On the docks daily for over 25 years, Greenhead Lobster is Maine’s largest family-owned lobster supplier. Nestled in the Gulf of Maine, the Penobscot Bay provides the perfect environment for producing sweet lobster—cold, clean water with rocky, rural shores.

We are the only company that handles every step in-house, from our dock to your door. Wholesale or retail, live or processed, we take pride in our wild-caught Stonington, Maine lobster.

SUPERIOR HANDLING

Our dockside tank rooms filter ocean water, providing the most natural environment to hold lobsters while they are graded for size and quality. Lobsters for the live market are then trucked to our Seabrook, NH fulfillment facility. This proximity to Boston makes national and international shipping easy!

OUR MISSION:

To deliver the highest quality Maine lobster to our customers, whether live or processed.

This strive for quality led to the investment in our state-of-the-art processing facility, located just 40 minutes from our docks.

Built in 2019, after over 20 years in the live lobster business, every step of handling and processing is now done in-house.

INVESTED IN TECHNOLOGY

High Pressure Processing (HPP) is what sets lobster processors apart.

Sending live lobsters through our HPP machine is the quickest, most humane transition into the processing line. This stress-free, non-thermal process preserves flavor and texture.

HPP applies enough pressure to break down the connection between the meat and shell. This prevents meat from sticking to shell, and allows meat to be extracted raw.

LOBSTER TAILS (with shell)

HPP applies deep pressure, which breaks down the connection between meat and shell which prevents tail meat from sticking.

Tails are IQF nitrogen frozen (tails are always individually accessible).

FRESH COOKED LOBSTER

Our Fresh HPP Claws & Knuckles are bagged in OTR (oxygen transfer) bags and run through our High Pressure Processor again. This process eliminates bacteria and extends the shelf-life of fresh product to 18 days.

Time and Temperature Indicators ( TTIs ) are added to each 2lb bag to ensure food safety .
