SIGNATURE DINING

Brae, set amid native gardens and rolling farmland invites guests to experience its surroundings. Here, up to 90% of the ingredients are sourced directly from Brae’s own land, from vegetables to honey and olives. Chef Dan Hunter’s commitment to sustainability is evident in every dish, with a tasting menu that celebrates the season and tells the story of place and people.
When not in the kitchen, Dan can be found exploring local cafes, restaurants, and breweries, drawing inspiration from his talented peers in Birregurra.
At the beginning of the Great Ocean Road, Number One Restaurant at RACV Torquay Resort offers a dining experience with sweeping views over the golf course and out to the ocean. The menu focuses on quality, locally sourced ingredients which truly highlight the region.

As one of the oldest surviving inns, Merrijig’s story is woven into the fabric of Port Fairy. Merrijig Kitchen is a piece of history with it’s ever-changing, seasonal menu reflecting this heritage. GRAZE
Big city dishes with small town hospitality; why Graze Apollo Bay needs your attention.

Julian Toussaint started his career in 1987 working under esteemed chef Bill Conway, serving the affluent locals of Toorak at Brophey’s on Jackson. While this invaluable experience greatly influenced Julian’s culinary skillset, something else that he learned in Conway’s kitchen has continued to play a huge part in his career to this day: prioritising professionalism and championing guest experiences.
It’s no secret that a professional kitchen can feel like a pressure cooker environment, however under Conway, Julian learned very early on how to remain calm in said environment, be organised, be firm but fair and most importantly, how to get the best out of the people around you - be it your colleagues or diners. It’s a skillset he then carried onto The Espy and created what he called “a very selfmotivated kitchen where everyone was inspired.”

By 2021, Julian was ready to open Graze Apollo Bay and marry his sophisticated flavour expertise with that warm hospitality he had created in past kitchens, but like a story all too familiar with restaurant owners, COVID had other plans. Lockdowns came and went and finally, it was time to show the locals of this small town on the Great Ocean Road that they too could dine on dishes that could stand against those served in the big Melbourne restaurants, yet in an intimate, unpretentious and welcoming setting.
Put simply, Julian creates the food he wants to eat. And lucky for his diners, that food is outstanding. It allows him to be flexible with his menu and rely on local producers as much as the season allows - a nod to the community who he has been grateful for since day one. While his Bacchus Marsh-sourced scotch fillet steaks regularly bring returners, other standout dishes include his Manhattanstyle Portarlington mussel chowder, cherry wood smoked & roasted duck breast with candied yams, sautéed baby chard, toasted walnuts and rich duck glaze, or lime crème brulee with raspberry coulis for those with a sweet tooth.
While the food well and truly does the talking, so too does the beverage list which includes local wines from the Bellarine all the way to the vineyards of France to ensure your meal is perfectly paired. For those wanting a little something ‘extra’ to toast with, Graze’s salted caramel martini hits the spot every time.
Graze is the very definition of a ‘labour of love’ for Julian, who has created magic outside of the kitchen in the form of building the milled Blackwood tabletops and Spotted Gum bar. It all adds to the authentic, inviting and welcoming atmosphere that Graze prides itself on. So whether you’re part of the cosy 40-seat dining room or have pulled up a stool at the bar for a pre or post-meal sip, you truly feel like you belong there and that is Graze’s superpower.

A little town with a big (and unexpected) foodie surprise

They say never judge a book by its cover, which rings true when describing the small coastal town of Aireys Inlet on the Great Ocean Road. What it may ‘lack’ in size it makes up for in hidden foodie gems that are big on atmosphere and even bigger on flavour.
Found inside the Sunnymead Hotel, it’s only fitting that Santara restaurant serves up warm and bright cuisine. The brainchild of UK-born Adam Cooke, who works alongside Head Chef, Nepaleseborn Prajwal Singh Rayamajhi, Santara is a mix of Indian and Nepalese influences
with subtle English nods as a homage to the Executive Chef himself; “I couldn’t help myself!”
There’s a beautiful yin-and-yang-type vibe between Adam and Praj in the kitchen, with each chef learning from the other. Adam’s passion for food and technique goes hand in hand with Praj’s ability to bring delicate and authentic spice profiles intuitively to the front of a dish from scratch. Made up of small, medium and large dishes to share, the menu caters to most food preferences and allergies, a reflection of Santara’s ethos that “food is for everyone and to be shared with loved ones.”

A dish can only be as good as the produce it’s made from, so it was important from the get-go that Santara honoured the rich surroundings by using local food and drink suppliers from Geelong, Anglesea and Timboon. It’s also a beautiful nod to the community, which keeps Santara alive and allows it to thrive.
The art of creating an impressive menu comes down to how influences are subtly married in each dish. Adam’s hearty, warm and more-ish Lamb Shank Vindaloo is a testament to that, alongside crowdfavourite Chicken Ruby, a playful take on curry using cockney rhyming slang and sweet Sticky Ginger Pudding dessert. The kitchen has also become a family affair as Praj’s wife is in charge of the famous Pork Momos, a Nepalese steamed dumpling, which never turn out as good if anyone else does them!
Some people hate surprises, but this unexpected little gem on the Great Ocean Road is filled with so much character, warmth, big comforting dishes, inventive cocktails and refreshing drinks that it’s hard not to love.

An ode to Port Fairy’s history lies in this modern must-try bar and lounge

It’s inevitable you’ll stop at picturesque Port Fairy when exploring the Great Ocean Road. From the outside, the historic fishing town is postcard-pretty at every corner. From the inside, it’s a buzz with boutiques, hotels, cafes and restaurants. Venture beyond the doors of the Heritage-listed Oak and Anchor Hotel and you’ll find the intimately inviting Sidro Lounge, Bar & Restaurant.
For best friends Jemmah and Ally, It hasn’t been the easiest road since opening in 2020. In an all too familiar story for the hospitality industry, Covid had other plans. But four years later, this cosy 26-seat restaurant has become a welcoming, warm, buzzing, and renowned place on Port Fairy’s must-visit list. Don’t let the size fool you, Sidro is big on creating experiences via its cosy velvet couch corners and an outside courtyard that is perfect for soaking up those long sunny afternoons with a bespoke Ballarat gin cocktail in hand.

The kitchen is led by Head Chef Matt Murphy alongside Chef Ryan Sessions & Chef Levi Sycopoulis, who are as close friends as they are colleagues and have a bunch of impressive accolades between them. Their passion, expertise and experience shine through their unpretentious menu, much like the atmosphere it’s served in. Sidro serves good, hearty classic dishes using only the best local produce. Both in and outside the kitchen, the team never take for granted the community around them, so it was important they give back to them by supporting their own small businesses too. It was the community that helped them get through those early COVID days, and it’s the community that keeps Sidro alive through word of mouth and by supplying unbelievably high-quality ingredients and products. There’s a touch of Mediterranean influence within the menu, starting with small bites like Mt Zero Olives and Grilled Halloumi with pickled beetroot, honey & hazelnut, then ending with larger dishes like the Market Fish that’s served simply with beautiful olive oil, lemon and herbs or the Lamb Shoulder with hommus.
The vibe and food is elegantly understated and subtly modern, a nice surprise and effortless contrast to the grand proportions and history of the Oak and Anchor Hotel built circa 1857.
It’s the type of venue you could pop in for a cuppa or settle in for an afternoon, starting in the courtyard where live music plays in the warmer months, before moving into the dining room and enjoying a glass of Crawford River Pinot over a shared slow-cooked Beef Brisket with chimmi churri and pickled onion.

THE PERCH

There’s always more than meets the eye when it comes to amazing venues and The Perch in Lavers Hill is a prime example of this. From the outside, it’s beautiful and on the inside, the food is equally impressive. But neither can happen without telling the story of the people behind the scenes.
To owners Dean and Gabrielle, The Perch represents their past and connects it to the present. During high school, Dean would frequent the kitchen of his dad’s restaurant and now 20 years on, he has spent the majority of his time in fine dining kitchens around the world. Shifting gears literally, he then took a van around Asia spending his days exploring food markets, writing recipes, honing his technical skills and learning different flavour patterns.
Gabrielle was born and bred in the vineyards on the Mornington Peninsula and learnt about the tasting notes of wines from an early age, making her a powerhouse for pairings as Front of House at The Perch. Both wanted to create a venue that effortlessly married Dean’s fine dining experience with Gabrielle’s warm and welcoming guest-focus ethos while staying true to their dream of living and working sustainably.

The Perch lies on six and a half acres of land in Lavers Hill and is home to luscious greenery, rainforests, grapevines, a veggie garden and 28 sheep. Forever inspired by the surroundings of the Otways, The Perch sources 90% of its produce locally with the aim for that number to be 100% in the future. When Dean couldn’t find high-quality artichokes, he planted them last summer and they now feature on the menu today. He has also recently started curing his own meats, adding to his in-house kombucha and juices. The menu is big and bold in flavour & technique but is elegantly un-pretentious, a nod to the overall atmosphere of The Perch Constant laughter and chatter fill the dining room during service, which is full of both locals and visitors who create a sense of community within a community.
Gabrielle has worked hard to create a memorable beverage list of over 100 wines from around the world, including Spain, Argentina, France and Australia. The menu is adventurous with different varietals that complement the food beautifully thanks to Gabrielle’s expertise in pairing.
As soon as you walk into The Perch, you can feel, see and taste the labour of love that both Dean and Gabrielle have created. It’s welcoming, warm and worth a pause on your Great Ocean Road trip.

MERRIJIG
Why Victoria’s oldest Inn stands the test of time

The Merrijig Inn needs no introduction. It has been part of Port Fairy’s historic fabric since the 1840s and played a significant role in the town’s development. While visitors from near and far venture to stay at its bed and breakfast, it’s what you will find inside that gives reason to why this piece of history has stood the test of time… and will continue to do so.
Art comes in many forms and at the Merrijig Inn, it’s at the hands of the extraordinarily talented Tanya Connellan. Having spent over 30 years in the hospitality industry, Tanya has worked with some of Melbourne’s most well-known chefs, including Ian Curley, Stephanie Alexander, Michael Bacash & Cath Claringbold. She credits her time with them as shaping her “old school” approach to
cooking - using traditional and European techniques to construct flavourful and hearty dishes.
Her years at North Fitzroy’s Green Grocer cemented her dedication to organic and biodynamic produce, which she has carried on to this day at the Merrijig Inn by creating a daily menu based only on the best local ingredients she has available to

her that day. It’s an exquisite process to witness and one that truly comes from her heart. Her intuitive approach extends to the local producers and farmers she relies on daily by telling them; “whatever is good, is what we will have.” When Tanya got her hands on beetroots like she’d never seen before, they were transformed into the hero ingredient of dishes for that day. With a buzzing fishing port literally on her doorstep, Tanya’s menu will more likely than not feature standout seafood dishes like smoked eel with pear, celeriac remoulade and oat cakes. Conversely, the rich soil and surrounding land of Port Fairy means the local butchers have some of the best meats in the state, if not Australia. Duck parfait, beef brisket and rabbit all feature regularly and have felt the Midas touch of Tanya’s sheer culinary brilliance.
The stand-out food menu is complemented beautifully by a wine list that has been featured on the Australian Wine List of the Year for 11 years and awarded ‘three glasses’, a feat that is yet another testament to the phenomenally talented team.
The old-world charm of the kitchen extends into the cosy, characterfilled seven-table dining room where guests are greeted by the famous and charismatic Leeroy, the friendly face of Front of House. The atmosphere is as welcoming as the menu, with locals and out-of-towners alike filling the small and intimate space with gentle chatter and laughs around the open fire. You truly couldn’t be anywhere else and you don’t want to be.

How a geneticist ended up creating one of the region’s favourite winery, brewery & distillery

Macarthur is a long way from South Africa, so there is both a unique tale and love story behind Pieter and Michelle Badenhorst’s journey to creating Suffoir Winery, Brewery and Distillery.
A geneticist and bio-chemist by trade, Pieter left South Africa bound for a job as a research scientist at the Victorian government. As fate would have it, Pieter’s best friend is the cousin of another South African native, Michelle, who separately at the time was backpacking around Australia. After meeting, the two hit it off and as they say, the rest is history… although at the time, neither saw owning a winery let alone a brewery and distillery in their future plans! The hunt for a home and wedding venue happened simultaneously so when they stumbled across the grounds of the now-named Suffoir Winery, they instantly knew it ticked both boxes.
Initially, they saw the winery as more of a hobby but as there was already a liquor license attached the idea of turning it into a business became more prominent in their minds.

So in 2012 on the day they moved in, they began picking grapes. By the following year, they started making wine commercially and by 2015 they opened their cellar door from a 6x9m shed.
During this time, Pieter was still working in government and spending all his spare hours in the winery with Michelle. From day one, both knew that this business had to be a true representation of their shared values; authenticity, sustainability and a love for animals. The Suffoir name itself is derived from the properties Black Suffolk sheep and Pinot Noir vines. ‘The Three Alpacas’ beer is named after the animals that roam the property and ‘Angry Dog’ cider is a nod to the dog that herds the sheep.
As Suffoir has evolved and grown into a multi-faceted craft beverage venue, both Pieter and Michelle have continued to remain authentic to their roots and shared goals. Suffoir is completely self-sufficient,
using everything from its own garden or shared community gardens to create a holistic food and drink offering. Visitors can pick at grazing and ploughman platters inside or out while sipping on their drink of choice with beautiful rolling hills as their backdrop. Suffoir has five wines on offer, including a Viognier, Rosé, two estate-grown Pinot Noirs and a Cabernet Merlot. Their ‘7 Deadly Gins’ range includes Just Another Lemon Tree, Rooibos, The Chameleon (strawberry and pomegranate), Australian Botanical, Sweet Smoke, Pinot Noir and Sticky Chai. They have also expanded their spirit offering to include vodka, gin, brandy, whisky and liqueurs. For craft beer connoisseurs, you can choose between a lager, pale ale, Indian pale ale and ginger beer. The venue’s recycling program is also yet another example of Pieter and Michelle’s shared focus on ensuring they reduce their environmental footprint for generations to come.

As one of the three last remaining co-ops in Victoria, the historical significance of Apollo Bay Fishermen’s Co-op should warrant a visit in itself. However, only focusing on that would be selling this piece of history, and its story short. Found in the heart of Apollo Bay’s Harbour, it’s hard to miss not only because of its position but of the characters who fill it throughout the day.
From the fishermen bringing in the fresh-caught seafood loads to the diners in the fish and chip shop who get to take a front-row seat and see, quite literally, their next meal.
It’s a place steeped in tradition thanks to the strong alliance of fishermen, some of whom have come up through the generations of the original Apollo Bay fishing families.
Along with the co-op-owned trawler, Tambo Bay, up to 10 other boats will venture out and only return when the very best is caught. Like any produce, it’s season-dependent, but if you are lucky enough to visit when the Southern Rock Lobsters are at their best, you will not likely experience a fresher dish elsewhere. When the trawlers return, nothing is left to waste, an ethos that has stood firm since day one.

Along with serving the lobsters grilled or boiled, what remains will be used for stock or to create chowder.
Of what is caught, over 60% stays local (the other 40% going directly to Melbourne fish markets) and is processed, scaled and prepared in the co-op before being transported upstairs to the fish and chip shop, the co-op’s own fresh fish market on Pascoe St and the more upmarket Co-Op on Pascoe Restaurant. No matter where you buy or eat the local catch, they are always ‘strait to plate’ - a truly unique offering and experience for visitors and an almost daily occurrence for the locals who are lucky enough to have this on their doorstep.
The passion of those who work across the co-op’s offerings is contagious and inspiring. At the fish and chip shop, your order is not complete until you have had a full run-down of the amazing seafood that has come from the boats mere moments before.
At the fish market, first-hand experience and cooking suggestions from behind the counter may dictate your order, and at the restaurant on Pascoe Street, your order will undoubtedly include the various types of ceviche or the famous lobster chowder.
The magnitude of what Apollo Bay’s Fishermen’s Co-op means to the community can be felt in the 16 tonnes of lobster that pass through its door yearly, 10 tons of which are sold locally, and 175,000 meals are served.

From a dairy farm to the forefront of the Surf Coast’s food scene; the story behind Timboon Fine Ice Cream .

Timboon Fine Ice Cream turned 25 in October 2024, but this big milestone could not have been possible without its small and humble beginnings.
Dairy farming is in Tim Marwood’s blood. His grandfather developed early irrigation practices in the 1940s, and his dad was one of the first farmers to milk ‘a cow to the acre’ in the 1970s. It was inevitable Tim would continue the family business but as times changed, he saw a need to evolve the farm’s offerings in order to stay afloat. Creating ice cream seemed like the obvious next step, so Timboon Fine Ice Cream was born in 1999.
In the early days, Tim, his family and friends would gather at home with the blender on their benchtop and start experimenting with flavours with everyone having a say on what they thought did or (more often than not!) didn’t work. It’s a time he looks back on fondly and when he first realised that this business brings so much joy to others. With a couple of flavours up his sleeve, he set out with a steel box trailer and began venturing to

local farmers markets as well as to the 12 Apostles site down the road to see what the community and tourists thought of his ice cream. This was a pivotal moment for Timboon Fine Ice Cream as it steered the business into a direction Tim was going against. Having his heart set on creating sophisticated flavour combinations like ‘Shiraz and blackberry’, he quickly found out that when it came to ice cream, a majority of people never veer far from simple flavours or their childhood favourites. So after his market research, Tim focussed on creating classic ice cream flavours with an artisan flare using local, farmfresh ingredients including vanilla with perfectly balanced creamy, sweet and woody notes, as well as chunky honeycomb ice cream that is as delicious as it is nostalgic. Tim still gets to flex his creative muscle though with his ‘curiosity flavours’ which saw him recently make mint and jalapenoa surprisingly popular flavour that got people talking for all the right reasons.
Community is everything to Timboon Fine Ice Cream and it’s not lost on Tim or his family how lucky they are to have such a supportive group around them. Situated in the heart of the town, the shop is always a-buzz with locals and tourists alike who just love to sit with an ice cream in hand and watch the world go by, some with their dogs by their side too, sparking Tim’s latest offering; ‘Sccopys’, an ice cream for your furry four-legged best friend.
While Timboon Ice Cream has grown, it will always stay true to its humble beginnings of simply being about making people smile, as it did for the first time 25 years ago.

GELATO GELATO
Artisan gelato better than you’ll find in Italy

It’s a bold headline. But don’t take our word for it, as the numerous awards with Gelato Gelato’s name on them are a testament to the statement.
Jo Stevens left the corporate world 10 years ago in search of something less black and white and more colourful. Having moved to the beautiful Surf Coast in the early 2000’s she witnessed the foodie scene starting to take shape in 2015 and knew it was the perfect time to put Lorne on the must-see-and-eat-map by creating something none of the locals had seen before.
Gelato Gelato was born. An artisan gelato offering that focussed solely on using only the highest quality ingredients. But opening a gelato shop is easier said than done, which is why both Jo and her business partner, Stephanie Lewis, flew to Italy and Singapore to learn everything they could about food sciences and gelato-making. From day one they have made everything in-house, using ingredients from local producers wherever possible that include homegrown lemons, milk and cream from

Raspberry Sorbet (2019) and ‘Australian Champion Small Producer’ (2019), just to name a few.
It’s an incredible feat for a little gelato shop that started in the heart of Lorne with a production kitchen out the back, to have now grown to its current sizewith shops also in Angelsea and on the waterfront in Geelong. Their most recent national award-winning choc mint gelato is nothing like you’ve seen or tasted before. Each tub is made of freshly picked mint and organic 70% dark chocolate - nothing else. It’s the reason the gelato is pale in comparison to other more commercialised versions but what it may lack in colour, it makes up for in bold flavour. The roasted coconut is roasted and infused for 24 hours before becoming another award-winning flavour. Jo’s recent experimentation, ‘Persian Rose’ beautifully married rosewater with hibiscus jelly, white chocolate and pistachios.
Along with locals and visitors, the food industry started to take notice of what Jo and Stephanie were creating and soon the accolades followed, including winning ‘Champion Australian Dairy Producer’ and ‘Champion Victorian Dairy Producer’ at the 2023 Australian Fine Food Awards. They have also won Best Gelato for their flavours, Choc Mint (2023), Maple Walnut (2017) and Roasted Coconut (2018), along with the ‘Best Champion Frozen Dessert’ for their Gelato Gelato, Anglesea
Inglenook Dairy near Ballarat, berries from the Yarra Valley and figs from a family property in Gippsland. It’s an ethos that has ensured their gelato remains completely natural and free from any artificial preservatives.
In an effort to reduce their environmental footprint, Jo and Stephanie recently got rid of both plastic and wooden disposable tasting spoons in place of reusable metal ones which has reduced their consumables considerably. Everything that can be recycled or composted is done on-site as well.
As self-confessed foodies themselves, Jo and Stephanie have created something that would not be out of place on the world food stage and evidently, both the industry and general public agree.

The inside scoop on the ice cream shop with 540 awards - and counting!

As you walk into Dooley’s Premium Ice Cream in Apollo Bay or Torquay, a quick taste test isn’t even needed for you to know you’re about to experience one of the best scoops of your life, and that’s because overlooking the cabinets is a wall adorned with over 500 awards that undoubtedly confirm it. Sure, expectations are already high with so many accolades peering over your selection, but you’ll soon see (and taste) why they’re instantly surpassed.
For father-daughter duo, Dooley and Alyciandra, the goal was simple; make good quality ice cream. With a dairy farming background, Dooley was no stranger to knowing the importance of having high-calibre ingredients to help turn his dream into reality. So in 2002, ‘Dooley’s Premium Ice Cream’ was born and three years later, Alyciandra came on board to help out before getting serious about the trade in 2007. Stints in Italy followed for both and by 2008, their ice cream was already up to competition standard - a testament to the sheer hard work and skill set of both Dooley and Alyciandra.

And that’s when the awards started to roll in, and evidently haven’t stopped!
That first year, they entered chocolate, mint choc chip, ginger and vanilla into what is now known as The Royal Melbourne Show and walked away with gold for their Mint choc-chip flavour. Since then, Dooley’s Premium Ice Cream has continued to show and place at the Australian Food Awards (AFA) as part of The Royal Melbourne Show, as well as The Dairy Industry Association of Australia Awards (DIAA), The Dairy Industry Association of Victoria Awards, The Australian Grand Dairy Awards and the Sydney Royal Easter Show, respectively. At the aforementioned Australian Grand Dairy Awards, they won best ice cream in Australia for their licorice (2013), vanilla (2015) and chocolate (2016 + 2017 + 2018). Their strawberry flavour has won gold at the Dairy Industry Association of Australia Awards (DIAA) consecutively since 2016. At this year’s DIAA’s, Dooley’s also walked away with another four trophies including, Sensient Technologies Award for the highest-
scoring ice cream, the IFF Highest Scoring Frozen Product, the Roha Award for the highest-scoring product containing natural flavourings, and the Process Partners Award for the most outstanding show exhibit (small-scale producer).
So what’s the inside scoop to their success? It’s simply staying close to their roots of ensuring only the best ingredients are used, which are locally sourced where possible. Second to that is saying humble and grateful. For all the deserving recognition from around the country, the community is never far from Dooley and Alyciandra’s minds.
