A legal lender will provide you with a written credit agreement with their trading name and license number on it. If you do not get a written agreement it is certain that you are dealing with an illegal lender. If you do have a written document, check that the license number given is legitimate and has not expired. Contact the Financial Conduct Authority on 0800 111 6768 and check the Financial Services Register at http://www.fsa. gov.uk/register/home.do. Other telltale signs of an illegal lender are that they refuse to give you a written record of payments or tell you how much you owe or the interest rate charged.

Illegal lenders often arbitrarily increase the balance you owe without your permission. Sometimes they illegally take your passport, driving licence or bank cards as “security”. It would not be uncommon for illegal lenders to get nasty and threaten violence.

What to do about illegal lenders You have not committed any offence by taking out an illegal loan so you cannot get into trouble for reporting the lender. You can confidentially report illegal lenders to Trading Standards Consumer line www.consumerline.org Telephone: 0300 123 6262 (cost from landlines per minute 9p, cost from mobiles per minute 8p to 40p). Ignore intimidating threats from illegal lenders that they will take you to court and get a judgement against you if you do not

pay. As they have loaned money to you illegally they cannot take you to court to enforce the agreement nor can they get a bailiff to seize your goods. It is not a criminal offence to refuse to pay back a loan which was made illegally to you and you cannot be sent to jail or criminally prosecuted for non-payment.

Harassment –legal and illegal lenders If any lender (legal or otherwise) threatens or harasses you, call the police if you feel in immediate danger.

It is a criminal offence under The Protection from Harassment (Northern Ireland) Order 1997 for any lender to harass you. The Act can also be used by a borrower who has been harassed to make a civil claim for damages for anxiety or financial loss arising from the harassment and to get an injunction from the Court ordering the lender to desist. However, you should formally ask the lender to stop before taking legal action and go to law only if the harassment occurred more than once.

If you are in default of a loan agreement, only legal lenders are entitled to contact you at work provided they do not reveal to anyone else in the workplace

Lenders are not permitted to put pressure on you to sell any of your possessions to cover your debt. It is considered harassment if they repeatedly call you either at work or home or do so at unsocial hours or more than once a day. Anything which causes either you or your family to feel alarm, distress or humiliation would constitute illegal harassment. Anyone found guilty of such behaviour could be subject to a criminal conviction and a fine and up to five years in prison. It is therefore important that you keep a written record of the date, time and details of the discussion every time your lender contacts you, as none of these remedies will be available to you unless you have accurate and convincing facts. It is worthwhile getting witnesses to write down what was said at particular times so that you can call on it later if asked.

What alternatives are there to loan sharks?

If you are borrowing money to pay for food or other daily expenses or to repay other debts, it is a sign that your finances are out of order and that you may be creating long term financial trouble for yourself by borrowing more. Payday loans or borrowing from illegal loan sharks will not solve your fundamental lack of income and will most probably make it much more difficult to get out
